Vegetarian Truths And Secrets

For ten years I was a vegetarian—a way of eating for which I have the highest respect. My vegetarian diet, at times even vegan, helped my body heal damage that had been done to it when I was a kid. I had been raised on junk food before junk food as we know it today even existed: I was never breastfed. I survived on pasteurized cow’s milk mixed with corn syrup, then as soon as I could wield a spoon, Rice Krispies smothered in sugar. Then I feasted on greasy eggs and white toast in truck driver cafés, usually at 5am. For my father was a jazz musician. I traveled with him from one gig to the next from the time I was 4 or 5 years old, not attending school, often covering 200 or 300 miles a day to get to the next job. As a result I was never well. So, in my early twenties, while living in Paris with my three children, I went looking for health help. And I found it. FUNDAMENTAL RESEARCH I researched the work of gifted British doctor Sir Robert McCarrison, who initiated the first epidemiological investigations into the relationship between diet and the development of disease. I investigated the theories and practices of Max Bircher-Benner MD, creator of the world famous Bircher-Benner clinic in Zürich. There, for almost a century, people suffering from chronic degenerative conditions went to have their lives transformed by changing the way they lived and ate. Bircher-Benner’s work had changed the eating habits of hundreds of thousands by the end of the 19th century, by teaching people to eliminate white bread and meat, and to eat a balanced diet of raw vegetables, fruits and nuts. I was fortunate enough several times to visit the clinic which, for 40 years after his death in 1939, was run by his niece—the charismatic Dagmar Liechti-von Brasch MD. She and I became good friends. At the clinic I learned the principles of good vegetarian eating from Bircher-Benner’s son, Ralph, whose job it was to look after the publications that flowed forth from the clinic and were printed in many languages throughout the world. I learned about the powers of natural healing, then put them into practice, changing my own life and improving the lives of my children as they grew up. DIGGING DEEP Meanwhile, I read many books and papers, listened to dozens of lectures from physicians and scientists, and interviewed scores of doctors personally who were involved in the new exciting field of lifestyle medicine. I was impressed by their work and by the work of many others including Dean Ornish MD, director of the Preventative Medicine Research Institute in Sausalito, California. Ornish and his colleagues went so far as to measure the effect of comprehensive lifestyle changes on patients with coronary artery disease. These patients were introduced to a meat, fish and poultry-free, ultra-low-fat vegetarian diet of fruits, vegetables, grains, and legumes, coupled with stress management sessions and regular exercise. By the end of a year, over 80% of the patients had experienced regression of their arterial fatty deposits without the use of drugs. During the same year, the control groups of patients, who had no lifestyle intervention, experienced a substantial progression of their illness. Change a person's way of eating and alter their lifestyle, and you can not only largely prevent degenerative conditions, of which overweight is a major one: you can even reverse degeneration after it has occurred. Certainly, a well-designed vegetarian way of eating can play a major role in the process. HERE’S THE RUB Given the surprising benefits that many people—including myself—have experienced from a properly constituted vegetarian way of eating coupled with lifestyle change, why, then, do so many devout vegetarians eventually become ill, obese and disillusioned with this way of eating? The answer to this is likely to surprise you, since so little has been written about it. I have written a lot about Paleolithic man’s way of eating, our genetic inheritance from him and how important it is that, in choosing the foods we eat, we respect this genetic inheritance for the sake of our health, our mental strength and emotional wellbeing. As you know, until the agricultural revolution took place, Paleolithic man was primarily a hunter. He killed his food—be it animal, insect or fish—then gathered whatever plants, nuts, fruits and vegetables were available to him. He ate mostly fat and protein. He would go for long periods between kills, living off his own fat stores. His body handled the processing of the foods he ate primarily in a ketogenic manner—relying on fats, not glucose, to supply him with energy. ENTER THE GATHERERS At the same time, and after the agricultural revolution began, a large number of people became primarily gatherers. The gatherers got most of their nourishment from what grew out of the ground in the form of fruits and vegetables, herbs, nuts and seeds, most of which they ate fresh and raw. Unlike the hunters, who derived their energy from fats, gatherers relied on glucose from their foods to supply their energy. The early gatherers were vegans. Only when man began to domesticate animals and birds so that eggs and milk were available did some of these vegans become vegetarians. To this day, both