Buy whole beans and grind them yourself just before making coffee. Make sure the beans you choose smell fresh and delicious. Most brands are too old and these can poison your system. Dark roasts, especially espresso roasts, are the best to buy. Espresso has less caffeine in it than ordinary coffee. It is also more delicious. Always drink your coffee black, without cream or sugar, otherwise you’ll undermine your ability to receive all the newly discovered benefits from coffee drinking. An important warning: Never drink coffee when pregnant. Even one or two cups drunk while pregnant can affect fetal heart development and long-term function. Enjoy.

Inflammation is the most dangerous condition your body has to handle to make you well and keep you that way. It diminishes your immune system. If you wish to protect yourself from inflammation, you need to become aware of where it’s likely to be coming from. I never met a vegetable I didn’t like. But it took me a while to realize this. For—like a lot of people—I grew up with the mushy Brussels sprouts, canned spinach, revolting beetroot salads, and other nameless horrors served in school meals. It was only when I began to make vegetable juices and exuberant salads, and to cook my own, that I discovered just how delicious vegetables can be in their many incarnations. For a long time, cooked vegetables had a bad rap. Some of this, I suspect, is the result of our not being able to buy good quality organic vegetables in the last 20 or 30 years. So people have come to think of vegetables as rather flavorless things that everyone knows you’re supposed to eat because they’re good for you, but that nobody can be bothered with. RAW OR COOKED When vegetables are cooked properly they have a marvelous flavor of their own. There is nothing quite as comforting as the crunchy pleasure of a baked potato stuffed with a well-dressed living salad, or the light, crisp taste of stir-fried mange touts spiked with almond slivers. And there is little more beautiful to serve with a fish, meat or tofu dish than brightly-colored vegetable purées of carrot, beetroot or spinach. Steam them, stir-fry them, bake them, purée them, eat them raw—however you go, vegetables are not only some of the most important foods in relation to health, they are also some of the most delicious. From the humble turnip to the light-filled leaves of radicchio, vegetables are also sources of light energy from the sun—the same light energy that 15 billion light years ago created the universe; the same energy from which the living body is made. Their beauty is the beauty of the life force itself. When they are grown organically in healthy soils, and eaten either raw or with as little cooking as possible, this energy—which cannot be measured in chemical terms, and whose potential for enhancing health probably goes far beyond even that of the newly discovered phytonutrients—becomes our energy. Scientists estimate that each of the 60 trillion cells in the human body suffers 10,000 free-radical ‘hits’ each day. And this is on the increase, as a result of increasing chemicals in our environment. Phytonutrients help protect us from oxidation damage. Eating vegetables helps counter damage. Make friends with the colorful vegetable kingdom. This recipe for pumpkin soup has been in my family for so long that I can’t even remember who created it. I suspect it was my daughter Susannah. It is deliciously spicy and goes beautifully with a simple salad of fresh sprouts and some rich black bread. Instead of pumpkin, you can use marrow or squash if you wish, but you won’t get the same beautiful colour. WHAT YOU NEED 2 medium Spanish onions, finely chopped 3 garlic cloves, finely chopped 450 g (16 oz/2 cups) fresh pumpkin, peeled and cut into small cubes 250 g (9 oz) mushrooms, sliced 2 tbsp extra-virgin olive oil 720 ml (11/4 pints) vegetable or chicken stock, boiling 1 tsp ground cumin small bunch of fresh coriander, chopped 1 tsp ground cinnamon 4 cm (11/2 in) piece of fresh ginger, finely shredded 1 tsp dry mustard 2 tsp vegetable bouillon powder pinch of Cajun seasoning juice of 2 fresh lemons zest of 1 lemon, finely shredded HERE’S HOW Sauté the onions, garlic, pumpkin and mushrooms in a little olive oil until soft. Add the boiling stock and cook for 30 minutes. Add the remaining ingredients except for the lemon juice and zest, and cook for another 5 minutes. Place in a blender or food processor and blend thoroughly. Add the freshly squeezed lemon juice and serve sprinkled with lemon zest.

