Apple Detox

A few days on apples once in a while can eliminate retained water, revive flagging energy, make your skin look wonderful and your eyes shine. The apple fast for detox was taught to me fifty years ago by Dr Gordon Latto, a Scottish medical doctor who used nothing but food and breathing techniques and a few herbs to heal even the most complex and chronic conditions. Eating as much as you want – but only apples – in place of your regular meals, and in between too if you like, for two days cleans your body, helps clear away food sensitivities, and banishes the ravages of unnatural appetite. For two days all you have to do is to eat apples, and nothing but apples. Your body will do the rest. It’s a time to be luxuriously lazy and self-indulgent, to enjoy the process of getting rid of all those wastes you really don’t want hanging around in your system making you look and feel low. No pregnant or breast-feeding woman should do an apple fast: neither should anyone with a kidney, liver or heart complaint, for in such cases any sudden change of diet carries with it potential dangers to health. But if you are generally well, a short apple fast is a great way to clear away the cobwebs. Check with your doctor first if you have any doubts. HEALING DISCOVERY It was the apple which first led the great Swiss physician Max Bircher-Benner to develop his system of treatment based on living foods. Bircher-Benner was himself ill with a liver ailment, which made it virtually impossible for him to digest anything. One day, as he lay in his bed unable to rise or eat, his wife slipped a piece of fresh raw apple between his teeth. He tasted it, and to his surprise he found he could tolerate it. Several days – and many raw apples – later he found himself well again. He never forgot the humble apple or what it could do to detoxify the body and to help restore normal functioning to digestion, cells and the circulation. He used apples regularly in his dietary treatments of obesity and other illnesses. In fact, they formed the basis of his Bircher Muesli, which has become world famous. WEEKEND RETREAT My two day apple fast is designed to be done over a weekend is not even a fast, for you can eat as much as you like – but only apples. The reason the apple fast is done over a weekend is that the process of elimination can use up a lot of energy, so it’s a good idea to do it over two days when you are not working. The apple has long been known as a health tonic, medicine, cosmetic and bowel-regulator all wrapped up in one skin. When eaten, it stimulates the secretion of digestive juices. It contains natural substances that help prevent digestive and liver troubles. Where unsweetened apple juice is the traditional drink among country people, there tends to be no incidence of kidney stones. The simple apple is traditionally used for eliminating obesity, as well as being a folk treatment for skin problems, bladder inflammation, anemia, insomnia, intestinal parasites and bad breath. QUEEN OF CLEANSING The adage ‘an apple a day keeps the doctor away’ is not just an old wives’ tale. The apple is quite rightly known as the queen of fruits. In its natural whole state, it supplies valuable fruit sugar and vitamins in a superb balance to ensure that your body can efficiently digest and use them. The apple is our richest fruit source of vitamin E and also provides a good supply of biotin and folic acid – two B-complex vitamins important in preserving energy, emotional balance and in keeping your digestive system clean and functioning well. It is also a fine source of vitamins A and C, which are both natural antioxidants – powerful anti-agers – not to mention more than a dozen minerals including sulfur, potassium, iodine, silica, magnesium and calcium, and even essential amino acids in small quantities. Apples are low in acidity to help balance stored bodily wastes which tend to be acidic. They stimulate the flow of saliva in the mouth, and clear away debris from the teeth. Eating a raw fresh apple stimulates circulation in the gums too. Finally, apples are rich in a very special form of soluble fiber called pectin which helps to clear out the dangerous heavy metals such as lead and aluminum that we all pick up from our city air, food and water. OUT WITH THE UGLIES Heavy metals in your body are something you want to get rid of. These elements, the concentration of which has increased dramatically in our air, foods and water since the Industrial Revolution, can seriously interfere with your body’s metabolic functioning. Mercury tends to suppress the levels of white blood cells in the immune system. Cadmium displaces the essential element zinc needed for a great many of your body’s enzyme systems, and renders them inefficient and even inactive. In the West we now have a concentration of lead in our bodies some 500-1000 times that of our pre-industrial ancestors. High levels of this heavy metal age us prematurely, interfere with