Ever since then, I have been flooded with letters from around the world. People write to tell me about their experiments with high-raw eating and all the payoffs it has brought them. Together, with new information from many areas of natural medicine, they have added missing pieces to the original Raw Power puzzle. MY SEARCH FOR HEALTH I had been chronically ill as a child—one “infection” after another, nightmares, anxiety. But no-one seemed able to help me. Then a wonderful break came my way. I met some remarkable doctors. These were men and women highly trained in orthodox medicine where drugs are the primary means of treating symptoms. Yet these were doctors with a difference. Disillusioned with the conventional, symptomatic approach to medicine, they chose to look deeper and ask questions: “What can be done to help a living body heal itself from inside without the negative side effects of toxic chemicals in drugs?” These physicians in Britain, the United States and Europe, were enormously generous with their time and their knowledge. They shared with me research findings and information which they had spent decades learning: How to detoxify my body using a high-raw or all-raw diet. How to enhance my energy. And—most important of all—how to trust my body’s ability to heal itself. CHECKING IT OUT I practiced what they taught and experimented with countless natural techniques. Their knowledge and generosity turned my life around. I learned that my tendency to “infection” was in fact food allergies. I learned that, after years of eating convenience foods, my body had become toxic. I watched and marveled as high-raw eating cleared the toxicity, the illness, and the depression. I lost fat from my body spontaneously. I felt great. I had so much energy that my children used to tease me by suggesting I start smoking to put a damper on my vitality. (There is nothing worse than waking up to an ultra-dynamic, hyper-cheerful mother.) I never looked back. It was these changes that threw me into a career in health: TV programs, articles, books, seminars, workshops, creating teaching modules for universities—the lot. I saw clearly that few of us ever live out our potentials for dynamism, creativity, good looks and radiant health. I felt passionate about sharing what I had been taught and had experienced for myself with others. My children also became intrigued by the changes they saw happening to me on a high-raw diet. They loved the delicious foods and natural sweet treats which we learned to prepare together. WHAT WE FOUND OUT Here’s what we found out happens when you eat high-raw, low-grain foods: You have more energy and vitality and look better. You lose weight more easily and keep it off without counting calories. You benefit from the “information” that organic live foods carry to your cells in the form of electro-chemical light energy and complex nutritional information which improves health and radiance. You get the best possible complements of vitamins, minerals and trace elements as well as essential enzymes that are destroyed when foods are cooked. Eating raw foods strengthens immunity, making you more resistant to disease, degeneration and allergies. Many chronic conditions disappear when people switch to a high-raw low-grain diet and—best news yet—they often don’t return. Long ago, I’d learned that the Germans, the Austrians, the Swedes and the Swiss had for generations catalogued the health promoting effects of eating foods high in raw fresh vegetables and fruits. Such a diet had long been credited with the healing of long term crippling diseases like arthritis and cancer, gastric ulcers, diabetes and heart disease. I unearthed reports of how athletes, taken off their usual diet high in cooked foods and put onto a way of eating in which between 50-75% of their foods were raw, not only lost none of their physical prowess, they even improved their performances. MEET RAW POWER An optimal experience of human health and vitality is possible when what we eat and the way we live is in line with what we have been genetically predisposed to thrive on. Such a simple idea. Yet what dazzling payoffs it can bring. New information from many areas of natural medicine can add missing pieces to the original Raw Power puzzle, expanding exponentially the understanding of how to use this way of eating to encourage healing and improve health. Raw foods carry light energy—photons—gathered by plants and animals from the sun’s own energy. These biophotons interact with our body’s own light-based, energy-based cellular control and communication systems—the living matrix—to heal, to energize, to bring mental and emotional clarity and to help keep our bodies strong and resistant to the buildup of toxic waste which invites disease and degeneration. And, Raw Power eating has three beneficial characteristics to it: A high-raw diet is the way our ancestors ate to which we are genetically adapted an on which we therefore thrive. It has to include adequate adequate but not excessive top quality proteins. It’s a way of eating which is low-or-no-grain and low-or-no-sugar that does not include manufactured convenience foods. RAW POWER TRUTHS An all-raw diet is useful temporarily for deep detoxification and encouraging the body to heal both acute and chronic diseases. It is not advisable for most people to eat nothing but raw foods for long periods. People who carry on with eating all-raw for years may continue to feel well, yet they often lose power and stamina both physically and mentally. Sometimes they even find it hard to live in the “real” world. This is often because they do not get enough top quality protein foods which establish firm architecture for body and psyche. Adequate protein is far healthier for bones than a low-protein diet. Organic and free range meat, fish, game and eggs can contribute enormously to your power and vitality and help protect from premature aging and degenerative disease (this is something I, like many others, for years did not know to be true). Too much sugar and too many sweeteners like honey, raw sugar, rice syrup and malt extract which all-raw foodies often get, are not good. They disturb insulin balance, predisposing us to insulin resistance and all the degeneration that brings with it. The majority of people living on a conventional Western diet show signs of insulin resistance syndrome. This epidemic of abnormalities includes high blood pressure, distorted blood fats or triglycerides, high cholesterol and blood sugar disorders. It carries with it an increased risk of just about every age-related disorder you can name: from eye problems, heart disease, nervous system disorders, obesity, diabetes