Harvard Professor Unlocking the Secret Mind Body Healing Benefits of Relaxation

Harvard professor and expert in cardiology and behavioral medicine, Herbert Benson MD, began the first scientific studies into the effects of meditation almost 40 years ago. Ever since, Benson and his colleagues at the Benson-Henry Institute for Mind Body Medicine at Massachusetts General Hospital have continued to conduct clinical research and to map the benefits of regularly practicing the relaxation response: In Benson’s own words, "a physical state of deep rest that changes the physical and emotional responses to stress.” The relaxation response can enhance brain function, slow age-related changes, stabilize heart beat, alleviate anxiety and dissipate stress. What is even more remarkable is this: When ordinary people with no training of any kind practice the relaxation response once or twice a day, it brings about cognitive restructuring and rapidly alters the expression of their genes. When it comes to rejuvenating, regenerating and healing the body, these findings are nothing short of revolutionary. LIVING STRESS-FREE Herbert Benson first described the relaxation response as the physiological opposite of the stressed fight-or-flight response. Working with his team, he then went on to pioneer the application of mind/body techniques to a wide range of health issues and meditative practices. They charted the measurable physical benefits which accrue from practicing any form of meditation, including those that rely on the silent repetition of a mantra—a word-sound. Meditation using a mantra has a long tradition. Some mantras are considered “sacred words” that hold particular sound vibrations to transmit particular powers. Each spiritual tradition has its own mantras, such as Guru Om, Om mani padme hum, La ilaha illa 'lla or, in the Catholic religion, Hail Mary, full of grace, the Lord is with thee. Whether their magic aspects are true or not, these techniques work beautifully to replace the habitual chatter that runs through one's mind, worries about things past and things yet to come. BENSON’S QUANTUM LEAP To learn a relaxation response meditative practice (which I have recorded on video so you can do it with me), Benson suggests you choose a word that is pleasing to you. It could be anything, say, “flower”, “peace”, or “love”. He likes the word “one”, as it is simple and has the connotation of unity about it. Here's how to do it: Find a quiet place where you won't be disturbed for fifteen to twenty minutes and a comfortable chair that supports your back. Sit down and close your eyes. Give yourself a moment to settle in and you are ready to begin. Simply sit there, feet on the floor and eyes closed, quietly repeating your word over and over to yourself: “one...one...one...” Whenever your mind wanders or you are disturbed by a sound or thought, simply turn your mind gently back to repeating the word again. That is all there is to it. After fifteen to twenty minutes, stop repeating the mantra and get ready to open your eyes. Open your eyes, stretch, and go about your everyday activities. This is a particularly useful technique once you have practiced it a few times because you can do it in so many different places, such as in a waiting room or on a commuter train or bus. For we live in a highly poisonous world which you need to learn to protect yourself from. Here’s my simple checklist. How many of these changes are you willing to make in your life to achieve high-level wellness long-term? Stop buying convenience foods from supermarkets and clear all of these foods out of your kitchen now. They are full of pesticides, colorants, chemicals and flavor enhancers all of which are fundamentally damaging to your body and health. Go for REAL foods in everything you eat: Meats and eggs from pastured organic animals, only wild fish— never farmed fish—and organically grown dark greeb vegetables and a few low glycaemic fruits. Grow as many of these as you can in your own garden or kitchen windows, or find a good source near you and shop there. Get plenty of Vitamin D3. Hang out in the sun if you are lucky enough to live in a sunny country. It is a proven fact that the more elevated your solar UVB exposure is before 11am and after 3pm, the less susceptible you will be to developing cancer of many kinds. If you live in a country with little sunlight, be sure to take a supplement of vitamin D-3+vitamin K-2 twice a day. You’ll need between 2000 and 5000 IU of D-3 and 100mcg-200mcg of vitamin K-2. Never cook your meats at ta very high a temperature. Charring may taste good but it is not good for you and has been strongly associated with cancer risk. Never eat unfermented soy in any form, be it milk, tofu, or any other. If you want to eat soy, be sure it is only fermented soy and is non-GMO, traditionally fermented soy including natto, tempeh, miso and tofu. These fermented soy products may even help prevent cancer. Drink a pint of green juice from organically grown vegetables every day without fail. Take a top quality omega-3 oil every day. Steer clear of electromagnetic fields every chance you get. Don’t use Wi-Fi in your home. If you need to use it, turn off the Wi-Fi as soon as possible. When you do not have to use your cell phone, make sure it is in Airplane Mode. They do this by inducing sensitivity or allergic reactions that involve the central nervous system. The study of this phenomenon is called