Could something as insignificant as the tiny blueberry offer powerful protection and healing for your body? It can—and probably in ways that you’ve never dreamed possible. They can destroy free radicals, combat oxidative stress, help maintain healthy blood flow, healthy LDL and blood pressure levels. Blueberry extract, when combined with other natural berry components, may even help prevent and clear bladder infections by blocking bacteria from attaching to the walls of the bladder. In 2005, researchers discovered that the polyphenols which a specific blueberry extract contains can reverse both motor defects and cognitive defects which can develop as your body ages. If you eat sugar and grain-based carbs, this leads to more calories and weight gain, and fatigue. Read labels. If you see “non-fat” or “low-fat”, what this means is high sugar—and getting fat from eating them. Stay away from them. One of the major energy problems caused by eating processed foods full of grain-based carbs and/or sugars such as pasta, bread, cereals and sweets is that this brings about a progressive decline in your body's ability to process sugar. Unlike vegetables and fruits, which are full of beneficial fiber, manufactured processed foods are highly concentrated. Fiber is no longer present to dilute their concentration and slow down the rate at which the simple starches and sugars they contain are absorbed into your bloodstream. Grain and sugar based foods are far more calorie-dense. When you eat them year after year, they begin to overwhelm the body—especially the pancreas—causing blood sugar problems, and mood and energy swings that wreak havoc with your health. Eating this way predisposes you to insulin resistance, food cravings and obesity. Don't get misled by the nonsense that is written on the packaging of foods you buy, either. Read the ingredients carefully and watch for hidden sugars—glucose, sorbitol, invert sugar, corn syrup, maltodextrin, dextrose, barley syrup, malt sugar. Even many products that claim to be sugar-free contain one or more of these, all of which are just another name for sugar. CUT THE CAFFEINE Caffeine—an ingredient in coffee, tea and many soft drinks—gives you a quick lift and the illusion of energy, only to let you crash a couple of hours later when you find yourself craving more coffee or wanting to reach for a sticky bun or chocolate, just to keep going. Tea contains a surprising 14-61 mg of caffeine per cup, to coffee’s 95-200 mg. Coffee makes your blood more acid, which in turn draws calcium from your bones to try to re-establish a healthy acid/alkaline balance. Drinking coffee is one of the worst things you can do if you want to prevent osteoporosis. Colas, squashes and soft drinks also contain caffeine—and are also riddled with sugar. A 12 ounce tin of cola contains 7 teaspoons—about 40 grams. As for the “diet” varieties, they are full of excess phosphorous and poisonous artificial sweeteners like aspartame, which under no circumstances do you want to put into your body. POWER FOODS Every molecule of muscle in your body is made from the proteins you eat. Muscle is the engine which turns food calories into energy, and burns fat. Improve the quality of your muscle and you automatically raise the vitality of your whole body. You also enhance your sex hormones, create better skin quality, and gain in strength and power. Only protein foods help do this. They also help ground you. Thanks to this characteristic, protein can even play an important role in helping you fulfill your dreams, influence your goals and discover your unique life. No protein structures in your body are fixed. Each strand is constantly being broken down and reshaped. In fact, the whole structure of your body is being rebuilt day by day, thanks to the proteins you take in through your foods. 98% of your body’s molecules, including your teeth and bones, your organs and your muscles, are replaced each year. So will the rest of your body. I like to use powdered kelp as a seasoning. It adds both flavor and minerals to salad dressings, salads and soups. I am also fond of nori seaweed, which comes in long thin sheets or tiny flakes. It makes a delicious snack food which you can eat along with a salad or at the beginning of the meal. I often toast it very, very quickly by putting it under a grill for no more than 10 or 15 seconds. It is also delicious raw. You can use nori to wrap around everything from a sprout salad to cooked grains in order to make little pieces of vegetarian sushi. It's often a good idea to soak some of the other sea vegetables such as dulse, arame and hiziki for a few minutes in enough tepid water to cover. This softens them so you can chop them and put them into salads or added to your soups. Here are my favorites: Arame, dulse, hiziki, kelp, kombu, laver bread, nori, wakami, mixed sea salad. Change the foods you have log been eating and will change the whole of your life for the better. Try it for a month and find out for yourself.

