Grow Healthy Crops and Stay Healthy Too!

Early on in the twentieth century, a few scientists—mostly in Germany—experimented with chemicals as a means of fertilizing food crops. They found that a mixture of nitrogen, phosphorus and potassium (NPK) would grow big yield crops of good-looking vegetables, grains, legumes and fruits. But little interest was taken in their discoveries until the end of World War II. At that time most foods were still grown pretty much as they had always been—by farmers who manured, mulched, and rotated their crops to keep soils rich and in good condition. To put it another way, most food was grown organically, although nobody had even coined the word; for this was no more than what traditional farmers throughout the world had done for thousands of years. MASS DESTRUCTION BEGAN HERE When the war ended, big chemical conglomerates who had been involved in the manufacture of phosphates and nitrates as war materiel found themselves stuck with huge stockpiles. They went looking for new markets. Aware of the early research into chemical fertilizing, they turned towards farmers, and began to sell them artificial NPK fertilizers at costs low enough to make it all look very attractive. These purveyors of chemicals also spread the false belief that NPK is all you need to grow healthy crops. There were unfortunately two very important facts that the chemical hawkers left out. Probably they did not even know. After all, it was not good for their profit margins to know. The first is that, although plants grow big on artificial fertilizers, they do not grow resistant to disease. The second is that the health of human beings eating food plants grown this way is, sooner or later, seriously undermined. CHEMICAL VICTIMS Plants grown only on NPK are deprived of essential minerals and other micro-substances they need to synthesize natural complexes in roots and leaves, which ward off attack by insects, weeds and animals. So before long the new artificially fertilized vegetables and fruits began to develop diseases. The chemical hawkers were quick to the rescue. The answer to this problem, they said, would be found in using more chemicals. That is how pesticides, herbicides, nemacides and fungicides came into being. They provided chemical companies with yet another exciting business opportunity—especially since the longer you fertilize chemically, the more depleted in organic matter your soils become, and the less they contain of the minerals and trace elements needed to synthesize natural protective complexes during growth, so the more pesticides you need. So as time went on, more and more pesticides and other chemicals were sold. Before long another important fact began torear its ugly head. It was this: like plants, human beings need a lot more than nitrogen, potassium and phosphorus from the foods they eat too, to maintain their own health. Your body cannot make minerals. It has to take them in, in a good balance, from the foods you eat. In addition to nitrogen, potassium and phosphorus, it requires magnesium, manganese and calcium, selenium, zinc, copper, iodine, boron, molybdenum, vanadium, and probably other elements as yet undiscovered as well, to stay healthy. These elements need to come from the foods you eat. Generally they do, when foods are grown organically in healthy, traditionally fertilized soils. But they are increasingly missing and unbalanced in the foods we buy today, thanks to our legacy of chemical farming. EARTH’S BLESSED CREATORS The organic matter in healthy soil is Nature's factory for biological activity. It is built up as a result of the breakdown of vegetable and animal matter by the soil's natural 'residents'—worms, bacteria and other useful micro-organisms. The presence of these creatures in the right quantity and type gives rise to physical, chemical and biological properties that create fertility in our soils and make plants grown on them highly resistant to disease. When it comes to human health, they do a lot more. The minerals and trace elements we need to look after our metabolic processes, on which health and leanness depend, must be in an organic form—that is, taken from living things like plant or animal foods. You cannot eat nails—inorganic iron—for instance, and expect to protect yourself from anaemia, or chew sand—inorganic silica—and be sure to get enough silica, the trace element that keeps your nails and hair strong and beautiful, and helps protect your bones from osteoporosis. It is the organic matter in soils that enables plants grown on them to transform inorganic iron and silica into the organic form which is taken up by the vegetables and fruits, grains and legumes. Destroy the soil's organic matter through chemical farming, and slowly but inexorably you destroy the health of people and animals living on foods grown on it. Eating food grown organically protects from significant mineral deficiencies, as well as from distortions in mineral balances. What few people realize is that an overload of one or more mineral elements alters your body’s ability to get enough of other minerals, undermining the people's health. No such protection is available when foods are chemically grown. So eat organic even if you have to grow your own foods in the garden or feed on sprouted seeds you grow in your kitchen window. Your body will bless you with energy, protection from early aging, and the sense of wellbeing that many long for but few as yet experience.

I never met a vegetable I didn’t like. Of course, it took me a while to realize this. Like a lot of people, I grew up fed on mushy Brussels sprouts, canned spinach and revolting beetroot salads, as well as other nameless horrors served in truck drivers’ cafes and as school meals. Only when I began to make vegetable juices, exuberant salads and cook my own vegetables did I discover just how delicious vegetables can be in their many incarnations. For a long time, cooked vegetables have had a bad rap. Some of this is the result of our not being able to buy an abundance of good quality organic vegetables. As a result, most of us have come to think of vegetables as flavorless things which everyone knows you’re supposed to eat because they’re good for you, but nobody can face them. When vegetables are cooked properly, they have a marvelous flavor of their own. LIFE FORCE CAN BE YOURS From the humble turnip to the leaves of radiccio, vegetables are superb sources of light energy form the sun—the same light from which your living body is made. Their beauty is the beauty of life force itself. When they have been grown in healthy soils and eaten either raw or with as little cooking as possible, this energy becomes your energy—an energy which can’t be measured in chemical terms but its potential for enhancing health exceeds even that of phytonutrients themselves. Steam vegetables, stir-fry them, bake them, purée them, eat them raw—however you go, vegetables are not only one of the most important food groups in relation to health; they are some of the most delicious. BEYOND ANTI-OXIDANTS Low in calories and riddled with fiber, certified organic vegetables are rich sources of antioxidants from Vitamins C, E and phytochemicals, helping to protect against the free-radical damage that produces degeneration and rapid aging. Not long ago at Tufts University, scientists developed a method of determining the anti-oxidant power of specific fruits and vegetables by measuring their ability to quench free radicals in a laboratory test tube. We can now test a food’s oxygen radical absorbance capacity. Using the ORAC test, we can categorize a fruit or vegetable according to its overall anti-oxidant power. Fruits such as blueberries, blackberries, strawberries and raspberries are at the top of the list, along with vegetables like kale and spinach, Brussels sprouts and broccoli. The antioxidant capacities of a high ORAC fruit or vegetable goes way beyond its vitamin and mineral content. COLOR ME RADIANT By now independent researchers have identified hundreds of health-enhancing phytochemicals to inhibit blood clotting, balance cholesterol, detoxify the body of wastes