clinical ecology. SHOCKING SECRETS For many years, clinical ecologists have tested patients with psychiatric problems, from simple depression and anxiety to schizophrenia and even psychosis, to see if the cause of these things comes from reaction to specific foods. They do this either through a complicated procedure called cytotoxic testing—checking how your blood reacts to specific substances—or by putting you on a fast for five days, then introducing a few drops of water containing the suspected food under your tongue, and charting your reactions. These may include changes in your pulse rate and other physical symptoms, as well as natural shifts of mood or emotional outbursts, indicating that this particular food is the troublemaker. Reactions vary from person to person. They can be something as simple as a feeling of mental confusion, grief, or fatigue, to as dramatic as a psychopathic outburst in which someone tries to slash his wrists or attack those testing him. Once the offending foods are known—they could be milk, grain, cheese, vodka, sugar, or almost anything—the patient is told to eliminate them from his diet. Provided he does so, his aberrant emotional or mental state does not reoccur. If the allergies are mild, they can sometimes be controlled by a “rotation diet”, in which food intake is carefully planned so that you only eat a particular food once in any four-day period. Food sensitivities and food allergies are far more common than people realize. Some of the worst offenders are grains, cereals, wheat, milk products, and all convenience and packaged foods. People find that when they exclude these foods completely from their diet, their energy levels increase and their disposition transforms. What is also interesting is the sense that people have of themselves. Whether they trust themselves, and whether they feel good about being who they are, depends tremendously on the foods that they are eating. HEAVY METALS Heavy metals such as lead, mercury and cadmium, or too high a concentration of copper—one of the trace minerals necessary for good health—can create interference with the brain and nervous system, as well as the endocrine system, resulting in aberrant emotions. An excess of copper, for instance, can produce hyper-emotionalism, hallucinations, and even psychic experiences for some people. A high level of lead in the body is linked to mental retardation in children and is often a significant factor in over-aggressive behavior. It’s also indicated as a cause of hyperactivity and learning problems in kids. Excess cadmium, from a lifestyle that includes taking several cups of coffee a day, often leads to a low blood-sugar problem, so you feel you need more coffee or something sweet just to keep going. So does eating too many carbohydrates, which themselves turn into sugar. Low blood sugar is common amongst people living on a typical British or American diet. There are some simple tests to determine mineral balance and the levels of heavy metals in the body. These tests are not foolproof by any means, but they are still valuable. They are often done by burning a small sample of hair cut from the head, and then analyzing its mineral content. If any imbalances are found, they can be corrected by giving chelated minerals and/or by drying out excessive heavy metals from the tissues using natural substances such as pectin, high doses of vitamin C, garlic and kelp. HOW TO TEST YOUR FOODS Learn to test your own foods—it’s not hard to do. It’s all about becoming conscious of what your body thrives on and loves, and what it dislikes. In fact, it’s all about honoring yourself and your life. Say, for instance, the first food that you decide to test is cow’s yoghurt. You eat a nice big helping of yoghurt at one meal, then you don’t eat any more yoghurt for 48 hours, and you don’t introduce any other new foods. If, during this period, you find your energy levels have dropped for no apparent reason; you’re ravenously hungry or craving something; your bowels are upset; you feel emotionally unsettled or low; or you develop aches or pains in your body, then you can be pretty sure that your body has reacted badly to the food you have been testing. If, on the other hand, after 48 hours you experience none of these reactions, you can safely assume that the food you have tested can be incorporated into your meals as a food that your body is happy with. If you do have a negative reaction to the food, it’s important to realize that you haven’t done anything wrong. This is the way you learn about the foods that your body can handle and which you need to stay away from. Of course, it’s important to learn by your body’s unique rules, and test each food one by one. Give thanks to your body if it says “no” to a food. Meanwhile, get plenty of top quality proteins and fresh, green, non-starchy vegetables, no matter what else you’re eating. It’s important to remember that your digestive system is, in truth, your second brain. (See “Secrets of the Second Brain” ) It boasts as many nerve endings as the brain itself. When you eat foods that antagonize these nerve endings, you experience all sorts of physical and emotional states that hold you back. Discovering the foods that work for you is sheer joy. These are foods that you can eat with impunity, without gaining weight or worrying about undermining your health—provided you avoid the foods that you discover your body does not work well with.

