Discover How Animal Protein Makes Your Tissues Stronger & Improves Health

The word protein literally means “primary substance.” It’s an appropriate name. For every tissue in the body, from brain to little fingernail, is built of and repaired by protein. Amino acids, the building blocks of protein, are central factors in most body processes too. They make antibodies against infection, create hormones and ensure you have enough haemoglobin in your red blood cells. Every enzyme has protein as its basic component. This is why we need good quality, clean protein from eggs, nuts, and organic, fermented, soy products if you are vegetarian. If you are not vegetarian, then fresh fish gleaned from clean waters, organic poultry, wild game, and organic meat from animals free to graze is ideal. THE ANIMAL QUESTION Whether we like it or not, the highest quality protein is animal-based. And the most important nutritional feature of both meat and fish is their cellular structure. For it is very similar to our own. Nutrients we absorb from animal proteins are easily transformed into our own tissue and blood. Even small amounts of top quality animal protein can be enormously strengthening to anyone deficient in strength and energy. In addition to being the best power foods available, all good quality animal protein boasts an abundance of minerals and trace minerals. SHUN FACTORY FARMING Not only is caged and physically restricted animal farming an abomination in relation to the horrific suffering it imposes. Such domestic meat and much farmed fish is laden with hormones, poisons and antibiotics. If you routinely eat large quantities of meat, you can end up not only with a high level of uric acid in your body, but with a tendency to form a lot of mucus and to build up toxicity in your own body. This is why when I eat meat—and I prefer fish or game—I eat only certified organic meat from free range animals. The difference in flavor is undeniable. Also, I know that the animals I’m eating have been carefully raised and are free of both excess fat and toxicity. When selecting meat or fish, there are two major considerations: Make sure it’s fresh, and as unprocessed as possible. Buy fresh fish and seafood instead of the processed forms, such as crab cakes or smoked and breaded fish. There’s no harm in having the odd slice of smoked salmon, provided it is naturally smoked— however, the more a fish is processed the fewer benefits it will bring for high level health. (And most smoked salmon has sugar added to it these days, so read labels carefully.) BLESSED OMEGA 3s If possible, add fish to your diet once or twice a week. For fish is rich in “pre-formed” omega-3 fatty acids—DHA and EPA. Omega-3 fatty acids are known to reduce the levels of triglycerides—blood fats characteristic of insulin resistance syndrome which can put you at risk of heart disease. Omega-3 fatty acids also spur fat burning, as well as lowering blood pressure and improving overall heart function. Often, flaxseed oil is promoted as a rich source of omega-3 fatty acids. And it is—at least in the sense that flax contains a great deal of linolenic acid, precursor to DHA and EPA. The problem is that, when you are relying on flaxseed for your omega-3 requirements, your body has to convert linolenic acid to DHA and EPA for this to be beneficial. Most people can’t make this conversion—especially if they have eaten a lot of trans-fatty acids, or an abundance of omega-6 fats, in the past. Also: Omega-3 from flax oil is a shorter chain fatty acid, which in some people is changed into arachidonic acid. When in excess, this causes inflammation. By contrast, EPA and DHA in fish oils are great anti-inflammatories. If you are overweight or insulin resistant, it is likely that your body cannot make this conversion, possibly because you, like most of us these days, have taken in an overabundance of omega-6 fatty acids in comparison to the omega-3s. That’s why taking a good fish oil is wise (see below for my favorite). MAKE IT FRESH The key to good fish is buying it fresh. Ask the person serving you which fish is the freshest, and what days of the week different kinds of fish arrive in the shop. You can tell a lot about the freshness of fish by its smell and look. Fresh fish does not smell fishy. It smells more like the salty bite of a sea breeze. If it’s a whole fish you are looking at, pull back its gills. They should be bright red. The moment they go pale pink or grey, you know the fish has been sitting in the shop too long. Try poking the flesh of the fish with your finger as well. If it springs back instead of forming an indentation, then you’re lucky enough to have a piece of fresh fish on your hands. Check out the eye of the fish, too. It should be dome-shaped and clear, not sunken or murky. GO WILD The meats we get today are a far cry from those our Paleolithic ancestors hunted. The closest you can come these days is wild boar, rabbit, buffalo, venison and kangaroo. These meats are higher in protein and lower in fat than the meat from domestically farmed animals. Where a piece of meat from wild game boasts about 22 grams of protein in each 100 gram portion, domestic meat can sometimes contain as little as 15 or 16 grams. Wild meat is also much lower in fat. The ordinary meat that you buy in the supermarket is six times as fatty and only about three quarters as rich in protein as that of game meat. That being said, all organic red meats like beef and lamb from grazed animals are excellent sources of zinc, a mineral that’s enormously important—not only for insulin balance but for the skin and the reproductive system. Free-range and organic meat is far better than factory farmed in every way. LISTEN TO YOUR BODY I was a vegetarian for twenty years of my life, and I believe that a vegetarian diet is ideal for some. In my mid thirties, however, I discovered that vegetarianism was not ideal for me. This may well have been because my ancestors, being Nordic, spent most of their lives living on fish, salted meat and whatever cabbage they could dig up from frozen ground. Our genetic makeup determines to a great extent what works for us and what doesn’t. When I added fish and game to my meals, my energy levels soared. I looked and felt better. Each of us is unique. This not only determines what kind of foods we thrive on; it also determines what kinds of foods are best for us at any particular time of our life. For instance, many women at menopause find they do much better by cutting meat out of their diet. Others discover just the opposite—that they need to add more animal protein. It’s a question of “suck it and see”. Following the principles of a good diet, explore what works for you. Don’t hesitate to shift from eating more fruit at one time of your life to more vegetables at another, more fish at another. The human body is always changing, as are our needs for various foods. I’d like to share with you a couple of my favorite recipes. Try them out and let me know what you think. If you have favorite protein recipes of your own, do send them to me. I will share them with others and of course credit you for them. CRUNCHY GREEN PRAWNS serves 4 When it comes to prawns, green means raw. These are the best. You can buy them fresh or frozen in every form—shelled, unshelled, whole, or heads removed. If you’re lucky enough to find fresh ones, make sure they really are fresh since, like other shellfish, prawns go off fast. Eat them the day you buy them. I like to eat them whole, partly because they are so beautiful and partly because I like the crunchy texture of the shells. I always eat the shells since the shells are filled with chitin—a protein substance which cosmetic manufacturers now use to strengthen skin from both within and without. Like most shellfish, prawns are rich in iodine and in the antioxidants zinc and selenium. Prawns are great for people who eat very little, because they are an easily-digested form of top quality protein. They are also a good source of calcium, iodine and the important omega-3 fatty acids, which not only protect the heart but offer good support to hormonal health, skin health and beauty. Crunchy Green Prawns can be cooked under a grill or on a barbecue. You can even flash fry them on a teppen yaki grill or in a heavy frying pan if you like. They are delicious hot. But you can also make them for a picnic and serve them cold. What You Need 750g of King prawns, uncooked. You may peel and de-vein them if you wish. 2 limes, cut in wedges 2 tablespoons of fresh coriander, chopped For the Marinade: 3–4 tablespoons of olive oil 1 tablespoon of spring onions, finely chopped 5 cloves of garlic, finely chopped 50g of fresh ginger, finely shredded A small handful of fresh coriander, chopped The juice and finely shredded zest of 2 small limes (if you can’t get limes then use 1 lemon) 2 tablespoons of sake, tamari or dry sherry 1/2 teaspoon of mustard seeds broken up with a mortar and pestle Coarse-ground black pepper to taste Snow pea sprout heads to use as a garnish (optional) Here’s How Wash the prawns carefully in cold water and then dry with a tea towel. Place all of the ingredients for the marinade, except the lime zest, chopped garlic and 1/4 of the chopped coriander into a food processor or blender. Purée to a paste. Pour into a bowl, add the garlic, the lime or lemon zest and the remaining chopped coriander and mustard seeds, then mix into the paste by hand. Place the prawns in the bowl and, using your hands, turn them over and over until they are covered with the paste. Put on to a flat glass dish and cover. Set it in a cool place—the fridge itself if it happens to be the middle of summer—for at least three hours. Cook on a teppen yaki grill, a barbecue or under a grill in the oven until they are crunchy. Serve with lime wedges. Don’t throw away any of the marinade—cooked or uncooked—that still remains. It is delicious to spread over the crunchy prawns. It takes only a couple of minutes a side to fry these and very little more under a hot grill or on a barbecue—all you want is for them to turn opaque. However you cook them, eat them with your fingers—shell and all. All sensuous food tastes better this way, but prawns especially. I serve them with a combination of basmati rice and wild rice—about half and half—and a bright green salad of wild rocket with whatever fresh herbs, from basil to lovage, that I can harvest from the garden or find at the market. AND FOR MY VEGETARIAN FRIENDS: CORIANDER ORGANIC TOFU Thanks to the intense flavor of coriander, this herb works well to enhance the bland flavor of tofu. This recipe goes well with steamed vegetables—especially broccoli—and kasha (steamed buckwheat). Make a tofu sandwich of it, or add this tofu to a salad to make it a one-bowl meal rich in protein and in plant factors for health. What You Need 400g of firm organic tofu (non-GMO) 2 tablespoons of olive oil or coconut oil 2” finger of fresh ginger, shredded fine 1/2 cup of fresh coriander, chopped fine 1 tablespoon of tamari 1 teaspoon of wild honey, or a pinch of granular stevia Sea salt and freshly-ground red pepper to taste Here’s How Cut the tofu crosswise into slices that are approximately 3/8 inch thick. Mix together all the other ingredients in a bowl, then dip each tofu slice into the mixture you have created. Heat a heavy frying pan grill or teppen yaki grill. Use enough olive oil or coconut oil on top of the grill so the tofu will not stick. Place the tofu on the grill, sprinkle with sea salt and freshly-ground red peppercorns, and cook at a high temperature until browned. Turn and brown again. Serve immediately as a tofu sandwich or in a tofu salad or simply as is, with loads of beautifully colored fresh vegetables. The whole cooking process takes no more than 3–5 minutes. 11 Reasons to Limit Fructose Intake and Avoid HFCS