and poisons, reduce inflammation and allergies and even slow the proliferation of cancer cells. These amazing nutraceuticals, work synergistically. This means that the wider the variety of low-sugar fruits and non-starchy vegetables you eat, the greater will be the protective health-enhancing benefits you. Eat more spinach and leafy greens such as silver beet, kale or collards, and you tap into a rich supply of the carotenoids, zeaxanthin and lutein to help protect your eyes and brain from degeneration. In an interesting study of 356 older people reported in the Journal of the American Medical Association, researchers found that eating good quantities of these leafy green vegetables—the equivalent of a large spinach salad each day—reduced their risk of macular degeneration by 43%. (This is the age-related retinal disease that has you holding a menu three feet away from you in order to read it.) SIGN OF THE CROSS I always think the word “cruciferous” sounds like some kind of a crunchy salad. In fact it is used to identify vegetables, including the brassicas, which get their name from the fact that they carry cross-shaped flower petals. These same vegetables—including bok choy, mustard greens, collards, turnips, swedes, broccoli, kale, cabbage and cauliflower, boast high levels of all sorts of phytochemicals and vitamins, plus special kinds of precious fiber. For a start, they are rich in indoles, especially indole-3-carbinol, which has the remarkable ability to increase your body’s production of detoxifying enzymes. This is one of the reasons why women who eat a lot of the crucifers—four or more times a week— have a very low incidence of cancer of the breast and of the ovaries. Indole-3-carbinol, and probably other plant factors too, in cruciferous vegetables both help clear the body of the forms of estrogen that have a negative effect on it, as well as dramatically decreasing the body’s production of these forms of estrogen. But beware: indoles are highly heat-sensitive. To get the best from them both in flavor and in their health-boosting powers, it is best to eat them raw, lightly steamed or wok-fried. PROTECT YOUR DNA Another study from the Journal of Neuroscience reported that eating a good portion of spinach each day delayed the onset of age-related memory loss. Broccoli and Brussels sprouts, rich in sulforaphane and indoles, protect DNA from damage. Scientists estimate that each of the 60 trillion cells in the human body, each one suffers 10,000 free radical “hits” each day. And this is on the increase as a result of increasing chemicals in our environment. Phytonutrients help protect us from oxidation damage. Eating large quantities of fresh organically grown vegetables is breakthrough stuff when it comes to establishing radiant health. So make friends with the colorful vegetable kingdom. Build your daily meals around them by eating salads, by drinking juices, by cooking them in ways that preserve as much of their innate life-enhancing abilities as possible. So much for the technical stuff. Now, let me share with you a few of my favorite vegetable recipes. Try them and see what you think: perfect purÉes I’ve never been able to figure out why the most common puréed vegetable is mashed potatoes, when there are so many other vegetables, like beetroot, swede, spinach, beans, carrots, and celeriac, which purée equally well. The secret of great vegetable purée lies in what you add to it. You can either cook the vegetables and purée them on their own, or you can mix them together to make bright-colored complements for fish, poultry and meat dishes. One of my favorites is celeriac, which I think goes beautifully with any kind of game or fish. Carrots too make a wonderful purée, as does spinach. Even beetroot, which I think tastes ghastly in its normal boiled form, brings wonderful color and flavor to a meal when puréed and seasoned properly. What You Need 450g of root vegetables 1/2–3/4 cup of organic, sugar free coconut milk 75g of butter 1/2 teaspoon of vegetable bouillon powder 2 cloves of garlic, chopped (optional) 3 tablespoons of chopped parsley A handful of raw cashew nuts Sea or Himalayan salt Freshly-ground black pepper Here’s How Cut off the top and bottom of the vegetables and wash thoroughly, but do not peel, as much of the nutritional value in vegetables is in the skin itself. Slice each vegetable about 1/4 inch thick and cut each slice into 4–8 pieces. Place them in an electric steamer or a steamer pan over boiling water. Steam for 15–20 minutes until they grow tender. Put the cooked vegetables into a food processor or blender. Add the butter, garlic, vegetable bouillon powder, parsley and cashews and blend, adding enough coconut milk to give your purée the consistency you want. This usually takes about 2–3 minutes. Taste and season accordingly. You can make these purées the day before and then gently reheat them with a knob of butter on top. Asparagus A member of the lily family, asparagus was used by the ancient Greeks to treat kidney and liver troubles. It's one of the best natural remedies for PMS-related bloating and a top source of folic acid, the antioxidant glutathione and vitamin C. Not only does asparagus appear in early spring with a very short growing season—which makes it seem ultra-desirable—it is another powerfully healing vegetable. Asparagus has long been used in Ayurvedic medicine as a remedy against indigestion. When researchers compared the therapeutic effect of asparagus with a commonly used drug in the prevention of nausea, hiatus hernia, heartburn and gastric acid reflux, they found that asparagus was just as effective as the common drug remedy, yet had no side effects. Asparagus also has great diuretic properties. It stimulates the digestion and has long been used to alleviate rheumatism and arthritis. And it has sedative properties. When shopping for asparagus, look for bright green, straight, fresh-looking spears with compact tips. Stay away from the woody, stringy or streaked spears and those with spreading tips. These are sure signs that they're not really fresh. Bring the asparagus home and rinse it in cold water. You can use raw asparagus in salads by cutting it into 1/2" pieces, and also as crudités with dips. But the thinner asparagus is better for this. And it must be very fresh and crunchy if you're not going to cook it. Because the tips of asparagus cook much faster than the tails, it's a good idea to steam it in a tall, lidded pan designed specially for that purpose: but don't worry if you don't happen to have one. I like to serve steamed asparagus with wedges of lemon and shaved Parmesan, plus a little garlic salt and pepper. You can also use homemade dips, pestos or mayonnaise including aïoli and serve asparagus hot or cold. BAKED ASPARAGUS serves 4 to 6 I love baked asparagus. This recipe makes a great starter to a formal meal, but I like to eat it on its own as a meal in itself. What You Need 3 dozen organic asparagus spears, trimmed and peeled if necessary 2–6 tablespoons of melted butter Sea salt or Himalayan Salt and coarsely ground pepper to taste 1 lemon, divided into 6 wedges Here's How Place the asparagus side by side in a flat, rectangular baking dish and drizzle wipe with butter. Season with salt and pepper. Cover with a lid or with foil. Then bake at 225ºC (430ºF, Gas Mark 7) for 20–30 minutes, depending upon the thickness of the asparagus – that is until the spears are browned and tender. Add a little extra melted butter just before serving if it is needed, and a wedge of lemon to each plate. This can be served warm or cold. snow pea AND ALMOND STIR FRY A great combination of crunchy almonds and delicate green mange tout, or snow peas. What You Need 250g of snow peas 2 tablespoons coconut oil or boiled-down soup stock 50g of almond slivers, toasted or raw 125g of mushrooms 1 teaspoon of tamari 1” finger of fresh ginger, shredded fine Here’s How Top and tail the snow peas. Heat the oil or boiled-down stock in a wok or large frying pan. When hot, add the almonds and ginger and stir fry for 3–5 minutes. Now add the remaining ingredients and continue to stir fry for another 2–3 minutes. Serve immediately. Other Ways to Go Great candidates for stir frying include Chinese cabbage with cashews, sprouts with tofu, carrots with fresh parsley, cabbage and onions. Beat Hangovers: My Brother's Tequila Margarita Recipe