Feed your Child Well: Exploring Wholesome Foods for Babies & Kids!

From the time he is ready to start weaning until he is five or six - or even beyond - how do you feed a child well? It is the question mothers most frequently ask me. If you really care about your child eating the best possible way for his long-term health and emotional balance, it is the easiest thing in the world to do. Babies and children always do - not what you tell them to do - but what they see you do. The way to feed a child well is to feed yourself well on simple, wholesome, natural foods and not to keep any foods in the house which are not health promoting - right from the beginning. Introducing a breast-fed baby to new drinks and to solid food is easy and lots of fun provided you don't get seduced by advertisers into believing that the best foods to feed him on come ready made in jars and packets from the shelves of supermarkets. They don't. Commercially prepared baby foods are not only more expensive, they are far less nutritious than wholesome homemade dishes from your own table since most of them have been processed to death. The best foods for weaning a baby are the same foods you eat yourself provided you prepare your meals from scratch and don't rely on the manufactured convenience stuff. Your breast-fed baby will not need solid foods at all for the first four or five months of his life. Until then any solids fed him - cereals or fruits or what have you - will tend to pass right through him. His digestive system is not developed enough to process them. Also, during the early months of a baby's life his defenses against allergies are rudimentary. If you give him solids too early there is a much greater chance that he could end up allergic to milk or grains or eggs or just about anything else. By the time he is five or six months old, however he will not only enjoy sitting up at the table with you while he eats but will also want to explore the world around him. For a baby that means putting whatever is offered into his mouth. This is the time for him to begin experimenting with new drinks and foods. learning to eat and drink Begin by offering him a little fresh fruit juice or vegetable juice diluted one part juice to three parts spring or filtered water. I started Aaron, my youngest, on diluted carrot juice made from an organic carrot or two in a centrifuge juice extractor and offered it to him immediately so it was full of vitamins, minerals and life energies. He adored the stuff. Fresh carrot and apple juice diluted in the same way is also a favorite with babies and children. Give them just a taste to begin with either on a little spoon or in a bottle. If your baby doesn't like the taste then forget it for the moment and try him again in another week or two. As they get older you can gradually decrease the water until they are taking it full strength. Offer your baby his first taste of solid foods while he is sitting at the table watching you eat. Mash a banana and give him just a taste, or a little flesh from a baked potato with a tiny bit of butter on it. Make it a game. If he likes it, great, let him have a bit more. If not, eat it yourself and forget it. You can buy one of the inexpensive hand held blenders and puree just about any wholesome natural food you are eating - from soups to nuts and from Brussels sprouts to whole grain bread to which a little spring water has been added. Let it be a game for the both of you - not some serious effort to get him to eat. If you want to avoid eating problems both now and later, never, ever, force food or drink on a baby or child. This is one of the cardinal rules of child rearing. Above all stop worrying about how much he needs to take. He will show you that himself by his responses. What so many parents forget is that the powerful will to live which lies at the core of his own seedpower and has brought your baby into the world will continue to sustain him. He will know how much food he needs now and later as he grows (provided of course his natural mechanisms for knowing have not become distorted by force feeding or being given lots of convenience foods loaded with refined sugar, junk fats and chemical additives). Children who have been raised on breast milk when gradually introduced to simple wholesome fruits and vegetables, grains and home made protein foods