Coffee is the world’s most cherished drink. More than eight billion pounds of it are traded each year. Coffee has belonged to the elite “Food of the Gods” category for centuries. Those that fit into this category, such as chocolate and coffee, have certain things in common—like great intensity. Honor their power by taking them in pure, unadulterated form and small quantities. Provided the products you choose have not been contaminated by poisons and pesticides, they will expand your consciousness while bestowing clarity and joy. But use them carelessly, in too great a quantity and without regard for purity, and they will undermine health and seriously distort your perceptions of reality. These are but a few of the challenges and the rewards foods from the Dark Gods bestows upon us. Once associated with Persians and Arabs, coffee has become so much a part of modern life that most who habitually drink it dread being without it. If you’re going to drink coffee, there are certain things you need to know—such as how to choose the best coffee, how to protect yourself from the ever-increasing contamination from pesticides and herbicides, and about the magnificent mythologies behind this dark, ubiquitous drink. MYTHIC ORIGINS There are wonderful tales about where coffee comes from. An Abyssinian story insists that a goatherd called Kaldi noticed one day that his flock was much friskier when they ate the fruit of a certain glossy green tree. Kaldi decided to try some himself, and experienced a rush of energy. A passing monk noticed the energy and asked where it came from. Kaldi introduced him to the coffee tree. The monk then gathered some beans and took them home for himself. There is truth to the spirit of this tale. Coffee was indeed introduced to the world by monks. Christian monastics believed that the archangel Gabriel was responsible for bringing this fruit to the earth. Meanwhile, Muslims insisted that a banished dervish called Omar, weak from exhaustion, came upon the coffee plant and took its fruit, only to find that his energy flooded back in force. They insist it was he who brought this magnificent food to the world. By the 6th century, coffee trees were being cultivated in what today is known as the Yemen in Arabia. In the beginning, coffee beans were ground and used to make tea. There’s no record of how this practice changed and it became a question of tossing the beans on the fire to benefit from the aromatic alchemical change which takes place when you roast them. The way coffee was first prepared is probably the way the thick, grainy drink we now call Turkish coffee is still prepared—by grinding up the roasted beans, putting them into boiling water and heating the mixture to a boil several times over a flame until it burns down to make a powerful, thick black soup. FORBIDDEN DRINK Coffee, like any other food which has alkaline drug properties and strong effects, has been banned for periods throughout history. In the 16th century it was even forbidden in Mecca. However, the Sultan himself so loved the beverage that he insisted it be made legal again. In the 17th century, the Catholic church did its best to ban coffee throughout Europe. But the Pope, an avid coffee drinker, insisted that this not happen. Not long after, cappuccino was invented. In both France and the United States, by the 17th century, coffee houses began to appear here and there—much in the same spirit in which they still exist throughout the world. They were places where people could meet and talk in an atmosphere of warmth and camaraderie. SEEDS OF REVOLUTION The French historian Michelet in 1789 insisted that the widespread availability of coffee in cafés played a central part in the development of the French revolution. In such places, philosophers and activists gathered to plan the future of France. Even in colonial America, where the first coffee house was opened in Boston in 1670, coffee houses played an active part in the planning for the American revolution. Across the Atlantic, in Turkey, so important was coffee—which had then come to be considered a household staple—that a woman could sue her husband for divorce on the grounds that he was not giving her a fair share of the beverage. Coffee warms us, stimulates us and has a natural diuretic and purgative effect on the body. From the point of view of our creativity and mental functioning, coffee most definitely has something to offer. The cafés in Paris in the 20th century were filled with famous writers, artists, politicians and thinkers who enjoyed the stimulation that coffee can bring; among them Ernest Hemingway, Collette, Jean-Paul Sartre, Picasso and even W.B. Yeats. DANGERS AND TRUTHS Let’s look at dangers first. Research shows that women who drink coffee while eating the typical high-carb diet have a greater risk of breast cancer and bladder cancer, as well as obesity. If you are pregnant or breastfeeding, under no circumstances should you be drinking coffee. Coffee taken during pregnancy increases the rate of birth defects and miscarriages. Most studies into the damaging effects of coffee, however, have been done using readily-available coffee in the market-place, almost all of which is contaminated by plants have have been cultivated using GMO seeds and/or sprayed with an ever-increasing number of herbicides and pesticides which build up to poison the body by interfering with metabolic processes. In so-called developed countries such as Europe and the United States, once an herbicide or pesticide is labelled “dangerous to human health” and made illegal, the chemical companies who produce it then send the banned chemical to third world countries for use there. MUST BE CERTIFIED ORGANIC Coffee is mostly grown in third world countries—in which there are no statutory