Over the years I’ve amassed so many useful tools for dealing naturally with unnatural states of mind and body—even, god forbid, hangovers. The most obvious way to avoid a hangover is don’t drink. If you do drink then choose only the best—be it wine, whiskey, or whatever, and never overdo it. The best always has fewer unpleasant chemicals—known as congeners— to upset the system. King of all the alcohols when it comes to purity and low levels of congeners is tequila. However, if you make yourself a margarita, make it from real tequila. So much of the stuff they sell as tequila is filled with a lot of insidious junk you don’t want to put into your body. SUCCULENT LILY Agave, which is called cactus, is actually a succulent that belongs to the lily family. The finest blue agave comes from the highlands of Jalisco, Mexico. It must be harvested at the peak of its sweetness. My brother, whom I adoringly call Toto, is a connoisseur of Tequilas. He insists—I have checked out his recommendations and come to trust them implicitly—that the finest tequila is made by Patron. Anejo Patron is his favorite. Silver Patron is mine. My son Aaron has developed a fabulous recipe for Margaritas. It’s very simple: To a handful of ice in our Vita Mix he adds four jiggers of freshly squeezed lemon or lime juice, 4 jiggers of Silver Patron, 2 jiggers of Cointreau or Grand Marnier, a couple of jiggers of water and the crème de la crème, a dropper or two of the most delicious stevia in the world: English Toffee Sweet Leaf Liquid stevia from iherb,com (so much more delicious than the usual sugar or syrup, which is really rather revolting). He turns on the Vita Mix for 30 seconds while he rubs the rim of each glass with one of the lemon or lime skins, then plunges it into a saucer of Maldon salt to coat the rim. This makes Margaritas for 4 people. A perfect hangover-free treat to share with friends. Hangover Cure - WORST CASE SCENARIOS Now let’s get back to hangovers, should they happen from drinking stuff that’s not so pure or far too much of even a good thing. Drinking lots of fluids along with alcohol helps to prevent the dehydration that comes with an over-indulgent evening. There are also a couple of things you can do the morning after to help feel better. First thing, make yourself a cup of peppermint tea. Put 2 teaspoons of the dried leaves (or 4 teaspoons of fresh) into a tea pot and pour a cup of boiling water over it. Steep for 5-10 minutes and sip it gently. The peppermint will settle your stomach. Breathing in the steam from your tea will also help to ease your headache. When your stomach is settled enough to handle more, take a couple of grams of vitamin C and 2-3 grams of evening primrose oil, or star flower or borage oil. The vitamin C’s antioxidant properties help the liver clear the toxic wastes from too much alcohol. The GLA in these oils is turned into prostaglandin E1—an important regulator of mood which alcohol depletes. When it is low you can feel depressed and very tired. Hangover Cure - SAINT MARY’S THISTLE Also known as milk thistle is a wonderful liver cleanser and supporter. Take 2 capsules or 1 teaspoon of tincture in a little water every 3-4 hours until you are feeling better. If you can remember where you last saw it in your current state, reach for some dried borage as well. Open the jar, or put it in a paper bag, hold your nose over the bag and take a deep breath. No one has ever explained to me how it does it, but this clears your head wonderfully. I have heard that taking ginkgo before you go out for the evening can also help to prevent hangovers by enhancing your body’s ability to metabolize alcohol swiftly. However, I’ve never heard anyone say how much you should take, or how long before drinking alcohol you should take it. If you are taking ginkgo for other reasons, pay attention to how you feel after a glass or two of wine and see if this makes a difference.

Osteoporosis: The Silent Killer & How to Stop It Now!

Osteoporosis is a terrible disease. A progressive loss of minerals, bone mass and bone density, it affects men as well as women, and can result in fractures of the hip, shoulder, ribs, vertebra, forearm or wrist. In women, it is believed that bone loss begins several years before menopause and then gets worse afterwards, creating an ever-increasing risk of debilitating breakages. Osteoporosis is now the most common bone disorder. Worldwide, the illness causes more than 8.9 million fractures annually—in effect, a fracture every 3 seconds. SILENT KILLER In Britain, the incidence of the illness has increased six times in the past 30 years. One in three women and one in eight men develop it. In the United States, statistics are even worse: The illness currently costs the country more than 11 billion dollars a year. 25% of women whose hips fracture die within two years—not always directly from the fracture, but from ending up in nursing homes where inactivity, alienation and loss of control over their lives defeats them. Today, more women in the industrialized world die of fractures related to bone thinning than from cancers of the womb, cervix and breast put together. Now for the good news: Osteoporosis is preventable and treatable naturally, so take heart. Bone loss is no simple disorder. And it is most certainly not another so-called estrogen deficiency disease, as mainstream medicine would have us believe. Neither is it preventable or treatable by drinking milk or stuffing yourself with calcium supplements. In fact, both of these actions can actually make the condition worse. A FEW FACTS Osteoporosis regularly occurs in men who are deficient in testosterone and in women who are deficient in progesterone. Black women have less bone loss than white women, big women less than small women, and fat women less than their skinny sisters. Meat-eaters are at greater risk of the disease than vegetarians. A high calcium intake has long been toted as essential in preventing bone thinning. Yet people in third-world countries whose daily intake of calcium is less than half our own have a very low incidence of the disease. Couch potatoes are far more prone to the condition than men and women who get regular exercise—particularly weight bearing exercise. Osteoporosis is a complex condition. To prevent it, you need to understand it. And, despite all the fear-mongering surrounding the disease, learn the ropes. Then you can take action to halt bone loss and to reverse it no matter what your age. BEWARE OF DRUGS Most people believe that a prescription drug plus megadoses of calcium supplements are the answer to strong, healthy bones. But bisphosphonate drugs like Fosamax, Actonel, and Boniva carry serious side effects, including—believe it or not—an increased risk of bone fracture! Users of prescription drugs have more osteoporosis than people who do not take any medication. Bone loss is by no means inevitable as we get older, despite our being told that on average we experience about 1% loss of bone mass a year. But, like hypertension and insulin resistance, bone loss is another silent killer. How do we stop it in its tracks? It’s easier than you might think. MEET THE BIG FIVE Together, specific nutrients—omega 3 fats, vitamin D3, Vitamin K2, magnesium, and calcium help build the nutritional foundation for creating and restoring bone strength. They need to be supplied in good balance by eating natural foods and shunning the packaged convenience stuff that fills supermarket shelves. I call these nutrients the big five because, together with putting yourself on a program of regular weight bearing exercise, this combination forges strong healthy bones. Vitamin K2 is especially important, by the way, since one of its major physiological skills is moving calcium into your bones and teeth and removing calcium from parts of the body where it does not belong, such as your arteries and soft tissues. However