Long before Ayurvedic medicine arrived in the west, I made a journey to hospitals throughout India where it was practiced. I was determined to learn all I could about this remarkable ancient healing tradition. I was bowled over by all the marvelous things I did discover. Near the end of my trip, I arrived at an Ayurvedic Hospital in Kerala—land of the coconuts, in the south of the continent. There, hundreds and hundreds of acres, interspersed with twisting waterways, grow organic coconuts. It was while at this hospital that the doctor’s taught me how coconut oil, rich in health-giving natural properties, can be used to heal a whole body. The protocol they used for this was then known as “oil gargling”—a serious misnomer, for in truth it has nothing to do with gargling. Nowadays, we call it “oil pulling”. It’s important that you know about it, since oil pulling has improved the health of thousands of people including me. GIFTS FROM THE COCONUT It’s the oil of the coconut that wields life-promoting powers. What few people know is that coconut oil is naturally antimicrobial. It’s an efficient destroyer of all sorts of bacteria, viruses and protozoa that damage human health. The oil pulling technique has been used for some 5000 years, not only because it reduces plaque in the mouth, but as a means of healing conditions throughout the whole body—from inflammation, pain in the joints, chronic fatigue, sinusitis, back pain and diabetes, to migraine, PMS, and chronic skin problems. Coconut oil is highly responsive to temperature changes. In a cool room it becomes a solid. But set it in the sunlight or immerse a jar of it in hot water for a few minutes and it will turn into a crystal clear liquid oil. POWERHOUSE OILS There are literally thousands of types of bacteria in the mouth, including Streptococcus mutans—an acid-producing bacterium that is a major cause of tooth decay. During oil pulling, the breaking down of coconut oil by enzymes produces acids which are toxic to these pathogens. Each of these brings its own unique health-promoting support. When you take coconut oil into the body via oil pulling, your system converts one important ingredient, lauric acid, into monolaurin, with its antibacterial, antiviral and antiprotozoal properties. Coconut oil contains the largest amount of lauric acid of any fruit or vegetable on the planet. Monolaurin is a monoglyceride with the ability to destroy negative invaders in the body that have a lipid coating. The lipid-coated viruses and bacteria that it attacks include the HIV virus and the influenza virus as well as a number of other pathogenic bacteria and protozoa. Another ingredient in coconut oil, capric acid, also boasts antimicrobial properties. Finally, coconut oil is about 66% medium chain triglycerides or MCTs. These offer a huge variety of health benefits, including sating appetite and helping to establish ketogenic-adaptation. Oil pulling is believed to reduce plaque by at least 50%. It involves rinsing your mouth with coconut oil, much the way you would use a mouthwash. You put from a teaspoon to a tablespoon of oil in your mouth. Even in its solid form the coconut oil will quickly change into a white liquid as it responds to the heat of the mouth. Then you swish it around your teeth for 20 minutes. A SUPERB DETOX Oil pulling is powerfully detoxifying to the body as a whole. The mouth is home to billions of bacteria, viruses, fungi and other parasites and other toxins which undermine health and can trigger disease. It is these beasties and their toxic waste products that create gum disease and tooth decay. They are then passed on to the rest of the body. The immune system is constantly fighting off these pathogens. When we become overloaded from excessive stress, poor diet, or environmental toxins, they leak into the whole system and can create secondary infections, as well as a wide variety of other health issues. Pathogenic oral bacteria, and the toxins that they produce, harm far more than just your mouth. They circulate through the bloodstream and are carried all over the body. Protect the health of the heart. Foster healthy metabolism. Even help counter diabetes. MY OWN EXPERIENCE I began doing coconut oil pulling out of frustration with leaking root canals in my mouth. Many years ago—trusting my dentist—I foolishly agreed to allow root canals to be carried out for four of my teeth. This is something I would never do now. Why? Because, although most dentists continue to deny this, virtually all root canals eventually leak. As they leak, they pour poison into your mouth and the rest of your body. This is