right from the table, learn to eat simply and gleefully. Every new taste is an adventure. a little of what he fancies Interesting studies have been carried out with small children. They show that provided the only foods offered them are good foods - that is not highly processed or filled with refined sugar, white flour or additives - babies and children left to their own devices will instinctively choose a wholesome diet. A child may eat nothing but bananas one day, then turn to carrots or whole grain bread or eggs the next. Looked at over a period of a week or two, his picking and choosing prompted by his own internal messages and instincts, spontaneously selects for him a diet which is virtually ideal when measured against what nutritional science says a growing child needs. Because his palate and instincts have not become distorted by manufactured foods, Nature's child is in touch with his body and its needs. He never has to give a thought to eating well. He does it the same way a bird sings or a waterfall tumbles over rocks down into a pool a hundred feet below. He not only supports his health and well-being in the best possible way, his own inner wisdom enables his own brand of individual seedpower to unfold beautifully into the unique individual he is designed to be - physically, emotionally and spiritually. When what your child eats day after day, year after year, supports the energy balancing, energy-producing functions in his body it creates for him an experience of grace in his life and in yours. He is far more likely to be centered in his demeanor, resistant to illness and cheerful in his outlook. When, on the other hand his diet is made up of highly processed convenience foods filled with junk fats and chemical additives - foods which have lost the complex balance and synergy in all living things - then you create metabolic confusion in his body and a greater susceptibility to illness and behavioral disturbances from hyperactivity to aggression.

Unmasking Pharma Lies: What Really Causes Anxiety & Depression?

It’s little wonder that people are confused about where to go and what to do when they get ill. I personally hear all about this, because I mentor hundreds of men and women throughout the world. They become overwhelmed by the media propaganda and aggressive advertisements they see on television. Our medical industrial complex has turned into a bizarre conglomeration of misinformation, lies and deceptions designed to further the corporate agendas of Big Pharma, government regulatory bodies and mainstream medicine, with little regard for human wellbeing. Now let me be clear: I am by no means damning all doctors. Far from it. I have the highest regard for conscientious practitioners who— because of the pressures they themselves have been put under to dole out drugs—find themselves caught in the same trap as their patients. This means that even doctors who have a genuine will to bring healing to those who need it are often prevented from doing so. DRUGS DON’T CURE Pharmaceuticals are designed to suppress your symptoms, not to cure your problem, despite all the aggressive hype and publicity which would have us believe otherwise. Also, the vast majority of what medical studies conclude in their research has been exaggerated, is misleading or plain old bad science. Dr John Ioannidis is one of the experts who have been exposing bad medical science with great clarity and conviction. His article Lies, Damned Lies and Medical Science, in the October 4 issue of “The Atlantic” magazine, is well worth reading if you want to understand the way in which medical research is supposed to work, but how most often it does not. The corruption, lies and deceit which pervade the functioning of our medical industrial complex are enormous. Pharmaceutical corporations bring in from five to six times more earnings each year than any other corporations. You need to become aware of all these implications. FALSE BELIEFS RULE Take anxiety and depression, which are so widespread now, and so fundamentally undermining to your health long-term. In 1987, SSRIs—selective serotonin reuptake inhibitors—arrived on the scene, spawning with great fanfare a gigantic market for the treatment of anxiety and depression. The assumption on which these drugs were manufactured is this: “Anxiety and depression happen