the right nutrition can only do its stuff to protect your bones if you also you incorporate weight bearing exercise or whole vibration training in your life. MILK & CALCIUM PILLS—NO GO As for drinking milk? Forget it. We are constantly being told to drink more milk and take more tablets of calcium. Yet in the United States, the intake of calcium by supplementation or through milk drinking is the highest in the world and they have the highest rate of osteoporosis. In Oriental countries such as China where milk is not drunk and the intake of calcium is one of the lowest in the world, osteoporosis is virtually unknown. The Chinese get their calcium the way cows do—by eating green plants. Equally important not to do is take calcium pills. You need to get your calcium the same way grazing cows do by taking in lots of organic fresh greens which are full of it in a form that your body can make good use of. You see, calcium metabolism is a complex process and the absorption of calcium from water or mineral salts tends to be highly inefficient. Only somewhere between 20-30% of the calcium you take in through supplementation or processed foods will even be absorbed. And most of that will either get filtered through your kidneys then excreted in urine or sweat, eliminated through feces, or stored in your body’s tissues where it does not belong, contributing to heart disease. BUILD STRONG BONES Doing weight bearing exercise regularly at least three times a week is the second second thing you need to do if you want to protect your body from bone loss or reverse bone loss after it has started. There is something else important about weight bearing exercise—something I discovered for myself at the age of 50 when I decided I wanted to learn weight training from a Welsh champion weightlifter. It’s this: Working out with weights weights combats age degeneration and makes your body sing. There are three ways of approaching weight-bearing exercise. First, you can get yourself a few dumbbells, watch a good video for beginners and get to work. Second, you can do exercise using only your body weight to carry out the various movements so you don’t need dumbbells at all. Third, you can do accelerating training on a Power Plate. This is a great way to enhance bone density and build strength, and it is easy enough that even the weak and disabled can benefit from doing it. Also called whole body vibrational training, the Power Plate has a platform, which moves from front to back as well as vertically and horizontally. Power Plate training is readily available in studios where you can work with someone who teaches you how to use the equipment and show you how to hone your skills as you become accustomed to the process. You can also buy a Power Plate to use at home, but they are pricy. Having said that, I did buy one three years ago. I’ve used it three to five times a week ever since both for strength training and deep relaxation. In 2013 a research project involving 28 post menopausal women who practiced this kind of vibrational training three times a week for five minutes at a time, in only six months increased their bone density and strength by 2%, while the control group lost 0.5% in bone density during the same period. THE BEST SUPPLEMENTS Calcium, Vitamin K2, Vitamin D3, magnesium and omega-3 oils work together to build strong healthy bones and to restore strength to bodies that have lost strength. The best way to get vitamin D3, which builds bone density by encouraging the body to absorb calcium, is to get out into the sun for half an hour or more each day. If you choose to take vitamin D3 in supplement form, make sure you also supplement with Vitamin K2 to ensure that calcium from your foods are directed to bones and teeth. Vitamin K2 also helps your body remove calcium buildup in other areas of the body where it does not belong, such as the arteries. These two vitamins along with magnesium work brilliantly together to promote healthy bones. By the way, the ratio of calcium intake to magnesium in the body should be 1:1. EAT FOR YOUR LIFE Here is a quick checklist to follow if you want to build bones and keep them strong: Throw out all the packaged processed foods that the majority of the Western world still eats. The sugars, grain based carbs and artificial ingredients they contain deplete your bones of calcium and disturb the balance of nutrients you need most for increasing and maintaining bone density. Never drink sodas—even sugar-free. Eat from 50% of your foods raw and organic. Make green vegetables the cornerstone of your meals and also drink a glass of freshly made vegetable juice once a day. Replace table salt with Himalayan salt, as it contains more than 80% of the mineral elements your body and bones need to thrive—including both sodium and potassium in good balance. Get plenty of animal based omega-3 fats and avoid the golden oils sold in supermarkets or anything containing them like the plague. Use seaweeds in your salads and soups. Eat plenty of leafy green vegetables like kale and spinach, which are rich in magnesium—as are sunflower seeds, sesame seeds, pumpkin seeds and avocados. Use a top quality magnesium supplement daily to work well with calcium, Vitamin D3 and vitamin K2. Do weight bearing exercise at least three t imes a week for 20 to 30 minutes at a time. So people go on buying convenience foods chock full of carbs and sugars, the golden oils and products containing them all the while believing that they are doing the right thing if want to protect themselves from heart disease, cancer, diabetes and all the other degenerative diseases that plague the Western World. Well, my friends, all such advice is not only untrue. It is positively dangerous. To stay healthy, protect yourself from obesity, degenerative conditions and early aging, you must dump the starchy carbs and hidden sugars, all those highly processed unsaturated oils and the packaged convenience foods which contains them. Then, from 1910 to 1970 in the United States, the proportion of animal fats eaten declined from 83% of all fats eaten to 62%, and butter consumption went from 18 to 4 pounds per person per year—all because of the invention and promotion of margarines. Meanwhile, what did increase exponentially was the quantity of fats we began to take in, in the form of chemically refined unsaturated vegetable oils, margarines, trans-fatty acids and junk fats. The results of all this? Our health has continued to decline. By the way, it’s worthwhile taking a look at how well we’ve fared in combating heart disease and obesity since we began shunning animal fats and eating the masses of the carbs they recommended. The National Health and Nutrition Examination Survey shows that, since 1980, obesity alone has grown to epic proportions, right from the very year the government’s guidelines were published. THE SKINNY ON FATS From the 1960s onwards, governments worldwide have been telling us to eat less fat and more carbohydrate which they figured would make up for the fat we no longer ate. Low-fat foods began to appear on our supermarket shelves for keen and hungry consumers; they quickly became a major financial success story for food manufacturers. We ate baked potatoes instead of fries with our meals, and thought that we were taking the healthy option. We ate low-fat foods thinking that these were good for us, without realizing that food manufacturers, in preparing their low-fat menus, had replaced the fat with sugar. Meanwhile, we were warned against all saturated fats, told that they are dangerous, and urged to eat more polyunsaturated oils such as sunflower oil, safflower oil, peanut oil—all those golden oils that still fill our supermarket shelves. These oils and margarines were held up as beneficial for protecting us from heart disease. Both of these directives turned out to be big fat lies. BEWARE PROCESSED OILS Polyunsaturated fats and oils—which we have long been urged to eat—turn rancid quickly when heated. All the golden oils most people still believe are good for them turn into health-destroying sources of free-radicals that can do the body a great deal of