Somehow fruits seem to have have earned themselves a bad name. Why? Because fruits contain fructose—fruit sugar. Nonetheless, it’s fructose that gives glorious organic navel oranges, blueberries, apples, and golden kiwis their marvelous sweetness. And the right amount of organically grown, whole fruits do a lot to keep us well. Fruit plays an important part in any high-raw way of eating. These colorful gifts of nature cleanse the body of the toxicity we absorb from our environment, the water we drink, and the dreadful packaged convenience foods people eat. That’s why fruits are so valuable to any serious detox program. THEN AND NOW So what’s the problem with fructose? First of all, there is evidence which indicates that people who eat too much fruit can make themselves vulnerable to chronic problems like insulin resistance, diabetes and obesity. And this is important. For most fruits we eat today contain between 30 and 50 times the amount of fructose compared to the fruit our hunter-gatherer forefathers munched on. This has come about because, during the 20th century, enormous hybridization projects continue to make fruits sweeter and sweeter. As a result, not only has the incidence of chronic illnesses—from heart disease and diabetes to cancer and mental disorders—exploded in developed countries: So has our consumption of sugar in its many forms—of which fructose is one. If you are someone with high cholesterol, diabetes, obesity, insulin or leptin resistance or hypertension, then it is best to limit your fruit intake so you only get, say, 15 grams of fructose a day. How do you do this? Choose your fruits carefully so that most of them are low-fructose. If you do not fall into these categories, you should be able to eat a lot more fruit and have it do you nothing but good. That is, of course, provided the fruits you choose are organic and therefore not sprayed with chemicals. Make sure they have not been GMO grown. Under no circumstances do you want to put genetically modified foods of any kind into your body. All GMO crops are dangerous, despite all the corporate hype designed to make us think otherwise. RESEARCH, RESEARCH But findings about the effects of fruit eating are contradictory, to say the least. The British Medical Journal is soon to publish three observational studies that examined the effects of fruit-eating on human health. These studies analyzed the diets of almost 200,000 people between 1984 and 2008—none of whom had indications of heart disease, diabetes or cancer when the studies began. On completion, the studies indicated that, far from fruits predisposing us to degenerative diseases, some fruits including grapes, blueberries and apples may actually reduce the risk of diabetes. This is great news and somewhat unexpected, since apples and grapes contain a lot of fructose. But beware. Drinking juices made from these fruits that are bought, rather than being homemade from fresh produce, do contribute to the development of the same diseases that eating whole fruit can help prevent. Steer clear of all packaged and tinned fruit juices and fruit drinks. One aspect of fructose is as dangerous as hell—high-fructose corn syrup (HFCS). If you value your health and the health of your children you’ll want to avoid it at all costs. But avoiding it is not easy. HFCS is added to just about every packaged food and drink you buy. So read every label on every packaged food or drink you buy, and reject every food or drink containing it. HFCS is deadly stuff. A highly processed form of liquid sugar extracted by a nasty chemical solvent called glutaraldehyde, not only is HFCS frequently contaminated with mercury. Putting it into the body is a major cause of obesity, insulin resistance, diabetes, mood disorders, and hyperactivity in children. A DEVIL IN THE DETAILS High-fructose corn syrup is similar in composition to sucrose, with levels of around 45% glucose to 55% fructose. And, as with sucrose, its harmful effects are concealed from view. It does not raise blood sugar, as it is processed by the liver. There it promptly turns into fat. In 1978, HFCS was brought in as a substitute for sugar in soft drinks. This quickly became a real game-changer, but not in a good way. By the year 2000, sugar consumption in America increased by 25 pounds per person per year, nearly ALL of it in the form of HFCS. These days the average American consumes a massive 35 pounds of HFCS each year, according to the U.S. Department of Agriculture. It’s no coincidence that the obesity rate in the US has reached epidemic proportions worldwide. You’ll find HFCS in thousands of grocery items, even in places you might never suspect—such as pizza sauce, salad dressings, foods from sodas, drinks and sweets to sauces, breads, and delicatessen foods like smoked salmon, luncheon meats and salami. Farcically, HFCS is often labeled "all natural" because fructose is found in fruit—even though it is mass-factory-produced, using a process which dramatically increases the fructose content of corn syrup. Fructose in these protucts bears little resemblance to fructose found in fresh fruit. It also lacks the fiber, antioxidants and nutrients found in fresh fruit. As pediatric specialist and childhood obesity expert Robert Lustig puts it, high-fructose corn syrup is “a poison all by itself”. Lustig doesn’t distinguish between plain sugar and HFCS when it comes to health perils—they are “equally dangerous”, he insists, like two sides of the same coin. And what’s so insidious about HFCS is that it is sold to the public as a “healthy alternative” to regular sugar. You should avoid it at all costs. MY OWN FRUIT EXPERIMENT Most of you know that I am a passionate fan of organic raw food and have been for almost half a century. A high-raw way of eating in my mid-twenties healed me from so many illnesses contracted as a result of being raised on junk food throughout most of my unpredictable childhood. A few weeks ago, Aaron and I decided to experiment by returning to being on an all-raw fruits and vegetables diet for a period of six weeks. We wanted to check out what, if any, ill effects eating an all raw diet containing lots of fresh, organic fruits would have on us. The results of our little experiment have turned out to be excellent. We ate a lot of fruit. We put it in our salads, we made juice from a mixture of fruits and included in it much of the pulp produced from the juicing. We loved the way this made us look and feel. I’m happy to report that the results of our little experiment have been nothing but good. Like vegetables and herbs, fruits are not only a storehouse for vitamins and minerals; they boast high levels of phytochemicals. These powerhouses for health and vitality are not nutrients like vitamins and minerals. Yet they carry colored plant factors which play an important role in our health. A good supply of these phyto-nutrients helps minimize the incidence of cancer and heart disease and protect from degenerative conditions associated with aging, such as inflammation of the joints, loss of memory and concentration. They even help slow the aging process itself. Large quantities of these plant factors with many different names are found in common fruits, from berries, oranges, lemons and grapes to cantaloupe, kiwis, cranberries and cherries. However, in any diet based on manufactured convenience foods, they are scarce as hen’s teeth. FRUITS CAN BE FABULOUS Berries, grapes and cherries as well as citrus fruits are excellent sources of water-soluble phyto-chemicals known as flavonoids. Flavonoids guard the integrity of collagen within the body. They work together with vitamin C and—as do many of the other phyto-nutrients—enhance the positive effects of antioxidant vitamins, improving the function and the integrity of tiny blood vessels known as capillaries, which deliver nutrients and oxygen to our cells. This helps raise overall energy. It also helps keep skin smooth and elastic, and protects against bruising while improving memory and eyesight. Phyto-nutrients often carry weird names like catechin, quercetin and hesperidin. Among the more than 20,000 known, hesperidin, rutin, quercetin, catechin and pycnogenol are especially important. Catechin reduces allergic reactions by calming histamine release in the body. Rutin helps guard the integrity and health of capillaries, veins and arteries, as well as the skin itself. Many phytochemicals protect our health by interfering with or blocking specific disease processes. They do this either by acting as antioxidants and preventing free radical damage, or by inhibiting enzymes which promote the development of diseases like cancer. Some plant factors found in fruits and vegetables clear our cells of toxins and other damaging substances, such as herbicides and pesticides we take in from our environment. HEALTH HELPERS At Tufts University in the United States, scientists developed a method of quantifying the anti-oxidant power of specific fruits and vegetables by measuring their ability to quench free radicals in a laboratory test tube. To test a food’s oxygen radical absorbance capacity, called the ORAC test, scientists have been able to categorize a fruit or vegetable according to its overall anti-oxidant power. Fruits like blueberries, blackberries, strawberries and raspberries are at the top of the list. These can be highly protective of our health. While we’re talking of lists, here is a list of some of the most common fruits, indicating how much fructose is in each. Become familiar with it and, given the state of your own body, you can easily make your own decision about what kind and how much of each fruit suits you best, as well as how much you want to eat of it. If you are not troubled by any of these conditions, you can experiment by eating fruits which give you from 20 to 40 grams of fructose a day and work out by trial and error what levels of fructose best work for you. Always eat your fruits whole, if possible. If you choose to juice them yourself, make sure you keep the valuable pulp from the juicing process and add a good quantity of it back to the juice. Go for organic fruits. You might even try growing a lot of your fruit in your garden if you have the space. Never eat GMO fruits—something difficult to ascertain in most countries these days, since corporate interests have lobbied hard to prevent GMO labeling. This is another reason to choose organic. Never eat or drink anything with high-fructose corn syrup in it. It’s deadly stuff—so read labels carefully. Fruits are one of nature’s most glorious gifts to us. Enjoy them.