because of low serotonin levels in the brain.” This belief was neither scientifically tested nor proven. Nonetheless, the mainstream medical profession, sold a bill of goods by the pharmaceutical salesmen, embraced prescribing these drugs hook line and sinker—and Big Pharma began to make a fortune on them. Prozac (Fluoxetine) came first. It was followed by Celexa (Citalopram), Zoloft (Sertraline), Paxil (Paroxetine) Lexapro (Escitalopram) and several others. TRUE OR FALSE When the National Institutes of Mental Health decided to find out if anxious and depressed people do indeed have low serotonin levels, they found there was no evidence to support the claim. In 2007, more research concluded that the claim that low serotonin causes anxiety and depression was incorrect. Another Swedish research project confirmed that SSRIs are not a valid treatment for anxiety and depression. Did Big Pharma take note, and begin to question their aggressive sale of these drugs to the public? Not a bit! They continued to assert that adding more serotonin to the brain is the right way to treat these alleged “chemical imbalances.” Other commonly prescribed pharmaceuticals for anxiety include Valium, Ativan, and Xanax. What are the significant risks associated with such drugs? Hip fractures, memory loss, addiction and bone fractures, to name a few. We also know now that those who continue to take SSRIs can be four times more likely to die prematurely and have a 35% greater risk of cancer than those who do not. This was reported in Medical Daily June 17, 2015. EUROPEAN ANALYSIS A fascinating debate recently took place between the highly respected BMJ Danish medical researcher, Dr Peter C Gøtzsche, and a London based researcher Allan H Young, during which mind-altering drugs were rigorously investigated for their safety and effectiveness. Gøtzsche claimed that antidepressants do little more for patients than swallowing a placebo. He pointed out that there are likely to be 15 times more suicides among patients taking them than are being reported by the Food and Drug Administration, which issued a black-box warning on these drugs more than a decade ago after carrying out meta-analyses of hundreds of studies involving almost 100,000 people. At that time they had discovered that the rate of suicidal thinking or behavior doubled among those on the drugs. “Psychiatric drugs are responsible for the deaths of more than half a million people aged 65 and older each year in the Western world.” Gøtzsche estimates that this means an astounding 539,000 deaths take place each year in the U.S. and the European Union. This is based on studies showing higher mortality rates in older patients taking antipsychotic drugs, such as those used to treat schizophrenia; benzodiazepines, which are prescribed to treat panic and anxiety disorders, as well as antidepressants. VACCINATION WARNINGS Dr. David Brownstein is Medical Director of the Center for Holistic Medicine in West Bloomfield, MI. A member of the American College for the Advancement of Medicine, he frequently lectures to physicians about the use of natural hormones and nutritional therapies. He also has much to say about vaccines which are indiscriminately being given to both adults and children. In some countries, such as Australia, ongoing vaccination of your child is mandatory. TOXIC INVADERS Brownstein writes: “In regard to the flu vaccine, there is a whopping 51,000 ppb (parts per billion) in the multi-dose flu vaccine—the most common type of flu vaccine given. How much is 51,000 ppb? It is 25,000 times the legal maximum for mercury in drinking water established by the Environmental Protection Agency.” Remember that when you inject mercury, it is 100% absorbed, so it is more toxic to inject it as compared to eating it in fish or drinking it in water. The autism rate that has gone up from 1:10,000 in 1970 to 1:68 now. He writes, “This is NOT a genetic problem. This is a multifactorial problem that is being caused by toxicities, as well as nutritional and hormonal imbalances. And, toxic vaccines are part of the problem. We have already damaged a whole generation of children because of this mess.” Yet the powers that be, following Big Pharma’s lead, continue to legislate for yet more vaccinations. Feed Your Kids Like Spiderman: Discover the Magic of `Spiderman Salad' & Avocado Dip.