controls over how much of a specific herbicide or pesticide can be sprayed on crops. As a result, coffee has become one of the most contaminated foods in the world. Personally, I take with a grain of salt some of the negative results of scientific research that’s been done into how damaging coffee is to the human body. I suspect that at least some of the damage may be due not to the caffeine, as is commonly supposed, but to the chemical contamination which most coffee beans now carry. This makes the argument for organic coffee a strong one. Coffee grown organically does not exploit the native peoples who work in the coffee plantations, but rather gives them fair financial remuneration for their work. Certified organic coffee is also free of the chemical dangers in relation to human health. So, when buying coffee, go organic. There is an aesthetic reason for this too. Organic coffees have a finer flavor than the coffees that have been grown with herbicides and pesticides. GOOD NEWS Despite all the warnings about how dangerous coffee is to health—and there is truth in most of them—clean, organic coffee has many benefits to mind and body. It has been prescribed for generations in the treatment of asthma, vertigo, headache, jaundice and even snake bite. A poultice of wet coffee grounds speeds the healing of insect stings and bruises. Coffee enemas are used internally as a strong purgative stimulant both to the bowels and to the liver in the natural treatment of serious illness, including cancer. Reports from several recent studies support positive effects that can be gleaned from using the right kind of coffee in the right amounts. Here are just a few of the recent findings: Japanese researchers have discovered that people who are not regular consumers of coffee experience a 30% increase in capillary flow after drinking 5 ounces of coffee. At Johns Hopkins University researchers reported that 200mg of caffeine in a cup of coffee improves memory for as much as 24 hours. At University of Oslo in Norway, researchers report that coffee has potent anti-inflammatory chemo-protective and anti-aging qualities. A Spanish study published in the International Journal of Sports Nutrition shows that coffee taken before a workout can increase your energy expenditure for up to three hours afterward. ESPRESSO IS KING If you are going to drink coffee, the best kind to go for is certified organic espresso. Espresso, which the uninformed often shun, believing it to be too strong, is most often derived from Coffea arabica. Arabica grows high up on steep mountain slopes. It needs lots of shade and plenty of rainfall to flourish. Its flavor is richer, deeper and more full-bodied than the less expensive Coffea canephora or robusta coffee. Most people still believe that espresso is very high in caffeine. In truth, one shot of 1.5 fl oz. of espresso contains about 64mg of caffeine compared to 95g in the standard 8oz cup of coffee. The dark roasting, on which the flavor of espresso depends, burns off some of the caffeine content. The darker the roast, the less caffeine is present in the coffee. HOW TO MAKE COFFEE WORK FOR YOU There are some important things for you to know if you want to get the best from drinking coffee. It’s essential to adhere to them or you can undermine coffee’s benefits and suffer from its dangers. Here’s the way to go: Drink only certified organic coffee, and make it fair trade. Go for certified organic espresso instead of the conventional cup of java. It is healthiest and boasts the greatest benefits for energy. The darker the roast, the better for wellbeing. Always drink coffee black, in all its intensity, without milk, cream or sweeteners of any kind. 2500 years ago Hippocrates, the father of medicine, pointed out that “All diseases are crises of purification—toxic elimination.”  The entire basis of natural medicine is based on his declaration. If Hippocrates knew the massive onslaught of toxicity that we face today, he would have turned over in his grave.  I don’t think he could have imagined it in his worst nightmare.  100,000 new chemicals In the last 80 years, more than 100,000 new chemicals have turned up in our environment. More than 95% of these have never even been tested. 4000 of them have been added to our foods.  The average child is exposed to 3.5 ounces of these chemicals every day of its life. These dangerous substances are taken into our own bodies as well, in even greater amounts. The average adult now carries more than 700 times the levels of toxic chemicals, heavy metals and pollutants than our grandparents were exposed to. Where do they come from?  From the manufactured fast foods and packaged convenience foods we buy in our supermarkets.  From herbicides and pesticides sprayed on our foods. Never eat the farmed fish. They have been raised on waste products you do not want to take into your body.  Educate your friends, your children to question every advertisement they see on television.  