Zazen: Power in Simplicity

Unlock Life-Giving Balance Through This Ancient Practice: Zazen

Zazen has been practiced for 2,500 years. It traveled from India, China and Japan to arrive in the West around the middle of the last century. The practice of zazen is neither a means of introspection nor of contemplation. It is a means by which we come to experience the unity with our selves and the Universe. As a technique, it is easy to learn and simple to practice. As with most valuable techniques, what matters is not trying to understand it, for there is nothing in it to be understood. What matters is doing it. As you do it day by day, it transforms your health and your life. A powerful technique for re-establishing life-giving balance at every level, zazen is a simple, yet almost infinitely transformative practice. Zazen deepens our connection with the innate self simply by becoming aware of our breathing. Practice it daily, and it can relieve fear, release anxieties and clear away internal monologues where the mind chases its tail like an obsessive dog, getting nowhere. Zazen also strengthens vitality, and teaches us the art of being present in the eternal NOW. STILL WATERS RUN DEEP In essence, the human mind is meant to be like the still water of a lake at dawn. But, when the rains fall or the winds blow, its natural glass-like surface, which is meant to reflect the sun and the moon, gets disturbed with eddies and waves, distorting our perception of our bodies, ourselves and the world around us. As we practice zazen, our mind returns to its mirror-like state. Then it can reflect the world around us without becoming obstructed or distorted by anything in it. Gradually we learn that we do not have to hold on to anything to be able to create the life for which we long. We become free. This experience of freedom becomes contagious—a blessing not only for ourselves but for others. Marianne Williamson said it well: ‘As we are liberated from our own fear, our presence automatically liberates others.’ The word ‘spirit’ means breath—that is, life force. In Japanese they call it ki, in Chinese chi. In English we refer to it as energy or power. It is the electrical energy that fuels the living matrix of your body. Practice zazen and you learn how closely the way your breath is connected with the kind of thoughts you have and the emotions you feel. Working with the breath, you inadvertently work with body and mind. For these three are different aspects of a single reality. EXPAND CONSCIOUSNESS As we develop awareness of the breath, as it enters and leaves our body, and of all the sensations this brings, we come to touch the ‘still point’ and gradually develop a natural ability to focus the mind. We start by sitting in a comfortable but straight posture and counting the breath: inhale . . . ‘one’, exhale . . . ‘two’, and so on, up to ten. Then we begin again back at ‘one’. The point of the counting has nothing to do with trying to get to ten—it is just a simple tool for focusing attention. If you lose count and your mind begins to wander, notice this, bless your thoughts, whatever they are, then let them go by gently returning your concentration to the breath and starting again at ‘one’. Each time you choose consciously to let a thought go and bring yourself back to your breathing, you increase your ability to place your mind where you want it to be. It’s an incredibly powerful experience. After a while, you begin to break free of the limiting thoughts, worries and obsessions that rule most people’s lives. Connection with your innate being grows stronger, as does your capacity to experience bliss, pleasure and the sense that you have the right to be who you are without having to conform to other people’s imperatives. Your spiritual power grows, as do your intuitive skills. Creativity, which is closely allied to intuition, blossoms. We lose the sense of isolation which so many have, where we feel alone and alienated from the Universe. Want to try it? Let’s get started. POSITION YOUR BODY The way you hold your body—your posture—helps create your state of consciousness. There are many choices. You can sit tailor-fashion on the floor, using a small firm pillow, or zafu, which raises your bottom slightly off the floor. Sit on the front third of your zafu, tipping the body slightly forward. This creates the strongest feeling of stability. You can also use a chair. When sitting on a chair it is important also to use a cushion so that you can sit on the front third of the cushion and keep your back away from its back. Make sure your feet are flat on the floor. However you choose to sit, your back needs to be straight. Imagine that your head is pressing against the ceiling. Now allow your muscles to soften so the natural curve of the back appears and the abdomen pushes slightly forward so that the diaphragm moves freely—rising and falling with each breath. POSITION YOUR HANDS Place your hands in what is known as a cosmic mudra, where your active hand (right if you are right-handed, left if you are left-handed) lies palm up in your lap. Nestle the other hand gently on to the palm of the active hand so that the knuckles overlap and your thumb tips just touch, forming a kind of oval. This connects your body’s right and left energy fields. It also acts as a symbol for the unity of the breath, your life, and the Universe. This also helps turn you inwards away from the confusion and chaos of daily life. GROW QUIET Allow your body to settle into a comfortable