why the hygienist asks you before she begins her work if you have any heart conditions. So virulent can be the poisons produced by a leaking root canal that they destroy the gums, give you bad breath and make you highly susceptible to illness. (No hygienist wants you to die of a heart condition in her chair while she is cleaning your teeth!) When I discovered that my own root canals were leaking, I started to do a lot of research into the subject. I must have read at least four dozen papers on root canals and their problems. My dentist looked at me and said “We just need to remove the leaking root canals out and put in new ones”. Well thank you very much—but I did not want to go through that again and have the next root canals leak even more health-destroying poisons into my body. I figured I had to do something to help myself. I remembered oil pulling and began to use it twice each day for 20 minutes. Within a few days, wonderful things started to occur. I had, for a long time, been experiencing pressure and discomfort in my cheeks—not exactly sinusitis, but something that I was certain shouldn’t have been there. This disappeared within a week. Meanwhile, I had also been experiencing pain in my legs as a result of five serious accidents which had damaged my lower body. That too began to get better. LIFELONG BENEFITS At this point, I realized that I was on to something pretty amazing. I asked other people about their own experience with oil pulling. Some told me that their asthma had cleared up; so had their chronic fatigue, migraines, PMS and skin problems. What appears to happen when you practice this technique is the coconut oil detoxifies and cleanses the body, promoting the release of toxins encouraging the body to heal itself. I continued to do my oil pulling for perhaps eight months, after which my teeth were whiter, my breath was fresh and my tongue and gums had a healthy pink color to them. I was so pleased that I figured “I probably don’t need to do oil pulling any more”. So I stopped. After about three months, I realized that I was getting some slight swelling in my mouth. So I resumed oil pulling and have continued ever since. I actually enjoy it. I love the fresh, strong feel of my gums and teeth after finishing it. HOW TO DO COCONUT OIL PULLING The practice consists of swishing coconut oil in the mouth, working and pulling it, and drawing it through the teeth. You’ll need a container of organic raw coconut oil that is natural and has not had any fragrance taken out of it. Put a teaspoon to a tablespoon of oil in your mouth. It will probably be in its solid state. But it will melt as soon as you get it in your mouth. Swish the oil around in your mouth for around 15 to 20 minutes. Then spit it out completely. Finally, brush your teeth. You must NEVER swallow the oil. By the time you’ve done the oil pulling exercise each time, the oil will have become loaded with bacteria, toxins and mucus. If you have been following my blog, you’ll know that my life is full of herbs. The wonderful gifts that herbs provide include not just their dazzling power to heal and strengthen, but their magnificent beauty. I’m moved to the core whenever I take time to notice the way a plant looks and smells, when I sense the inexorable persistence of its growing, and its willingness to grace my life with its delicate splendor. When you become aware of a plant’s beauty at every level, even the most commonplace interaction between you and the plant feels sacred. OF GODS AND DEMONS The ancient Egyptians believed that incense was the sweat of the gods that had fallen to Earth. We associate saints with beautiful fragrances and devils with foul smells. I remember once visiting an onsen—a spa in the mountains of Japan. This is a place of healing where hot sulfurous water pours forth from natural underground wells. I walked down endless corridors before reaching the sulfur pool which was enclosed to make it possible to use even during the icy winter months. I was alone in the small room. The pool sides were encrusted with yellow growths, and sulfurous steam filled the room. As I climbed naked into the streaming water, I felt afraid. That’s how deeply ingrained our sense of uneasiness can be when faced with the overwhelming smell of sulfur, which our culture and our ancestors have always associated with the devil. FILL YOUR ROOMS WITH BLISS Use herbs and plants to care for your pets, or to cleanse the space in which you live and work. They help remind us of who we really are, and what is fundamentally important in the desacralized environment in which most of us spend most of our