Chemical Warfare Becomes Chemical Farming: The Start of the War on Soil

When World War I ended, manufacturers of chemical weapons did not know what to do with their company’s deadly products. A few inventive scientists—mostly in Germany—came up with the bright idea that these killer chemicals could be used on food crops. After all, since they killed enemies in wartime, surely they could be used to wipe out insects, fungi and other pests on farm crops. Who knows, they might even serve as fertilizers for farmers. CHEMICAL FARMING IS BORN They discovered that a mixture of nitrogen, phosphorus and potassium (NPK) would grow big yield crops of good-looking vegetables, grains, legumes and fruits. But little interest was taken in their discoveries until years later, at the end of World War II. At that time, most foods were still grown pretty much as they had always been—by farmers who manured, mulched, and rotated their crops to keep soils rich and in good condition. To put it another way, most food was grown organically, although nobody had even coined the word by then. By the time World War II ended, chemical conglomerates involved in the manufacture of phosphates and nitrates as war materiel found themselves stuck with huge stockpiles. So they went looking for new markets. Aware of the early research into chemical fertilizing, they began to sell them artificial NPK fertilizers at costs low enough to make it all look very attractive. DECEPTIONS BEGIN These purveyors of chemicals spread the false belief that NPK is all you need to grow healthy crops. However, there were unfortunately two very important facts which chemical hawkers left out. Probably they did not even know. (Or perhaps it was not so good for their profit margins to know.) The first is that, although plants grow big on artificial fertilizers, they do not grow resistant to disease. The second is that the health of human beings eating plants grown this way can be seriously undermined. Plants grown only on NPK are deprived of essential minerals and other micro-substances which they need to synthesize natural complexes in roots and leaves that ward off attack by insects, weeds and animals. SOIL LIFE DESTROYED So before long, the new artificially fertilized vegetables and fruits began to develop these diseases. Chemical hawkers were quick to the rescue. The answer to this problem, they told us, was to be found in using MORE chemicals. This is when pesticides, herbicides, nemacides and fungicides came into being, providing chemical companies with yet another exciting business opportunity—especially since the longer you fertilize chemically, the more depleted in organic matter all soils become and the less they contain of the minerals and trace elements needed to synthesize natural protective complexes during growth, so the more pesticides you need. As time went on, more and more pesticides including other even nastier chemicals were sold. Before long, another important fact began to raise its ugly head. It was this: like plants, human beings need a lot more than nitrogen, potassium and phosphorus from the foods they eat to maintain their own health. MINERALS VANISHED Your body cannot make minerals. It has to take them in, in a good balance, from the foods you eat. In addition to nitrogen, potassium and phosphorus, your body requires magnesium, manganese and calcium, selenium, zinc, copper, iodine, boron, molybdenum, vanadium and other trace elements, some as yet undiscovered, to stay healthy. These elements can only come from the foods you eat. This they do, so long as the foods you eat are grown organically in healthy, traditionally fertilized soils. But they are completely missing and unbalanced in the foods we buy today, thanks to our legacy of chemical farming. The organic matter in healthy soil is Nature's factory for biological activity. It is built up as a result of the breakdown of vegetable and animal matter by the soil's natural ‘residents’—worms, bacteria and other useful micro-organisms. The presence of these creatures in the right quantity and type gives rise to physical, chemical and biological properties that create fertility in our soils and make plants grown on them highly resistant to disease. When it comes to human health they do a lot more. GIFT FROM MINERALS The minerals and trace elements you need to trigger your metabolic processes, on which health and leanness depend, have to be in an organic form—this means they have to be taken from living things such as plant or animal foods. You cannot eat nails—inorganic iron—and expect to protect yourself from anaemia, or chew sand—inorganic silica—and be sure to get enough silica, the trace element to help keep your nails and hair strong and beautiful and protect your bones from osteoporosis. It’s the organic matter in soils which enables plants grown on them to transform inorganic iron and silica into the organic form, which is taken up by the vegetables and fruits, grains and legumes which we then eat, making these nutrients available to our bodies. Destroy the soil's organic matter through chemical farming, and inexorably you destroy the health of people and animals living on foods grown on it. Organic methods of farming also help protect against significant distortions in mineral balances—an increase in one or more mineral elements which can alter the availability of others. This can also undermine your health. No such protection is available when your foods have been chemically grown. STRUGGLING TO COPE Your body has a remarkable ability to compensate for a mineral or trace element missing from your food. But, after years of our eating nutritionally-depleted foods, multiple deficiencies are virtually ubiquitous. According to large scale studies, these days almost none of us get the minerals we need to ensure that our metabolic processes work adequately—processes on which health, leanness, and the immune system depend. And the deficiencies we have developed from this, as well as the metabolic distortions that come in their wake, cannot easily be corrected. Popping the latest multi-mineral tablet from your corner pharmacy or health-food store won't do it, by the way. NATURE’S OWN Nutrients in foods exist in complex synergy and affect each other. They also interact and work together in your body. A balance of bio-available minerals and trace elements in fresh, organic foods is infinitely more complex than vitamin fanatics would have us believe. To restore balance once it has been disturbed, you need to return to good wholesome food—supplemented with extra green plants such as kelp, spirulina, chlorella, barley grass or alfalfa. However, this is a slow process taking months and even years. Organic growing will help protect you from significant distortions in mineral balance. Conventionally grown fruits and vegetables are sprayed with pesticides—petrochemically derived compounds which behave like low-dose synthetic oestrogens in the body. Many are also treated with fungicides or wax. Each one of these chemicals contributes to the toxic overload which ages your body rapidly, putting pressure on your liver and encouraging free radical damage. When it comes to maintaining good insulin balance, you do not want this to happen. A stressed liver has trouble managing glucose and controls insulin poorly. Shop as often as you can in stores which offer organic produce and non-GMO foods. Not only do organic vegetables taste better, the organic matter in healthy soil is nature’s factory for biological activity that, when you eat them fresh, is communicated to you. The organic matter in soil is built up as a result of the break-down of vegetable and animal matter by its natural residents - worms, bacteria and other micro-organisms. I never met a vegetable I didn’t like. Of course, it took me a while to realize this. Like a lot of people, I grew up fed on mushy Brussels sprouts, canned spinach and revolting beetroot salads, as well as other nameless horrors served in truck drivers’ cafes and as school meals. Only when I began to make vegetable juices, exuberant salads and cook my own vegetables did I discover just how delicious vegetables can be in their many incarnations. For a long time, cooked vegetables have had a bad rap. Some of this is the result of our not being able to buy an abundance of good quality organic vegetables. As a result, most of us have come to think of vegetables as flavorless things which everyone knows you’re supposed to eat because they’re good for you, but nobody can face them. When vegetables are cooked properly, they have a marvelous flavor of their own. LIFE FORCE CAN BE YOURS From the humble turnip to the leaves of radiccio, vegetables are superb sources of light energy form the sun—the same light from which your living body is made. Their beauty is the beauty of life force itself. When they have been grown in healthy soils and eaten either raw or with as little cooking as possible, this energy becomes your energy—an energy which can’t be measured in chemical terms but its potential for enhancing health exceeds even that of phytonutrients themselves. Steam vegetables, stir-fry them, bake them, purée them, eat them raw—however you go, vegetables are not only one of the most important food groups in relation to health; they are some of the most delicious. BEYOND ANTI-OXIDANTS Low in calories and riddled with fiber, certified organic vegetables are rich sources of antioxidants from Vitamins C, E and phytochemicals, helping to protect against the free-radical damage that produces degeneration and rapid aging. SIGN OF THE CROSS I always think the word “cruciferous” sounds like some kind of a crunchy salad. In fact it is