People are smart if you give them a chance. Long before Ayurvedic medicine arrived in the west, I made a journey to hospitals throughout India where it was practiced. I was determined to learn all I could about this remarkable ancient healing tradition. I was bowled over by all the marvelous things I did discover. Near the end of my trip, I arrived at an Ayurvedic Hospital in Kerala—land of the coconuts, in the south of the continent. There, hundreds and hundreds of acres, interspersed with twisting waterways, grow organic coconuts. It was while at this hospital that the doctor’s taught me how coconut oil, rich in health-giving natural properties, can be used to heal a whole body. The protocol they used for this was then known as “oil gargling”—a serious misnomer, for in truth it has nothing to do with gargling. Nowadays, we call it “oil pulling”. It’s important that you know about it, since oil pulling has improved the health of thousands of people including me. GIFTS FROM THE COCONUT It’s the oil of the coconut that wields life-promoting powers. What few people know is that coconut oil is naturally antimicrobial. It’s an efficient destroyer of all sorts of bacteria, viruses and protozoa that damage human health. The oil pulling technique has been used for some 5000 years, not only because it reduces plaque in the mouth, but as a means of healing conditions throughout the whole body—from inflammation, pain in the joints, chronic fatigue, sinusitis, back pain and diabetes, to migraine, PMS, and chronic skin problems. Coconut oil is highly responsive to temperature changes. In a cool room it becomes a solid. But set it in the sunlight or immerse a jar of it in hot water for a few minutes and it will turn into a crystal clear liquid oil. POWERHOUSE OILS There are literally thousands of types of bacteria in the mouth, including Streptococcus mutans—an acid-producing bacterium that is a major cause of tooth decay. During oil pulling, the breaking down of coconut oil by enzymes produces acids which are toxic to these pathogens. Each of these brings its own unique health-promoting support. When you take coconut oil into the body via oil pulling, your system converts one important ingredient, lauric acid, into monolaurin, with its antibacterial, antiviral and antiprotozoal properties. Coconut oil contains the largest amount of lauric acid of any fruit or vegetable on the planet. Monolaurin is a monoglyceride with the ability to destroy negative invaders in the body that have a lipid coating. The lipid-coated viruses and bacteria that it attacks include the HIV virus and the influenza virus as well as a number of other pathogenic bacteria and protozoa. Another ingredient in coconut oil, capric acid, also boasts antimicrobial properties. Finally, coconut oil is about 66% medium chain triglycerides or MCTs. These offer a huge variety of health benefits, including sating appetite and helping to establish ketogenic-adaptation. Oil pulling is believed to reduce plaque by at least 50%. It involves rinsing your mouth with coconut oil, much the way you would use a mouthwash. You put from a teaspoon to a tablespoon of oil in your mouth. Even in its solid form the coconut oil will quickly change into a white liquid as it responds to the heat of the mouth. Then you swish it around your teeth for 20 minutes. A SUPERB DETOX Oil pulling is powerfully detoxifying to the body as a whole. The mouth is home to billions of bacteria, viruses, fungi and other parasites and other toxins which undermine health and can trigger disease. It is these beasties and their toxic waste products that create gum disease and tooth decay. They are then passed on to the rest of the body. The immune system is constantly fighting off these pathogens. When we become overloaded from excessive stress, poor diet, or environmental toxins, they leak into the whole system and can create secondary infections, as well as a wide variety of other health issues. Pathogenic oral bacteria, and the toxins that they produce, harm far more than just your mouth. They circulate through the bloodstream and are carried all over the body. Protect the health of the heart. Foster healthy metabolism. Even help counter diabetes. MY OWN EXPERIENCE I began doing coconut oil pulling out of frustration with leaking root canals in my mouth. Many years ago—trusting my dentist—I foolishly agreed to allow root canals to be carried out for four of my teeth. This is something I would never do now. Why? Because, although most dentists continue to deny this, virtually all root canals eventually leak. As they leak, they pour poison into your mouth and the rest of your body. This is why the hygienist asks you before she begins her work if you have any heart conditions. So virulent can be the poisons produced by a leaking root canal that they destroy the gums, give you bad breath and make you highly susceptible to illness. (No hygienist wants you to die of a heart condition in her chair while she is cleaning your teeth!) When I discovered that my own root canals were leaking, I started to do a lot of research into the subject. I must have read at least four dozen papers on root canals and their problems. My dentist looked at me and said “We just need to remove the leaking root canals out and put in new ones”. Well thank you very much—but I did not want to go through that again and have the next root canals leak even more health-destroying poisons into my body. I figured I had to do something to help myself. I remembered oil pulling and began to use it twice each day for 20 minutes. Within a few days, wonderful things started to occur. I had, for a long time, been experiencing pressure and discomfort in my cheeks—not exactly sinusitis, but something that I was certain shouldn’t have been there. This disappeared within a week. Meanwhile, I had also been experiencing pain in my legs as a result of five serious accidents which had damaged my lower body. That too began to get better. LIFELONG BENEFITS At this point, I realized that I was on to something pretty amazing. I asked other people about their own experience with oil pulling. Some told me that their asthma had cleared up; so had their chronic fatigue, migraines, PMS and skin problems. What appears to happen when you practice this technique is the coconut oil detoxifies and cleanses the body, promoting the release of toxins encouraging the body to heal itself. I continued to do my oil pulling for perhaps eight months, after which my teeth were whiter, my breath was fresh and my tongue and gums had a healthy pink color to them. I