vegan and vegetarian diets are practiced in certain cultures throughout the world. Some contemporary vegans and vegetarians stay healthy. But it is common knowledge that more and more these days develop deficiency diseases, experience rapid aging and end up with serious chronic diseases. Why? DANGEROUS CONVENIENCE Because the foods most vegetarians and vegans eat now are a far cry from those that our original gatherers collected and consumed. Like more than 90% of today’s omnivores, the majority of vegetarians and vegans have now come to live on denatured, processed convenience foods. Such foods are just as dangerous to vegans and vegetarians as they are to the rest of humanity. Yet the majority of vegetarians and vegans remain completely ignorant of this. They still think that, by not eating animal products, they are protected from all the chronic illnesses that now plague humanity. What’s worse, for a few of these people, vegetarianism has become a religion—a source of self-righteous congratulation which they ignorantly assume sets them above the rest of us human beings. Here’s the secret and bottom line: If you want to thrive as a vegan or vegetarian, you will need to fashion your way of eating as close as humanly possible to the way our gatherer ancestors did. This means saying no to convenience foods. It also means becoming savvy about how to get enough of the nutrients that are low in vegetarian and vegan diets, and making sure you supplement your diet with them. FOLLOW THE GATHERERS When it comes to spring-cleaning the body, following a vegan or vegetarian diet for a period of time can be a great help. This is how Bircher-Benner and the other great physicians who worked with high-raw diets were able to work their healing wonders. BUT... If you decide to follow a vegan or vegetarian way of eating long-term, you must eat as your gatherer ancestors did. I see serious health problems in some vegetarians and vegans I mentor on our Cura Romana programs—yeast overgrowth, cancers, hypothyroidism, diabetes, leaky gut syndrome, anemia, food cravings, and chronic fatigue to mention only a few. Some people cannot manage a vegetarian diet because of enzyme deficiencies. Others have food sensitivities to grains and cereals or milk products, but do not know it because, like almost 99% of non-vegetarians, they are eating masses of convenience foods which none of our bodies can handle. HOW TO BE A HEALTHY VEGETARIAN Stop eating manufactured foods and processed foods, be they cookies, cakes, crackers, soft drinks, packaged salad dressings and other ready-in-a-minute packaged foods. Replace sugar in all its forms with good quality, pure stevia for sweetening. Avoid all chemical sweeteners. Stay away from anything containing high-fructose corn syrup. Read labels carefully. Never drink sodas or diet sodas. Forsake all “white foods” such as white flour, all products made from it, and white rice. Eat only free range and organic eggs. Buy or grow organic vegetables and fruits. Eat your fruits and vegetables in their fresh raw state as often as possible. Use no food additives such as MSG, hydrolyzed vegetable protein or aspartame. They are full of neurotoxins. Avoid all processed vegetable oils made from corn, soy, canola, cottonseed or safflower. Choose only natural oils such as coconut, extra virgin olive oil and butter from grass fed cows. Never drink fluoridated water. Avoid rancid nuts and grains which you find in granolas and elsewhere, as they block mineral absorption and impair good digestion. Never eat sprayed, waxed, irradiated fruits and vegetables or GMO foods—particularly GMO or non-organic soy. Take only food-state supplements, never chemically-made vitamins. Make sure you supplement any vegan or vegetarian way of eating with extra zinc, vitamin B3, iodine, omega-3 oils and vitamin B12. Foods Of Power

The word protein literally means “primary substance.” It’s an appropriate name. For every tissue in the body, from brain to little fingernail, is built of and repaired by protein. Amino acids, the building blocks of protein, are central factors in most body processes too. They make antibodies against infection, create hormones and ensure you have enough haemoglobin in your red blood cells. Every enzyme has protein as its basic component. This is why we need good quality, clean protein from eggs, nuts, and organic, fermented, soy products if you are vegetarian. If you are not vegetarian, then fresh fish gleaned from clean waters, organic poultry, wild game, and organic meat from animals free to graze is ideal. THE ANIMAL QUESTION Whether we like it or not, the highest quality protein is animal-based. And the most important nutritional feature of both meat and fish is their cellular structure. For it is very similar to our own. Nutrients we absorb from animal proteins are easily transformed into our own tissue and blood. Even small amounts of top quality animal protein can be enormously strengthening to anyone deficient in strength and energy. In addition to being the best power foods available, all good quality animal protein boasts an abundance of minerals and trace minerals. SHUN FACTORY FARMING Not only is caged and physically restricted animal farming an abomination in relation to the