used to identify vegetables, including the brassicas, which get their name from the fact that they carry cross-shaped flower petals. These same vegetables—including bok choy, mustard greens, collards, turnips, swedes, broccoli, kale, cabbage and cauliflower, boast high levels of all sorts of phytochemicals and vitamins, plus special kinds of precious fiber. For a start, they are rich in indoles, especially indole-3-carbinol, which has the remarkable ability to increase your body’s production of detoxifying enzymes. This is one of the reasons why women who eat a lot of the crucifers—four or more times a week— have a very low incidence of cancer of the breast and of the ovaries. Indole-3-carbinol, and probably other plant factors too, in cruciferous vegetables both help clear the body of the forms of estrogen that have a negative effect on it, as well as dramatically decreasing the body’s production of these forms of estrogen. But beware: indoles are highly heat-sensitive. To get the best from them both in flavor and in their health-boosting powers, it is best to eat them raw, lightly steamed or wok-fried. PROTECT YOUR DNA Another study from the Journal of Neuroscience reported that eating a good portion of spinach each day delayed the onset of age-related memory loss. Broccoli and Brussels sprouts, rich in sulforaphane and indoles, protect DNA from damage. Scientists estimate that each of the 60 trillion cells in the human body, each one suffers 10,000 free radical “hits” each day. And this is on the increase as a result of increasing chemicals in our environment. Phytonutrients help protect us from oxidation damage. Eating large quantities of fresh organically grown vegetables is breakthrough stuff when it comes to establishing radiant health. So make friends with the colorful vegetable kingdom. Build your daily meals around them by eating salads, by drinking juices, by cooking them in ways that preserve as much of their innate life-enhancing abilities as possible. So much for the technical stuff. Now, let me share with you a few of my favorite vegetable recipes. Try them and see what you think: perfect purÉes I’ve never been able to figure out why the most common puréed vegetable is mashed potatoes, when there are so many other vegetables, like beetroot, swede, spinach, beans, carrots, and celeriac, which purée equally well. The secret of great vegetable purée lies in what you add to it. You can either cook the vegetables and purée them on their own, or you can mix them together to make bright-colored complements for fish, poultry and meat dishes. One of my favorites is celeriac, which I think goes beautifully with any kind of game or fish. Carrots too make a wonderful purée, as does spinach. Even beetroot, which I think tastes ghastly in its normal boiled form, brings wonderful color and flavor to a meal when puréed and seasoned properly. What You Need 450g of root vegetables 1/2–3/4 cup of organic, sugar free coconut milk 75g of butter 1/2 teaspoon of vegetable bouillon powder 2 cloves of garlic, chopped (optional) 3 tablespoons of chopped parsley A handful of raw cashew nuts Sea or Himalayan salt Freshly-ground black pepper Here’s How Cut off the top and bottom of the vegetables and wash thoroughly, but do not peel, as much of the nutritional value in vegetables is in the skin itself. Slice each vegetable about 1/4 inch thick and cut each slice into 4–8 pieces. Place them in an electric steamer or a steamer pan over boiling water. Steam for 15–20 minutes until they grow tender. Put the cooked vegetables into a food processor or blender. Add the butter, garlic, vegetable bouillon powder, parsley and cashews and blend, adding enough coconut milk to give your purée the consistency you want. This usually takes about 2–3 minutes. Taste and season accordingly. You can make these purées the day before and then gently reheat them with a knob of butter on top. Asparagus A member of the lily family, asparagus was used by the ancient Greeks to treat kidney and liver troubles. It's one of the best natural remedies for PMS-related bloating and a top source of folic acid, the antioxidant glutathione and vitamin C. Not only does asparagus appear in early spring with a very short growing season—which makes it seem ultra-desirable—it is another powerfully healing vegetable. Asparagus has long been used in Ayurvedic medicine as a remedy against indigestion. When researchers compared the therapeutic effect of asparagus with a commonly used drug in the prevention of nausea, hiatus hernia, heartburn and gastric acid reflux, they found that asparagus was just as effective as the common drug remedy, yet had no side effects. Asparagus also has great diuretic properties. It stimulates the digestion and has long been used to alleviate rheumatism and arthritis. And it has sedative properties. When shopping for asparagus, look for bright green, straight, fresh-looking spears with compact tips. Stay away from the woody, stringy or streaked spears and those with spreading tips. These are sure signs that they're not really fresh. Bring the asparagus home and rinse it in cold water. You can use raw asparagus in salads by cutting it into 1/2" pieces, and also as crudités with dips. But the thinner asparagus is better for this. And it must be very fresh and crunchy if you're not going to cook it. Because the tips of asparagus cook much faster than the tails, it's a good idea to steam it in a tall, lidded pan designed specially for that purpose: but don't worry if you don't happen to have one. I like to serve steamed asparagus with wedges of lemon and shaved Parmesan, plus a little garlic salt and pepper. You can also use homemade dips, pestos or mayonnaise including aïoli and serve asparagus hot or cold. BAKED ASPARAGUS serves 4 to 6 I love baked asparagus. This recipe makes a great starter to a formal meal, but I like to eat it on its own as a meal in itself. What You Need 3 dozen organic asparagus spears, trimmed and peeled if necessary 2–6 tablespoons of melted butter Sea salt or Himalayan Salt and coarsely ground pepper to taste 1 lemon, divided into 6 wedges Here's How Place the asparagus side by side in a flat, rectangular baking dish and drizzle wipe with butter. Season with salt and pepper. Cover with a lid or with foil. Then bake at 225ºC (430ºF, Gas Mark 7) for 20–30 minutes, depending upon the thickness of the asparagus – that is until the spears are browned and tender. Add a little extra melted butter just before serving if it is needed, and a wedge of lemon to each plate. This can be served warm or cold. snow pea AND ALMOND STIR FRY A great combination of crunchy almonds and delicate green mange tout, or snow peas. What You Need 250g of snow peas 2 tablespoons coconut oil or boiled-down soup stock 50g of almond slivers, toasted or raw 125g of mushrooms 1 teaspoon of tamari 1” finger of fresh ginger, shredded fine Here’s How Top and tail the snow peas. Heat the oil or boiled-down stock in a wok or large frying pan. When hot, add the almonds and ginger and stir fry for 3–5 minutes. Now add the remaining ingredients and continue to stir fry for another 2–3 minutes. Serve immediately. Other Ways to Go Great candidates for stir frying include Chinese cabbage with cashews, sprouts with tofu, carrots with fresh parsley, cabbage and onions. Did you know that biochemical changes brought about by the things you eat can affect your brain and alter consciousness dramatically? So much is this true that foods can produce imaginary fears and even hallucinations. But, as a result of several generations of psychologically-oriented doctors influenced by Freudian theories, only recently have we begun to chart the exact mechanisms of how the foods you eat can have such a powerful effect—both positive and negative—on your brain. You need to know about this. It matters enormously. YOUR CONTROL CENTER Your brain is the center of thought, emotion, mood, perception, drive and memory. Few people are aware that your brain is also the control center for an abundance of important hormones and other neurochemicals responsible for changing the way you think and feel. Joy, paranoia, even despair are thanks to the delicate balance or imbalance of these important chemical substances that come from our foods. If, as many researchers now know, we can influence this without causing adverse side effects—such as those which result from the use of tranquilizers, antidepressants, drugs or sleeping pills—we are able to exercise enormous control over destructive moods and feelings, and to increase our enjoyment of life tremendously. Here’s the biggest surprise: Nothing is more powerful in influencing all of this than making very careful choices about the foods that you eat. Because each one of us is unique, this is highly individual. Some foods work beautifully for us, other foods are absolutely destructive. CHOOSE YOUR FOODS CAREFULLY Food sensitivities were once uncommon. Now they’ve become so widespread that nutritionally-trained doctors estimate between 70 and 90% of us experience symptoms associated with food reactions, although few of us realize what is taking place. There are major reasons for this exponential rise in food reactions: First, our immune systems are increasingly challenged by the presence of chemical and energetic pollution in the environment. Next, our massive consumption of convenience foods has rendered large segments of the population deficient in minerals and vitamins, which would once have helped protect us from sensitivity reactions. And the packaged foods on which most of us live these days are chock-full of the foods highest on the list of reactive substances, such as cow’s milk