was so pleased that I figured “I probably don’t need to do oil pulling any more”. So I stopped. After about three months, I realized that I was getting some slight swelling in my mouth. So I resumed oil pulling and have continued ever since. I actually enjoy it. I love the fresh, strong feel of my gums and teeth after finishing it. HOW TO DO COCONUT OIL PULLING The practice consists of swishing coconut oil in the mouth, working and pulling it, and drawing it through the teeth. You’ll need a container of organic raw coconut oil that is natural and has not had any fragrance taken out of it. Put a teaspoon to a tablespoon of oil in your mouth. It will probably be in its solid state. But it will melt as soon as you get it in your mouth. Swish the oil around in your mouth for around 15 to 20 minutes. Then spit it out completely. Finally, brush your teeth. You must NEVER swallow the oil. By the time you’ve done the oil pulling exercise each time, the oil will have become loaded with bacteria, toxins and mucus. You must spit it out. There are a couple of good books I can recommend if you want to learn more. WHEN YOU NEED HELP What fascinates me is the way specific combinations of fruits and vegetable juices have specific therapeutic properties to offer help with common issues that we struggle with—from hair loss and insomnia to depression and prostrate trouble. Let me share with you a few juice recipes designed to help some common challenges. CLEAR FATIGUE One of the underlying causes of fatigue, particularly in women, can be iron depletion. Spinach juice is a far better way of boosting iron levels than taking tablets, which tend to be constipating and are poorly absorbed. The iron in natural foods and juices, including all our green leafy vegetables as well as in poultry, liver and molasses, is highly bio-available. This means your body has no trouble making use of it. Remember that replenishing the body’s essential nutrients takes time, so be prepared to work with organic foods and juices for several weeks before you start to see lasting results. Magnesium is another important mineral when it comes to fatigue. Low intracellular magnesium makes the body very prone to infection, food allergies and chronic illness. Good sources of magnesium are dark green vegetables, seaweeds, molasses, fish and organic raw nuts. DANDELION PLUS 4 or 5 carrots A handful of dandelion leaves 1 bulb fennel Juice as usual, then squeeze a tablespoon of lemon juice to the mixture. GREEN ZINGER 2 leaves kale or beetroot tops or a handful of spinach 4 or 5 carrots A small handful of parsley HI MAG 4-5 carrots 2 florets of broccoli 2 leaves dandelion, beetroot tops, spinach or kale Juice and season with a twist of lemon and a pinch of salt. HANGOVERS There is an art to hangover management. The key to it is looking at detoxification as the other side of the intoxication coin. All drugs provoke a strongly acidic reaction in the body, which causes the symptoms of a hangover, and the first step to recovery is to correct the body's chemical imbalance. Plain old carrot and apple juice is effective for re-balancing, and it's easy to take when you're feeling weak. By incorporating beetroot juice, you will greatly assist the repair of any possible damage done to your liver and kidneys. The inevitable consequence of over-indulgence is waking up dehydrated and nauseous, with a brain that feels like it’s banging against the side of your head each time you move. You need to replenish bodily fluids, nourish exhausted muscles and get your head together. Fruit juice is strongly indicated. Citrus juices, being full of natural sugar vitamin C, are an immediately effective remedy, but they may be a bit harsh if your stomach is delicate. Watermelon, being exceptionally mild, is an ideal substitute if you happen to have some. APPLES & PEARS Apples and pears are closely related. They make a sublime combination when juiced together. 2 pears 2 whole apples Juice as usual and drink straight away as this juice oxidizes very quickly. VIRGIN MARY A Bloody Mary without the vodka, the flavor of this refreshing tomato-based cocktail benefits from a few drops of Tabasco. (Add a clove of garlic and it becomes a Vampire Mary; a fresh jalapeno or other hot green chili pepper turns it into a Scary Mary.) 2 ripe tomatoes 2 carrots 1/2 a beetroot 1 stalk celery 1 cucumber BERRY MELON Berries combine well with melons. The array of flavors gives lots of scope for experimentation. Try Cantelope & Raspberry, Honeydew & Blackberry or the classic Watermelon & Strawberry: 1 slice of watermelon, 3cm wide and cut into chunks to fit your juicer 6 strawberries, washed and with their green stalks removed (In hot weather, a good tip is to freeze your berries before juicing them.) HAIR LOSS You may have been genetically programmed to lose hair, but that doesn't mean it has to happen. There’s a great deal you can do to prevent hair loss, to slow it down dramatically, and in many cases to stop it altogether. Eat foods that are rich in the sulfur amino acids, L-methionine and L-cysteine. Eggs are a wonderful source so devour them with enthusiasm. When it comes to protection from hair loss, cabbage is a real help too. You must also cut out the foods that work against you stopping and eliminating hair loss. Sugar in any form is a killer. Stop eating it altogether. Use a good tasting real stevia in its place. So are the grains and cereals—breads, biscuits and pasta. Eat foods rich in PABA, inositol and choline, such as organic liver, spinach, grapefruit, and raw nuts. Consider adding vacuum-packed flax seeds to your diet. You can grind them in a coffee grinder and sprinkle them on salads or soups. You can also add them to your juices. Finally, the alfalfa has long been believed to stimulate hair growth, particularly in its sprouted form. ALFALFA—FATHER OF ALL JUICES The word alfalfa means ‘father of all grains’ and when it comes to hair health you can't do better than alfalfa sprouts and carrot juice. 4-5 carrots 1 cup alfalfa sprouts Optional: chopped parsley Juice as usual, top with some chopped parsley and drink. Faux Grains Are Fabulous - Amaranth, Buckwheat, Millet, Quinoa, Wild Rice