horrific suffering it imposes. Such domestic meat and much farmed fish is laden with hormones, poisons and antibiotics. If you routinely eat large quantities of meat, you can end up not only with a high level of uric acid in your body, but with a tendency to form a lot of mucus and to build up toxicity in your own body. This is why when I eat meat—and I prefer fish or game—I eat only certified organic meat from free range animals. The difference in flavor is undeniable. Also, I know that the animals I’m eating have been carefully raised and are free of both excess fat and toxicity. When selecting meat or fish, there are two major considerations: Make sure it’s fresh, and as unprocessed as possible. Buy fresh fish and seafood instead of the processed forms, such as crab cakes or smoked and breaded fish. There’s no harm in having the odd slice of smoked salmon, provided it is naturally smoked— however, the more a fish is processed the fewer benefits it will bring for high level health. (And most smoked salmon has sugar added to it these days, so read labels carefully.) BLESSED OMEGA 3s If possible, add fish to your diet once or twice a week. For fish is rich in “pre-formed” omega-3 fatty acids—DHA and EPA. Omega-3 fatty acids are known to reduce the levels of triglycerides—blood fats characteristic of insulin resistance syndrome which can put you at risk of heart disease. Omega-3 fatty acids also spur fat burning, as well as lowering blood pressure and improving overall heart function. Often, flaxseed oil is promoted as a rich source of omega-3 fatty acids. And it is—at least in the sense that flax contains a great deal of linolenic acid, precursor to DHA and EPA. The problem is that, when you are relying on flaxseed for your omega-3 requirements, your body has to convert linolenic acid to DHA and EPA for this to be beneficial. Most people can’t make this conversion—especially if they have eaten a lot of trans-fatty acids, or an abundance of omega-6 fats, in the past. Also: Omega-3 from flax oil is a shorter chain fatty acid, which in some people is changed into arachidonic acid. When in excess, this causes inflammation. By contrast, EPA and DHA in fish oils are great anti-inflammatories. If you are overweight or insulin resistant, it is likely that your body cannot make this conversion, possibly because you, like most of us these days, have taken in an overabundance of omega-6 fatty acids in comparison to the omega-3s. That’s why taking a good fish oil is wise (see below for my favorite). MAKE IT FRESH The key to good fish is buying it fresh. Ask the person serving you which fish is the freshest, and what days of the week different kinds of fish arrive in the shop. You can tell a lot about the freshness of fish by its smell and look. Fresh fish does not smell fishy. It smells more like the salty bite of a sea breeze. If it’s a whole fish you are looking at, pull back its gills. They should be bright red. The moment they go pale pink or grey, you know the fish has been sitting in the shop too long. Try poking the flesh of the fish with your finger as well. If it springs back instead of forming an indentation, then you’re lucky enough to have a piece of fresh fish on your hands. Check out the eye of the fish, too. It should be dome-shaped and clear, not sunken or murky. GO WILD The meats we get today are a far cry from those our Paleolithic ancestors hunted. The closest you can come these days is wild boar, rabbit, buffalo, venison and kangaroo. These meats are higher in protein and lower in fat than the meat from domestically farmed animals. Where a piece of meat from wild game boasts about 22 grams of protein in each 100 gram portion, domestic meat can sometimes contain as little as 15 or 16 grams. Wild meat is also much lower in fat. The ordinary meat that you buy in the supermarket is six times as fatty and only about three quarters as rich in protein as that of game meat. That being said, all organic red meats like beef and lamb from grazed animals are excellent sources of zinc, a mineral that’s enormously important—not only for insulin balance but for the skin and the reproductive system. Free-range and organic meat is far better than factory farmed in every way. LISTEN TO YOUR BODY I was a vegetarian for twenty years of my life, and I believe that a vegetarian diet is ideal for some. In my mid thirties, however, I discovered that vegetarianism was not ideal for me. This may well have been because my ancestors, being Nordic, spent most of their lives living on fish, salted meat and whatever cabbage they could dig up from frozen ground. Our genetic makeup determines to a great extent what works for us and what doesn’t. When I added fish and game to my meals, my energy levels soared. I looked and felt better. Each of us is unique. This not only determines what kind of foods we thrive on; it also determines what kinds of foods are best for us at any particular time of our life. For instance, many women at menopause find they do much better by cutting meat out of their diet. Others discover just the opposite—that they need to add more animal protein. It’s a question of “suck it and see”. Following the principles of a good diet, explore what works for you. Don’t hesitate to shift from