our mental processes, suppress immunity and contribute to depression. Aluminum, another heavy metal, detrimentally affects the central nervous system. The presence of all these elements in excessive quantities (and their concentrations in the human body appear to be increasing with each passing decade) generally interferes with your body’s metabolic processes. The ability of apples to remove heavy metals from your system is one of the best reasons for doing an apple fast, particularly if you live in a city. RADIANT FIBER The fiber that apples contain really is remarkable. In addition to cellulose (the most common kind of fiber, which binds water and increases fecal bulk), the apple is also rich in pectin – a very special kind of fiber with quite exceptional detoxification properties. So different in texture and character is pectin from other forms of fiber that it is sometimes surprising to think that they are classified in the same group. Unlike cellulose, pectin does not bind water, it is water-soluble. It has no influence on fecal bulking, but it appears to be an excellent substance for lowering cholesterol. It may also help eliminate bile acids from the intestines, thus short-circuiting the development of colon cancer and gallstones. It is also useful as a natural chelating (binding) agent which is why it is so good at mopping up unwanted heavy metals, such as aluminum, from the tissues and eliminating them from the body. This can be very important when it comes to detoxification for weight loss. READY SET GO Get yourself a big bag of the freshest apples you can find – perhaps three or four different kinds for variety. If you don’t like the look of your apples you won’t want to eat them, so be picky. Buy a box of apples if you like, your greengrocer might give you a discount. On this pre-cleanse day it is a good idea to get your system ready. Avoid tea, coffee, alcohol and soft drinks. Steer clear of bread and cooked carbohydrates such as pasta and cereals, and make your last meal of the day a large raw salad made of fresh fruits and vegetables. Don’t have anything else to eat after your salad, except perhaps a cup of herb tea before bed. This will give your body a good 12 hours head-start on the elimination process and it will thank you for it. THE APPLE FAST There’s really nothing to it. Over the two days you have chosen, tuck into your apples. Eat as many as you like at any time of the day or night. You must eat the whole apple including the peel, the seeds and the core. Don’t worry about the belief that apple seeds are poisonous. Any expert in natural medicine detox will tell you they are not only perfectly safe but an important part of the cleansing process. Chew well, until the last drop of flavor has been extracted from the fruit. The only part you throw away is the woody stem. You must eat your apples raw. You can munch them whole, or grate them and sprinkle a little cinnamon on top. You can even put them in the blender with spring water to make a drink. Eat nothing else during this two-day period, but eat them whenever you are hungry. Do not drink tea or coffee. You may have a herb tea or two such as peppermint, lemon balm or chamomile with a few drops of the best stevia if you wish. Drink lots of pure filtered water, but nothing else. BLISSFUL RELAXATION Be lazy and luxurious.  During these days indulge yourself doing whatever is pleasurable for you. Many people find their sexuality is heightened during these days. If so, enjoy it. Apples are great to munch in bed. In many ways, the most useful thing about the apple fast is the way you can call on it when you most need help to get you back on the rails again. We all slip up sometimes – we over work or over indulge and live to regret it the next day. A two day apple fast, or even just a day spent eating only apples, is an excellent ‘quick corrector’. Spend even just one day munching apples and it will help set all to rights again, so that when you awaken next morning you feel more like your old self and ready to face the day full of energy. RENEWED VITALITY Apple fasting gives you the chance to step back regularly and take a look at your lifestyle, instead of mechanically going on day after day without being aware of where your energy is going. Set aside two days, three or four times a year – a weekend is best – for an apple fast. This will spring clean your body from the inside out. Even apple fasting for one day a week is a great boost to vitality and good looks, because it helps detoxify your body of wastes accumulated as a result of drinking or eating too much, or consuming the wrong kinds of foods. It can also help calm the ravages of an over-enthusiastic appetite, which many people suffer as a result of food sensitivities or over-stimulation of the digestive system. Furthermore, it is an excellent discipline: such a practice helps you break through ingrained habit patterns, which can make us largely unaware of how we are eating.