Eating cereals, grains and packaged foods distorts hormonal regulation and interferes with the body’s ability to maintain its functions within a normal range. These foods wreak havoc with insulin and blood sugar levels, produce peaks and troughs of energy, cause cravings, create chronic fatigue, weight gain and a myriad of other problems, including brain fog and depression. Independent studies confirm all this and more. What’s the alternative? The answer is simple. Replace them with FAUX GRAINS so health and vitality can soar. WHAT ARE FAUX GRAINS? As yet few people have even heard of faux grains—also known as pseudo-grains. These are seeds and grasses which for generations have been mistakenly labeled grains. Grains they are not. They are completely different. High in protein and fiber but low-glycemic compared to grains, they are full of vitamins and minerals including magnesium, iron and calcium. Far easier to digest and assimilate than grains, they are also gluten-free and alkaline-forming when we eat them. Try adding them to your diet. Amaranth Buckwheat Millet Quinoa Wild rice We’ll look at some more of the benefits that come from using each of these amazing foods in a moment. But first it’s important that you know about the grains you will benefit from eliminating from your life, and why. BAD INFORMATION Most people—including those who believe they are eating a “healthy diet”—are amazed to learn that the common grains we eat, which form the base of convenience foods, play a major role in the development of diabetes, coronary heart disease and a myriad of other degenerative conditions. For more than half a century food manufacturers, intent on making profit, have been producing a great variety of palatable “foods” by fragmenting and reducing raw material foodstuffs—grains and fats and sugars—to simple “nuts and bolts” ingredients. These nuts and bolts are then whipped up into the manipulated convenience foods that fill supermarket shelves—from ready-to-eat meals to candy bars, cakes, breads, and cereals—in short, the stuff that makes up some 75% of what the average person eats. Eating these foods and or the grains they contain encourages rapid aging. Eat a diet full of grains and cereals, and your body gets busy fabricating wrinkles, sags, a puffy face and a lackluster complexion. Then you wonder why it appears to be aging so quickly. Also, as a result of the chronic high blood sugar and insulin resistance which develops from eating grains and cereals, you can end up muddle-minded, depressed and lacking in the energy to change any of this. DUMP THE GRAINS Here is a short list of grains you benefit from avoiding: Barley Bulgar (cracked wheat) Corn and Popcorn Oats Rice Rye Sorghum Spelt (which is an older form of wheat) Wheat (which includes emmer, farro, einkorn, durum and kamut) There are numerous reasons to get rid of these grains from the meals you eat. Here’s an aide memoir: The vast majority of grains cause inflammation. Causes weight gain, sugar issues, food cravings, and predisposes you to diabetes. Grains are significant contributors to the development of chronic diseases including heart disease, cancer, arthritis, depression and rapid aging. 95% of corn and soy grains throughout the world are genetically modified. It is virtually impossible to tell if you are buying drinks or foods that contain GMO soy and corn. This is because neither the grains themselves nor the convenience foods which contain them are marked as such. Under no circumstances do you want to put any GMO food into your body. Nowadays, most grains are badly grown and processed, so that whatever nutritional value they once contained is now vastly diminished. A large part of the 21st Century population are gluten intolerant. Gluten is a protein not only found in wheat but the majority of other common grains, whether or not they have been highly processed. Many still believe that gluten only is only present in wheat. In truth it is also present in many other grains as well. These are but a few reasons to seriously minimize or completely eliminate grains, cereals, and convenience foods from your life. Most people who do are surprised to by how much better they feel. Many shed excess weight and in the process develop a spontaneous desire to increase the quantity of fiber-rich fresh raw vegetables in their diet. They report renewed vitality and wellbeing. They are able to control their weight without having to restrict the quantity of food they eat. To anybody who has conscientiously fought—and too often lost—the battle of the bulge, this can seem like a miracle. In truth, it’s no miracle. All this comes as a result of the metabolic rebalance which takes place by turning away from convenience foods, sugars and grains, and replacing them with nourishing seeds and grasses. SEEDS AND GRASSES RULE Amaranth This seed, which you can even sprout if you want to, comes from a Central American plant rich in potassium, phosphorous and vitamins A, E, and C. It has a light peppery flavor and mixes well with other pseudo-grains. Relatively high in protein, it’s blessed with natural essential oils and it is a great source of the amino acid lysine, which is not abundant in most plant foods. You can make delicious porridge from amaranth. It also works well with foods that have a strong flavor, such as chocolate. Use 1 part amaranth seeds to 3 to 6 