eating more fruit at one time of your life to more vegetables at another, more fish at another. The human body is always changing, as are our needs for various foods. I’d like to share with you a couple of my favorite recipes. Try them out and let me know what you think. If you have favorite protein recipes of your own, do send them to me. I will share them with others and of course credit you for them. CRUNCHY GREEN PRAWNS serves 4 When it comes to prawns, green means raw. These are the best. You can buy them fresh or frozen in every form—shelled, unshelled, whole, or heads removed. If you’re lucky enough to find fresh ones, make sure they really are fresh since, like other shellfish, prawns go off fast. Eat them the day you buy them. I like to eat them whole, partly because they are so beautiful and partly because I like the crunchy texture of the shells. I always eat the shells since the shells are filled with chitin—a protein substance which cosmetic manufacturers now use to strengthen skin from both within and without. Like most shellfish, prawns are rich in iodine and in the antioxidants zinc and selenium. Prawns are great for people who eat very little, because they are an easily-digested form of top quality protein. They are also a good source of calcium, iodine and the important omega-3 fatty acids, which not only protect the heart but offer good support to hormonal health, skin health and beauty. Crunchy Green Prawns can be cooked under a grill or on a barbecue. You can even flash fry them on a teppen yaki grill or in a heavy frying pan if you like. They are delicious hot. But you can also make them for a picnic and serve them cold. What You Need 750g of King prawns, uncooked. You may peel and de-vein them if you wish. 2 limes, cut in wedges 2 tablespoons of fresh coriander, chopped For the Marinade: 3–4 tablespoons of olive oil 1 tablespoon of spring onions, finely chopped 5 cloves of garlic, finely chopped 50g of fresh ginger, finely shredded A small handful of fresh coriander, chopped The juice and finely shredded zest of 2 small limes (if you can’t get limes then use 1 lemon) 2 tablespoons of sake, tamari or dry sherry 1/2 teaspoon of mustard seeds broken up with a mortar and pestle Coarse-ground black pepper to taste Snow pea sprout heads to use as a garnish (optional) Here’s How Wash the prawns carefully in cold water and then dry with a tea towel. Place all of the ingredients for the marinade, except the lime zest, chopped garlic and 1/4 of the chopped coriander into a food processor or blender. Purée to a paste. Pour into a bowl, add the garlic, the lime or lemon zest and the remaining chopped coriander and mustard seeds, then mix into the paste by hand. Place the prawns in the bowl and, using your hands, turn them over and over until they are covered with the paste. Put on to a flat glass dish and cover. Set it in a cool place—the fridge itself if it happens to be the middle of summer—for at least three hours. Cook on a teppen yaki grill, a barbecue or under a grill in the oven until they are crunchy. Serve with lime wedges. Don’t throw away any of the marinade—cooked or uncooked—that still remains. It is delicious to spread over the crunchy prawns. It takes only a couple of minutes a side to fry these and very little more under a hot grill or on a barbecue—all you want is for them to turn opaque. However you cook them, eat them with your fingers—shell and all. All sensuous food tastes better this way, but prawns especially. I serve them with a combination of basmati rice and wild rice—about half and half—and a bright green salad of wild rocket with whatever fresh herbs, from basil to lovage, that I can harvest from the garden or find at the market. AND FOR MY VEGETARIAN FRIENDS: CORIANDER ORGANIC TOFU Thanks to the intense flavor of coriander, this herb works well to enhance the bland flavor of tofu. This recipe goes well with steamed vegetables—especially broccoli—and kasha (steamed buckwheat). Make a tofu sandwich of it, or add this tofu to a salad to make it a one-bowl meal rich in protein and in plant factors for health. What You Need 400g of firm organic tofu (non-GMO) 2 tablespoons of olive oil or coconut oil 2” finger of fresh ginger, shredded fine 1/2 cup of fresh coriander, chopped fine 1 tablespoon of tamari 1 teaspoon of wild honey, or a pinch of granular stevia Sea salt and freshly-ground red pepper to taste Here’s How Cut the tofu crosswise into slices that are approximately 3/8 inch thick. Mix together all the other ingredients in a bowl, then dip each tofu slice into the mixture you have created. Heat a heavy frying pan grill or teppen yaki grill. Use enough olive oil or coconut oil on top of the grill so the tofu will not stick. Place the tofu on the grill, sprinkle with sea salt and freshly-ground red peppercorns, and cook at a high temperature until browned. Turn and brown again. Serve immediately as a tofu sandwich or in a tofu salad or simply as is, with loads of beautifully colored fresh vegetables. The whole cooking process takes no more than 3–5 minutes. It‘ll change your life. As soon as you begin to incorporate freshly-extracted raw vegetable and fruit juices into your lifestyle, something amazing starts happening to you. Xylitol—Good Or Bad?