lives. One of the things I most love to do is fill my bedroom with lilies. These are my favorite flowers—but they have to be the white oriental lilies or the marvelous Stargazers, as these are the most scented. Over the years, I’ve come to know lilies well. I know that they give off the greatest amount of fragrance between two and three in the morning. The beauty of their fragrance at this time is so intense that it often wakes me up. Sometimes when this happens, it seems to me that these flowers—so generous with their gifts—are calling to me, asking me to celebrate their wondrous beauty. The word perfume comes from the Latin per fumum, meaning “through the smoke”. The original way in which fragrance was used in human life was to create a union of divine and mundane reality, not only in the lives of priests, but of ordinary people. Our sense of smell plays a powerful role in rituals. Scent is one of the means by which we create the bridges between the transcendent and the day-to-day. It’s just like if you say a prayer before you eat, the very act of eating nourishes your body and your soul too. CLEANSE AND SANCTIFY When you move into a new home, or you feel the need to cleanse or make sacred any space—bedroom, kitchen, workplace, or the whole house—try doing it with the traditional sacred plants first: Desert sage, copal, sweet grass; even dried lavender, thyme and rosemary. I cut back my herb plants three or four times a year, and they love it. It makes them grow stronger and bushier. I then take the cuttings and tie them in small bunches with brightly colored ribbons, and hang them from my kitchen ceiling to dry. Once dry, I can use them for potpourris, sachets, and of course, sanctifying space with their smoke. HERE’S HOW Take a bunch of dried herbs and light them over an open metal biscuit tin to catch the sparks, so that they don’t reach the floor. I use a long rectangular tin that once held a bottle of malt whisky for this. I know other people who use baking trays and turkey tins. When the herbs begin to smoke, walk around the space to be sanctified, lifting up the burning plants with the tin beneath them. All the while, ask with your heart and mind that the room be cleansed and dedicated to whatever purpose you intend for it. This could be to make a joyous harmonious space; a space in which creativity can flourish—this is something I love to do—or a space for meditation, sleep, prayer or making love. It is your intention, coupled with the cleansing abilities of the burning plants, that makes it all happen. When you are cleansing and dedicating the desired space, make sure that you offer up the smoke to all corners of the room, and to the six directions—north, south, east, west, above and below. And when you’ve finished, thank the plants for their help. They will hear you and celebrate their own beauty..

Discover How Animal Protein Makes Your Tissues Stronger & Improves Health

The word protein literally means “primary substance.” It’s an appropriate name. For every tissue in the body, from brain to little fingernail, is built of and repaired by protein. Amino acids, the building blocks of protein, are central factors in most body processes too. They make antibodies against infection, create hormones and ensure you have enough haemoglobin in your red blood cells. Every enzyme has protein as its basic component. This is why we need good quality, clean protein from eggs, nuts, and organic, fermented, soy products if you are vegetarian. If you are not vegetarian, then fresh fish gleaned from clean waters, organic poultry, wild game, and organic meat from animals free to graze is ideal. THE ANIMAL QUESTION Whether we like it or not, the highest quality protein is animal-based. And the most important nutritional feature of both meat and fish is their cellular structure. For it is very similar to our own. Nutrients we absorb from animal proteins are easily transformed into our own tissue and blood. Even small amounts of top quality animal protein can be enormously strengthening to anyone deficient in strength and energy. In addition to being the best power foods available, all good quality animal protein boasts an abundance of minerals and trace minerals. SHUN FACTORY FARMING Not only is caged and physically restricted animal farming an abomination in relation to the horrific suffering it imposes. Such domestic meat and much farmed fish is laden with hormones, poisons and antibiotics. If you routinely eat large quantities of meat, you can end up not only with a high level of uric acid in your body, but with a tendency to form a lot of mucus and to build up