parts water. Bring water to a boil, then add the seeds and gently simmer for 15 to 20 minutes. Gradually amaranth thickens the liquid. When cooked, rinse the amaranth and let it drain. Use it in stews and soups, or add some butter and stevia and serve as a delicious and satisfying breakfast. Buckwheat One of the most ancient of all the seeds and grasses, buckwheat has nourished humans for 10,000 years. Do not be deceived by its name. It has no relation to wheat itself, and is not a grain but a broadleaf plant in the same family as sorrel and rhubarb. In Russia they call it Kasha and use it instead of rice. Buckwheat is great for making everything from soba noodles to light-as-air pancakes, muffins and breads. It is full of magnesium and potassium and it has a distinctly nut-like taste. The buckwheat seed is triangular in shape with a protective hull which is most often taken off when it’s milled. Millet This tiny seed which we feed to birds is full of magnesium, manganese, copper, calcium, tryptophan, phosphorous, B vitamins and antioxidants. It makes creamy-like “mashed potatoes” as well as “fluffy rice”, and couscous. Millet is a particularly delicious seed, which many still think of as a grain, with masses of health benefits. Use 2 to 3 parts water to 1 part millet. Boil water, add grain and gently boil for 35 to 40 minutes. You can also "toast" millet in a hot pan before boiling to get a nuttier flavor. Quinoa Pronounced KEEN-wa, a sacred staple of the Incan empire, quinoa is a powerhouse of nutritional goodness. It boasts eight essential amino acids, B complex vitamins, phosphorous, iron, calcium and Vitamin A. More delicate in flavor than some of the other seeds and grasses, it’s great for stews, pilafs, salads and breads. You can toast quinoa flour by spreading it onto a baking sheet and putting it into a high oven for half an hour stirring occasionally. It turns a dark golden color and smells wonderful. Quinoa cooks in just 15 minutes. Use 2 parts water to 1 part quinoa. Use quinoa instead of bulgar to make tabbouleh. It’s a great substitute for rice and rice pudding. Wild Rice Not a true member of the rice family, wild rice is an aquatic grass with edible seeds. It grows in cold-weather country and is very high in protein. It’s one of my personal favorite foods. It was once a staple of Native Americans from the Algonquin to the Soux. I was first introduced to wild rice by my mother, who was part American Indian. It has a distinctive nutty flavor, chewy texture and contains almost twice as much protein and fiber as does brown rice. Like many of the seeds and grasses, wild rice is relatively low in calories. It is also easy to cook the same as you would ordinary rice, and wonderful served with chicken, fish, or curry. THE WAY AHEAD Eliminating wheat, maize, sugars, starches and sweets from your diet, and drastically reducing or cutting out the other grains and cereals, transforms the biochemistry of your body, restores energy and wipes out cravings for alcohol, drugs and sweets. It helps the body grow leaner and stronger, then supports it to stay that way. Although as yet little known these delicious grasses and seeds—are important for everyone, even young children. They're naturally high in fiber and filling to eat. And, when eaten regularly, they help reduce the risk of heart disease and diabetes—even certain cancers.

Depression can be a killer. I know. I suffered from it badly in my early twenties. I suspect I was born with a genetic tendency towards it. I am familiar with the deep sadness, feelings of shame and helplessness, the terrible fatigue coupled with not being able to sleep to relieve it, the poor concentration and strange shifts in appetite. I have learned a lot about handling it over the years. There are many causes of depression—some are of the body, and some of the psyche. I don’t think you can separate the two. Just as body and mind feed each other in producing the dark, seemingly endless blues which can set in at any period of your life, the herbs you call on for help will improve both body and spirit. When you feel depressed, you can feel anxious as well. Many of the plants which are effective in lifting the blues help to clear fear and anxiety too. Cleanse Body And Soul Where you find depression, you almost always find a mass of creative energy which, for one reason or another, has remained blocked. This can make you feel impotent and helpless. You also often find a tendency to live life by other people’s rules rather than your own—from the depths of your own soul. Indeed, if depression is deep and debilitating enough, you may even come to feel you have no soul to live from. Deep-cleansing the body is important in releasing blocked creative energy and restoring the biochemical balance that helps wash away the blues. Use the Herbal Cleanse. It was just such a diet—one in which at least 50-75% of the foods I ate were raw—that began to lift my own deep depression in my twenties. Sacred Plants Then, turn your attention to herbs and discover just how useful they can be to rebalance brain chemistry, strengthen the body and clear the mind. Then call on the healing powers of some of the best plant-based antidepressants you can find, from St John’s Wort, rosemary and California poppy, to the gorgeous ginkgo. Ginkgo Clears Cobwebs The beautiful leaves from ginkgo biloba—also known as the Maidenhair tree—improve circulation throughout the body and brain. Ginkgo’s seeds were sent to Europe in the 1720s from Japan and China. The Chinese use the ginkgo seeds, but research in the West has mostly concentrated on the leaves. They contain ginkgolides, unknown in any other plant. These phytochemicals block blood platelet activating factors. In doing so, they inhibit all sorts of allergic