Kids are meant to hate salads. In my experience what most, very young, children hate is not salads but the textures to some salads, because they are not cut or shredded finely enough. I don't blame them. I don't like salads either unless there is real aesthetic variety to the vegetables in their color, the way they are cut and arranged or mixed on a plate. I started my children on what my youngest calls `Spiderman Salad'. He came up with that name one day when I was explaining to him that if you wanted to be strong like Spiderman you needed to eat lots of raw vegetables. These first salads are more like vegetable pates. You can chop or puree them (depending on the age of the child) in a food processor or with a handheld blender. The secret is in the `binding' such as avocado or ground cashews or pureed hard boiled eggs which makes them stick together. The great thing about these `Spidermans' is that they are highly concentrated once they have been chopped or pureed. A dessertspoonful at a meal can give more nourishment than an adult side-salad. Experiment, but always taste your experiments yourself. If they are yummy to you, they are likely to appeal to a child. If not - re-season until you have created a real prize. spiderman salad When you make any salad for yourself, including dressing, put a little of it into a food-blender, the sort that has a blade, add a spoonful of cashews or avocado or the yolk of a hard boiled egg, or even a little thick yogurt - something that will bind. Mix it all together and season with vegetable bouillon powder and herbs plus a little salt and maybe a drop or two of olive oil. What you have left is a "Spiderman", a pate which can even be spread on crackers for older children. sprout magic salad Make a base with alfalfa or other sprouts and around the dish arrange: Grated carrot Finely shredded cabbage Chopped apples Grated beetroot Add: Sliced mushrooms, black olives, spring onions Sprinkle raisins over the grated vegetables and add a spoonful of seed or nut cheese. dressings basic french dressing 3/4 cup oil 1/4 cup lemon juice or cider vinegar 1 tsp whole-grain mustard or mustard powder 2 tsp honey A little vegetable bouillon powder and pepper to season A small clove of crushed garlic (optional) Combine all the ingredients in a blender, or simply place in a screw-top jar and shake well to mix. Some people like to thin the dressing and make it a little lighter by adding a couple of tablespoonfuls of water. avocado dip or dressing This is my favorite of all salad dressings. Kids adore it; you can make it thick for them to spread on crackers, leave out the curry powder and feed it pureed to babies, or make it thin to pour over salad. 1-2 avocados 1 cup fresh orange juice (use more or less to give the desired consistency) 1 tsp curry powder 2 tsp vegetable bouillon powder Fresh herbs (e.g. lovage and French parsley) 1 small clove garlic (optional) Peel and stone the avocados. Blend all the ingredients together in a food processor until smooth.

How to use The bright yellow flowers of St John’s Wort contain a red oil called hypericin which is antiviral and probably mood enhancing. Many studies show that it is whole plant extracts, however, rather than hypericin alone, that have the best anti-depressant effects. You can pick the flowers, leaves and stems of St John’s Wort while the plant is in flower. Dry them quickly, as you want to preserve the red oil in the flowers. To make tea, use 1-2 teaspoons of the dried herb in a cup of boiling water. Steep for 10-15 minutes, strain, and drink 3 times a day. One of the most effective ways to use St John’s Wort for depression is as a tincture. Take 1 teaspoon of St John’s Wort tincture in a little water 3 times a day. It should be taken for at least a month before results can be expected. A lucky few people, however, respond right away. Nature's Tranquilizer The drug valium takes its name from a plant. Valerian (Valeriana officinalis) was the primary herbal sedative used on both sides of the Atlantic before the advent of barbiturate sleeping pills. It is a safe and well-tested herbal remedy with a smell like dirty old socks. But don’t let that put you off since valerian is a powerful herb for inducing safe sleep – more potent than hops or camomile. You can take valerian in a couple of ways. I like the tincture best – 10 to 20 drops in a little water before bedtime or in the middle of the night when you awaken. Alternatively you can take a couple of capsules of the dried root. Valerian in lower doses is equally useful when your nerves feel ‘shot’, even during the day. It has the remarkable ability to enhance your ability to deal with stress and bring you stamina while it calms. Very occasionally, and only to a very few people, valerian will cause a hangover in the morning, if this happens to you lower the dose or try a different herb. Sam-E Short for S-adenosyl methionine, Sam-E was discovered in Italy in 1952. It is not actually a herb, but an amino acid, which occurs naturally in our bodies when we are in good health. However it easily becomes depleted by stress, illness and deficiencies. Though it has been popular for treating depression in Europe since 1975, it has largely remained unknown elsewhere in the world—that is, until recently, when it became available in the US. It’s still unknown exactly how it works to lift depression. One hypothesis suggests that it can increase the availability of two neurotransmitters that regulate our mood: serotonin and dopamine. Get Your Kids to Enjoy Healthy Sweets - Fruit Desserts & More!