I have had recently had a lot of questions about Xylitol, So I have decided to post some information that has come largely from one of my favorite sources which is the Western Price Foundation. Hope you find it helpful. Xylitol is a sugar alcohol, a low-calorie carbohydrate made from birch bark, fibrous vegetables and fruit. Xylitol has no known toxic levels and was approved by the FDA in 1963. Some diarrhea or slight cramping may occur at first if a large amount is consumed all at once. It is recommended that one start small and let the body's enzymes adjust, which they will do. Xylitol is deadly to dogs even in small amounts. Gums, candies, baked goods, and table scraps containing xylitol must be kept far away from, and inaccessible to dogs, including ladies' and children's purses, and the garbage for dogs who are foragers. Xylitol had been known to the world of organic chemistry since it was first manufactured in 1891 by a German chemist. A natural, intermediate product, xylitol regularly occurs in the glucose metabolism of animals as well as in the metabolism of several plants and micro-organisms. Xylitol is even produced naturally in OUR bodies, up to 15 grams daily during normal metabolism. Because it metabolizes without using insulin, there is no blood sugar spike. Xylitol's Dubious Health Claims Since xylitol is an industrial product, it pays to be dubious about the industry’s health claims for it. First among these is the claim that xylitol prevents cavities. Indeed, many studies can be cited to support such a claim. But not all. The results of a recent two-year trial found no difference in cavities between those who chewed xylitol-containing gum and those who did not. 2. In an earlier study, researchers concluded that “Overall, consumption of xylitol-containing snacks and candy did not reduce S. mutans levels.” 3.As for the claim that xylitol is good for diabetics, the fact that this sweetener is not completely absorbed comes at a cost: bloating, diarrhea and flatulence. In a study performed on 18 diabetic children who consumed a dose of 30 grams of xylitol per day, researchers found a significant elevation of the uric acid concentration.4 And since 80 percent of xylitol is metabolized through the liver, a danger to liver function similar to that of fructose is a distinct possibility. The Public Relations Story The official website for xylitol, xylitol.org, states, “In the amounts needed to prevent tooth decay (less than 15 grams per day), xylitol is safe for everyone.” Fifteen grams of xylitol is about 0.5 ounces. What about doses over 15 grams? In a long term toxicology study on rats researchers found that xylitol caused a significant increase in the incidence of adrenal medullary hyperplasia in male and female rats in all dose levels tested (5%, 10% and 20%).5 That means it caused abnormal cell growth in the adrenal glands. In one higher-dose study in which mice consumed 20 percent of their diet as xylitol, there was a significant increase in the mortality of the males as compared to those consuming sucrose.6 A major study in dogs found an increase in liver weight associated with xylitol use.7 Conclusions About Xylitol Xylitol’s own promotional material says it is not safe for everyone to use. Since children are smaller and less developed than adults, they will obviously be much more sensitive to xylitol’s effects. There are no safety data or tests to indicate a safe dosage for children. And foods containing xylitol may also contain additional sweeteners that are undeniably harmful, such as aspartame. As for claims that xylitol can prevent tooth decay, I can only say, “Buyer beware!” Such claims are based on the faulty theory that bacteria cause tooth decay. We know from the work of Weston Price that tooth decay is a problem of nutrient deficiencies—the bacteria are just there cleaning up dead tissue. Finally, and most importantly, this industrial product is just not necessary. I cannot recommend sprouts highly enough. Not only can they be grown in your kitchen to provide delicious and inexpensive organic salads all year round, but they boast some extraordinary energy-giving properties. When a seed, pulse or grain begins to germinate, it becomes a wondrous energy factory, producing vast amounts of essential nutrients. For instance, the vitamin E content of wheat grains - already one of the best sources in nature - increases up to three times upon sprouting. The B2 content of oats rises by at least 1300 per cent. Apart from the vitamins, sprouts also contain considerable quantities of minerals and even protein, all in readily-assimilable form. The process of germination, like the process of digestion, converts complex energy reserves into the simple energy compounds needed for metabolism. Sprouts are in effect a 'predigested' food, so that when you eat them your body is able to absorb their nourishment. They are also rich in chlorophyll, which supports your body's production of hemoglobin (the oxygen carrying molecule in the blood), vital for cell energy metabolism. In just a few minutes a day, you can cultivate a continual sprout supply so that you never run out of fresh salad ingredients. One of the simplest ways to grow a variety of sprouts is as a mix. I particularly like a combination of alfalfa with lentil and mung. To this I occasionally add a few fenugreek or radish seeds for extra zest. Another of my favorites is wheatsprouts, which have a delicious chewy texture and nutty flavor. These I sprout on their own because they are ready so quickly - usually in 2-3 days. Incidentally, even someone with a food sensitivity to wheat can usually enjoy wheat sprouts problem-free, thanks to the changes that occur in the grain during germination. Leslie's sprout magic mix In a large glass jar place 6 tablespoons of alfalfa seeds and 2 tablespoons each of lentils and mung beans. Fill the jar with water and leave to soak for about 12 hours (or overnight). Drain the excess water away by placing a sieve over the neck of the jar, and then rinse and drain twice more. Divide the mixture between two (or more) jars so that there are no more than two inches of sprouts in each. This way your sprouts will have room to breathe and grow. Rinse and drain the sprouts twice a day. Alternatively, take a seed tray and line it with paper kitchen towels, then spread the sprout mix over the bottom of it. Simply spritz the sprouts with water from a plant spray twice a day and stir them around gently for aeration. After 4-6 days, when the alfalfa seeds have developed little green leaves, the mix is ready to harvest. Rinse the sprouts well and drain. Store them in the fridge in an airtight container or in sealed polythene bags, to be used abundantly in salads and other vegetable dishes.