and Alzheimer’s to chronic fatigue, exhaustion, anxiety, depression and poor sense of self worth. Why? Because the way they are eating and living is so far removed from what their bodies are genetically programmed to thrive on. Eating a no-grain—or a low-grain—diet, together with moderate quantities of quality protein foods and plenty of non-starchy vegetables and fruits reduces fatigue for virtually everyone while it eliminates weight problems, banishes inflammation and further enhances health, energy and good looks. Today’s fruits and vegetables lack yesterday’s nutrition, so a few well-chosen natural nutritional supplements can further enhance well-being. We need if at all possible to go for organic foods and so help avoid the toxic build-ups that can occur from foods grown using conventional farming methods. Finally—and most important of all—high-raw low-grain eating helps rebalance metabolism, allowing the body’s own remarkable inner power for healing to regenerate and rejuvenate the whole person. 3 Simple Parts of Basic Skin Care: Cleansing, Moisturizing & Sun Protection

Cleansing, protection from moisture loss, and a sunscreen are all there is to basic skin care. They are simple and inexpensive to carry out, and the benefits they bring when used regularly everyday cannot be measured in any amount of money. There are three parts to any good external skin care regimen, regardless of your age or the type of skin you have: Regular, thorough cleansing Protection from moisture loss and external roughness Protection from the ultraviolet rays of the sun. deep cleanse There are two camps when it comes to cleansing: the soap-and-water lovers and the soap-and-water haters. Both - within reason - are right. Soap is an excellent cleanser. It removes grease and dirt from the skin's surface easily (although it is usually not as effective at removing makeup as cream or lotion cleanser). Soap is capable of penetrating the skin's outer protective layers, making the skin of women who tend towards dryness even drier. Surprisingly, it can also have just the opposite effect on skin that tends to be oily. On the other hand, soap does give a sense of cleanliness that most women feel they don't get with cream and lotion cleansers. Thanks to modern technology, there are now many pH-balanced soaps, foaming cleansers, and detergent bars that don't disturb the pH of the skin, so that if you are a soap fancier, you can find one to suit you, without many of the disadvantages of the conventional type. the cream or oil way The many cream and lotion cleansers, oils, and cleansing milks available now are also good. Put a lotion or cream cleanser on with your hands as you would soap and then tissue it off, repeating the application until the tissue shows no sign of dirt on it. Then follow with toner or freshener, preferably one without alcohol in it, or simply rinse your face in cool water. the double treatment Because cleanliness is so important to lasting skin health and beauty, if you live in a city or a highly industrialized area where air pollution is a particular problem, the oil-and-water technique is the most effective means of all. Many of the cosmetic industry's most expensive ranges are based on this method of cleansing. But you can put together your own system which is just as effective. Choose a pure vegetable oil, such as cold-pressed sunflower oil, corn oil, or one of the more expensive hazelnut or apricot oils. Buy it in small quantities and keep it in a cool place, preferably in the refrigerator. Pour a tablespoonful of the oil into the palm of your hand and spread it on your face, rubbing it in well. (This is a good opportunity to give yourself a gentle massage to stimulate circulation while the oil is leaching up the makeup and grime on your skin.) Then, using pads of damp absorbent cotton-wool wiped over your face, remove the oil and with it much of the dirt on the skin. You are ready now for the second stage. Wash your skin in warm water and use a pH-balanced-soap, detergent bar, or liquid detergent cleanser, adding plenty of water and rubbing gently with the tips of your fingers and the palms of your hands until the whole face is well covered. Now rinse thoroughly ten times in warm water and then splash with cool. Whichever cleansing method you choose, follow it twice daily. This is the first step in the craft of skin care. the water margin There are literally hundreds of moisturizers on the market. Some are beautifully cool to the touch and scented, others somewhat greasy. For very dry skin, by far the most effective way of moisturizing is simply to prevent water in the skin from escaping into the air. This you can do by wearing one of the water-in-oil-type emulsions on your face every day, winter and summer. Water-in-oil emulsions contain a great deal more fat than water, which means they are able to cover the skin with an impermeable film so that excessive water loss doesn't occur. And they are good for both dry and oily skin. For, unlike so many products specifically designed for oily skin, they don't spur the sebaceous glands to produce even more oil in the kind of vicious circle women with oily skin know so well. Find a moisturizer that you like and wear it every day, applying it twice a day if you can, under makeup when you are wearing it, or just on its own when you don't. This is the second part of the craft of skin care. light dangers The third part of everyday skin care is simple: Your skin needs to be protected from the sun. Heavy exposure to the sun's light at the age of eighteen will result in early wrinkling, between twenty-five and forty. Sun protection products come in two forms - chemical sunscreens and physical sunblocks.  A few products contain both.  The physical sunblock products literally create a physical barrier of fine, non-reactive minerals on the surface of your skin.  They reflect excess UVA and UVB back into the atmosphere, instead of letting skin absorb it.  Using them is like wearing a hat or a veil so the sun's rays don't penetrate at all. Chemical sunscreen products - and most sun protection products fit into this category - are different.  They do not reflect.  They absorb UVB radiation in an attempt to neutralise it.  They are rapidly used up in the formation of new chemical compounds which your skin then has to find ways of detoxifying from your system. We don't know what the implications are of the absorption of all these chemicals for the skin, but we do know that sunscreen products often sensitize skin and this is why many people find that they can no longer use them.  