responses. Meanwhile, ginkgo’s flavonoids do wonders to improve circulation to the brain. Recent studies show that this long-standing Oriental gift can help people clear depression. Ginkgo increases the rate at which information is transmitted at the level of nerve cells. This helps depression in many, thanks to the plant’s ability to enhance the flow of neurotransmitters in the brain. An effective antidepressant dose in one study where ginkgo was used to specifically counter depression was 240 milligrams of the powdered herb a day, in capsule form. It can take six to eight weeks to experience the full effects of ginkgo. So be patient. California Bright Lights Its watery sap has long been used by Native Americans to relieve toothache. It relieves pain, relaxes spasms and warms your body. California poppy is the best anxiety-calming herb I know and it works quickly—in a few hours. Don’t worry, it is not a narcotic, only a gentle sedative and tranquillizer so safe that herbalists give it to children. Neither does it depress the central nervous system as many sedatives do. The usual dose of tincture is 1 teaspoon to half a glass of water taken twice a day in the afternoon and evening. I like to combine tincture of golden California poppy, Eschscholzia californica, with that of St John’s Wort—in equal parts—to lift the blues. Bright As Sunlight The yellow flowers and dancing leaves of St John’s Wort—Hypericum perforatum—can bring balance and joy. This plant may be slow to act, but its effects are deep and long lasting. St John’s Wort is nature’s answer to Prozac. Every part of this joyous herb yields uplifting power—its leaves, its shoots, its glorious yellow flowers. Even the way it grows seems to celebrate life. St John’s Wort can banish anxiety, bring light into the dark depths of depression, and help transform difficult times—the loss of a job, of a lover, or of sense of purpose—into times of power. In the past 20 years, dozens of randomized clinical trials have shown that this plant is just as, if not more, effective than standard antidepressant drugs. Yet it comes without the negative side effects. In Germany alone, 1 million prescriptions are written for this plant each year. The bright yellow flowers of St John’s Wort contain a red oil called hypericin, which is anti-viral and probably mood enhancing. Many studies show that it is whole plant extracts, however, rather than hypericin alone that have the best antidepressant effects. Help From St John's Wort To make tea, use 1 teaspoon of the dried herb in a cup of boiling water. Steep for 10-15 minutes, strain, and drink 1 to 3 times a day. Another effective way to use St John’s Wort for depression is as a tincture. When you feel at your lowest you don’t have to go to the trouble of making a tea. Take 1 teaspoon of St John’s Wort tincture in a little water 3 times a day. When used as an antidepressant it should be taken for at least a month before results can be seen. A lucky few people, however, respond right away. Caution: In a few people St John’s Wort causes mild nausea, stomach-ache, depressed appetite, tiredness, and in even fewer still, sensitivity to sunlight. It shouldn’t be taken during pregnancy. If you are already taking antidepressant drugs do not stop taking your medication without consulting your doctor. Lift Your Spirit Tea Rosmarinus officinalis grows just about everywhere. Who would ever suspect that the rosemary plant is one of the most useful herbs you will ever find for lifting the blues. The strong and sturdy plant is an excellent tonic as well as an all-round stimulant. It raises spirits and energizes the body, clearing apathy, nervous exhaustion and digestive disturbances. Rosemary has a long-standing reputation for strengthening the memory as well. That’s why Greek scholars wore garlands of rosemary when taking exams. It is also rejuvenating, in no small part thanks to the flavonoid diosmin which it boasts in abundance, to strengthen capillaries and collagen in the skin. In the 14th century, 72 year-old Izabella, Queen of Hungary, was crippled with rheumatism. She used masses of Hungary Water (rosemary leaves macerated in alcohol) and regained her youth so well that the king of Poland proposed to her. One of the first to be distilled, a few drops of essential oil of rosemary in the bath can help clear a fuzzy head with ease. You can use the fresh leaves or the essential oil in steam inhalations for exhaustion and shattered nerves. Meanwhile, simple rosemary tea is bracing and wonderfully uplifting. Spirit Lifting Tea Put a handful of rosemary leaves (1 tablespoon of the fresh herb or 1 teaspoon of the dried herb per cup) into a warmed pot and pour boiling water over them. Replace the lid to prevent the aromatic vapors from being wasted. Leave to brew for five minutes. Drink hot. Could something as insignificant as the tiny blueberry offer powerful protection and healing for your body? It can—and probably in ways that you’ve never dreamed possible. Rich in manganese, phytonutrients, fiber and vitamin C, blueberries are one of the most powerful antioxidants in the plant kingdom. They offer extraordinary anti-inflammatory and anti-cancer properties. They may even help combat diabetes. This was first discovered way back in 1927, when it was found that taking a specific extract of blueberry can significantly slash blood sugar levels. These findings were largely ignored by mainstream medicine. The editorial board on the Journal of the American Medical Association—America’s most revered medical journal—argued that this had to be impossible. They claimed that such extracts could never be standardized. Now, thanks to investigations by independent Life Extension scientists, you can buy an inexpensive, specific blueberry extract, further enhanced