products including cow’s cheese, milk, and yoghurt; wheat, grains and cereals; junk fats and chemical additives. As a result, your body’s enzymes, whose job it is to digest milk products and grains—and protect you from chemical pollution—have become gravely overtaxed. So you can become addicted to a food to which your body reacts negatively, without realizing it’s the very act of eating that has caused your addiction. HOW IT WORKS Let me explain. When you are sensitive to a food or chemical you react negatively on first contact, although it sometimes takes a day or two to experience the negative reaction. But if you eat or drink this food again and again, so that you are continually exposed to it, this negative reaction—together with the symptoms it produces—becomes “masked”. It’s very much like the alcoholic who feels OK so long as he has a drink in his hand. Then, when alcohol is withdrawn from him, he goes “cold turkey” and feels terrible. If you stop eating a food (or drinking the alcohol) to which your body reacts negatively, WHAM—you get withdrawal symptoms, just as the alcoholic does when he or she is deprived the “fix.” I’ve seen a lot of this happen to people at the start of the Cura Romana program, especially those who’ve been drinking a lot of coffee or diet sodas, or eating a lot of grains, cereals and sugar-based convenience carbohydrates. Symptoms often include no energy, a bad headache, depression and cravings. Fortunately—thanks to the power of the changes that take place in the brain on Cura Romana—such experiences usually clear within a few days. ADDICTIONS DESTROY Experts in clinical ecology have discovered that alcoholism and food reactions share a common cause, common triggers, and a common biochemistry. When you eliminate the foods to which your body is sensitive—those your body literally hates, in fact—false hunger, cravings and addictions completely disappear. When you’re tired, upset, depressed or anxious without apparent cause, the problem most often results from the kind of foods you’ve been eating. I know this is hard to believe. It is something that most people would never dream of. But this is how potent the effect is that foods can exert upon us. You can not only suffer from food sensitivities and allergies to specific—sometimes even highly nutritious—foods which set your mind and emotions whirling, or make you lose confidence in yourself and blame yourself in negative ways; you can also experience an upset in mineral balance in your body, or low blood sugar. On the positive side, some foods can be used to alter states of consciousness, improving mood and inducing relaxation. Understanding how the foods you choose to eat can affect your own moods and mental states, and discovering the foods that work for you in a positive way, can be life-changing. But you also need to learn the foods that are destructive to you. This is a highly individual thing, which you learn only by testing your foods. UNTOLD TRUTHS What is hard to believe is that the question of food sensitivities is still met with hostility, even scorn, by most doctors—who, ever since Freud, have been taught that problems such as chronic anxiety, depression, hysteria, psychosomatic illness and other functional disorders arise entirely from psychological factors. It just ain’t true. The work of some brilliant biochemists and psychiatrists such as Dr. Abram Hoffer in Canada, and allergists Dr Ted Randolph and Albert Rowe, as well as British psychiatrist the late Dr. Richard Mackarness, has shown quite clearly that factors in our physical environment—such as chemicals in our foods and water, as well as certain foods themselves—cause mental and emotional symptoms, as well as weight gain and the development of degenerative conditions and rapid aging. They do this by inducing sensitivity or allergic reactions that involve the central nervous system. The study of this phenomenon is called clinical ecology. SHOCKING SECRETS For many years, clinical ecologists have tested patients with psychiatric problems, from simple depression and anxiety to schizophrenia and even psychosis, to see if the cause of these things comes from reaction to specific foods. In general, all of us react to certain groups of foods in a negative way, such as manufactured foods; sugar; carbohydrates; packaged and convenience foods. But the more serious food sensitivities and allergies tend to be highly specific to the person experiencing them. The way all of this is tested is quite fascinating. They do this either through a complicated procedure called cytotoxic testing—checking how your blood reacts to specific substances—or by putting you on a fast for five days, then introducing a few drops of water containing the suspected food under your tongue, and charting your reactions. These may include changes in your pulse rate and other physical symptoms, as well as natural shifts of mood or emotional outbursts, indicating that this particular food is the troublemaker. Reactions vary from person to person. They can be something as simple as a feeling of mental confusion, grief, or fatigue, to as dramatic as a psychopathic outburst in which someone tries to slash his wrists or attack those testing him. Once the offending foods are known—they could be milk, grain, cheese, vodka, sugar, or almost anything—the patient is told to eliminate them from his diet. Provided he does so, his aberrant emotional or mental state does not reoccur. If the allergies are mild, they can sometimes be controlled by a “rotation diet”, in which food intake is carefully planned so that you only eat a particular food once in any four-day period. Food sensitivities and food allergies are far more common than people realize. Some of the worst offenders are grains, cereals, wheat, milk products, and all convenience and packaged foods. People find that when they exclude these foods completely from their diet, their energy levels increase and their disposition transforms. What is also interesting is the sense that people have of themselves. Whether they trust themselves, and whether they feel good about being who they are, depends tremendously on the foods that they are eating. HEAVY METALS Heavy metals such as lead, mercury and cadmium, or too high a concentration of copper—one of the trace minerals necessary for good health—can create interference with the brain and nervous system, as well as the endocrine system, resulting in aberrant emotions. An excess of copper, for instance, can produce hyper-emotionalism, hallucinations, and even psychic experiences for some people. A high level of lead in the body is linked to mental retardation in children and is often a significant factor in over-aggressive behavior. It’s also indicated as a cause of hyperactivity and learning problems in kids. Excess cadmium, from a lifestyle that includes taking several cups of coffee a day, often leads to a low blood-sugar problem, so you feel you need more coffee or something sweet just to keep going. So does eating too many carbohydrates, which themselves turn into sugar. Low blood sugar is common amongst people living on a typical British or American diet. There are some simple tests to determine mineral balance and the levels of heavy metals in the body. These tests are not foolproof by any means, but they are still valuable. They are often done by burning a small sample of hair cut from the head, and then analyzing its mineral content. If any imbalances are found, they can be corrected by giving chelated minerals and/or by drying out excessive heavy metals from the tissues using natural substances such as pectin, high doses of vitamin C, garlic and kelp. HOW TO TEST YOUR FOODS Learn to test your own foods—it’s not hard to do. It’s all about becoming conscious of what your body thrives on and loves, and what it dislikes. In fact, it’s all about honoring yourself and your life. Say, for instance, the first food that you decide to test is cow’s yoghurt. You eat a nice big helping of yoghurt at one meal, then you don’t eat any more yoghurt for 48 hours, and you don’t introduce any other new foods. If, during this period, you find your energy levels have dropped for no apparent reason; you’re ravenously hungry or craving something; your bowels are upset; you feel emotionally unsettled or low; or you develop aches or pains in your body, then you can be pretty sure that your body has reacted badly to the food you have been testing. If, on the other hand, after 48 hours you experience none of these reactions, you can safely assume that the food you have tested can be incorporated into your meals as a food that your body is happy with. If you do have a negative reaction to the food, it’s important to realize that you haven’t done anything wrong. This is the way you learn about the foods that your body can handle and which you need to stay away from. Of course, it’s important to learn by your body’s unique rules, and test each food one by one. Give thanks to your body if it says “no” to a food. Meanwhile, get plenty of top quality proteins and fresh, green, non-starchy vegetables, no matter what else you’re eating. It’s important to remember that your digestive system is, in truth, your second brain. (See “Secrets of the Second Brain” ) It boasts as many nerve endings as the brain itself. When you eat foods that antagonize these nerve endings, you experience all sorts of physical and emotional states that hold you back. Discovering the foods that work for you is sheer joy. These are foods that you can eat with impunity, without gaining weight or worrying about undermining your health—provided you avoid the foods that you discover your body does not work well with.