The worst health offenders in children's diets are processed sweets made from refined sugar. Not only are they bad for teeth, they can cause more serious problems in children such as subclinical deficiencies or hyperactivity, and in adults can contribute to the development of degenerative diseases such as diabetes, arthritis and coronary heart disease. However, trying to get children to give them up is like pulling teeth from a hippopotamus. Far better to give them a wholesome alternative to replace those chocolate bars, biscuits and cakes. Here are some recipes for fruit desserts and all sorts of sweet treats, each made from nutritious ingredients - nuts, seeds, dried fruit, coconut, carob and honey - which can be served at tea time with one of our delicious shakes or smoothies, or taken to school in a lunch box to snack on. They are as tasty as they are wholesome, and they are uncooked to supply your child with the highest level of  life order possible. Use them for tea and for snacks and parties. sorbets The easiest way to make sorbets is with a sorbetière - a special machine which stirs the sorbet or ice cream as it freezes it. I have survived for many years without one by improvising... orange sorbet Juice 6 oranges and then combine in a food processor with 2 juicy seedless oranges which have been peeled and quartered. Add enough honey or natural stevia to sweeten, and some nutmeg or ginger if desired. I sometimes like to add a grated peach or two to give the sorbet texture. Pour the mixture into ice-cube trays or a plastic lunch-box type container and freeze. Remove from the freezer and leave to thaw slightly for about ten minutes. Blend the mixture again immediately before serving, and spoon into glass dishes or into empty halved orange shells. strawberry or blackberry sorbet Combine 3 cups berries with 2 bananas and a little honey. Follow the method as above. The bananas give a creamy texture to the sorbet. carob and honey ice cream This recipe is one of my family's favorites. The combination of carob and honey I find unbeatable. 2 pints (about a liter) milk (we use goat's) 2 egg yolks 3 tbsp granular lecithin (optional but very nice since it gives a creamier texture) 1 cup unheated carob powder 1/2 cup clear honey 1 tsp pure vanilla essence We use goat's milk but raw cow's milk is good - if you can get it - or sheep's milk or buffalo milk.  Sheep's milk makes wonderful drinks and desserts, and it usually comes in a convenient powder. Freeze the milk in a low flat plastic container. When frozen, remove from the freezer and let sit for about half an hour until it is just soft enough to slice into pieces. Put the egg yolks into the food processor, add about a cup of the frozen milk, the lecithin, carob powder, honey and vanilla, and blend thoroughly using the blade attachment. Add the rest of the frozen milk and continue to blend until it is just mixed. (Don't overblend or you will make the ice cream too liquid.) Should it become too liquid simply return to the freezer for a few minutes then stir before serving. Serve immediately. cherry whip (for 1) 1 cup natural yogurt 1/2 cup pitted black cherries 2 tsp honey or natural stevia to taste Double cream (optional) Blend the yogurt, cherries and honey or stevia and pour into a tall glass. Top with a spoonful of double cream and garnish with a pair of cherries hung over the edge of the glass. As a variation, use strawberries or raspberries instead of cherries. raspberry fruit freeze pie There are many variations that can be made on this theme - using different berries and fruit to fill the pie base. pie base: 1 cup pitted dried dates 1/2  cup almonds 1/2  cup oat flakes 1 tsp honey or natural stevia to taste A little water Grind the dates and almonds as finely as possible in a food processor. Add the oats, honey (or stevia) and a little water and blend again. You need to add the water slowly to get the right consistency. You want the mixture to bind but not be sticky. Remove the base from the processor in a ball and flatten it into a pie dish with your fingers. As a variation you can add a tablespoon or two of coconut. pie filling: 2 bananas 2 cups