toxicity in your own body. This is why when I eat meat—and I prefer fish or game—I eat only certified organic meat from free range animals. The difference in flavor is undeniable. Also, I know that the animals I’m eating have been carefully raised and are free of both excess fat and toxicity. When selecting meat or fish, there are two major considerations: Make sure it’s fresh, and as unprocessed as possible. Buy fresh fish and seafood instead of the processed forms, such as crab cakes or smoked and breaded fish. There’s no harm in having the odd slice of smoked salmon, provided it is naturally smoked— however, the more a fish is processed the fewer benefits it will bring for high level health. (And most smoked salmon has sugar added to it these days, so read labels carefully.) BLESSED OMEGA 3s If possible, add fish to your diet once or twice a week. For fish is rich in “pre-formed” omega-3 fatty acids—DHA and EPA. Omega-3 fatty acids are known to reduce the levels of triglycerides—blood fats characteristic of insulin resistance syndrome which can put you at risk of heart disease. Omega-3 fatty acids also spur fat burning, as well as lowering blood pressure and improving overall heart function. Often, flaxseed oil is promoted as a rich source of omega-3 fatty acids. And it is—at least in the sense that flax contains a great deal of linolenic acid, precursor to DHA and EPA. The problem is that, when you are relying on flaxseed for your omega-3 requirements, your body has to convert linolenic acid to DHA and EPA for this to be beneficial. Most people can’t make this conversion—especially if they have eaten a lot of trans-fatty acids, or an abundance of omega-6 fats, in the past. Also: Omega-3 from flax oil is a shorter chain fatty acid, which in some people is changed into arachidonic acid. When in excess, this causes inflammation. By contrast, EPA and DHA in fish oils are great anti-inflammatories. If you are overweight or insulin resistant, it is likely that your body cannot make this conversion, possibly because you, like most of us these days, have taken in an overabundance of omega-6 fatty acids in comparison to the omega-3s. That’s why taking a good fish oil is wise (see below for my favorite). MAKE IT FRESH The key to good fish is buying it fresh. Ask the person serving you which fish is the freshest, and what days of the week different kinds of fish arrive in the shop. You can tell a lot about the freshness of fish by its smell and look. Fresh fish does not smell fishy. It smells more like the salty bite of a sea breeze. If it’s a whole fish you are looking at, pull back its gills. They should be bright red. The moment they go pale pink or grey, you know the fish has been sitting in the shop too long. Try poking the flesh of the fish with your finger as well. If it springs back instead of forming an indentation, then you’re lucky enough to have a piece of fresh fish on your hands. Check out the eye of the fish, too. It should be dome-shaped and clear, not sunken or murky. GO WILD The meats we get today are a far cry from those our Paleolithic ancestors hunted. The closest you can come these days is wild boar, rabbit, buffalo, venison and kangaroo. These meats are higher in protein and lower in fat than the meat from domestically farmed animals. Where a piece of meat from wild game boasts about 22 grams of protein in each 100 gram portion, domestic meat can sometimes contain as little as 15 or 16 grams. Wild meat is also much lower in fat. The ordinary meat that you buy in the supermarket is six times as fatty and only about three quarters as rich in protein as that of game meat. That being said, all organic red meats like beef and lamb from grazed animals are excellent sources of zinc, a mineral that’s enormously important—not only for insulin balance but for the skin and the reproductive system. Free-range and organic meat is far better than factory farmed in every way. LISTEN TO YOUR BODY I was a vegetarian for twenty years of my life, and I believe that a vegetarian diet is ideal for some. In my mid thirties, however, I discovered that vegetarianism was not ideal for me. This may well have been because my ancestors, being Nordic, spent most of their lives living on fish, salted meat and whatever cabbage they could dig up from frozen ground. Our genetic makeup determines to a great extent what works for us and what doesn’t. When I added fish and game to my meals, my energy levels soared. I looked and felt better. Each of us is unique. This not only determines what kind of foods we thrive on; it also determines what kinds of foods are best for us at any