Grow Your Own Sprouts: An Economical and Nutritious Kitchen Garden

Make them the base for salads, add them at the last minute to homemade soups, even carry them around with you in a bag and eat them instead of chocolate bars and biscuits. They are sweet and delicious and won’t leave you with an energy slump. An excellent way to cram your meals with goodness is to sprout your own seeds (sometimes called bean sprouts). Seeds and grains are latent powerhouses of nutritional goodness and life energy: Add water to germinate them, let them grow for a few days in your kitchen and you will harvest delicious, inexpensive fresh foods of quite phenomenal health-enhancing value. The vitamin content of seeds increases dramatically when they germinate. The vitamin C content in soya beans multiplies five times within three days of germination - a mere tablespoon of soybean sprouts contains half the recommended daily adult requirements of this vitamin. The vitamin B2 in an oat grain rises by 1300 percent almost as soon as the seed sprouts, and by the time tiny leaves have formed it has risen by 2000 percent. Some sprouted seeds and grains are believed to have anticancer properties, which is why they form an important part of the natural methods of treating the disease. Another attractive thing about sprouts is their price. The basic seeds and grains are cheap and readily available in supermarkets and health food stores - chickpeas, brown lentils, mung beans, wheat grains and so forth. And since you sprout them yourself with nothing but clean water, they become an easily accessible source of organically grown fresh vegetables, even for city dwellers. DIY Sprouting When you discover how economical and easy it is to grow sprouts you will want to have some on the go all the time. Once germinated, you can keep sprouts in polythene bags in the fridge for up to a week - just long enough to get a new batch ready for eating. Most people grow sprouts in glass jars covered with nylon mesh held in place with an elastic band around the neck, but I have discovered an even simpler method which allows you to grow many more, and avoids the jar method problem of seeds rotting due to insufficient drainage. You will need the following: seeds (e.g. mung beans) seed trays with drainage holes, available from gardening shops and nurseries a jar or bowl to soak seeds in overnight a plant atomizer - from gardening or hardware shops a sieve nylon mesh - available from gardening shops. Place two handfuls of seed or beans in the bottom of a jar or bowl and cover with plenty of water. Leave to soak overnight. Pour the seeds into a sieve and rinse well with water. Be sure to remove any dead or broken seeds or pieces of debris. Line a seedling tray with nylon mesh (this helps the seeds drain better) and pour in the soaked seeds. Place in a warm dark spot for fast growth. Spray the seeds twice a day with fresh water in an atomizer and stir them gently with your hand in order to aerate them. After about three days place the seeds in sunlight for several hours to develop the chlorophyll (green) in them. Rinse in a sieve, drain well and put in a polythene bag in the fridge to use in salads, wok-fries etc. There are many different seeds you can sprout - each with its own particular flavor and texture. You can take Valerian in a couple of ways, but I like the tincture best - 10 to 20 drops before bedtime in a little water, or in the middle of the night when you awaken. Alternatively you can use a couple of capsules of the dried root. Valerian in lower doses is also useful when your nerves feel 'shot' during the day. Very occasionally Valerian will be too strong for a particular woman, so that she awakens with a little sense of hangover in the morning. If so, you can either cut down on the dose or try another milder remedy. In any case, it can be a good idea to change remedies every so often so your body doesn't become accustomed to one, rendering it ineffectual. Passion Flower: Passiflora incarnata, also known as Maypops, is a climbing plant that boasts magnificent white flowers with a purple center. It has a wonderful sedative and mildly narcotic effect on the body. Passion Flower is most useful for women who wrestle frequently with nervous tension and particularly helpful when nerves seem to be edgy before and around the time of menopause, when hormones can fluctuate wildly. It is also useful for relieving pain, thanks to its mild analgesic and antispasmodic qualities - all of which has been well demonstrated in laboratory and clinical tests. Passion Flower can also be useful for a woman troubled with premenstrual tension. It is not as strong as Valerian in its actions, is more calming than sedating, and as such is a great alternative to tranquilizer drugs. Early on in the twentieth century, a few scientists—mostly in Germany—experimented with chemicals as a means of fertilizing food crops. They found that a mixture of nitrogen, phosphorus and potassium (NPK) would grow big yield crops of good-looking vegetables, grains, legumes and fruits. But little interest was taken in their discoveries until the end of World War II. At that time most foods were still grown pretty much as they had always been—by farmers who manured, mulched, and rotated their crops to keep soils rich and in good condition. To put it another way, most food was grown organically, although nobody had even coined the word; for this was no more than what traditional farmers throughout the world had done for thousands of years. MASS DESTRUCTION BEGAN HERE When the war ended, big chemical conglomerates who had been involved in the manufacture of phosphates and nitrates as war materiel found themselves stuck with huge stockpiles. They went looking for new markets. Aware of the early research into chemical fertilizing, they turned towards farmers, and began to sell them artificial NPK fertilizers at costs low enough to make it all look very attractive. These purveyors of chemicals also spread the false belief that NPK is all you need to grow healthy crops. There were unfortunately two very important facts that the chemical hawkers left out. Probably they did not even know. After all, it was not good for their profit margins to know. The first is that, although plants grow big on artificial fertilizers, they do not grow resistant to disease. The second is that the health of human beings eating food plants grown this way is, sooner or later, seriously undermined. CHEMICAL VICTIMS Plants grown only on NPK are deprived of essential minerals and other micro-substances they need to synthesize natural complexes in roots and leaves, which ward off attack by insects, weeds and animals. So before long the new artificially fertilized vegetables and fruits began to develop diseases. The chemical hawkers were quick to the rescue. The answer to this problem, they said, would be found in using more chemicals. That is how pesticides, herbicides, nemacides and fungicides came into being. They provided chemical companies with yet another exciting business opportunity—especially since the longer you fertilize chemically, the more depleted in organic matter your soils become, and the less they contain of the minerals and trace elements needed to synthesize natural protective complexes during growth, so the more pesticides you need. So as time went on, more and more pesticides and other chemicals were sold. Before long another important fact began torear its ugly head. It was this: like plants, human beings need a lot more than nitrogen, potassium and phosphorus from the foods they eat too, to maintain their own health. Your body cannot make minerals. It has to take them in, in a good balance, from the foods you eat. In addition to nitrogen, potassium and phosphorus, it requires magnesium, manganese and calcium, selenium, zinc, copper, iodine, boron, molybdenum, vanadium, and probably other elements as yet undiscovered as well, to stay healthy. These elements need to come from the foods you eat. Generally they do, when foods are grown organically in healthy, traditionally fertilized soils. But they are increasingly missing and unbalanced in the foods we buy today, thanks to our legacy of chemical farming. EARTH’S BLESSED CREATORS The organic matter in healthy soil is Nature's factory for biological activity. It is built up as a result of the breakdown of vegetable and animal matter by the soil's natural 'residents'—worms, bacteria and other useful micro-organisms. The presence of these creatures in the right quantity and type gives rise to physical, chemical and biological properties that create fertility in our soils and make plants grown on them highly resistant to disease. When it comes to human health, they do a lot more. The minerals and trace elements we need to look after our metabolic processes, on which health and leanness depend, must be in an organic form—that is, taken from living things like plant or animal foods. You cannot eat nails—inorganic iron—for instance, and expect to protect yourself from anaemia, or chew sand—inorganic silica—and be sure to get enough silica, the trace element that keeps your nails and hair strong and beautiful, and helps protect your bones from osteoporosis. It is the organic matter in soils that enables plants grown on them to transform inorganic iron and silica into the organic form which is taken up by the vegetables and fruits, grains and legumes. Eating food grown organically protects from significant mineral deficiencies, as well as from distortions in mineral balances. What few people realize is that an overload of one or more mineral elements alters your body’s ability to get enough of other minerals, undermining the people's health. No such protection is available when foods are chemically grown. So eat organic even if you have to grow your own foods in the garden or feed on sprouted seeds you grow in your kitchen window. Aspartame: The Artificial Sweetener Linked to Diabetes and Obesity?