We also know that how much sunscreen protection you get from any product is highly individual, regardless of what protection factor is written on the label. More chemical sunscreens these days have begun to target UVA radiation as well, but the 'sun protection factor' (SPF number) you read on a product's label will have been calculated entirely by how much UVB radiation the chemicals it contains are able to absorb.  The UV screening capacity of these products is rapidly used up by chemical reactions within the skin.  While you may apply a sunscreen product frequently enough to stop burning, you can get little assurance that it will help prevent wrinkles. To protect yourself from aging (as well as cancers), supply your skin with all it needs to function in the best of all possible ways.  Limit your use of chemically-based sunscreens.  Better still, throw them out.  Go for a mineral-based sunblock or use one of the new mineral foundations every day.  Based on agents like titanium oxide and zinc oxide, these products reflect the light instead of relying on chemicals to 'absorb' it.  They are safe, inert and protective.  Physical screens are commonly used by surfers, skiers, cricketers and tennis players.  But choose your product carefully.  Unless the mineral fragments have been milled to micro particles they can make you look a bit like Marcel Marceau. Fake It You can, of course, fake your tan.  Self-tanners are based on dihydroxyacetone (DHA).  DHA is a simple sugar involved in carbohydrate metabolism.  The color that you get from using self-tanning products containing it depends on how your skin reacts to this chemical, so different people will get different results from the same product.   Fake tan, of course, does not offer any protection from the sun. Success with self-tanners depends on your skill in applying them.  Here are the keys: Exfoliate skin first using a body scrub or skin brush to prevent uneven color. Moisturise your skin being careful to include the dry areas of knees, elbows and ankles.  Remove excess moisturiser with a damp cloth or flannel to avoid uneven darkening. Apply the product in thin layers.  Use less layers where your skin is thicker since the color stays longer there. Wash your hands thoroughly immediately after applying a product to avoid orange palms. Wait to dress for 30 minutes after applying the product to avoid staining your clothes (or longer - read the instructions carefully). Wait an hour or two after applying a product before showering - again, read the instructions carefully. Reapply regularly to keep the color. Many self-tanners come in a daily-use moisturiser, allowing you to apply little and often until you have the right color for you.  The easiest of all to use are those that are slightly tinted so you can see where you have applied them.  There are now also some very good self-tan products that you simply apply like makeup and wash off at the end of the day with soap and water.  They key to getting it right with any of these products is finding the one that gives you the most natural color.  Don't trust what is says on the bottle, ask for samples if you can, and always try them out first - somewhere where the results can't be seen, just in case you find that you have turned that dreaded orange tinge.

Just over four years ago, before we created our online programs, I was working one-to-one with individuals. The experience was a rich one for me. It affirmed that my goals for designing a worldwide internet based Cura Romana were clear: I wanted to build safe, gentle, rapid weight loss programs for men and women of any age. Instead of putting strain on the organism the way conventional slimming diets do, it had to encourage better hormonal balance, bring greater balance to the autonomic nervous system, and foster radiant wellbeing on every level. I was also determined that the program should not only help people recover their body’s natural shape. It needed to act as an entrance into healthy transformation and to enrich one’s quality of life. Finally, I wanted to design a protocol that could banish food cravings and show participants how to make excess weight lost on the program stay lost. PATH TO WELLBEING The story of how I became involved in all this goes way back to my early twenties. Already mother of three, I was seriously ill. In truth, I’d been unwell since late childhood. Twice, I had come close to dying of pneumonia. And, in addition to various other ailments—both emotional and physical—I began to struggle with my weight at adolescence. Then, in my mid-twenties, I was given the greatest gift that could have ever have been offered me: I met and became close friends with more than a dozen of the finest doctors and scientists in the English-speaking world—including two Nobel Laureates. Every one of these remarkable men and women generously shared with me their vast knowledge of natural healing, as well as the fundamentals of biology and physics when applied to living things. FULFILLING A DREAM From early on, I had been passionate about finding answers to my personal health challenges. These experts/friends could not have been more helpful in my search. Without their teachings, their patience and their guidance, I doubt that I would ever have been able to find my way, raise four healthy, happy children on my own, and accomplish the other things I have done since then. Many years later, when I was just beginning to design the Cura Romana programs, I made good use of what I had learned from them. I sat down to work out an easy-to-use program for safe, hunger-free, rapid weight loss, as well as gentle detox. I knew that such a program could not only help people recover their natural shape and weight, but transform their health and enrich the quality of their life. I became familiar with— even experienced firsthand—the emotional and psychological effects human beings can suffer when eating such foods. Reactions can be anything from mild depression and a sense of self-loathing to emotional breakdowns. Sometimes, even serious mental disorders can be triggered when a particular body reacts to a food or drink it can’t tolerate. A physician of great vision, author of many papers and books including Not All in the Mind, Richard Mackarness fought for, and single-handedly achieved, recognition for “clinical ecology” to be accepted as a respected medical discipline in the UK. He and his colleagues, Theron Randolph MD and Herbert Rinkel MD, established that food intolerance, food sensitivities and food allergies often cause a wide variety of illnesses. I suspect you can guess which one is right up there at the top of the list: weight gain and obesity. SLIM FOREVER Much of what I learned from them also stood me in good stead while building Cura Romana’s unique six week Consolidation program. That follows the Essential Spray+Food Plan for rapid weight loss. It is during the Consolidation process that participants learn the way to make sure that the fat they’ve shed need never return. Each body is unique. Foods that work for you may be anathema to me. To put it simply, during Consolidation you learn how to identify which foods your unique body “loves” and which foods it “hates.” Discovering what foods your body thrives on, and what foods it cannot handle, is essential to lifelong weight control. Transform Change from a Crisis to Power: Examining What Works in Life