posture. Your back is erect but never stiff; your chin is tucked in slightly; the tip of your tongue rests easily against the roof of your mouth, just behind your upper teeth, which keeps you from salivating too much. Breathe through your nose. Lower your eyes so that you are looking at the ground 2 or 3 feet in front of you. After a while you may be surprised to find that, although your eyes are open, you are no longer ‘seeing’ what you are looking at, since the focus of your attention will have shifted within. GO TO THE CENTER This is the hara—the physical and spiritual centre of the body. It is a place of power from which all the martial arts are performed. Located in the pelvis, 2½ to 3 inches below the navel, it is also the centre of gravity in the body. Allowing your focus of attention to rest at the hara creates a sense of balance for body and mind. As you breathe in, imagine your breath going down to the hara, then returning from the hara as you breathe out. Of course, on a physical level the breath is really filling the lungs, but imagining this helps centre you. BREATHE EASY Pay attention to your breath without trying to change anything. Be aware of the tactile feelings that come with breathing. Notice the cool air entering your body as you inhale through your nose and what it feels like as it travels down the back of your throat. Feel the warmth of the out-breath as you exhale. When you stay in touch with this tactile sensation of breathing, you are less likely to be distracted by thoughts. COUNT THE INS AND OUTS Inhalation is ‘one’. Exhalation is ‘two’. Inhalation is ‘three’ and so on until you get to ten. Then start all over again. The simple agreement you make with yourself is only that when the mind begins to distract you, you notice this and consciously choose to let it go, then go back to watching the breath, and begin counting again from one. Zazen is as simple as that. Practicing it for 15 minutes twice a day—preferably at the beginning of the day and the end of the day—we touch the still point within us again and again. In the process we begin to build up joriki—the power of focus and concentration so that, in time, instead of becoming caught up in the endless mental machinations that draw us away from living our lives fully whatever we are doing, we become able to choose consciously to let go and turn our mind towards whatever we wish. The connection with our innate being strengthens so that our inner world and our day-to-day life come together in harmony. The more you practice, the easier it becomes eventually, at will, to move into your still point even in highly stressful situations that once had you frantic. Practicing zazen day after day brings many other gifts from the Universe as well. The practice of zazen is highly experiential. Trying to understand or rationalize it is a waste of time. Like most transformative practices, it can never be fully understood; it is meant to be lived.

The Epiphany of a New Life: My Encounter with My Newborn in a LA Catholic Hospital

My first child was born in a huge teaching hospital in Los Angeles. The labor was long and regrettably not natural. I was given an analgesic during labor and an epidural for the delivery. It was all very cold, efficient and mechanical. The hospital I was in happened to be a Catholic one in which every other woman there seemed already to know the ropes since she was giving birth to her fifth or eighth or tenth child. Nobody bothered to tell me much about what was going on or what was expected of me. My baby was taken from me immediately after the birth and put into a nursery with all of the other babies while I was wheeled off to a private room. Soon they brought this tiny creature to me. I held him in my arms and stared at him in stark wonder. Then at three hourly intervals he would reappear for twenty minutes at a time and I'd hold him in bed beside me until the nurse would come and take him away again. The third or fourth time they brought him to me, he began to cry. I nestled him, rocked him, and spoke gently to him but he wouldn't stop so I rang for the nurse. `My baby's crying,' I said, `What should I do?' `Have you burped him?' `Burped him?' `You have fed him haven't you?' `Fed him? Am I supposed to feed him?` The nurse took him and put him to my breast. His tiny mouth opened and reached for me as if he had known forever what to do. He began to suck with such force it took my breath away. It was like being attached to a vacuum cleaner. I began to laugh. I couldn't help myself. It seemed incredible that such a tiny creature could have such power and determination. He too had a purpose. He was raw, insistent and real. With every fiber of his being, this child was drawing his life and he would not be denied. Tears of joy ran shamelessly down my cheeks while he sucked. There in the midst of all that clinical green and white, I had discovered what love was all about. It was really quite simple—a meeting of two beings. The age, the sex, the relationship didn't matter. That day two creatures--he and I—had met. We touched each other in utter honesty and simplicity. This experience was for me a true epiphany. My life was forever altered by it. There was nothing romantic or solemn about it. No obligations, no duties, no fancy games, and you didn't have to read an encyclopedia of baby care to experience it. We'd met, just that. Somewhere in spirit we were friends. I knew beyond all doubt that I had found something real and real it has remained.