particular time of our life. For instance, many women at menopause find they do much better by cutting meat out of their diet. Others discover just the opposite—that they need to add more animal protein. It’s a question of “suck it and see”. Following the principles of a good diet, explore what works for you. Don’t hesitate to shift from eating more fruit at one time of your life to more vegetables at another, more fish at another. The human body is always changing, as are our needs for various foods. I’d like to share with you a couple of my favorite recipes. Try them out and let me know what you think. If you have favorite protein recipes of your own, do send them to me. I will share them with others and of course credit you for them. CRUNCHY GREEN PRAWNS serves 4 When it comes to prawns, green means raw. These are the best. You can buy them fresh or frozen in every form—shelled, unshelled, whole, or heads removed. If you’re lucky enough to find fresh ones, make sure they really are fresh since, like other shellfish, prawns go off fast. Eat them the day you buy them. I like to eat them whole, partly because they are so beautiful and partly because I like the crunchy texture of the shells. I always eat the shells since the shells are filled with chitin—a protein substance which cosmetic manufacturers now use to strengthen skin from both within and without. Like most shellfish, prawns are rich in iodine and in the antioxidants zinc and selenium. Prawns are great for people who eat very little, because they are an easily-digested form of top quality protein. They are also a good source of calcium, iodine and the important omega-3 fatty acids, which not only protect the heart but offer good support to hormonal health, skin health and beauty. Crunchy Green Prawns can be cooked under a grill or on a barbecue. You can even flash fry them on a teppen yaki grill or in a heavy frying pan if you like. They are delicious hot. But you can also make them for a picnic and serve them cold. What You Need 750g of King prawns, uncooked. You may peel and de-vein them if you wish. 2 limes, cut in wedges 2 tablespoons of fresh coriander, chopped For the Marinade: 3–4 tablespoons of olive oil 1 tablespoon of spring onions, finely chopped 5 cloves of garlic, finely chopped 50g of fresh ginger, finely shredded A small handful of fresh coriander, chopped The juice and finely shredded zest of 2 small limes (if you can’t get limes then use 1 lemon) 2 tablespoons of sake, tamari or dry sherry 1/2 teaspoon of mustard seeds broken up with a mortar and pestle Coarse-ground black pepper to taste Snow pea sprout heads to use as a garnish (optional) Here’s How Wash the prawns carefully in cold water and then dry with a tea towel. Place all of the ingredients for the marinade, except the lime zest, chopped garlic and 1/4 of the chopped coriander into a food processor or blender. Purée to a paste. Pour into a bowl, add the garlic, the lime or lemon zest and the remaining chopped coriander and mustard seeds, then mix into the paste by hand. Place the prawns in the bowl and, using your hands, turn them over and over until they are covered with the paste. Put on to a flat glass dish and cover. Set it in a cool place—the fridge itself if it happens to be the middle of summer—for at least three hours. Cook on a teppen yaki grill, a barbecue or under a grill in the oven until they are crunchy. Serve with lime wedges. Don’t throw away any of the marinade—cooked or uncooked—that still remains. It is delicious to spread over the crunchy prawns. It takes only a couple of minutes a side to fry these and very little more under a hot grill or on a barbecue—all you want is for them to turn opaque. However you cook them, eat them with your fingers—shell and all. All sensuous food tastes better this way, but prawns especially. I serve them with a combination of basmati rice and wild rice—about half and half—and a bright green salad of wild rocket with whatever fresh herbs, from basil to lovage, that I can harvest from the garden or find at the market. AND FOR MY VEGETARIAN FRIENDS: CORIANDER ORGANIC TOFU Thanks to the intense flavor of coriander, this herb works well to enhance the bland flavor of tofu. This recipe goes well with steamed vegetables—especially broccoli—and kasha (steamed buckwheat). Make a tofu sandwich of it, or add this tofu to a salad to make it a one-bowl meal rich in protein and in plant factors for health. What You Need 400g of firm organic tofu (non-GMO) 2 tablespoons of olive oil or coconut oil 2” finger of fresh ginger, shredded fine 1/2 cup of fresh coriander, chopped fine 1 