Examining what works in your life and what doesn't takes courage. It is never easy. It demands that you disassemble structures that you take for granted but which may no longer serve you at the deepest level. These structures can include anything from a habit of munching your way through two pounds of chocolates every time you feel depressed, to holding on to a job that is meaningless, or to a relationship which does not help you grow - all because you are afraid you can't cope otherwise or do any better for yourself. Every transformation, every profound and life-enhancing change in some way involves dismemberment. It dissolves every structure that has become inadequate to support an organism. Like the crab which sheds his cramped shell in order to create a larger one, each of us again and again is faced with the prospect of taking apart structures in our own lives which have become too small to contain us. If we don't consciously rise to the occasion, then life takes them apart for us, and we find ourselves precipitated into crises: It seems as though you have entered a dark tunnel leading to an unknown land. You feel that you don't know yourself any more, or what you value, or even what is going on. So fundamental is this uncomfortable but necessary process of molting to human physical, emotional and spiritual health - in fact to life itself - that it takes place again and again in our lives whether we like it or not. Sometimes change comes spontaneously as a result of something that happens to us - the death of a loved one perhaps, or the loss of a job. Sometimes it is consciously chosen out of an awareness that our current life structures no longer serve our values and our goals. Whether the transition required is a big one - choosing to enter or leave a long-term relationship - or a relatively small one - putting yourself through a short spring cleaning diet to detoxify your body - it frequently brings an experience of deep uncertainty and anxiety - the sense that you are in crisis. The transition facing you seems terrifying. You want most to run away as fast as you can. You feel overwhelmed and unable to cope. Inflammation is your body’s natural response to infection, injury, and tissue damage. It comes in two forms: Acute inflammation and chronic/ systemic inflammation, which spreads throughout your body. Acute inflammation is temporary, the purpose of which is to restore good tissue function as soon as possible. Your body creates inflammation as its defense against disturbing homeostasis in an attempt to prevent harm to surrounding tissues. Chronic inflammation, however, can be dangerous. It can turn into a festering fire that creates pain, illness, and disability. This is because your body reacts to chronic inflammation by triggering cellular and molecular distortions to pro-inflammatory immune cells that circulate throughout your body. This can bring damage to healthy areas like the linings of your blood vessels, as in arteriosclerosis, or your joint tissues in arthritis, or gut mucosa and diabetes. It may even act as a precursor to cancer. When it comes to the treatment of long-term illness—such as heart disease—savvy medical doctors now warn that we’ve been misled. It is inflammation in the arteries that is the real cause of arteriosclerosis and heart problems. Cholesterol can never line artery walls and cause heart attacks and strokes unless systemic inflammation is widespread in your body. So prescribing drugs to lower cholesterol and telling people to restrict saturated fats do not protect from heart disease as we’ve been told. In fact, statins, which the majority of cardiologists continue to prescribe for cholesterol, can seriously damage your health. Dwight Lundell, former Chief of Staff and Surgery at Banner Heart Hospital in Arizona, is one of many outspoken physicians in regard to this mistake. As he says, “We physicians with all our training, knowledge and authority, often acquire a rather large ego that tends to make it difficult to admit we are wrong.” He continues, “I freely admit to being wrong. As a heart surgeon with 25 years’ experience, having performed over 5,000 open-heart surgeries, today is my day to right the wrong with medical and scientific fact.” So, what are the causes of chronic inflammation in your body? The most common causes include: Exposure to chemical inhalants and pollutants, and electromagnetic exposure to cell phones, smart meters, and towers. Another is taking long-term courses of powerful drugs, from antibiotics to hormones, anti-depressants, analgesics, and sedatives, as well as drugs like statins and other pharmaceuticals, the remains of which can literally poison your body long term. Want to protect yourself from inflammation? Become aware of your possible exposure to these things and make changes to help protect you from possible causes. In many ways the simplest place of all to begin is by changing the way you eat, since the typical 21st century diet is right at the core of widespread chronic inflammation. Learn which foods are inflammatory in nature and which foods can help protect you from it. Then it’s time to throw out every one of the inflammatory foods that line your cupboard and your refrigerator, and forever change how you may have been eating. Foods that cause inflammation, which you want to avoid at any cost, are all kinds of sugars, regardless of how much they may be promoted as “good for you;” all artificial sweeteners, which are chemically dangerous to your body; and all GMO foods, which can literally be deadly. A large percentage of the population nowadays reacts badly to cow’s milk products—from the milk itself to cow’s yogurt and cheese. Buy goat, sheep or buffalo milk, yogurt, and cheese instead. Another category of foods that can be seriously inflammatory to the body are high-carbohydrate foods—breads, pasta, cakes, and biscuits made from common grains and cereals as well as all the common convenience foods that line our supermarket shelves. These are chock-full of colorants, flavor