The sense of woman's estrangement not only from her body, but at a deeper level from herself; out of this estrangement develops a sense of powerlessness which leads you to think that what you need to be happy, complete, and fulfilled can only be found outside yourself - by accomplishment in the world, wearing the right clothes, earning a lot of money, winning the love of a man or conforming to some abstract ideal. Yet so long as you are driven by a sense of separateness from your body, whether you succeed or fail in getting what you think you want from the outside world is irrelevant. For neither success or failure brings you any closer to real satisfaction and fulfillment. Only wholeness can do that. the energy of instinct How does a woman reclaim her wholeness? By getting back in touch with the energy of instinct, and giving it as much space in her life as she does reason. For any woman who lives by reason alone is only half alive. Rediscovering the aliveness of the child and the instinctual innocence of bodily freedom can not only help heal wounds of separation between instinct and intellect, it can go a long way towards freeing you to live in the fullness of your being. Being cut off from any part of yourself squanders energy - in anxiety or in depression, in confusion, in unfulfilling relationships, or fatigue or illness. Only when you come to live in wholeness do you have access to your full power. This means rediscovering without fear of self-indulgence - how to celebrate your body. sex or sexuality? Women's magazines are jammed full of articles on sex, and they talk mostly not about the energy of instinct which fuels true sexuality, but about the mechanics of the sex act: "How To Make Oral Sex Work For You"... "A Complete Guide to Sex Toys"...and so on. Like the perfect plastic models on the covers of glossy magazines, such information does little to help a woman reconnect with her body and reclaim the energy of instinct and her deep sexuality. It actually encourages her not to trust herself. It asks instead that she stand back from her body and judge it, or that she put her trust in a lot of abstract "how-to-do-it-better" advice and commercial paraphernalia. The ecstatic, irrational, primordial power of a woman can only be experienced and expressed in the kind of sexuality that enables her to forget the rules and let go of her rational mind, trusting for a time the impulses of her body. Instinctual energy is creation energy - the stuff out of which art is made, as well as sexual ecstasy. So are joy, and the sensual pleasures - taste and smell and sight and touch and sound. As we gradually connect with our instinctual selves and learn to trust them, a kind of alchemical marriage between instinct and intellect begins to take place, and core energy from which we had been cut off becomes accessible. Such a marriage brings in its wake an experience of real personal power - the power with which each of us can create the life we want. When instinct and intellect are reunited your body thrives. It helps protect against early aging, increases vitality, and heightens your capacity for joy. There is only one problem. Like the wild fecundity of a rainforest (which is but another expression of the same life power), the instinctual energy of creation can be scary. It doesn't lend itself to rationalizations or structures. We will never understand it, neither can we comfortably put it into a little box to be dealt with when it is convenient. Yet instinct is a magnificent force. It needs to be honored just as much as the power of reason. Each of us must find her own way to honor it, live it and express it. Otherwise it can turn in on itself and insidiously destroy the very fabric of our lives.

Many of the most beautiful meals will be found on the ageless aging table. The variety of colors, textures, tastes and culinary experiences which delicious natural foods offer to anyone with an interest in food preparation and a love of fine cuisine at the very least equals the best traditional cooking. Eating fresh foods rich in `life force' in a high-raw way of eating means that your taste-buds, sense of smell and aesthetic awareness of food become dramatically heightened so that the appreciation of all that you eat can be greater than ever before. From being someone who used to love fresh cream and rich sauces I've become infinitely more appreciative of the fine flavors implicit in ageless aging cuisine. And I love it. Not only because I look younger, feel better all round and have infinitely more energy than before, but because the experience of eating itself has become so much more delightful. Most of us eat far too much and we dull our senses and our appreciation of food in the process. Even the most subtle of Beethoven's late quartets begins to dull the senses when you have too much of it. So can too much food even if it is the very best. Ageless aging cuisine revives them. Put your kitchen scales away and forget the complex routine for preparing a béchamel sauce.  