tablespoon of tamari 1 teaspoon of wild honey, or a pinch of granular stevia Sea salt and freshly-ground red pepper to taste Here’s How Cut the tofu crosswise into slices that are approximately 3/8 inch thick. Mix together all the other ingredients in a bowl, then dip each tofu slice into the mixture you have created. Heat a heavy frying pan grill or teppen yaki grill. Use enough olive oil or coconut oil on top of the grill so the tofu will not stick. Place the tofu on the grill, sprinkle with sea salt and freshly-ground red peppercorns, and cook at a high temperature until browned. Turn and brown again. Serve immediately as a tofu sandwich or in a tofu salad or simply as is, with loads of beautifully colored fresh vegetables. The whole cooking process takes no more than 3–5 minutes. If you want a clear mind and uplifted spirit – and who doesn’t – not to mention energy, drinking raw juice each day is a great step in the right direction. It is an excellent way to clear a cold, banish a hangover and even clear the pain of arthritis (provided of course you've not been on long-term drug therapy which can sometimes interfere with the body’s ability to detoxify and heal itself). Juice is a perfect fuel for your body. Its high water content means that it is easily assimilated and tends to cleanse and nurture the body, and it is the richest available source of vitamins, minerals, plant factors such as the carotenoids, and other antioxidants powerful in their anti-aging and immune enhancing factors. Not only is raw juice the best possible tonic for promoting all-round health and general well-being, each juice has specific therapeutic properties. You can use it as a quick fix to treat a range of common complaints. Try some of the following and see what powerhouses for healing they really are. Aim to drink at least three glasses of juice each day, but try to make them freshly each time. If you really have to keep them then put them in the fridge with as much ice in them as you can. Fresh juices oxidize and lose their potency very, very quickly. When juicing, always buy fruits and vegetables that have been organically grown, not only because you don’t want to be taking in pesticides and herbicides with your juice, but because organic fruits and vegetables have not had their nutritional integrity compromised and you will get the best vitamin, mineral and trace element content. Steer clear of bread and cooked carbohydrates such as pasta and cereals, and make your last meal of the day a large raw salad made of fresh fruits and vegetables. Don’t have anything else to eat after your salad, except perhaps a cup of herb tea before bed. This will give your body a good 12 hours head-start on the elimination process and it will thank you for it. the apple fast There’s really nothing to it. Over the two days you have chosen, tuck into your apples. Eat as many as you like at any time of the day or night. You must eat the whole apple including the peel, the seeds and the core. Chew well, until the last drop of flavor has been extracted from the fruit. The only part you throw away is the woody stem. Of course, you need to eat your apples raw. You can munch them whole, or grate them and sprinkle a little cinnamon on top. You can even put them in the blender with spring water to make a drink. Eat nothing else during this two-day period, but eat them whenever you are hungry. Do not drink tea or coffee. You may have herb teas such as peppermint, lemon balm or chamomile with a teaspoon of honey if you wish. Drink lots of spring water, but nothing else. Be lazy and luxurious.  During these days indulge yourself doing whatever is pleasurable for you. Many people find their sexuality is heightened during these days. If so, enjoy it. Apples are great to munch in bed. In many ways, the most useful thing about the apple fast is the way you can call on it when you most need help to get you back on the rails again. We all slip up sometimes - we over work or over indulge and live to regret it the next day. A two day apple fast, or even just a day spent eating only apples, is an excellent ‘quick corrector’. Spend even just one day munching apples and it will help set all to rights again, so that when you awaken next morning you feel more like your old self and ready to face the day full of energy. Apple fasting gives you the chance to step back regularly and take a look at your lifestyle, instead of mechanically going on day after day without being aware of where your energy is going. Set aside two days, three or four times a year – a weekend is best – for an apple fast. This will spring clean your body