enhancers, and other chemicals that poison your body. And it goes without saying that you want to avoid all junk foods completely. Certain foods, herbs, spices, and supplements can help reduce inflammation and protect your body from it in the future. Organic dark green vegetables are high on the list: spinach, kale, dandelion greens, collard greens, broccoli, bok choy, beet greens, and asparagus are high on the list of protective vegetables. So are organic berries of all kinds, organic chicken, grass-fed lamb, beef, venison, wild salmon, and green-lipped muscles from New Zealand. Let me share with you a few juice recipes designed to help some common challenges. CLEAR FATIGUE One of the underlying causes of fatigue, particularly in women, can be iron depletion. Spinach juice is a far better way of boosting iron levels than taking tablets, which tend to be constipating and are poorly absorbed. The iron in natural foods and juices, including all our green leafy vegetables as well as in poultry, liver and molasses, is highly bio-available. This means your body has no trouble making use of it. Remember that replenishing the body’s essential nutrients takes time, so be prepared to work with organic foods and juices for several weeks before you start to see lasting results. Magnesium is another important mineral when it comes to fatigue. Low intracellular magnesium makes the body very prone to infection, food allergies and chronic illness. HANGOVERS There is an art to hangover management. The key to it is looking at detoxification as the other side of the intoxication coin. All drugs provoke a strongly acidic reaction in the body, which causes the symptoms of a hangover, and the first step to recovery is to correct the body's chemical imbalance. Plain old carrot and apple juice is effective for re-balancing, and it's easy to take when you're feeling weak. By incorporating beetroot juice, you will greatly assist the repair of any possible damage done to your liver and kidneys. The inevitable consequence of over-indulgence is waking up dehydrated and nauseous, with a brain that feels like it’s banging against the side of your head each time you move. You need to replenish bodily fluids, nourish exhausted muscles and get your head together. Fruit juice is strongly indicated. Citrus juices, being full of natural sugar vitamin C, are an immediately effective remedy, but they may be a bit harsh if your stomach is delicate. Watermelon, being exceptionally mild, is an ideal substitute if you happen to have some. APPLES & PEARS Apples and pears are closely related. They make a sublime combination when juiced together. 2 pears 2 whole apples Juice as usual and drink straight away as this juice oxidizes very quickly. VIRGIN MARY A Bloody Mary without the vodka, the flavor of this refreshing tomato-based cocktail benefits from a few drops of Tabasco. (Add a clove of garlic and it becomes a Vampire Mary; a fresh jalapeno or other hot green chili pepper turns it into a Scary Mary.) 2 ripe tomatoes 2 carrots 1/2 a beetroot 1 stalk celery 1 cucumber BERRY MELON Berries combine well with melons. The array of flavors gives lots of scope for experimentation. Try Cantelope & Raspberry, Honeydew & Blackberry or the classic Watermelon & Strawberry: 1 slice of watermelon, 3cm wide and cut into chunks to fit your juicer 6 strawberries, washed and with their green stalks removed (In hot weather, a good tip is to freeze your berries before juicing them.) HAIR LOSS You may have been genetically programmed to lose hair, but that doesn't mean it has to happen. There’s a great deal you can do to prevent hair loss, to slow it down dramatically, and in many cases to stop it altogether. Eat foods that are rich in the sulfur amino acids, L-methionine and L-cysteine. Eggs are a wonderful source so devour them with enthusiasm. When it comes to protection from hair loss, cabbage is a real help too. You must also cut out the foods that work against you stopping and eliminating hair loss. Sugar in any form is a killer. Stop eating it altogether. Use a good tasting real stevia in its place. So are the grains and cereals—breads, biscuits and pasta. Eat foods rich in PABA, inositol and choline, such as organic liver, spinach, grapefruit, and raw nuts. Consider adding vacuum-packed flax seeds to your diet. You can grind them in a coffee grinder and sprinkle them on salads or soups. You can also add them to your juices. Finally, the alfalfa has long been believed to stimulate hair growth, particularly in its sprouted form. ALFALFA—FATHER OF ALL JUICES The word alfalfa means ‘father of all grains’ and when it comes to hair health you can't do better than alfalfa sprouts and carrot juice. 4-5 carrots 1 cup alfalfa sprouts Optional: chopped parsley Juice as usual, top with some chopped parsley and drink. GINGER’S BEST cantaloupe melon ¼ inch slice root ginger 1 lime (peel, leaving pith) PARSNIP PERFECT Parsnips, also known as anemic carrots, are well known for their ability to strengthen hair, skin and nails and can protect against hair loss. 2 parsnips 3 carrots 1 beetroot Ease yourself gently into raw juicing. If the juices you make don’t taste sweet enough to you at the beginning, add a good quality stevia to taste. There are a lot of so-called “natural” stevia products which are gross distortions of the natural stevia. I have found that they give a lot of trouble to many people. Avoid them like the plague. Unveiling the Amazing Benefits of Dark Chocolate: Get Ready to be Astounded

The best chocolate is not only good for your body, mind and spirit. It can even help protect you from degenerative conditions—from cancer and heart disease to Alzheimer’s. Yes, really! But it has to be the right kind of chocolate, and in the right quantity. Next time you’re feeling anxious you can reach for a piece of dark chocolate and feel good about it. The emerging chocolate story is a fascinating one, and it is only just beginning to break. PSYCHOSEXUAL FOOD The mythology of chocolate began with the ancient gods of the New World. It was the Olmec Indians in Central America who are credited with the discovery of the cocoa tree. Later, the Aztecs and Toltecs who called this substance “food of the gods” told the story of how Quetzalcoatl, the supreme god of the air, brought the seeds of the tree to earth as a gift to his chosen people. Montezuma the great Aztec king is believed to have downed 50 pitchers of an elixir made from chocolate each day. The drink was called xocolatl, an aphrodisiac and fountain of strength sexuality and vigor. Cortez, who brought it back to Europe in the sixteenth century, soon created a chocolate storm among the courtiers. Madame