Plumb the Depths: Discovering Your Potential Through a Retreat

I smile when the word “retreat” comes up and people get all “starry eyed” and “new age” about the idea. In my experience, a retreat—an enormously valuable event in one’s life which needs periodically to be repeated—has little to do with sitting beneath jasmine scented trees, communing peacefully with God. I have done many retreats of different lengths and kinds, including one in a Tibetan monastery, in which I spent some six weeks learning more about fleas than I would ever want to know. I believe each retreat is meant to be an experience of profound inner transformation, carried out with both feet planted firmly on the ground. PLUMBING THE DEPTHS Like any experience of real change, it asks that we plumb the depths of our being to come closer to what is real, as well as to access creativity, power, and energy we may never have touched before. In many ways, the process is like that of detoxifying your body by shifting from a low-carbohydrate diet to a way of eating that brings clarity to the mind and strength to the body. Retreats often bring to the surface a lot of the toxic “junk” from emotional damage and wrong thinking that all of us carry on a psychological and mental level, so it can be cleared. This is not always a comfortable process. DISCOVERING YOUR POTENTIALS Like the proverbial iceberg, most of us live with the lion’s share of our potential for freedom, joy, creativity, and power submerged beneath a sea of unknowing. We go about our day-to-day duties and pleasures, conscious only of what comes to us through our five senses. How does it taste and feel? What does it sound like? What do we see in front of our eyes? And most of the time—because of the stress that we live under in our urban lives —we are not even fully aware of our senses. Meanwhile, beneath the vast ocean of consciousness that constitutes what it is to be fully human, our greater selves hibernate, waiting to be awakened. It is this awakening that a retreat can help bring about. For like exceptional events in our lives which break through comfort zones—when we fall in love perhaps, or when we’re faced with an event of life-shattering proportions like a critical illness or the death of a close friend—a retreat in silence and solitude can cause submerged areas of our being to erupt in magic, in surges of passion, in vitality, in anxiety, in stunning beauty. EXPANDED AWARENESS For a time, the mundane quality of everyday life is replaced with a sense of expanded being. We not only feel more alive; we wake up to find that familiar things—the tree that stands outside the bedroom window, the cat that greets us when we come home each day, the simple shell we picked up and slipped into our pocket while walking on the beach—has taken on a luminosity we cannot explain. On retreat sometimes, without warning, while listening to music or walking down a street, we can be hit with a feeling that the world is far greater than we ever imagined it to be, or a sense that all we see around us somehow is us. We are all part of the same stuff. While the experience lasts, everything seems right in the world. Then, as our retreat ends, like the sun at the point of setting, it can all fade beneath the mundane horizon—leaving only the faintest wisp of colour to remind us that we once stood in glory, felt the rays of the sun upon our bodies, and knew that sense of being at one with the universe which gives every struggle meaning. A retreat, whether or not it is simply 2 hours set aside a week for you to do something that you absolutely love doing so that you are following your passion; whether you go into a monastery or a retreat centre for a long weekend; or into the wilderness on a vision quest, helps connect us with what is real, and remind us of who we really are. In the silence, when we are removed from the day-to-day structures of our lives which both support us and imprison us, we can begin to plunge the depths of our being and make a better connection with our inner visions, longings, passions, and creative power. DETOX FOR THE SOUL One of the most important gifts of a retreat is to help make us aware that the life we are living may not be entirely our own, or that it is not as authentic as we would like it to be, or that we are not getting as much out of our lives as we feel we should be. Such discoveries are never easy. Yet they often herald exciting changes for the better and help clear away much of the toxic “junk” we have been carrying. The process of reclaiming power and rebalancing energy, by walking away for a time from the ordinary structures of your life, is very much like the process of detoxifying the body. When you stop putting convenience foods into your body and begin eating in a way that supports life-long health, something remarkable happens. Not only do our physical distortions rise to the surface; you might experience fatigue, perhaps a headache as a result of giving up coffee, a deep cleansing of the body. In many ways a retreat acts as a detox for the soul. On a spiritual level, the distortions that we have picked up in our lives also tend to rise to the surface to be cleared away. We may find ourselves temporarily riddled with depression or a sense of meaninglessness, fear, the feeling that the life we are living in no way satisfies our inner need. WRITE IT DOWN On any retreat, it is essential to keep a journal of what you are thinking and how you are feeling, both physically and spiritually. We often forget that mind and body are one, not two separate