Are you one of the thousands of people who reach for artificial “low-calorie” sweeteners—such as aspartame or saccharin—to add to your tea or coffee, in the belief that they can help keep you from getting fat? If so, this is hardly surprising. We have had this lie shoved down our throats through advertising and the media, thanks to the lobbying of money-hungry companies keen to sell the sickly sweet chemicals they peddle. Independent research into the dangers of artificial sweeteners rarely sees the light of day. It can be a serious challenge to find unbiased data amongst the multitude of misinformation that is littered across cyberspace. It’s essential that you learn the truth about these destructive substances, as well as what they’re really doing to your health and your waistline. APPETITE STIMULANTS Independent studies have turned up some surprising results when analyzing the relationship between the use of artificial sweeteners and obesity, although as yet few people know about this. Far from helping you lose weight, these sweeteners actually stimulate your appetite, causing cravings and telling your body to “store fat”. How does this happen? When you taste something sweet, your body expects calories to immediately follow, just as they do when you eat sugar. This triggers your appetite. However, since the calories don’t follow, the sensation of hunger remains. You begin to crave more sweet-tasting, carb-rich foods. This effect is most marked in aspartame, though it also applies to the other common sweeteners such as saccharin and acesulfame potassium. It can do this simply by activating our “sweet” taste receptors. Since the elevated insulin finds no blood sugar to combine with, this increases your hunger even more, and makes your cravings worse. The result of all this? You’re more likely to a) eat more of the sugary foods you’re craving, setting up a vicious circle, and b) lay down more fat stores, due to the hormonal fluctuations happening in your body. A new study published in the January 2013 issue of science journal Appetite reported that, between groups of rats fed either aspartame, saccharin or sugar, the aspartame and saccharin groups gained more weight than the sugar group—and this was unrelated to intake of calories, since they all ate the same foods. BAD NEWS FOR DIABETICS Not only is this terrible news for those trying to shed fat. It also has dire consequences for the ever-growing group of humans afflicted by diabetes. Many diabetics have been led to believe that these sweeteners are a healthier alternative than sugar, when this too is based on a fallacy. But unlike sugar, low-calorie sweeteners are often sold as “diabetes-safe.” This too is a dangerous lie. As we have already seen, consuming aspartame can elevate insulin levels abnormally. The insulin resistance that follows will lead to—or worsen—diabetes, along with obesity and many chronic degenerative conditions. FURTHER DANGERS As if you needed any more reason to stay away from artificial sweeteners, get this: Aspartame is composed of two separate components, aspartic acid and phenylalanine. Phenylalanine quickly degrades into methanol, which in turn becomes formaldehyde—yep, that stuff lab specimens, and dead bodies are stored in—and accumulates in our cells. When levels of this nasty chemical get high enough in the system, it can cause all sorts of dangerous effects. The “Aspartame Consumer Safety Network Fact Sheet” warns of the following potential symptoms: “headaches, nausea, vertigo, insomnia, numbness, blurred vision, blindness and other eye problems, memory loss, slurred speech, depression, personality changes, hyperactivity, stomach disorders, seizures, skin lesions, rashes, anxiety attacks, muscle cramping and joint pain, loss of energy, symptoms mimicking heart attacks, hearing loss and ear ringing, and loss or change of taste.” All that, and it won’t even help you lose weight! NATURE’S SWEET OFFERINGS So what can we turn to now that both artificial sweeteners and sugar are off the menu? Despite the warnings in recent years about how dangerous coffee is to health—and there is truth in many of them—coffee has many benefits to mind and body. It’s been prescribed for generations in the treatment of asthma, vertigo, headache, jaundice, and even snakebite. A poultice of wet coffee grounds speeds up the healing of insect stings and bruises. Coffee enemas have long been used internally as a strong purgative stimulant to both the bowels and the liver in the natural treatment of serious illness, including cancer. Coffee warms us, stimulates us, and has a natural diuretic and purgative effect on the body. From the point of view of our creativity and mental functioning, coffee most definitely has something to offer. And coffee boosts athletic performance. Virtually all of the previous research into the damaging effects of coffee was done using readily-available coffee in the market-place, which is contaminated by an ever-increasing number of herbicides and pesticides that build up and poison your body by interfering with metabolic processes. In developed countries such as Europe and the United States, once a herbicide or pesticide is labeled ‘dangerous to human health’ and made illegal, the chemical companies who sell it then tend to send the banned chemically contaminated beans to third world countries for use there. Here are my own guidelines for safe, delicious coffee drinking. Limit yourself to two cups of the very best organic, fair trade, fresh coffee, which is pesticide free. Buy whole beans and grind them yourself just before making coffee. Make sure the beans you choose smell fresh and delicious. Most brands are too old and these can poison your system. Dark roasts, especially espresso roasts, are the best to buy. Espresso has less caffeine in it than ordinary coffee. It is also more delicious. Always drink your coffee black, without cream or sugar, otherwise you’ll undermine your ability to receive all the newly discovered benefits from coffee drinking. An important warning: Never drink coffee when pregnant. Even one or two cups drunk while pregnant can affect fetal heart development and long-term function. Enjoy.

Obese subjects given the artificial sweetener sucralose showed increased insulin levels and insulin resistance. In both human and animal studies, the artificial sweeteners sucralose, saccharine, and aspartame also exerted a substantial negative effect on gut bacteria which increases glucose intolerance. In relation to aspartame, Executive Director of the Center for Science in the Public interest (CSPI) Michael F Jacobson states, "Aspartame has been found to cause cancer—leukaemia, lymphoma and other tumors—in laboratory animals. It shouldn't be in the food supply.” PROTECT YOUR BRAIN Dana Small, Associate Professor of Psychiatry at Yale School of Medicine, has been doing excellent work examining the effects that artificial sweeteners exert on behavior and brain in humans and animals. When mice were fed on the artificial sweetener acesulfame-K, they developed impaired memory as a result of neurological dysfunctions in the hippocampus. A learned association takes place between the flavor of a food you eat and the ability of a food to alter your blood glucose. Your body is smart. You cannot feed it on rubbish like artificial sweeteners. When you do, it hunts for real food to satisfy its needs. By now, we have a huge volume of evidence showing that artificial sweeteners foster weight gain. PLEASE HEAR THIS Artificial sweeteners of any kind can be much worse for you than sugar. There is a lot of evidence to back this up. Even natural sweeteners such as honey and agave, which most people look upon as “healthy choices”, are not great. Agave is highly processed, even when it says “organic” on the label. It has a higher fructose content than any other commercial sweetener. In truth, it is little more than an over-hyped, laboratory generated, highly-condensed fruit syrup without nutritional value. In small quantities and in its raw form, honey has much to offer, provided it is real, pure, raw honey. But most honey these days is of very poor quality and adulterated. Even real raw honey, which is almost impossible to come by, consists of 53% fructose—which you don’t want to take in very much of. What about the sugar alcohols? These are easy to spot as their names end in “ol” like xylitol, malitol, glycerol, lacitiol, mannitol, sorbitol, glucitol. They are less sweet than sugar, but they are by no means calorie-free. You see, these sugar alcohols are not absorbed completely in your body. Eating them can create diarrhoea as well as abdominal gas. Some of them used regularly can even spike blood sugar as much as a baked potato or dinner roll can. Xylitol is probably the best if you are going to use any of them, but it must be used only in small quantities and not regularly. And you must read labels carefully. Personally, I choose to leave all of them alone. SAFE ALTERNATIVES Stevia is far and away the best natural sweetener in the world. But make sure you buy a good quality whole plant stevia (see my recommendations below.) Stay away from Truvia, Purevia and one or two other so-called stevia products which have extracted the sweetest component of the stevia plant—Rebaudioside A—out of the plant, grossly distorting the integrity of the plant as a whole. It’s the synergistic effect of all the natural ingredients in the plant that produce its overall health-giving qualities, which include "built-in protection" against potentially damaging effects. Working with people on our Cura programs, I find that artificial sweeteners disagree with many. Stay away from them. For my money, the two best stevias, which you can purchase from iHerb.com as well as from Amazon.co.uk, are these: Natural Wisdom Sweet Leaf Liquid Stevia Natural Wisdom Sweet Leaf Liquid Stevia, which comes in a dropper bottle with all natural flavors and is convenient and easy to use. Unveiling the Amazing Benefits of Dark Chocolate: Get Ready to be Astounded