harm. They attack our cells and damage our DNA. Recent, reliable scientific studies show a link between consumption of these processed polyunsaturates and cancer as well as heart disease. DUMP THE GOLDEN OILS Safflower, Corn, Sunflower, Soybean and Cottonseed Oils all tend to be badly processed, using all sorts of unpleasant chemicals. Avoid them. Canola oil, which fills many of our ready-made food products, has been associated with fibrotic heart lesions. It is high in sulfur and turns rancid easily. Margarines are full of trans-fatty acids. Shun them. There’s something else we now know about these oils that will probably surprise you. Analysis of the fat in clogged arteries reveals that only about 26% is saturated fat. The rest is made up of polyunsaturates. So here’s the bottom line: The heart’s preferred source of food when under stress is good old “unhealthy” saturated fat. OMEGA 3 BENEFITS Omega-6 and omega 3 fatty acids, when in the right balance, help your body in all sorts of ways. They increase your cells’ sensitivity to insulin, helping your body regulate its blood sugar. They increase metabolic rate and fat metabolism, so more of your stored fat can be burnt as energy. Natural foods rich in the omega-6 oils include avocados, nuts, flax seeds, and spirulina. Paleontologists have discovered that our ancestors consumed them in the ratio of 1:1 or 2:1 (omega-6 to omega 3 fatty acids). Eat them and thrive. Olive oil is monounsaturated rather than polyunsaturated—one of the safest vegetable oils you can use. Sesame oil is reasonably stable and can also be used on salads as can cold-pressed walnut oil and avocado oil. DON’T FORGET BUTTER Millions of shoppers buy margarine in the belief that it’s “better for you than butter.” This is another baseless opinion, forced upon us by bad science and multinational food manufacturers. The process used to turn out margarine, known as hydrogenation, does horrendous things to the already-rancid vegetable oils it is made from. Margarines also contain all sorts of additives you wouldn’t want in your body. It is not surprising that they have now become associated with the development of both cancer and heart disease. Butter on the other hand contains many essential nutrients. Look for butter made from the milk of grass-fed animals if you can find it. Experiments comparing the health of margarine eaters with butter eaters continually find in butter’s favor. In one study, the risk of developing heart disease for butter users was half that of eaters of margarine. Infants and children especially benefit from butter, which fosters normal growth and development. Use this delicious stuff liberally—and without guilt—in the knowledge that your body will thank you for it. THE LAST WORD OF ADVICE Fats and starchy carbs like pasta, bread, and pizza do not mix. Eating them together bring about what is known as the Randle Effect: When lots of fat and carbohydrates are eaten together, as they often are in the standard Western diet, the fats get burnt as fuel, while the carbohydrates are converted to glucose. The glucose in turn is converted into more body fat, throwing any overweight, insulin-resistant person into a terrible vicious circle, where hunger and carbohydrate cravings lead to overeating, followed by an inevitable increase in blood sugar and insulin levels as well as body fat deposits and yet more cravings. The irony is that, for a long time, we have been blaming dietary fat for this, when this phenomenon is actually caused by a high starchy carbohydrate intake, especially in the presence of the junk fats found in margarines, golden oils, and convenience foods. A free radical is a molecule with an unpaired electron, lustfully searching for a mate. There are several kinds of free radicals. Oxygen free radicals are particularly malevolent. They react quickly and greedily with other molecules. When they find a mate - and just about any mate will do - they can destroy cell membranes, disrupt DNA (the cell's genetic material) and wreak havoc with the body. Many things cause the production of free radicals. Air pollution, for instance, being exposed to ultra violet light or radiation, pesticides on foods, drugs, cigarette smoke, exposure to some plastics, and even polyunsaturated fats. Flying in jets also produces free radicals, as does living at a high altitude because in both cases you are subject to high levels of gamma radiation. Even exercise produces free radicals. And the experts on aging are right. Free radicals do cause terrible damage to the body. But only when they are produced in excess. There are lots of good things to be said about free radicals as well. This process in the gut releases acetate, a waste product that has powerful and positive effects on the body. One of the things it does is to transmit information to the hypothalamus in the brain, which regulates your appetite and tells you when you’ve eaten enough. Research indicates that the appetite-suppressing qualities of acetate are excellent. RADIATION PROTECTORS Some of the best protection from radiation—which we’re experiencing more and more in our increasingly polluted environment—comes from fiber. So make use of it to protect yourself from the kind of radiation poisoning that now contributes to degenerative diseases. Seaweed is also one a great source of radiation protection. Studies have shown that alginate in seaweed and kelp products protect an organism from absorbing radioactive elements such as strontium-90 and cesium, both of which are incredibly dangerous to the body. Amongst other things, strontium-90 tends to replace calcium in the bones, leading to bone disease and cancer. Kelp is helpful in protecting against other kinds of environmental pollutants. The fucoidin it contains helps block the absorption of lead and other heavy metals. There is some evidence that, like pectin—the dietary fiber found in good quantities in apples—it can also help remove much heavy metal poisoning from the body from cadmium, aluminum and lead. Putting seaweeds in soups and vegetable dishes, making laverbread, or even taking kelp tablets can all help prevent the buildup of heavy metals in your body. FIBER 101 Governments recommend that we take in somewhere between 10 and 25 grams of fiber a day. Most people only get half of this, or even less. Because I eat 50% to 70% of my foods raw, I take in at least 40 grams a day. What is interesting is this: Research shows that our Paleolithic ancestors as well as tribal cultures, a few of which still exist on the planet, got somewhere between 35 and 60 grams of fiber a day! Aim for 30 to 40 grams of fiber a day and eat lots of vegetable foods. Your body will thrive on it. You will not find any good quality fiber in manufactured and processed foods. I strongly advise you not to eat such foods. Here are some of the vegetable foods and seeds that are excellent sources of fiber. Flax seeds, chia seeds, and psyllium seed husks Vegetables such as broccoli, Brussels sprouts and kale Macadamia nuts and almonds Berries of all kinds Green beans, peas, onions and root vegetables All the fibers listed above have been shown to help the body protect itself from cancer and other forms of degeneration so common in our world—fibroids, endometriosis, Alzheimer’s disease and heart problems. These fibers can also help tremendously to alter the metabolism of excess estrogen in the bowel—so that more of it is excreted and less of it is reabsorbed. I personally eat lots of green vegetables—most of them raw. My favorite source of seed fibers is twofold: Organic chia seeds and organic whole psyllium husks, which deliver both soluble and insoluble dietary fiber. If you have any sort of irritable bowel issues, I recommend acacia fiber. It is a soluble fiber that is very soothing to the gut. GO RAW What is so special about organic raw vegetables? Plenty. They have powerful protective qualities, which is why diets high in fresh green vegetables are recommended as an aid for protecting the body from degenerative diseases: Arteriosclerosis, arthritis and cancer. Don't be tricked: Artificial Sweeteners are Not the Answer - Learn Why!