entities. Nothing brings this truth more to consciousness than the process of retreating from our day-to-day life. For when you let go of the structures of your life for a time, the ideas, feelings, memories, and concerns that have been floating beneath the surface rise up into awareness. This is where it is important not to identify with them, but rather to just remark that they are there, record them, and learn to look at them objectively knowing that the fact they have risen to the surface means that they are probably ready to be got rid of, often leaving us lighter and freer than ever before. LISTEN TO YOUR INNER VOICE Simultaneously, probably because the psyche is so rich and complex and when you are on retreat you hear the whispers of your soul better than any other time, we tend to get tiny messages from the soul. We often get a sense of things that we want to do or be, learn, or try. Some of these things may be insignificant, while others seem to be very large indeed. Record these “whispers” in a journal, right alongside any negative or confusing feelings which surface. At the end of a retreat, you can then go back to these whispers which you have recorded. Make a decision to act upon one or two of the things you want, whether they be apparently insignificant things such as I want to change the way my hair is cut, or large issues such as I want to go back to university and learn new skills. DISCOVER YOUR PASSIONS A retreat can help us come in touch with passions of the soul. Passion, I believe, holds the key to everything, and more than anything else, the stressful demanding lives that we live, where we are living mostly by other people’s rules (being the good employee, the good mother, the good wife etc.) tend to make us deaf to the whispers of our soul. A retreat can awaken again our ability to hear these passions. A NEW LIFE BEGINS The real trick to making retreats work for you comes after the retreat is over. It’s at that point, when you look back into your journal and find out what it is, and are reminded of the things that you most want. These are not just things that you think might be possible, but what you really want in your life. Decide to bring into being only one or two of the things that you want most to do. This is how we ground our spiritual insights in our day-to-day lives and then gradually, bit by bit, day by day, we not only find that the “distortions” we have carried so long have lessened, loosening their hold on us. With each action we take, following one or two or more of what one hears from within, it becomes easier and easier to connect with our soul’s whispers and therefore easier and easier to live an infinitely rewarding, authentic life. And, as often as not, all this can begin with a simple intention to retreat.

I am sure with every fiber of my being that the joys of menopause are the world's best kept secret. Like venturing through the gateway to enter an ancient temple, in order to claim the joy that is your birthright, every woman needs to be willing to pass beyond the “monsters” that guard its gate. When you stand at the brink of menopause in your own life, it can feel as though only darkness, danger and decay lie beyond the gate. In a way this is true—although most certainly not in the way most women believe. As I entered the gate of my own menopause, like most modern women my head had been filled with nonsense about the horrors of hot flushes, fainting spells and dry vaginas; with memories of my mother's tears shed over a wrinkle that appeared one day to mar her perfect face. Then there was the prospect of enforced celibacy—after all, no man can feel lust for an old woman. Or can he? It was partly by accident, and partly because—despite good health and secure family circumstances—my own journey through menopause was not an easy one. Yet this was how I discovered the great secret which throughout history women living in patriarchal cultures have guarded close to their hearts: The doorway to menopause is a call to adventure. It takes you out of the ordinary world in which we have been living and carries you into a numinous realm of magnified power. Within this new realm you can find treasures to match your wildest dreams, waiting to be uncovered. And, like every prize worth having, such gifts can only be claimed and brought back you we are bold enough and determined enough to answer the call. What is calling you? Why Cura Romana is So Successful for Weight Loss: Rebalancing Thyroid Function

A complaint I often hear from men and women who have been on long term medication for low thyroid is this: “I’ve taken the pills for years but I only gain more weight. Why?” Having worked with scores of men and women all over the world, I am continually surprised by the number of people who, having been prescribed thyroid hormones, struggle long term with mounting weight that they cannot seem to lose no matter what they do— people who, nevertheless, shed weight consistently and keep it off permanently on Cura Romana. Let’s look at some of the common assumptions about the relationship between thyroid function, weight gain and weight loss, then maybe explore why Cura Romana is so successful for them… INACCURATE SCIENCE Thyroid hormones have long been used as a weight loss tool with little success. Only small amounts of weight tend to be lost. Once thyroid hormones are stopped, weight lost is usually regained. Often it is regained even when thyroid medication is continued. Sadly, there can be significant negative consequences from the use of thyroid hormone