The best chocolate is not only good for your body, mind and spirit. It can even help protect you from degenerative conditions—from cancer and heart disease to Alzheimer’s. Yes, really! But it has to be the right kind of chocolate, and in the right quantity. Next time you’re feeling anxious you can reach for a piece of dark chocolate and feel good about it. The emerging chocolate story is a fascinating one, and it is only just beginning to break. PSYCHOSEXUAL FOOD The mythology of chocolate began with the ancient gods of the New World. It was the Olmec Indians in Central America who are credited with the discovery of the cocoa tree. Later, the Aztecs and Toltecs who called this substance “food of the gods” told the story of how Quetzalcoatl, the supreme god of the air, brought the seeds of the tree to earth as a gift to his chosen people. Montezuma the great Aztec king is believed to have downed 50 pitchers of an elixir made from chocolate each day. The drink was called xocolatl, an aphrodisiac and fountain of strength sexuality and vigor. Cortez, who brought it back to Europe in the sixteenth century, soon created a chocolate storm among the courtiers. Madame Pompadour gave her seal of approval to chocolate as an aphrodisiac, while Casanova claimed chocolate was the perfect tool for seduction. Some recent research partly explains why. Scientists in California have isolated a substance in chocolate which links into our brain receptor sites and, like cannabis, brings sensations of pleasure and relaxation. But chocolate, I suspect, has many secrets. This is just one of them, which feeds our passion for this dark and seductive food and, at the same time, enhances our passion for love. BENEFITS ARE MANY The researchers found that eating about one ounce and a half of dark chocolate a day for two weeks reduces levels of stress hormones, but it has to be very dark chocolate—between 75 and 85% cocoa solids. There is a huge difference between the minimally processed dark chocolate and the milk chocolate found in most candy bars. Raw, unsweetened cocoa powder which is high in antioxidant flavonols and contains no sugar is very different from the common cocoa drinks that are loaded with sugar. They offer no antioxidant support whatsoever. Meanwhile, minimally processed dark chocolate has already been linked to a number of health benefits. Dark chocolate has been found to reduce urinary excretion of the stress hormone cortisol and catecholamines in stressed individuals who took part in the study. What is interesting is that in those who did not have highly-stressed lives it made no difference. Some of the health benefits from chocolate are due to the antioxidants present in cocoa itself, such as flavonols. These are a sub-class of flavonoids, and are natural plant chemicals (phytochemicals) found in fruits and vegetables. There are several thousand compounds belonging to the antioxidant-rich polyphenol family, also called phytochemicals, which are very good for us. DON’T EAT MILK CHOCOLATE The total antioxidant content of chocolate products is directly associated with the amount of raw cocoa that the chocolate contains. A published in the ‘Journal of Agricultural and Food Chemistry’ showed that in terms of healthy antioxidant content, cocoa powder rated first, followed by unsweetened baking chocolate, dark chocolate and semi-chocolate chips. Milk chocolate has very few of these antioxidants. This is primarily because it’s heavily processed. In fact, the typical commercial chocolate has less than half of the flavonoids remaining after processing. As well as that, milk chocolate contains milk, which tends to cancel out cocoa’s antioxidant effects. This was discovered in a study published in the journal ‘Nature’. The reason this happens is that proteins in the milk bind with the antioxidants, making them less easily absorbed by your body. Another thing about processed chocolate is that often it is high in lead. Many researchers believe that milk in processed chocolate is also often contaminated by other heavy metals, but no one is quite sure why this happens. In another study published several years ago, researchers discovered that one cup of hot cocoa, made with pure cocoa powder, had about double the amount of antioxidants than those found in a glass of red wine, more than double the amount than in green tea, and four to five times more than in black tea. Perhaps even more surprisingly, dark unprocessed chocolate has been exonerated in a number of studies as exerting positive effects on your health. One example, believe it or not, is that it improves glucose metabolism. It also improves blood pressure levels and your cardiovascular system. FOOD OF THE GODS Now, this doesn’t mean that you should be swallowing chocolate every minute or two. The ideal amount of good dark chocolate—preferably organic—that you should eat is very little. A study published a couple of years back discovered that between 6 and 7 grams of dark chocolate per day, which is a little less than half a bar a week, is probably the ideal amount for protecting us against inflammation and cardiovascular disease. Any more than this appears to cancel out the benefits. This is not surprising because chocolate, like coffee, has throughout history been considered one of the sacred foods and the sacred foods need to be honored. Such foods have powerful energies. We thrive when we take them only in small quantities. This is the only way we can take advantage of all they have to offer us on every level. LESLIE’S CHOCOLATE BROWNIES If you're going to eat chocolate, eat only the best—not only because it's the most delicious, but also because it is the real thing. On the market these days, you find all sorts of imitation chocolate products which have had vegetable fat added to them. Avoid them. Even natural chocolate is often processed with an alkali which makes it high in sodium and interferes with the absorption of the magnesium, copper, potassium, phosphorus, iron and calcium which are the natural birthright of pure cocoa. These days most cocoa comes from Africa, although it was originally from Central America and the West Indies. When buying chocolate, always buy plain chocolate or bitter, dark chocolate, and always go organic. There is no question whatsoever that organic chocolate is the most delicious in the world. This recipe is flour-free, which makes it much richer. It is much more like a mousse than a conventional brownie, in the sense that it is absolutely riddled with chocolate flavor. So if you happen to be a chocoholic, you will absolutely adore it. Serve it with whipped cream, provided you do not have a problem with dairy products. (These days, because most milk is so polluted, many people do have issues with them.) Sprinkle the brownies with toasted flaked almonds. I think you'll love them, whipped cream or no whipped cream. WHAT YOU NEED 400g of dark organic chocolate—85% cocoa content or above is best 200g of unsalted butter 8 eggs, separated 1 rounded teaspoon of granulated Stevia by Stevita (or to taste) 3 tablespoons of finely powdered almonds 2 teaspoons of vanilla extract 200g of toasted almond flakes 5g of shaved black chocolate—at least 85% cocoa with no milk and no sugar added to it HERE’S HOW Heat your oven to 180ºC (350ºF, gas mark 4). Use butter to grease the sides and bottom of an 8” square or round pan—the kind the bottom comes out of. Line the pan with parchment or waxed paper and grease the paper with butter as well. Now wrap the outside of the pan with aluminum foil. Melt the chocolate and the butter in the top of a Bain Marie until smooth and melted. Keep stirring this mixture as it melts. Remove it from the heat and cool to body temperature, continuing to stir frequently. Using a food processor or electric mixer, beat the egg yolks and stevia in a big bowl for about 3 minutes until it goes pale and thick. Now very gently fold the lukewarm chocolate mixture into the egg yolk one. Making sure your blades are washed and dried thoroughly, beat the egg whites in a different large bowl to soft-peak stage. Continue beating until peaks start to go firm. Fold the white into the chocolate mixture little by little—ever so gently. Pour the mixture into the pan and bake until the top puffs up and cracks, and until a toothpick stuck into the middle comes out with some moist crumbs attached. This usually takes about 45 minutes. Remove from the oven and cool in the pan on a rack. Don’t be distressed if the brownie mix ‘falls’: this is what is supposed to happen, and what gives it its rich flavor. When it is cool, take a sharp knife and cut around the sides of the pan to loosen the brownies. Place a large plate or piece of cardboard over the top and invert the brownie mix on to it. Peel off the paper. Now cut into squares or slices. Serve with a sprinkle of slivered toasted almonds and shaved black chocolate on top, or add some fresh strawberries or raspberries. Smooth the mixture into a rectangular container and freeze for about a half hour. Press the fudge block out of its container, place on a chopping board, and cut into squares. Protect Yourself from Toxins: Learn How Hippocrates Knew It Best!

2500 years ago Hippocrates, the father of medicine, pointed out that “All diseases are crises of purification—toxic elimination.”  The entire basis of natural medicine is based on his declaration. If Hippocrates knew the massive onslaught of toxicity that we face today, he would have turned over in his grave.  I don’t think he could have imagined it in his worst nightmare.  100,000 new chemicals In the last 80 years, more than 100,000 new chemicals have turned up in our environment. More than 95% of these have never even been tested. 4000 of them have been added to our foods.  The average child is exposed to 3.5 ounces of these chemicals every day of its life. These dangerous substances are taken into our own bodies as well, in even greater amounts. The average adult now carries more than 700 times the levels of toxic chemicals, heavy metals and pollutants than our grandparents were exposed to. Where do they come from?  From the manufactured fast foods and packaged convenience foods we buy in our supermarkets.  From herbicides and pesticides sprayed on our foods. From (PCBs), aromatic hydrocarbons and even flame retardants in the clothes we buy, as well as hundreds of other sources.   These toxic chemicals do not degrade.  They accumulate in the environment and pollute the food chain, undermining human health to a degree that has never before been seen.  Yet we keep eating manufactured foods, and we keep giving them to our children.  Then we wonder why we become ill. Too often we turn to conventional medicine which tells us we should take powerful pharmaceutical drugs that can only suppress symptoms temporarily while polluting our bodies with yet more toxicity.  Is there a possible end to all of this?  Are we able to protect ourselves and our children? Can We Protect Ourselves It’s not easy but the answer is yes.  We can. If we are serious about clearing all this toxicity from our bodies and restoring health to ourselves. bringing this about can be faster than you may ever have imagined.  We need to make changes in what we eat.  It starts with a return to REAL foods—foods grown on healthy soils.  If you have a garden, start planting organic vegetables and fruits.  If you live in an apartment, start growing sprouted seeds and grains in jars in your kitchen window.  Then search for a source of organic vegetables and fruits near you and clear your cupboards of manufactured foods altogether.  Next, eat half of your foods raw, and make sure they are organically grown.  The protein foods you buy should come from animals that have been naturally farmed—eggs from free-range, organic chickens, and meats from healthy animals that have been grazed on green grass.  If you eat fish, make sure they are wild. Never eat the farmed fish. They have been raised on waste products you do not want to take into your body.  Educate your friends, your children to question every advertisement they see on television.  People are smart if you give them a chance. All they need is a little encouragement to voice their opinion about what is true and what is fraudulent.  And if you Start now, in three months’ time the difference in your health will astound you.