Pompadour gave her seal of approval to chocolate as an aphrodisiac, while Casanova claimed chocolate was the perfect tool for seduction. Some recent research partly explains why. Scientists in California have isolated a substance in chocolate which links into our brain receptor sites and, like cannabis, brings sensations of pleasure and relaxation. But chocolate, I suspect, has many secrets. This is just one of them, which feeds our passion for this dark and seductive food and, at the same time, enhances our passion for love. BENEFITS ARE MANY The researchers found that eating about one ounce and a half of dark chocolate a day for two weeks reduces levels of stress hormones, but it has to be very dark chocolate—between 75 and 85% cocoa solids. There is a huge difference between the minimally processed dark chocolate and the milk chocolate found in most candy bars. Raw, unsweetened cocoa powder which is high in antioxidant flavonols and contains no sugar is very different from the common cocoa drinks that are loaded with sugar. They offer no antioxidant support whatsoever. Meanwhile, minimally processed dark chocolate has already been linked to a number of health benefits. Dark chocolate has been found to reduce urinary excretion of the stress hormone cortisol and catecholamines in stressed individuals who took part in the study. What is interesting is that in those who did not have highly-stressed lives it made no difference. Some of the health benefits from chocolate are due to the antioxidants present in cocoa itself, such as flavonols. These are a sub-class of flavonoids, and are natural plant chemicals (phytochemicals) found in fruits and vegetables. There are several thousand compounds belonging to the antioxidant-rich polyphenol family, also called phytochemicals, which are very good for us. DON’T EAT MILK CHOCOLATE The total antioxidant content of chocolate products is directly associated with the amount of raw cocoa that the chocolate contains. A published in the ‘Journal of Agricultural and Food Chemistry’ showed that in terms of healthy antioxidant content, cocoa powder rated first, followed by unsweetened baking chocolate, dark chocolate and semi-chocolate chips. Milk chocolate has very few of these antioxidants. This is primarily because it’s heavily processed. In fact, the typical commercial chocolate has less than half of the flavonoids remaining after processing. As well as that, milk chocolate contains milk, which tends to cancel out cocoa’s antioxidant effects. This was discovered in a study published in the journal ‘Nature’. The reason this happens is that proteins in the milk bind with the antioxidants, making them less easily absorbed by your body. Another thing about processed chocolate is that often it is high in lead. Many researchers believe that milk in processed chocolate is also often contaminated by other heavy metals, but no one is quite sure why this happens. In another study published several years ago, researchers discovered that one cup of hot cocoa, made with pure cocoa powder, had about double the amount of antioxidants than those found in a glass of red wine, more than double the amount than in green tea, and four to five times more than in black tea. Perhaps even more surprisingly, dark unprocessed chocolate has been exonerated in a number of studies as exerting positive effects on your health. One example, believe it or not, is that it improves glucose metabolism. It also improves blood pressure levels and your cardiovascular system. FOOD OF THE GODS Now, this doesn’t mean that you should be swallowing chocolate every minute or two. The ideal amount of good dark chocolate—preferably organic—that you should eat is very little. A study published a couple of years back discovered that between 6 and 7 grams of dark chocolate per day, which is a little less than half a bar a week, is probably the ideal amount for protecting us against inflammation and cardiovascular disease. Any more than this appears to cancel out the benefits. This is not surprising because chocolate, like coffee, has throughout history been considered one of the sacred foods and the sacred foods need to be honored. Such foods have powerful energies. We thrive when we take them only in small quantities. This is the only way we can take advantage of all they have to offer us on every level. LESLIE’S CHOCOLATE BROWNIES If you're going to eat chocolate, eat only the best—not only because it's the most delicious, but also because it is the real thing. On the market these days, you find all sorts of imitation chocolate products which have had vegetable fat added to them. Avoid them. Even natural chocolate is often processed with an alkali which makes it high in sodium and interferes with the absorption of the magnesium, copper, potassium, phosphorus, iron and calcium which are the natural birthright of pure cocoa. These days most cocoa comes from Africa, although it was originally from Central America and the West Indies. When buying chocolate, always buy plain chocolate or bitter, dark chocolate, and always go organic. There is no question whatsoever that organic chocolate is the most delicious in the world. This recipe is flour-free, which makes it much richer. It is much more like a mousse than a conventional brownie, in the sense that it is absolutely riddled with chocolate flavor. So if you happen to be a chocoholic, you will absolutely adore it. Serve it with whipped cream, provided you do not have a problem with dairy products. (These days, because most milk is so polluted, many people do have issues with them.) Sprinkle the brownies with toasted flaked almonds. I think you'll love them, whipped cream or no whipped cream. WHAT YOU NEED 400g of dark organic chocolate—85% cocoa content or above is best 200g of unsalted butter 8 eggs, separated 1 rounded teaspoon of granulated Stevia by Stevita (or to taste) 3 tablespoons of finely powdered almonds 2 teaspoons of vanilla extract 200g of toasted almond flakes 5g of shaved black chocolate—at least 85% cocoa with no milk and no sugar added to it HERE’S HOW Heat your oven to 180ºC (350ºF, gas mark 4). Use butter to grease the sides and bottom of an 8” square or round pan—the kind the bottom comes out of. Line the pan with parchment or waxed paper and grease the paper with butter as well. Now wrap the outside of the pan with aluminum foil. Melt the chocolate and the butter in the top of a Bain Marie until smooth and melted. Keep stirring this mixture as it melts. Remove it from the heat and cool to body temperature, continuing to stir frequently. Using a food processor or electric mixer, beat the egg yolks and stevia in a big bowl for