from the inside out. Culpepper, who believed that motherwort belonged to the goddess Venus and to the astrological sign of Leo, wrote "There is no better herb to drive melancholy vapors from the heart, to strengthen it and make the mind cheerful, blithe and merry." I think this sums up the virtues of motherwort superbly. SUCH BLESSINGS Its leaves are full of mind-altering natural chemicals, which studies in China have shown to decrease the levels of blood lipids and exert a regulating action on muscles such as the womb and the heart, bringing calm in its wake. WHAT IT CAN DO Calm The Nerves There is something so calming and balancing about motherwort that it is hard to describe to someone who has never used it; used frequently it can relieve anxiety, nourish the nervous system, and relax tensions, while at the same time act as a tonic for energy; it is wonderful used just before confronting stressors of any kind. Minimize Hot Flushes This herb can reduce the intensity, length and frequency of hot flushes, even helping to calm the dizziness or faintness that can accompany them, thanks to its ability to oxygenate the blood in men and women, tonify thyroid, liver, heart and womb, and invigorate circulation all round. For best results use it regularly for 12 weeks or longer. Sometimes 10 to 15 drops or so of the tincture in a little spring water can ease a hot flush while it’s happening. Promote Undisturbed Sleep It’s a great help when you awaken in the night with sweats and have trouble dropping off again. Even Dr Mehmet Oz, well known for his TV appearances, and his co-author Mike Rosen published a blistering attack called “Don’t Monkey With Coconut Oil”, claiming that coconut oil is “loaded with artery-clogging saturated fat and oozing with calories.” It’s hard to believe that similar blatantly inaccurate warnings of the dangers of eating saturated fats—especially coconut oil—still goes on in spite of the extensive research demonstrating that such beliefs are completely untrue. Coconut oil’s ability to support high-level health is now well proven. When I wrote and presented my documentary in the Southern Hemisphere called “To Age or Not to Age” , the nutritional program I designed for participants was rich in organic coconut oil. We worked with healthy men and women between the ages of 30 and 60 who wanted to become even healthier. My documentary asked the question, “Is it possible to slow aging by making simple nutritional changes?” We also wanted to know, “Might it also be possible to reverse age-related degeneration that has already occurred?” And, most important, “Can these things be verified in medically measurable ways?” GREAT BLESSINGS We carried out what is known as a baseline study to find out. We sent our participants to undergo standard tests of medical parameters before the project began. They were each one checked for fasting insulin and blood sugar levels, cholesterol, triglycerides and blood pressure. These medical tests were carried out in a well-known hospital which also happened to have an excellent physiology laboratory, so we were able also to work with exercise physiologists who measured each participant’s VO2Max, body fat percentage and lean body mass to fat ratio. To our surprise, every participant—including a 50 year old triathlete—showed several abnormalities associated with insulin resistant syndrome and other biomarkers. Most were also overweight. I introduced the group to my low-carb, high-fat way of eating, full of coconut oil. The experiment lasted only 5 weeks. When we sent participants back to the hospital at the end of this time to have their medical parameters checked again, the results were mind-blowing. We were amazed to discover that, after only 5 weeks of dietary changes, every abnormal biomarker had normalized for each participant, except for cholesterol measurements in one woman, which took another few weeks to normalize. Participants reported that they felt better than they had for years in every way. The irony of all of this was amusing. A well known self-promoting “professor of nutrition” went so far as to upbraid the television broadcasting authorities for having aired such a documentary. Paying no attention to the remarkable improvements in health recorded for all participants and validated by medically measurable procedures, this gentleman raised hell. And the single most aggressive attack he tried to make against the program was directed at... you guessed it... coconut oil. The documentary confirmed yet again that the human body has a phenomenal capacity to heal itself through the right changes to what we eat.