All artificial sweeteners increase your insulin resistance, impair your memory and disrupt your neurological functioning. Do not use them! It is hard to believe the extent to which they have taken over the world. The artificial sweetener market worldwide is measured in many billions, and keeps growing. Here is a breakdown: aspartame is responsible for 27.9% of the market, sucralose, claims another 27.9%, while cyclamate holds a 13.1% share, acesulfame-K gets 5.2% and neotame 1.4%. I continue to be flummoxed by it all. How can billions of people be persuaded into putting this kind of junk into their bodies, adding these products to their coffee and their foods, as well as swallowing sodas and other drinks that are riddled with them? If you value your body, your mind and your health, please STOP USING THEM! THE STUDIES One study, carried out over 14 years, showed that eating and drinking sugar-sweetened and artificially-sweetened drinks makes you prone to a higher risk of type II diabetes. Another, lasting over seven years, found that drinking artificially-sweetened drinks is associated with an almost 50% greater change in BMI. Researchers reported that a likely reason for this is that artificial sweeteners increase food intake, as well as a greater desire for sweetness, so you eat more food. Obese subjects given the artificial sweetener sucralose showed increased insulin levels and insulin resistance. In both human and animal studies, the artificial sweeteners sucralose, saccharine, and aspartame also exerted a substantial negative effect on gut bacteria which increases glucose intolerance. In relation to aspartame, Executive Director of the Center for Science in the Public interest (CSPI) Michael F Jacobson states, "Aspartame has been found to cause cancer—leukaemia, lymphoma and other tumors—in laboratory animals. It shouldn't be in the food supply.” PROTECT YOUR BRAIN Dana Small, Associate Professor of Psychiatry at Yale School of Medicine, has been doing excellent work examining the effects that artificial sweeteners exert on behavior and brain in humans and animals. She discovered that appetite comes from the hippocampus as well as the hypothalamus. When mice were fed on the artificial sweetener acesulfame-K, they developed impaired memory as a result of neurological dysfunctions in the hippocampus. A learned association takes place between the flavor of a food you eat and the ability of a food to alter your blood glucose. Your body is smart. You cannot feed it on rubbish like artificial sweeteners. When you do, it hunts for real food to satisfy its needs. By now, we have a huge volume of evidence showing that artificial sweeteners foster weight gain. PLEASE HEAR THIS Artificial sweeteners of any kind can be much worse for you than sugar. There is a lot of evidence to back this up. Even natural sweeteners such as honey and agave, which most people look upon as “healthy choices”, are not great. Agave is highly processed, even when it says “organic” on the label. It has a higher fructose content than any other commercial sweetener. In truth, it is little more than an over-hyped, laboratory generated, highly-condensed fruit syrup without nutritional value. In small quantities and in its raw form, honey has much to offer, provided it is real, pure, raw honey. But most honey these days is of very poor quality and adulterated. Even real raw honey, which is almost impossible to come by, consists of 53% fructose—which you don’t want to take in very much of. What about the sugar alcohols? These are easy to spot as their names end in “ol” like xylitol, malitol, glycerol, lacitiol, mannitol, sorbitol, glucitol. They are less sweet than sugar, but they are by no means calorie-free. You see, these sugar alcohols are not absorbed completely in your body. Eating them can create diarrhoea as well as abdominal gas. Some of them used regularly can even spike blood sugar as much as a baked potato or dinner roll can. Xylitol is probably the best if you are going to use any of them, but it must be used only in small quantities and not regularly. And you must read labels carefully. Personally, I choose to leave all of them alone. SAFE ALTERNATIVES Stevia is far and away the best natural sweetener in the world. But make sure you buy a good quality whole plant stevia (see my recommendations below.) Stay away from Truvia, Purevia and one or two other so-called stevia products which have extracted the sweetest component of the stevia plant—Rebaudioside A—out of the plant, grossly distorting the integrity of the plant as a whole. It’s the synergistic effect of all the natural ingredients in the plant that produce its overall health-giving qualities, which include "built-in protection" against potentially damaging effects. WHAT YOU NEED 2 medium Spanish onions, finely chopped 3 garlic cloves, finely chopped 450 g (16 oz/2 cups) fresh pumpkin, peeled and cut into small cubes 250 g (9 oz) mushrooms, sliced 2 tbsp extra-virgin olive oil 720 ml (11/4 pints) vegetable or chicken stock, boiling 1 tsp ground cumin small bunch of fresh coriander, chopped 1 tsp ground cinnamon 4 cm (11/2 in) piece of fresh ginger, finely shredded 1 tsp dry mustard 2 tsp vegetable bouillon powder pinch of Cajun seasoning juice of 2 fresh lemons zest of 1 lemon, finely shredded HERE’S HOW Sauté the onions, garlic, pumpkin and mushrooms in a little olive oil until soft. Add the boiling stock and cook for 30 minutes. Add the remaining ingredients except for the lemon juice and zest, and cook for another 5 minutes. Place in a blender or food processor and blend thoroughly. Add the freshly squeezed lemon juice and serve sprinkled with lemon zest.

Cure Insomnia Without Hypnotic Drugs: The Risk of Sleeping Pills & 18+ Published Studies

“Insomnia? I know a great cure for it... get plenty of sleep” W.C. Fields Do you dread going to bed for fear for fear you won’t sleep? Do you wake in the night only to find that you can’t go back to sleep again? Well, you’re not alone. Over half of the population of both the UK and the United States—where Big Pharma collected $3.7 billion for selling drugs for sleep in 2012 alone—have problems with some form of “sleep disorder.” Many take hypnotic drugs despite the fact that at least two dozen published studies have examined mortality associated with these medications. Eighteen of these report significant connections between using these drugs and increased mortality. Taking sleep inducing drugs is also associated with a greater than three-fold increased risk of death, even when less than 18 pills a year have been taken. Bottom line: Hypnotics ain’t worth the risk. There are better ways of handling insomnia. DANGER WORRIES There’s no doubt about it, disrupted or poor quality sleep can be dangerous. I learned this myself first hand after taking a flight that crossed twelve time zones. I found— unusually for me—that my body never readjusted to the new time zone, and I was sleeping only an hour or two a night, and at very irregular times. This went on for almost two weeks, at the end of which I was in severe physical pain. I went to see my doctor, also a skilled acupuncturist, concerned that I may have contracted some fairly serious illness. He treated me with acupuncture and sorted out the pain within two treatments, as well as my inability to sleep. He also told me that he had seen this in patients of his who are pilots. Research studies show that when healthy male volunteers were deprived of four hours of sleep for a single night, the activity of the natural killer cells in their immune system fell by as much as 30 percent. That’s the bad news. The good news is that a single good night’s sleep brought normal functioning back to the cells. It has also long been known that shift workers, whose hours of sleep continually change, have increasing difficulty falling asleep and staying asleep. They also have more accidents, suffer more illness and die younger than people with normal sleep schedules. INSOMNIA TRIGGERS Anxiety Fear of insomnia Stimulants such as coffee or alcohol Eating too many high glycemic carbohydrate convenience foods which disturb blood sugar Low levels of melatonin Low levels of serotonin Drug use Depression A lot of so-called insomnia is nothing more than the result of worrying about getting to sleep. Many people who consider themselves insomniacs are really victims of the general propaganda about sleep, rather than true non-sleepers. Many people seek treatment because they can only sleep four or five hours a night, although that may be all they need. There is nothing more likely to cause sleeplessness than the worry that you won’t be able to drop off. Sometimes sleeplessness can be normal. After all, we all experience a sleepless night every now and then, particularly if we are over-tired, worried or excited