The second most cultivated and widely-eaten fruit in the world is the apple. It seems we had to be well into the 21st century before science finally discovered its nutritional value. Not long ago, Medical News Today featured an article about the top 10 healthiest foods. Apples were number one. Apples are extraordinarily rich in antioxidants, flavonoids, and marvelous dietary fiber. The phytonutrients and antioxidants they contain help reduce our risk of developing cancer, diabetes, hypertension and heart disease. But there’s lots more news, too. MAGIC FROM A HUMBLE APPLE Recent studies show that apples have the ability to improve neurological health as they are rich in quercetin, which reduces cellular death caused by oxidation and inflammation of neurons. According to research carried out at the University of Quebec, apples also reduce our risk of stroke. A large study involving 9,208 people showed that those who ate the most apples over a 28-year period had the lowest risk of stroke. At Florida State University, scientists praised the apple as “a miracle fruit”. Older women who ate apples every day had 23% less LDL—the bad-guy cholesterol—and 4% more HDL—the good cholesterol, over a 6 month period. Meanwhile, researchers at Cornell University discovered that apples can help “protect neuron cells against oxidative stress-induced neurotoxicity”. This reduces our risk of developing disorders such as Alzheimer’s disease. Also at Cornell, researchers discovered that an apple a day may help prevent breast cancer. There is some mounting evidence that apples help reduce the risk of diabetes. A large study involving 187,382 people showed that those who ate 3 servings of apples a week had a 7% lower risk of developing type-2 diabetes compared to those who did not. Finally, researchers at Oxford University discovered that eating an apple everyday can be just as effective as statins are in preventing vascular death in people over 50. It’s about time that contemporary research is starting to celebrate the power of the apple. I have known for 50 years that apples are a miracle food. With so many benefits and uses, it is hard to list them all. HEADSTART TO A HEALTHIER LIFE One of the best ways to trigger rapid detoxification in your body, and get you started on a way of living that will keep you healthy all around, is to do an organic applefast for a few days. Of course, no one experienced in the art and science of fasting should fast on water for more than a couple of days, unless they are under the watchful eye of a health practitioner well-trained in natural methods of healing—and never if they are pregnant, suffering from kidney or liver disease, or on drug therapy. But an apple fast is different. In truth, it is not a fast at all. You eat as much as you want—but only organic apples, in place of regular meals. Like the traditional water-fast, the applefast is a powerful tool for stimulating the process of detoxification on which high-level health depends. For example, if you discover you have eaten more than you really wanted, or your system has become somewhat polluted because you were trapped in a smoke-filled room the evening before. A day of applefasting quickly helps correct digestive disturbances and internal pollution problems which can result. It left unchecked, being out of sorts can trigger unnatural and excessive appetite. In effect, an applefast puts you back on track again, and can have you feeling great when you wake up the following morning. APPLEFASTING—HOW LONG If you’re keen to get off to a good start with detoxification, set aside two or three days for an applefast. Buy a box of organic apples. Usually the greengrocer will give you a good discount when you buy a box at a time. Or, buy three or four different kinds for variety to get you started. They must be organic. Eat as many as you like, but eat the whole apple, including the peel, the seeds and the core. You must chew it all very well, until the last drop of flavor has been extracted from the fruit. The only part you throw away is the woody stem. The apples you eat must not only be organic, they need to be fresh and eaten raw too. You can munch these crisp organic fruits au naturel, or you can grate them and sprinkle a little cinnamon on top. You can even put them in a blender with clean water to make a whole apple drink. Eat apples whenever you’re hungry throughout the day. How long you carry out your first applefast depends on how convenient it is for you to munch on nothing but apples, and on how you feel. Usually a couple of days are enough to give you a good start on spring cleaning the body from within. Three days is as much as any healthy body should do on his or her on, without being under the supervision of a health practitioner well-versed in fasting and the use of living foods. No pregnant or lactating woman should do an applefast, nor should anyone with a kidney, liver or heart complaint, for in such cases a sudden change of diet carries with it potential dangers to health. But, if you are generally well, then a short applefast is a great way to clear the decks for a new way of healthier living. When your day or two on apples alone is finished, then you can start the next morning to apply your healthier way of eating based on fresh foods. ONCE A WEEK TREAT It really is a treat, too, as you’ll find after you’ve got into the swing of it. To lay aside one day of rest from the three-meals-a-day routine and spend it applefasting gives your digestive system a break. It helps clear your mind and encourages the letting go of old poor eating habits. It’s also an excellent tool for giving an extra push to the detoxification process. For me, applefasting is a pleasure. When I travel, and hate being faced with some of the airplane, hotel and restaurant food which I would otherwise be forced to eat. So instead, I carry a sack of apples with me, and munch away. I always find it increases my energy and has me sailing through whatever I have to do. I tend to vary the day of my applefast from week to week. Most often, it is Monday, because I feel that this is a good way to start the week. But when I have a commitment which entails lunch or supper or Monday, I simply shift it to a day later during the week. THE QUICK CORRECTOR In many