to help with weight loss—for instance, the loss of muscle tissue. And when the dose of thyroid hormone is increased, it can create other problems such as disrupting hormone balance. For good health, the endocrine system—which functions as a whole—needs to become balanced. HOLISTIC REBALANCE All the glands in our bodies depend upon one another to function properly. The thyroid gland, for example, depends upon the pituitary gland to help control the production of thyroid hormones. The pituitary gland produces thyroid stimulating hormone (or TSH). This hormone promotes thyroid hormone production, and releases the hormones into the blood stream. When the thyroid hormone level is low, the pituitary gland senses this and releases TSH, which in turn tells the thyroid gland to make and release thyroid hormone into the bloodstream. This process is often compared to the working of a furnace: a thermostat senses cold air, tells the furnace to turn on and produce heat, and when the air is warm enough, the thermostat tells the furnace to shut off. Any hormone introduced into the body, whether drug or nature-identical, can disrupt not only the functioning of the gland it has been targeted to treat, but the balance of many other hormones as well. OUTDATED NOTIONS It was almost a hundred years ago that scientists discovered the thyroid gland controls metabolism—in other words, the rate at which your body consumes its fuel. Doctors way back then came to believe that giving thyroid gland itself, or prescribing thyroid hormones to overweight people, would make them lose weight. Such notions have proved to be deeply disappointing. You see, the abnormal fat deposits we want to shed don’t get involved in the turnover of energy. This is one reason why weight loss diets don’t get rid of excess fat from so-called difficult areas, like bellies in men and waists and thighs in women. Nonetheless, many still prescribe thyroid medication to people who complain they cannot shed weight. Simeons, who created Cura Romana, understood that giving thyroid medication to an overweight man or woman just forces the body to consume its normal fat reserves—which are already depleted and which no one should lose—and then to break down structurally essential fat without touching the abnormal deposits. A DOCTOR SPEAKS “In this way,” Simeons said, “a patient may be brought to the brink of starvation in spite of having a hundred pounds of fat to spare.” In the thirty years he spent studying the cause and cure for obesity, and in all his successful clinical treatments, Simeons found that the majority of overweight people have a perfectly normal thyroid gland. Some, he discovered, even have an overactive thyroid. Only occasionally did he come upon an obese person with a real thyroid deficiency. A search for intermittent fasting on Google turns up more than 4 million results. PubMed lists almost 500 research articles on the subject. Great stuff. And, in the midst of all the kerfuffle, websites and books keep popping up riddled with conflicting information and advice. Some of it is useful. Too much of it is just plain confusing for someone seriously wanting to put this eating style into practice. As a result, many people dive into this way of eating with great enthusiasm only to discover that it turns out to be very tough for them to sustain it for more than a week or two, no matter how much they grit their teeth and keep trying. Whether you call this much talked about eating style meal spacing, intermittent fasting or some other name, it is by no means new having been practiced in one form or another for a century or more by those in the know about the gifts it can bring. A T W Simeons, the original creator of Cura Romana, wove it skilfully into meal planning during the rapid weight loss portion of his protocol. LET’S GET PRACTICAL There are some important questions which need to be answered before you even begin: What’s the best way to approach meal spacing/intermittent fasting? What kind of foods do you need to eat to reap its benefits and which foods should you avoid? What benefits can it bring? And, most important of all, how do you go about gracefully easing yourself into such a dramatically different way of eating than what you have been used to? First here are some important things to get straight: Dieting with calorie restriction—eating less and exercising more—is forever doomed to fail. It just doesn’t work at all for lasting weight loss. The success of meal spacing/intermittent fasting in no way demands that you count calories. The notion of calories-in-calories out is nonsense. So is the belief that you need to eat three meals a day. This has been foisted upon us for generations. It is wrong as is the idea that we need to eat regular snacks. The truth is that your body needs regular periods free of meals and snacks for health and lasting leanness. This need is implicit in our genetic inheritance. As such it is to be honored. Eating too often, which most people do, forces the body to keep up with on-going levels of glucose that are continually shunted into the blood. This creates a relentless inflammatory load which in turn leads to degenerative conditions including obesity, type 2 diabetes, heart disease, metabolic syndrome, and destructive distortions to blood lipids. It also forces your body to age rapidly. Even short periods of fasting daily—from 12 to 18 hours—help keep insulin spikes down, while increasing insulin sensitivity. Metabolic processes gradually begin to normalize, reducing dangerously high blood glucose levels