about 3 minutes until it goes pale and thick. Now very gently fold the lukewarm chocolate mixture into the egg yolk one. Making sure your blades are washed and dried thoroughly, beat the egg whites in a different large bowl to soft-peak stage. Continue beating until peaks start to go firm. Fold the white into the chocolate mixture little by little—ever so gently. Pour the mixture into the pan and bake until the top puffs up and cracks, and until a toothpick stuck into the middle comes out with some moist crumbs attached. This usually takes about 45 minutes. Remove from the oven and cool in the pan on a rack. Don’t be distressed if the brownie mix ‘falls’: this is what is supposed to happen, and what gives it its rich flavor. When it is cool, take a sharp knife and cut around the sides of the pan to loosen the brownies. Place a large plate or piece of cardboard over the top and invert the brownie mix on to it. Peel off the paper. Now cut into squares or slices. Serve with a sprinkle of slivered toasted almonds and shaved black chocolate on top, or add some fresh strawberries or raspberries. The word breakfast literally means the meal at which you “break-a-fast.” That is just what you will be doing on meal spacing—breaking a fast of 12 or more hours after eating dinner the night before. The timings of your two meals each day will need to take into account what your days are like. Is it an easy thing for you to prepare your first meal at home—say between 11am and 1pm? Or do you work away from home all day? If so, does your job require you to eat in restaurants frequently? On days when you don’t, can you make your first meal before leaving for work—say, a salad complete with good quality protein which you can take to work with you, or maybe a delicious smoothie you can carry in a thermos? The rule of thumb for success with meal spacing is to allow 5 to 6 hours or more between your first and second meal of the day. Longer food-free periods are fine too. If you can schedule your second meal in the early evening—say 6 or 7pm, this is ideal. If, on the other hand, you don’t get home until later in the evening or you have been invited out for the evening, then the period between meal one and meal two is likely to be longer than 6 hours. That is fine too. EAT STOP FAST It is essential that, as soon as you finish a meal, you stop eating. And, just in case you have a habit of munching through a couple of biscuits or a bowl of chocolate ice cream between dinner and bedtime, now is the time to break this habit. It’s important to have ended your eating for the day at least 3 hours before you climb into bed. You need an absolute minimum of food-free 12 hours during the night before eating the first meal of the next day. How you plan your eating and fasting periods depends on you. Your timings may change a bit from day to day depending on what is happening in your life. That’s OK. Just don’t forget that, to become lean and healthy and stay that way, and to protect yourself from early aging and degenerative conditions, your body needs extended food-free periods day after day. And the longest and most important is at night, while you sleep. START GENTLY Many people are afraid they will not be able to make it from one meal to the next when they are just beginning to explore what condensed eating can do for them. I recommend when you are just learning the practice of meal spacing that you feel free to eat a snack or two between meal one and meal two if you feel you need to. That being said, the sooner you come to adopt fully this food style and make it your very own, the better. I predict that it won’t take long before you will have no trouble remaining food-free between meals. SNACK SUGGESTIONS Half an avocado with 2 oz (50 g) of Cheddar cheese A no-sugar smoothie made with Vital Whey, sweetened with English Toffee Stevia if you like 1 cup of sliced cucumbers with vinaigrette dressing made with extra virgin olive oil 1/2 cup of cottage cheese with 1/4 cup raspberries 4oz (100g) plain cow’s, goat’s or sheep’s yogurt with half a grated apple sweetened with stevia and sprinkled with cinnamon. TAKE YOUR TIME Your body will need some time to adapt itself to this kind of eating—sometimes only a few days and other times two or three weeks. Just be patient and stick with it. Have your healthy snacks between meal one and meal two until you sense that you no longer need them. But right from the beginning, make a commitment to yourself to end completely the convenience carb foods that undermine health, provoke weight gain and predispose all of us to sluggishness and depression. Eat as many of the good fats as you like while eliminating sugars and the carbs that turn into sugar when people eat them. What are good fats? Coconut oil, extra virgin olive oil and butter from grass-fed cows. These can strengthen your body, bring you energy you can rely on, and will never make you fat so long as you avoid the life-force draining carbohydrates which still make up the bulk of most people’s meals. These include breads, pastas, potatoes, bagels, cookies, chips, cakes and the rest. Meanwhile, eat lots of good fats If truth be told, we humans have little need for carbs. When our bodies are fed quality proteins, the good fats, green vegetables and low-sugar fruits, their bodies will quite naturally derive any glucose that they need from these foods. By the way, if while your body is adapting to your condensed eating program, you experience light headedness, muscle cramp, fatigue, or grumpiness along the way, make sure you increase the amount of sea salt or Himalayan salt (not ordinary table salt please) that you are using on your foods. LESLIE’S RECIPES Let me now share with you some of my own favorite recipes that are good for any meal spacing program. I hope you enjoy them. When it comes to radiant wellbeing, nothing carries the power of fresh raw foods. Not only are they higher in essential nutrients than their cooked counterparts, the quality of the phytochemicals they contain is the best in the world. Contrary to what a lot of people think, raw fruits and vegetables are easy to digest. Each fruit or vegetable carries within it the exact enzymes necessary for us to digest it fully and efficiently. Bircher Muesli serves 1 This recipe, which is great for either of your meals, calls for an apple. But you can use almost any fruit. Berries work very well. The recipe serves one, but can just as easily be made for twelve. This particular form of muesli is dairy-free. If you prefer to use dairy products, try plain unsweetened cow’s yoghurt, or sheep or goat’s yoghurt if you have a problem with cow’s milk. What You Need 2 tablespoons