raspberries Sherry Honey or natural stevia to sweeten Peel the bananas and chop into pieces about an inch or so thick. Freeze in a polythene bag with the raspberries until firm. Remove from freezer and blend the fruits together with a dash of sherry and a little honey or stevia to sweeten if desired. Pour into the pie crust and serve immediately, garnished with a few banana slices or raspberries. strawberries and cashew cream Make your own non-dairy `cream' from cashew nuts, and pour it over a bowl of ripe fresh strawberries (or any other fruit). cashew cream 1 cup nuts 1/2  cup water or orange juice 1-2 tsp honey or natural stevia to taste Nutmeg Blend the nuts and liquid as finely as possible in the blender or processor. Add a little honey, or stevia, and nutmeg and use as a topping for any fruit. sweet treats These attractive little sweets can be wrapped in colored paper and given in boxes as gifts for Easter, Christmas, etc. 1 cup mixture of almonds and hazelnuts 1 cup mixed dried fruit (such as date and apricot, peach and raisin, or sultana and pear 1 tbsp honey or natural stevia to taste Juice of 1 orange or 3 cups apple juice, dash of orange liqueur (optional), coconut flakes and sesame seeds. Put the nuts and the dried fruit in the food processor and chop thoroughly. Add the honey or stevia and enough fruit juice to make the mixture bind, plus a dash of orange liqueur if desired. Remove from the processor and roll into spheres the size of large marbles. Sprinkle a plate with the coconut flakes (toasted if desired) and sesame seeds and roll the balls in either one or both. Chill in the fridge and serve on a platter decorated with fresh fruit. rocky road bananas This is a great recipe if you have too many ripe bananas on your hands. Once frozen, the bananas will keep for weeks - unless they are eaten immediately as in my house! 4 ripe bananas 1/2 -1 cup coarsely ground Brazil nuts Honey Simply peel the bananas and skewer onto kebab or ice lolly sticks. Roll in honey and then in chopped nuts. Put on a freezer-proof plate and freeze until hard. Eat straight from the stick. If you prefer you can first slice the bananas crosswise, coat in honey and sprinkle with nuts, then freeze to make bite-sized treats. As a variation try mixing a few tablespoons of carob powder into the honey to make chocolate coated bananas and then roll them in coconut, dates or nuts...or all three! yogurt lollies The best ice-lollies are homemade. You can buy ice-lolly molds and sticks in most department stores. Mix a large bowl of plain yogurt with some frozen concentrated orange juice, then pour the mixture into the lolly molds and freeze. You can also add fresh fruit and honey to natural yogurt and blend it together to use, or simply freeze fresh fruit juices such as orange, grape, apple and pineapple. refrigerator cookies 1 cup rolled oats 1/4-1/2 cup blanched almonds 3 tbsp almond or cashew butter or 1/3 cup ground almonds 1-2 tbsp honey Handful of raisins Handful of dates 1 tsp vanilla essence 1 tsp cinnamon Pinch of allspice Finely grind the almonds, raisins and dates in the food processor. Add the nut butter, honey, vanilla and spices and combine well. Mix the oats with the rest of the ingredients. Form the mixture into flat cookie shapes in the palms of your hands (you may need to add a few drops of water) and place on a baking sheet. Refrigerate until firm. carob fudge Once chilled, these wonderful fudge balls have the texture of ordinary fudge, and their carob flavor makes them ideal chocolate substitutes. 1 cup sesame seeds 1/2 cup dried coconut 1/2 cup carob powder 1 tsp honey 1/2 tsp vanilla essence Grind the seeds very finely in the food processor. Add the other ingredients and process again. Form the mixture into little balls and chill. sunflower snacks 1/2  cup sunflower seeds 1/2  cup carob powder 1/4 tsp cinnamon A little apple juice Finely grind the sunflower seeds and mix with the carob and cinnamon. Add a few drops of apple juice, just enough to make the mixture bind. Form into a roll about 1in/2.5cm thick, chill and then slice. Alternatively, break off little bits and press them into coin-size wafers and chill.