at the same time. For meal spacing/intermittent fasting to work for you—for them to help keep you healthy and lean for life—you must completely avoid convenience foods. They are filled with artificial sweeteners, colorings, flavoring, and hidden GMO components. Eat only real food—fresh green vegetables, wholesome proteins such as eggs, fish, and meat, plenty of good fats such as organic coconut oil, extra virgin olive oil and butter from cows that have been pasture grazed. WHEN TO EAT When it comes to exploring meal spacing/intermittent fasting, success on every level depends on your creating an eating lifestyle that works for you. By the way, when you begin to space your meals wisely day after day this directs the protein hormone insulin—which plays a central role in healthy metabolism by removing potentially toxic excess glucose from the blood—to direct the blood glucose into the liver and muscles where it can be turned into energy, rather than laying it down as fat deposits. Most people leave out breakfast altogether. They choose to eat two meals a day, spacing them so that they allow at least 5 to 6 hours after their first meal, say brunch or lunch, before eating their second. No snacks are allowed. Doing this enables the body to increase its levels of an important peptide hormone—Human Growth Hormone (HGH)—produced by the pituitary gland. Bit by bit it brings gifts such as helping to reduce body fat, increasing muscle mass and enhancing bone density. Of course, this takes time to develop so be patient. The second meal of the day becomes an early dinner, after which they begin their longest period of fasting which lasts through the night. It needs to be a minimum of 12 hours but many people find that once they have got used to their new eating lifestyle, they want to extend their night fast to as long as 17 hours. No snacking, of course. Provided they are eating the right kind of foods, once they establish for themselves the best pattern of meal spacing to suit their lifestyle, they find themselves feeling vital and not hungry between meals. They are also delighted to be looking and feeling better than they would ever have thought possible before starting to eat this way. WHAT FOODS TO EAT Here are foods to choose any meal spacing/intermittent fasting eating style: A good supply of wholesome natural fats like coconut oil, extra virgin olive oil and butter—preferably from grass-fed cows. Top quality protein foods including meat, seafood, eggs and the very best micro-filtered whey if you like to make smoothies. Plenty of fresh green vegetables—preferably organic— both to eat raw and to cook. Some low-sugar fresh fruit such as berries. For vegetarians, Tempeh, miso and other fermented soya products are excellent. If you decide to use tofu, make sure it is organic. More than 95% of soy beans today have been genetically modified. The more these carbohydrates have been refined and processed, the more problems they have caused us. During the 20th century, an overwhelming increase in cereals, grains, sugars and high-fructose corn syrup used in convenience foods have become the major triggers for obesity and chronic illness. In the nineteenth century, we ate between 10 and 20 pounds of sugar per person per year. Today per capita we consume between 150 pounds and 200 pounds a year. So this is little wonder. For more than half a century food manufacturers, intent on making profit, have been producing a great variety of so-called foods by fragmenting and reducing raw material foodstuffs—grains and seeds, fats and sugars, vegetables and legumes—to simple “nuts and bolts” ingredients. Then they whip up these nuts and bolts into the manipulated “convenience foods” which fill our supermarket shelves—from ready-to-eat meals to candy bars, cakes, breads, and cereals. This tuff now makes up 75% of what the average person eats. Because such foods have been whipped up using grains, flours and sugars, junk fats and chemical additives—all of which you want to avoid when creating your own meal spacing/intermittent fasting food style—you will want to steer clear of them altogether to reap the benefits of your new eating style. BEWARE THE PERILS OF CONVENIENCE White flour and sugar-based convenience foods have an ultra-long shelf life. This suits food purveyors intent on making a profit. Yet such packaged foods are little better than junk foods—often devoid of any nutritional value other than calories. Even the fats used to concoct them are not the natural fats that we thrive on. The highly processed fats most of them contain, together with the masses of chemicals used as flavorings, colorings and preservatives, are far removed from the foods your body needs for health. It is little wonder that human beings who eat them year after year—even those in economically privileged countries—do little more than survive. You will never succeed in creating a meal spacing/intermittent fasting food style for yourself unless you get rid of convenience foods from your life. EASE YOUR WAY FORWARD Anyone new to meal spacing needs to experiment before diving headlong into making dramatic changes in how, when and what you eat. So, next week, I’ll give you a simple and easy-to-begin way to help you experiment with creating condensed eating windows in your own life which that suit your appetite and ability to cook. I’ll suggest meal structures and provide you some of my own recipes. It is high time that the many gifts of meal spacing/intermittent fasting to be available to anyone and everyone genuinely wanting to make use of them.