grated fresh coconut (if you are buying coconut commercially, make sure it contains no sugar) handful of raisins, soaked overnight 1 apple, grated or chopped juice of ½ lemon 3 tablespoons coconut milk or sheep or goat’s yoghurt ¼ teaspoon powdered cinnamon or grated fresh ginger Here’s How Mix together the coconut and raisins and combine this mixture with berries or a grated or chopped apple, lemon juice and the coconut milk or yoghurt. Sprinkle with cinnamon or ginger. Serve immediately. Vanilla Nutmeg Smoothie Serves 1 This meal-in-an-instant is surprisingly filling and the vanilla makes it a warming drink, despite being made with ice! You can make the smoothie with or without the egg. If you do use the egg, make sure it is free-range and organic. Use only the best whey (see recommendations below). Most of what you find out there is junk. Don’t touch it. What You Need 6 ice cubes 200ml clean water 1-2 scoops natural or vanilla-flavored micro-filtered whey protein (see resources) 1 free range, organic egg 1 teaspoon vanilla essence (the real thing, no sugar, preferably organic) a pinch of grated nutmeg stevia to taste Here’s How Put all the ingredients into a blender, but blend for no more than 20 seconds as this can change the nature of the whey protein. Sprinkle a little extra grated nutmeg on top and serve immediately. If you like, you can add 1 tablespoon of flaxseeds to this smoothie for a fiber boost. Warm Bacon and Spinach Salad serves 2 I used to live in Wales. This recipe is based on the great Welsh stalwart—spinach. It’s so often cold in Pembrokeshire, so I made this salad a warm one. What You Need 2 tablespoons extra-virgin olive oil 4 oz (100g) naturally cured bacon, cubed 2 tablespoons raw walnuts, broken into small pieces 2 cloves garlic, crushed 1lb/450g spinach leaves 1 tablespoon rice vinegar 2 tablespoons parmesan cheese, finely grated Maldon sea salt or Himalayan salt and freshly ground pepper to taste Here’s How Heat half of the oil in a heavy pan and add the bacon until golden brown and cooked through. Add the garlic and cook for a minute, then add the walnuts, vinegar and the rest of the oil. Throw in the spinach at the last minute, and toss with the other ingredients in the pan until the spinach has begun to wilt. Serve immediately with the grated parmesan on top. Salmon Delight serves 2 This recipe came from a friend—Belinda Hodson. Salmon is such a delightful fish with a unique and delicate flavor. I love this dish because it is easy to prepare and very tasty. The marinade enhances the natural flavors of the fish and the spring onion really gives it its own special zest. What You Need 2 fillets of salmon juice of 4 medium-sized lemons 2 large spring onions pepper and salt 1 dessertspoon of coconut oil zest of 1 lemon plus 2 lemon wedges parsley (for garnish) Maldon sea salt or Himalayan salt and freshly ground pepper to taste Here’s How Finely chop the spring onions and place in a mixing bowl. Add the lemon juice, pepper and salt and blend. Place the salmon fillets into the marinade (flesh-side down) and leave for 45 minutes. Turn the fillets onto the other side and leave for a further 15 minutes. Heat the coconut oil in a frying pan. Drain the fillets and place in the pan, cooking until tender. Serve with parsley garnish. Crudités It may sound completely mad, but when dipping crudités, it matters what shape you cut your vegetables into. Some vegetables want to be sticks, some want to be sliced diagonally into rounds. They simply taste better. Keep your crudités in the fridge in a bowl of cold water with a squeeze of lemon. Here’s a selection of some fruits and vegetables that make good dippers Sticks carrots turnips courgettes/zucchini green and red peppers Slices cucumber white radish beetroot Jerusalem artichoke kohlrabi apples Whole button mushrooms—stalks left on baby carrots young green beans, topped and tailed cauliflower florets spring onions Wedges tomato chicory small lettuce endive Serve them with a good dip. Here are a couple of my favorites: Curried Avocado Dip This dip is great for crudités. I serve it together with a platter of fresh phyto-nutrient filled vegetables such as endive, bulb fennel, crunchy lettuce, celery, slices of red, green, and yellow capsicum and anything else I happen to have around. What You Need 2 large ripe avocados, peeled and cubed 3 cloves of garlic, chopped 3 tbsp of lemon juice 1 tsp of vegetarian broth powder 1/8 tsp of Cajun seasoning Celtic or Maldon sea salt to taste freshly ground black pepper to taste 1 tsp of mild to medium curry powder 1 tbsp of lemon zest Here’s How Add chunks of avocado plus garlic, lemon juice, broth powder and other seasoning to the food processor— everything except the lemon zest. Blend until creamy and add lemon zest and serve. This recipe makes about 1 cup, which will keep up to 3 days in the fridge. Sesame Miso Dipping Sauce What You Need 125 ml of rice wine vinegar Granulated stevia to taste 1 tbsp miso 2 tbsp of sesame seeds, ground in a coffee grinder or food processor 1 garlic clove, crushed Here’s How Combine all the ingredients. Can be served immediately. Cool Cucumber Dip What You Need 1 small cucumber ¾ cup of yoghurt (cow’s, sheep’s or goat’s) squeeze of lemon or dash of vinegar 1 tbsp minced onion Spoonable stevia to taste 1 clove garlic (optional) fresh mint Celtic or Maldon sea salt to taste freshly ground black pepper Here’s How Peel and grate the cucumber, then drain off any excess extra juice (you can use it as a drink). Mix with the yoghurt, lemon juice or vinegar, onion, stevia and garlic. Finely chop a few mint leaves and add. Season and serve in a dish with sprigs of fresh mint. FOLLOWING YOUR NATURE It may surprise you to learn that the eating pattern which you are aiming to create for yourself is what the human body has been genetically programmed to thrive on for hundreds of thousands of years. It can enable you to eat well and plenty of food without suffering any sense of deprivation or hunger once you get accustomed to it. This is the way our hunter gathering ancestors, whose genes we have inherited, lived. They ate and then fasted, depending on when food was available and when it was not. When you get into eating quality protein foods at mealtime along with plenty of good fats like those in the above recipes, luscious green vegetables and low-sugar fruits day by day, you are likely to find yourself going from strength to strength. Your body gets firmer and leaner. Your health improves as vitality steadily grows. Your mind becomes clearer. You look younger and better than you may have done for years and you feel happier with yourself and your life. Try it and see.