with pomegranate, which works wonders. Blueberries are not bilberries. It’s important that you know the difference. Both berries belong to the Heath family of plants, which include rhododendron, American laurel, and broom. The difference between them comes in the size of their seeds, and their skin. Bilberries have been grown all over northern Europe since the 16th century. Unlike blueberries, bilberries are acidic in flavor. These dark blueish-purple berries have long been popular in Sweden. Blueberries (their botanical name is Vaccinium corymbosum or Vaccinium angustifolium) tend to be hybrids of three native American species. They are up to four times larger than bilberries, and they’re pleasingly sweet. Most commercially cultivated blueberries are grown in North America and New Zealand, as well as to some degree in parts of Western Europe. When researchers analyzed vegetables and fruits to determine their antioxidant capacities, blueberries came high on the list. They can destroy free radicals, combat oxidative stress, help maintain healthy blood flow, healthy LDL and blood pressure levels. Blueberry extract, when combined with other natural berry components, may even help prevent and clear bladder infections by blocking bacteria from attaching to the walls of the bladder. In 2005, researchers discovered that the polyphenols which a specific blueberry extract contains can reverse both motor defects and cognitive defects which can develop as your body ages. Polyphenols are natural plant molecules with potent antioxidant capabilities. According to the Pennington Biomedical Research Center, it is the multi-leveled range of polyphenols that brings blueberries their anti-cancer, anti-inflammatory and antioxidant properties. Blueberry extract also triggers neurogenesis—by stimulating nerve supply and adaptability in the part of the brain primarily affected by Alzheimer’s disease—the hippocampus. SUPER NUTRIENTS Although it’s spelled “kwin-OH-a” you pronounce quinoa’s name as “KEEN-wa”. It has been a staple of South American diets for an amazing 4000 years. But not until 50 years ago did curious scientists start to investigate the nature of this food and discover that it comes as close as any other in the plant kingdom to supplying a vast array of the essential nutrients we humans need to thrive. This seed is high in magnesium to calm the body and reduce blood pressure. It brings you an abundance of good quality fiber when you eat it. Quinoa also contains a lot of anti-inflammatory compounds. It is safe to eat even if you have delicate digestion, inflammatory bowel trouble, celiac disease or gluten intolerance. And it’s brimming with important minerals and vitamins from magnesium, zinc and phosphorous to vitamin E, thiamin, riboflavin, vitamin B6 and folate. This makes quinoa an excellent choice for people savvy enough to go for foods that are low on the glycemic index, low-carb dieters, vegans, and all of us who need to increase our fiber intake. THE NEW FUNCTIONAL FOOD Studies continue to report that eating quinoa brings us all sorts of health-promoting effects. It can help reduce high blood pressure, alleviate cardiovascular troubles, promote cellular energy production and act as a pre-biotic. Thanks to its high level of bio-active compounds, many also believe this unique natural food has the potential to help lower the risk of cancer, diabetes, and heart conditions. At the University of Milan, researchers discovered it also satisfies your appetite far better than, say, wheat or rice. It promotes a sense of fullness, helping to alleviate your desire for more food and helping to halt weight gain. The seeds of quinoa can also help reduce most of the negative effects that come from fructose on your lipid profile and glucose level. To discover what this wonderful non-grain can do for you, you need to know how to prepare and use it in your life. After all, the proof of any pudding is in the eating. And there is an art to preparing it. HERE’S HOW Make sure the quinoa you buy is fresh and organic. Most of the stuff in supermarkets is neither, so shop in good, reliable organic food stores. Read labels carefully to check for both before you buy. Stale quinoa is dusty and can taste “dead” since it has lost so much of its goodness through food processing or just sitting on shelves for too long. Rinse it well Do not be tempted to skip this direction. You must wash away the thin coating on these tiny seeds, otherwise they will taste bitter. You will need a very fine-meshed strainer so that the little seeds don’t slip through it in the process. Hold it under streaming water for two minutes while swirling around its contents. Time to Cook To 1 cup of your rinsed seeds add two cups of water, a pinch or two of sea salt or Himalayan salt, then bring to a boil. Reduce the heat as much as possible and let it simmer until it becomes tender. This usually takes about 15 minutes. You’ll be able to tell when it is cooked because the tiny grains will have become translucent and the germ of each seed will show up as a little spiral on its surface. You do not want to overcook it as this will make it mushy. Drain it Remove from heat and drain it using the same fine-mesh strainer. Then put the drained quinoa back in the pot, cover it and let it sit without any heat for another 15 minutes. This helps dry it a bit so it does not become clumpy. Time to serve Aerate it with a fork. It should look light and feel fluffy, and you should begin to see the way the germ is separating from the seed itself. Its texture is very much like that of rice or couscous. Serve immediately You can eat it as a porridge with a handsome glob of butter on top, add it to a casserole, a curry, or the way you might serve rice on a plate with other vegetables.