ways, the most useful thing of all about the applefast is that you can call on it when you most need help to get you back on the rails again. Each of us occasionally finds ourselves in a situation where we’ve eaten something that we would rather not have eaten. You may find your system has been upset by some dish you were served the day before, which has forced the return of false appetite, and does not seem to want to go away until your digestive system is calmed and your body is balanced once more. Or perhaps you’ve overeaten—old habits die hard, and you must be patient with yourself if this does happen—or you’re under heavy stress for some reason, and feel you need help to smooth things over. The applefast is ideal as a “quick corrector” in any of these situations. Spend a day munching organic apples, and it well you to rights again, so that when you awaken the next morning you feel more centered and more yourself, ready to get back to eating good-quality foods with renewed enthusiasm and energy. CLEANSING CRISIS Very occasionally when someone goes on an active program of detoxification beginning with the applefast, he or she has the experience of a headache at some time within the first day or two, or feeling moody or having an upset stomach or loose bowels. The day I left the city, I got into an airplane to return to London and to my usual way of eating, and found I was struck down by the most appalling headache which lasted about four or five hours. It was no fun, believe me. But when it passed, I did a 3 day applefast. I was left with the most wonderful feeling of freshness and lightness—the way you feel on a beautiful summer’s morning when there is a light breeze blowing. This sense of lightness is a common one for people who turn to an applefast to clear their system of stored wastes. It more than makes up for the headache or tummy upset that heralded its coming. When you experience a headache as severe as the one I had that day, it makes you appreciate even more how valuable a one-day-a-week applefast can be, and what a source of pleasure and energy. Dark Chocolate Eating one an a half ounces dark chocolate a day for two weeks reduces your levels of stress hormones, but it has to be very, very dark chocolate—between 75 and 85% cocoa solids. Some of the health benefits from chocolate are due to the antioxidants present in cocoa itself, such as flavonols. These are a sub-class of flavonoids, and are natural plant chemicals (phytochemicals) found in fruits and vegetables. There are several thousand compounds belonging to the antioxidant-rich polyphenol family, also called phytochemicals, which are very good for us. You see there is a huge difference between the minimally processed dark chocolate and the milk chocolate found in most candy bars. Raw, unsweetened cocoa powder which is high in antioxidant flavonols and contains no sugar is very different from the common cocoa drinks that are loaded with sugar. They offer no antioxidant support whatsoever. The total antioxidant content of chocolate products is directly associated with the amount of raw cocoa that the chocolate contains. A published in the ‘Journal of Agricultural and Food Chemistry’ showed that in terms of healthy antioxidant content, cocoa powder rated first, followed by unsweetened baking chocolate, and black chocolate.Perhaps even more surprisingly, dark unprocessed chocolate has been exonerated in a number of studies as exerting positive effects on your health. One example, believe it or not, is that it improves glucose metabolism. It also improves blood pressure levels and your cardiovascular system. Let me say again: you must choose very dark chocolate and forsake milk chocolate forever if you value your health. Milk chocolate has very few of these antioxidants. This is partly because it’s heavily processed. In fact, the typical commercial chocolate has less than half of the flavonoids remaining after processing. As well as that, milk chocolate contains milk, which tends to cancel out cocoa’s antioxidant effects. This was discovered in a study published in the journal ‘Nature’. The reason this happens is that proteins in the milk bind with the antioxidants, making them less easily absorbed by your body. Another thing about processed chocolate is that it ican be high in sugar, chemical additives and other junk including, believe it or not, lead. Many researchers contend that milk in processed chocolate is also often contaminated by other heavy metals, but no one is quite sure why how this happens. Now, this doesn’t mean that you should be swallowing chocolate every minute or two. Whatever else happens in my life, I must have flowers. These gifts from Nature nourish the soul. We scatter their petals when we marry. We send bouquets of them to celebrate the birth of a child. We decorate our homes and our places of worship with them. We use flowers to comfort the lonely and the ill. We even honour the end of a person’s life by laying floral wreathes on a grave. Not only do flowers play a central role in the rituals of life, they bless our ordinary daily existence by blossoming in our gardens, waste ground and hedgerows – and gracing our windowsills by protruding gaily from a cracked teapot. Perhaps it is the velvet softness of their petals and their luminous colours that make these affirmations from nature so precious to us. Maybe it is the uplifting energy they carry – an energy you sense lying in a field of poppies or when you go into a florist’s shop. It could be the fragrance of flowers, or the transient nature of their coming and going. I don’t know. Ancient Wreaths Our passion for flowers and the awareness that they carry deep healing and sanctifying energies are both as old as history itself. Not long ago, archaeologists digging in the Cave of Shanidar within the Zagros Mountains of Iran unearthed nine bodies of primitive people and discovered that, at least 60,000 years ago, men and women were carrying out flower rituals similar to those we use today. The archaeologists found soil samples in which clusters of pollen from twenty-eight different species of flower lay in a circle forming a wreath which had been laid to rest with human remains. One of the interesting things about the find was that the flowers these