It’s not conventional directions that matter when preparing foods, it is a passion for the foods themselves – a feeling reflected in our passion for the earth and life itself.  It’s good because it tastes good.  Such passion, which is visual, visceral and luscious, becomes the inspiration that, in food preparation, leads you automatically to make certain choices.  Open wide your kitchen window.  Welcome in the breezes of experiment, wit and spontaneity.  Inside, you find the traditional meal of roast meal and boiled Brussels sprouts topped off with a piece of sticky toffee pudding replaced by something far more hedonistic: slivers of raw Pacific salmon, luscious garden-fresh salad, followed by a winter sorbet of cranberry and mint.  The real joy in eating fresh, light foods lies in their taste, their texture and the remarkable ability they have to bring excitement to a palate jaded by too many highly processed, unimaginatively seasoned or over-cooked dishes. sheer energy I look on food as a source of both delight and life-energy which is passed on to us from the earth.  I believe this energy needs to be preserved by not cooking food too much, by eating it fresh and by respecting its essential nature.  Food eaten this way becomes a medium through which we build our own vitality – energy to protect the body from premature aging and illness, to enhance good looks and to keep the mind clear.  It is the life-energy present in abundance in fresh foods and the clean, simple protein from fish, game, organic meat and poultry that makes these foods irresistible and helps us look and feel great. The most significant change to human diets in two million years began with the agricultural revolution, when man went from a carbohydrate-poor to a carbohydrate-rich diet.  The more that these carbohydrates have become refined in the past 300 years, the more problems they have caused us, not only in terms of burgeoning obesity worldwide but also in the development of the chronic degenerative diseases of civilization.   The thing to remember is that when you eat low-starch vegetables such as broccoli, spinach, asparagus and cauliflower, or proteins such as fish, meat and eggs, the levels of glucose in the blood (blood sugar) rise very slowly and modestly.  On the other hand, when you eat what are known as high-glycemic foods - starchy foods, simple carbohydrates, sugars - like a muffin, pasta, breakfast cereal or ice cream, blood sugar soars, then crashes as insulin is released in order to lower your blood sugar.  You can end up feeling hungry even though you've just eaten a meal, crave sweets and biscuits, and reach for a cup of coffee and a cake mid-morning just to keep going.  High insulin levels, by the way, suppress human growth hormone essential for healthy muscle tissue, making you look flabby and older. The most important foods are fresh non-starchy vegetables, fresh fruits, and proteins like meat, seafood, eggs and game.  A little unprocessed cheese is fine too and a few nuts and seeds.  Go for nothing but the best.  Here are a few guidelines: Choose natural whole foods – organically grown/raised if possible Your foods need to be as fresh as possible and eaten as close to a living state as you can.  This allows little time for the deterioration that occurs as a result of oxidation. All the foods you eat should be non-toxic and non-polluting to your body.  They should contain no synthetic flavours, colors, preservatives or other additives used to ‘enhance’ them cosmetically.  Stay away from convenience foods. Try to vary the foods you choose from day to day and week to week.  All through our evolution the human body has adapted to a wide range of foods offering a broad spectrum of nutrients. Use fresh garlic and herbs often.  They bring high-level support for cellular regeneration and immune support. Eat what you enjoy and enjoy what you eat.  Eating is one of life’s great pleasures – make it one of yours. make way for a new lifestyle Eating for ageless aging leads most people to a totally new way of living. You become more alert and more active. You will probably sleep less yet far better than before. This is because your whole system will be far clearer of toxicity than before and you will need less time for tissue repair and restoration than you do on a normal diet. You will also probably find that you are better able to deal with stress than ever. This way of eating provides you with high levels of potassium and rapidly restores the sodium-potassium balance in most people. This leads to increased resistance to fatigue and a greater feeling of calm stability day in day out. It may also set you slightly apart from your gravy-eating, hard-drinking friends and may even have them feeling slightly suspicious of you in the beginning. But it has been my experience that as soon as they find you are not trying to sell them anything - that you have a live-and-let-live attitude to