Rejuvenate Your Body: Slash Aging with Superfoods & Herbs

Real age—your biological age—has little to do with how old you are in years. Most people, age prematurely. This is avoidable. It is also reversible. One of the reasons I have such a passion for herbs is, when you know what to use when they can slow biological aging, help restore balance, and improve how you look, you feel, as well as how your body functions year by year. Combined with regular detoxification and a natural diet high in a wide variety of fresh vegetables and top quality protein, they can even rejuvenate the body in medically measurable ways—improved circulation, increased resistance to illness, and to emotional and mental troubles. They can also help you reconnect with your innate vitality whatever your chronological age. NATURE’S PROTECTORS Plants do this in many ways. Some such as ginseng, garlic and gotu kola are specifically anti-ageing in their actions. Others—herbs such as purslane and thyme as well as foods like seaweeds, oranges, carrots, and green vegetables—are literally brimming with anti-oxidants and other phyto-chemicals which are protective, regenerative and immune enhancing. Make a few of these plants an every-day part of your life. They will help protect you from the kind of free radical damage which underlies both premature ageing and the development of degenerative diseases. Here are some of my favourite anti-ageing herbs: Gotu Kola Gotu Kola—Centella asiatica—has been used for centuries in India to extend life span and enhance memory. Gotu kola, like many quality bulk herbs, is native to the tropical regions of Asia and Africa, particularly Sri Lanka and Madagascar. Traditionally, its leaves are dried and steeped in order to create a tea or infusion. Gotu kola is also easy to grow in your garden or in a pot in the kitchen window however. It is also easy to introduce into your life. Just add a fresh leaf or two or a teaspoon of this dried plant to whatever herb tea you are drinking. You can also put a few leaves into salad when you make it. My favorite is a product for making your own gotu kola tea which is reasonably priced and organic. (see below) Nori Seaweed Nori Seaweed—If you have never used sea vegetables for cooking, this is an ideal time to begin. Not only are they delicious—imparting a wonderful, spicy flavour to soups and salads— they are the richest source of organic mineral salts in nature, particularly of iodine. Iodine is the mineral needed by the thyroid gland. As your thyroid gland is largely responsible for the body’s metabolic rate, iodine is very important to a person’s energy and to protect from early aging . I like to use powdered kelp as a seasoning. It adds both flavour and minerals to salad dressings, salads and soups. I am also excessively fond of nori seaweed, which comes in long thin sheets or tiny flakes. It is a delicious snack food which you can eat along with a salad or at the beginning of the meal. It has a beautiful, crisp flavour. I like best to toast sheets of nori by passing it over a hob flame for no more than a few seconds. This brings out its wonderful flavor and turns it crunchy. The only problem I have with toasting nori is that Gus, is completely addicted to it. This means there is no peace while we are making it. He can smell nori from far away even when the kitchen door is closed. As soon as we open it, he devours a couple of big sheets of nori which we have crumbled into tiny pieces for him. Green Barley Green Barley—This is a dried form of the natural juice taken from young barley leaves. It needs to be organically grown and pesticide-free. Rich in proteins, flavonoids, minerals including iron, vitamins such as K and B15, as well as chlorophyll and other nutrients, green barley boasts thousands of enzymes, not all of which are destroyed in the digestive process. Many can play important roles in supporting anti-aging metabolic processes. It also contains a high concentration of superoxide dismutase (SOD)—an anti-oxidant enzyme. Sprinkle from 1⁄2 to 1 teaspoon of green barley on to salads or mix into juices, miso broth or water. The brand I like best is very inexpensive and you can buy a pound at a time. Purslane Purslane—Portulaca oleracea brims with anti-oxidants—plant chemicals as well as vitamins known for their abilities to quench excess free radicals in the body. As such perslane enhances immune functioning. You can grow purslane in a vegetable patch or just about anywhere—even in window boxes, between the rose bushes or wherever you have an extra bit of space. Add purslane to fresh vegetable juices or put it through a blender to make ‘live’ vegetable drinks. Ginkgo Biloba Ginkgo Biloba—improves circulation to the brain. Lots of well founded European research shows this. It can even be helpful to people with Alzheimer’s disease. The leaves from this most ancient of trees restore memory, elevate mood, and quell anxiety. There are more than 300 published studies and reports which support the anti-ageing properties of Ginkgo. Its extract is used in Germany to help treat everything from depression and cerebrovascular insufficiency to asthma, transplant rejection and hearing loss. It is also used in a few expensive skin products to protect against environmental irritation. You can take ginkgo as an extract, tincture or in capsules. I prefer a high potency herbal tincture—1/4 to 1/2 teaspoon 2 or 3 times a day. Ginseng Ginseng—Panax quinquefolius—is the classic anti-ageing plant. It can be a godsend for both men and women when recovering from a long-term illness or stress or pulling yourself out of deep fatigue. And it improves libido in both. This root brings endurance when you need it. I like to take ginseng as a tea – but make sure you buy a good one. When I need strengthening I drink double doses of ginseng tea that has been specially processed to dissolve instantaneously in hot water.