about coming events. Real chronic insomnia is less frequent. There are many things that can cause it, from taking stimulants such as chocolate, soft drinks, coffee and tea, to not getting enough exercise. Nocturnal hypoglycemia is another major cause of insomnia in many people. BEWARE OF BOOZE Alcohol can severely interfere with sleep for a number of reasons. First, it brings about the release of adrenalin giving you a sense of excitement—a totally inappropriate condition for putting your head down on the pillow. It also interferes with the transport of tryptophan into the brain. And since the brain depends on a good supply of tryptophan in order to produce serotonin—the neurotransmitter that brings about sleep—drinking alcohol late in the evening severely disrupts serotonin levels. Alcohol, of course, also has a relaxing effect, which for many people will put them to sleep immediately, provided they have drunk enough of it. Then they find that, two or three hours later, they awake dehydrated and unable to sleep for the rest of the night. LOOK TO NATURE For my money, botanical sleep support wins the battle against insomnia better than almost anything else. There are several botanicals I turn to and recommend to others. Some of the most powerful helpers for insomnia have botanical origins. Many plants, from skullcap (Scutellaria laterifolia) to hops (Humulus lupulus), can be used to help promote sleep. I use them often. Here are some of the most effective. CALIFORNIA POPPY Eschscholzia californica This gentle but effective sedative is also an antidepressant and a mood stabilizer, and the seeds of the plant offer excellent natural relief for someone living with chronic pain. It appears to work by telling the brain to increase your opiate receptors, which automatically decreases pain and brings relaxation. California Poppy is also non-addictive. But it should not be taken during pregnancy as it might stimulate uterine contractions. VALERIAN Valeriana officinalis A natural sedative and anti-hypertensive, valerian has been used on both sides of the Atlantic for generations, not only to induce sleep but to help protect people from the negative effects of stress. A double blind study involving 128 people showed quite clearly that a water extract of valerian root significantly increased the quality of sleep. The study, which was quite thorough, measured night awakening, people’s own perceptions of the quality of their sleep, sleeplessness in the morning and sleep latency—that is, how quickly a person got to sleep. In another double blind insomnia study, 20 people were given either a combination of 160mg of valerian root extract and 80mg of Melissa officinalis extract, or menzodiazapine (Triazolam 0.125mg), or a placebo. (Melissa, by the way, belongs to the mint family and also has a powerful anti-viral activity.) Researchers discovered that the valerian-melissa preparation was comparable to the benzodiazepine drug in its ability to increase deep sleep. However, unlike the drug, it did not cause side-effects—diminished concentration, impairment of physical performance or daytime sleepiness. My only problem with valerian is that to me it smells like dirty socks. KAVA KAVA Piper methysticum From the pepper family, this plant is consumed in liquid by the cultures of Polynesia. It is both an effective sedative and hypnotic. It also acts as a muscle relaxant, anticonvulsant, and anti-depressant. When you take it, it first stimulates then begins to sedate the central nervous system. Small doses can produce a euphoric sense of wellbeing. Larger doses or small doses repeated frequently produce deep relaxation, lethargy and induce sleep. Human studies where kava is given in therapeutic doses have failed to show any toxic effects. Nonetheless, kava should not be used by people who have or have had liver problems, who drink alcohol, or take drugs. Children, pregnant and breastfeeding women are not to take kava either. PASSIONFLOWER Passiflora incarnata This magnificent climbing plant, with its white flowers and extraordinary purple centers, is mildly narcotic and a wonderful sedative for the body. It’s an anti-spasmodic, sedative, hypnotic, hypotensive anti-depressant and nerve relaxant. It is particularly useful if you are someone who tends to suffer from nervous tension as well as insomnia. Not as strong as valerian in its action, it is more calming than sedating, and is therefore a superb alternative to tranquilizer drugs. Passionflower works particularly well for sleep when taken together with 5-HTP as an herb, a tincture, or fluid extract or in dried powered form in capsules. Passionflower was used by the Aztecs as an analgesic and sedative. One of its plant chemicals is called harmine, which has an interesting ability to bring about a contemplative state and a feeling of mild euphoria. It was even used during World War II as a “truth serum”. Harmine and other plant chemicals in passionflower, which work synergistically with it, prevent serotonin levels from falling and therefore works extremely well with 5-HTP against insomnia. HOPS Humulus lupulus The flowers from this common herb are often used together with other remedies to treat everything from indigestion to edgy nerves. Like valerian, hops have a pronounced sedative effect but it is much milder. You can use hops in the form of a tincture, but it can be particularly useful as a tea for people who awaken in the middle of the night. Prepare it before going to bed by steeping the flowers for 10 minutes in hot water and then straining and allowing to cool. Put the tea, sweetened with a little honey or preferably stevia (if you can get it), by the side of your bed so you can drink it if you awaken during the night. Some people also swear by small pillows stuffed with dried hops blossoms which you put under your neck when you go to bed or if you awaken. LET GO OF FEAR Experiment with these wonderful plants. Get to know them. Each has its own personality and its own soul. I have used them all over the years and come to love each one of them for their beauty and their effectiveness. Just as when you meet a new friend, it takes time to experience all their gifts. But you will, and it will be wonderful. Meanwhile, forget worry about sleep. Do what you need to do and then just let it happen. If it doesn’t happen tonight, so what? It will tomorrow night, or the next. Lack of sleep is not likely to kill you, but worrying about it for long enough just might. Fresh pressed apple, grape or carrot juice is like nectar from the gods compared to the bottled variety you can buy. And raw juices have remarkable healing properties. I was taught years ago by two doctors that they are not only great drinks for children, but ideal to give whenever a child is ill. Raw juices cannot be made in a food processor or blender. They require a special juice extractor - usually a centrifuge affair, into which you feed the fruits and vegetables as it chops them and spins out their precious juices. 11 Reasons to Limit Fructose Intake and Avoid HFCS

Somehow fruits seem to have have earned themselves a bad name. Why? Because fruits contain fructose—fruit sugar. Nonetheless, it’s fructose that gives glorious organic navel oranges, blueberries, apples, and golden kiwis their marvelous sweetness. And the right amount of organically grown, whole fruits do a lot to keep us well. Fruit plays an important part in any high-raw way of eating. These colorful gifts of nature cleanse the body of the toxicity we absorb from our environment, the water we drink, and the dreadful packaged convenience foods people eat. That’s why fruits are so valuable to any serious detox program. THEN AND NOW So what’s the problem with fructose? First of all, there is evidence which indicates that people who eat too much fruit can make themselves vulnerable to chronic problems like insulin resistance, diabetes and obesity. And this is important. For most fruits we eat today contain between 30 and 50 times the amount of fructose compared to the fruit our hunter-gatherer forefathers munched on. This has come about because, during the 20th century, enormous hybridization projects continue to make fruits sweeter and sweeter. As a result, not only has the incidence of chronic illnesses—from heart disease and diabetes to cancer and mental disorders—exploded in developed countries: So has our consumption of sugar in its many forms—of which fructose is one. If you are someone with high cholesterol, diabetes, obesity, insulin or leptin resistance or hypertension, then it is best to limit your fruit intake so you only get, say, 15 grams of fructose a day. How do you do this? Choose your fruits carefully so that most of them are low-fructose. If you do not fall into these categories, you should be able to eat a lot more fruit and have