primitive people chose to use as a sacred and healing offering to their dead were not the most beautiful, nor were they the most readily available in that area. The flowers from which these wreathes had been made were chosen from plants that are specifically known for their healing properties - hollyhock, grape hyacinth and horsetail - all of which we still use today for medicinal purposes. Precious Offerings The Ancient Greeks and the Egyptians used aromatic oils and flowers for healing too, as they did for embalming, expanding consciousness and for sanctifying space. The Bible is riddled with words of praise for flowers and what they have to teach us, both about the realms of Spirit and about the ordinary world in which we live most of our lives. It tells us “Consider the lilies of the field, how they grow; they toil not, neither do they spin: And yet I say unto you, that even Solomon in all his glory was not arrayed like one of these.” (Mathew 6:28-29). In Song of Solomon 2:12 “The flowers appear on the earth; the time of the singing of birds is at hand…” Soul Healers Not only does humanity have a passion for flowers. Flowers have a passion for us. They love to share with us their beauty, their healing powers – their very life force. “When I touch a flower, I am touching infinity,” said the American botanist George Washington Carver: “Through the flower I talk to the Infinite… a silent force… that still small voice.” American clairvoyant and healer Edgar Cayce celebrated the healing power of flowers again and again. He insisted that flowers bring companionship to those of us who are lonely, that they speak to the “shut in”, and that they bring Divine grace and upliftment to everyone. That is certainly my own experience of flowers. The Time Is Now Despite our longstanding love affair with flowers - despite the way for thousands of years we have used them for healing and to mark life’s passages, never in recorded history have we experienced a greater need for their healing and their blessings than right now. For we who live in the post-modern world often feel ourselves to be alienated, isolated, suspended, caught somewhere between the magnificent technology we have created and a longing to bond with the earth and with our own souls. Flowers can help bridge this gap. I think they do this better than anything else in nature. Flowers delight us, bless us and heal us. They clear the spiritual anorexia so widespread in urban life and help fill up our starving souls. They remind us of our own simple humanity as well as our essentially divine nature: They whisper to us of the splendour in the world around us—a world of which we humans are the guardians. Most important of all our relationship with flowers helps realign our ordinary day-to day lives with the authenticity of our unique soul energies. A big statement to make? Yes, but having worked with flower meditation for many years, having explored the potential flower essences have to build bridges for us between our inner truth and our outer lives I have come to believed with all my being that this is so. How Do Flowers Heal? No-one knows for sure. There are so many of their elements which carry healing potential that it would be hard to list them all: Their colours influence our mind, our energy levels, our clarity of thought. Some, like peony, love the spotlight. Put them in front of a camera and they upstage everything else. Many have very strong likes and dislikes about where you plant them and where you place a bouquet of them in a room. On one table a particular flower becomes recalcitrant. But move it to the top of a bookcase in front of a window and suddenly it surrenders its beauty to the camera the way a woman yields to the touch of her lover. Each flower has unique healing properties and each speaks its own silent language. Learning that language, listening to flower wisdom and opening your heart to a flower’s healing energy can be a joyous and often life-changing experience. Summer is on its way—at least for those of you who live in the Northern Hemisphere. The rest of us have some weeks to wait for it. Doesn’t matter. If you start now, even in winter, by the time summer arrives you will be far ahead of the game in every way. Vitality is the secret to successful summer living when so much of your body is revealed—skin, hair, hands and feet. It is now that holistic health and beauty come into their own. It’s time to leave self-neglect behind, charge your batteries, get savvy about what to eat and drink, what supplements to take for radiant wellbeing and energy, and what to use both internally and externally for great hair, skin and nails. It’s easier than you think once you know the ropes. BUILD YOUR ENERGY Few of us cash in on optimum energy levels. Our lives are too full of personal ‘energy thieves’, from excess toxicity to negative attitudes. Both drain away natural vitality, and undermine potentials for looking and feeling great. Decide now to create for yourself a vitality-centered way of living that makes room for delicious exercise, good food, restorative sleep and effective self-care. Sprinkle with sea salt and ground black pepper, add a dash of Worcestershire sauce, toss and serve with slices of cooked chicken breast, tuna, sliced organic tofu or grated hard boiled eggs. One comes from doing a lot of hard physical work, like chopping wood or chasing after several young kids. That kind needs physical rest—sleep, relaxation by lying in a warm scented bath or learning a simple meditation technique. The other fatigue (which most of us suffer from these days) comes from stress. It depletes our energy reserves and undermines vitality. To counter this sort of tiredness, you need to exercise. Your body thrives on movement—even the simplest kind. Go for pleasant unhurried walks. Climb stairs instead of taking the lift whenever you can. Take your children with you if you need to; it is good for them too. Swim at your local sports center or even consider taking up weight training, which I love. There is no age barrier to beginning. If you are over forty, fifty, or even sixty—great news: New research shows it is actually easier for you to build lean body mass (good firm, sleek muscles instead of flab) than your younger brothers and sisters.