it do you nothing but good. That is, of course, provided the fruits you choose are organic and therefore not sprayed with chemicals. Make sure they have not been GMO grown. Under no circumstances do you want to put genetically modified foods of any kind into your body. All GMO crops are dangerous, despite all the corporate hype designed to make us think otherwise. RESEARCH, RESEARCH But findings about the effects of fruit eating are contradictory, to say the least. The British Medical Journal is soon to publish three observational studies that examined the effects of fruit-eating on human health. These studies analyzed the diets of almost 200,000 people between 1984 and 2008—none of whom had indications of heart disease, diabetes or cancer when the studies began. On completion, the studies indicated that, far from fruits predisposing us to degenerative diseases, some fruits including grapes, blueberries and apples may actually reduce the risk of diabetes. This is great news and somewhat unexpected, since apples and grapes contain a lot of fructose. But beware. Drinking juices made from these fruits that are bought, rather than being homemade from fresh produce, do contribute to the development of the same diseases that eating whole fruit can help prevent. Steer clear of all packaged and tinned fruit juices and fruit drinks. One aspect of fructose is as dangerous as hell—high-fructose corn syrup (HFCS). If you value your health and the health of your children you’ll want to avoid it at all costs. But avoiding it is not easy. HFCS is added to just about every packaged food and drink you buy. So read every label on every packaged food or drink you buy, and reject every food or drink containing it. HFCS is deadly stuff. A highly processed form of liquid sugar extracted by a nasty chemical solvent called glutaraldehyde, not only is HFCS frequently contaminated with mercury. Putting it into the body is a major cause of obesity, insulin resistance, diabetes, mood disorders, and hyperactivity in children. A DEVIL IN THE DETAILS High-fructose corn syrup is similar in composition to sucrose, with levels of around 45% glucose to 55% fructose. And, as with sucrose, its harmful effects are concealed from view. It does not raise blood sugar, as it is processed by the liver. There it promptly turns into fat. In 1978, HFCS was brought in as a substitute for sugar in soft drinks. This quickly became a real game-changer, but not in a good way. By the year 2000, sugar consumption in America increased by 25 pounds per person per year, nearly ALL of it in the form of HFCS. These days the average American consumes a massive 35 pounds of HFCS each year, according to the U.S. Department of Agriculture. It’s no coincidence that the obesity rate in the US has reached epidemic proportions worldwide. You’ll find HFCS in thousands of grocery items, even in places you might never suspect—such as pizza sauce, salad dressings, foods from sodas, drinks and sweets to sauces, breads, and delicatessen foods like smoked salmon, luncheon meats and salami. Farcically, HFCS is often labeled "all natural" because fructose is found in fruit—even though it is mass-factory-produced, using a process which dramatically increases the fructose content of corn syrup. Fructose in these protucts bears little resemblance to fructose found in fresh fruit. It also lacks the fiber, antioxidants and nutrients found in fresh fruit. As pediatric specialist and childhood obesity expert Robert Lustig puts it, high-fructose corn syrup is “a poison all by itself”. Lustig doesn’t distinguish between plain sugar and HFCS when it comes to health perils—they are “equally dangerous”, he insists, like two sides of the same coin. And what’s so insidious about HFCS is that it is sold to the public as a “healthy alternative” to regular sugar. You should avoid it at all costs. MY OWN FRUIT EXPERIMENT Most of you know that I am a passionate fan of organic raw food and have been for almost half a century. A high-raw way of eating in my mid-twenties healed me from so many illnesses contracted as a result of being raised on junk food throughout most of my unpredictable childhood. A few weeks ago, Aaron and I decided to experiment by returning to being on an all-raw fruits and vegetables diet for a period of six weeks. We wanted to check out what, if any, ill effects eating an all raw diet containing lots of fresh, organic fruits would have on us. The results of our little experiment have turned out to be excellent. We ate a lot of fruit. We put it in our salads, we made juice from a mixture of fruits and included in it much of the pulp produced from the juicing. We loved the way this made us look and feel. I’m happy to report that the results of our little experiment have been nothing but good. Like vegetables and herbs, fruits are not only a storehouse for vitamins and minerals; they boast high levels of phytochemicals. These powerhouses for health and vitality are not nutrients like vitamins and minerals. Yet they carry colored plant factors which play an important role in our health. A good supply of these phyto-nutrients helps minimize the incidence of cancer and heart disease and protect from degenerative conditions associated with aging, such as inflammation of the joints, loss of memory and concentration. They even help slow the aging process itself. Large quantities of these plant factors with many different names are found in common fruits, from berries, oranges, lemons and grapes to cantaloupe, kiwis, cranberries and cherries. However, in any diet based on manufactured convenience foods, they are scarce as hen’s teeth. FRUITS CAN BE FABULOUS Berries, grapes and cherries as well as citrus fruits are excellent sources of water-soluble phyto-chemicals known as flavonoids. Flavonoids guard the integrity of collagen within the body. They work together with vitamin C and—as do many of the other phyto-nutrients—enhance the positive effects of antioxidant vitamins, improving the function and the integrity of tiny blood vessels known as capillaries, which deliver nutrients and oxygen to our cells. This helps raise overall energy. It also helps keep skin smooth and elastic, and protects against bruising while improving memory and eyesight. Phyto-nutrients often carry weird names like catechin, quercetin and hesperidin. Among the more than 20,000 known, hesperidin, rutin, quercetin, catechin and pycnogenol are especially important. Catechin reduces allergic reactions by calming histamine release in the body. Rutin helps guard the integrity and health of capillaries, veins and arteries, as well as the skin itself. Many phytochemicals protect our health by interfering with or blocking specific disease processes. They do this either by acting as antioxidants and preventing free radical damage, or by inhibiting enzymes which promote the development of diseases like cancer. Some plant factors found in fruits and vegetables clear our cells of toxins and other damaging substances, such as herbicides and pesticides we take in from our environment. HEALTH HELPERS At Tufts University in the United States, scientists developed a method of quantifying the anti-oxidant power of specific fruits and vegetables by measuring their ability to quench free radicals in a laboratory test tube. To test a food’s oxygen radical absorbance capacity, called the ORAC test, scientists have been able to categorize a fruit or vegetable according to its overall anti-oxidant power. Fruits like blueberries, blackberries, strawberries and raspberries are at the top of the list. These can be highly protective of our health. While we’re talking of lists, here is a list of some of the most common fruits, indicating how much fructose is in each. Become familiar with it and, given the state of your own body, you can easily make your own decision about what kind and how much of each fruit suits you best, as well as how much you want to eat of it. If you are not troubled by any of these conditions, you can experiment by eating fruits which give you from 20 to 40 grams of fructose a day and work out by trial and error what levels of fructose best work for you. Always eat your fruits whole, if possible. If you choose to juice them yourself, make sure you keep the valuable pulp from the juicing process and add a good quantity of it back to the juice. Go for organic fruits. You might even try growing a lot of your fruit in your garden if you have the space. Never eat GMO fruits—something difficult to ascertain in most countries these days, since corporate interests have lobbied hard to prevent GMO labeling. This is another reason to choose organic. Never eat or drink anything with high-fructose corn syrup in it. It’s deadly stuff—so read labels carefully. Fruits are one of nature’s most glorious gifts to us. Enjoy them.