whatever they do - they show a similar respect for your new lifestyle. In fact, the people who have been the most resistant to what you are doing and the most opinionated are very often the ones who are first to become intrigued about what an ageless aging lifestyle might offer them. And they are usually the ones with the energy and interest to carry it out. Day 1 RAW DISHES: melon; cauliflower and tomatoes mixed with red peppers and lettuce salad topped with Avocado Delight Dressing (see blow). COOKED DISHES: Steamed fish; wok-fried beans and peas; brown rice. Day 2 RAW DISHES: lamb's lettuce, celeriac and wild-herb salad topped with chopped egg dressing; fresh pears and plumped raisins. COOKED DISHES: Garlic Chicken Soup; steamed baby carrots and basil; young peas with mint. Day 3 RAW DISHES: mushrooms, watercress and chicory salad topped with Basil and More Basil Dressing; Mulled Stuffed Apples (see below). COOKED DISHES:  Fabulous Fish Soup. Day 4 RAW DISHES: `Sunburst' platter of avocado, beetroot, cos lettuce, mushrooms, tomatoes, celery and peppers served with raw humus (see below). COOKED DISHES: carrot and coriander soup; or venison burgers; Scottish oatcakes; Pineapple Blackberry Frappe. Day 5 RAW DISHES: `Jungle Slaw' salad made from cabbage, tender green beans, carrots, spring onions, red or yellow pepper and almonds served with a citrus dressing. COOKED DISHES:  Lightly grilled salmon and steamed green beans. Day 6 RAW DISHES: gazpacho; pineapple salad stuffed with orange, mango, papaya and strawberries and topped with coconut. COOKED DISHES: Hand Made Sausages (see below). Day 7 RAW DISHES: `Sandstone Loaf' made from carrots, lemon juice, almonds, pumpkin seeds, tahini and herbs; apple and ginger salad; home made blackberry sorbet. COOKED DISHES: Flax Crackers (see below) with humus. small meals For breakfast - or for that matter instead of lunch or supper when you want a small meal - you can't do better than a bowl of fruit muesli. If you have never tasted real muesli (and it bears no resemblance to the flaky sweet stuff you can buy on the shelves of supermarkets) you have a real treat ahead of you. Fruit muesli was the invention of Swiss physician Max Bircher-Benner who devised it as the perfect light meal. It is a delicious and easy-to-digest completely uncooked dish which can contain all of the essential vitamins and minerals, and which is an excellent source of high-quality complete proteins and essential fatty acids. It can provide you with sustaining energy but will never lie heavily in your stomach. And it can be made low in calories. Real muesli (often called Birchermuesli after its inventor) is not a grain-based but a fruit-based dish with only a very small quantity of top-quality fresh wholegrain flakes in it. It is usually made with apples and oats but there are so many varieties which you can make, calling on whatever fresh or dried fruits and whatever kinds of grains, nuts and seeds you have available, that you could quite literally eat it twice a day all the year round and never get tired of it. Children absolutely adore Birchermuesli both as a complete breakfast and as a sweet after a main meal. A small bowl of muesli in the morning will keep you going all the way to lunch with none of the `elevenses slump' that has many people reaching for a cup of coffee and a pastry or a chocolate bar. It is also an excellent food to eat in the evening since it is so easy to digest that it never interferes with sleep. I do a lot of traveling and for many years I dreaded having to stay in hotels because the food available in so many hotel dining-rooms is so poor. I have got into the habit of carrying with me a small `muesli bag' with a hand grater in it plus some grain flakes and minced nuts and a small bowl so I can make my own breakfast or supper whenever I want and not be forced to eat what I don't want just because there is nothing else. Here is the basic recipe: bircher muesli For each person you'll need: I level tablespoon rolled oats soaked in 4 tablespoons water I heaped tablespoon raisins or sultanas I tablespoon lemon juice 3 tablespoons natural unsweetened yogurt I large apple ½ banana I teaspoon raw honey (if desired) or pure stevia to taste I tablespoon minced hazelnuts and almonds or other mixed seeds and nuts I pinch cinnamon (if desired) Soak the rolled oats and raisins in water, preferably overnight. This begins to break down the starch present in the grains and turn it into natural sugar so it is easily assimilated. If you have no time to soak the grains then simply mix with the water (you will need slightly less water in this case) and carry on immediately. Wash the apple(s) and remove core and stem but don't peel. Then, using a stainless-steel hand grater or a food processor, grate the apple into the mixture and, stirring, add lemon juice to protect it from discoloring. Cut the banana into small cubes, add to the mixture with the honey (if desired) and mix with yogurt. Sprinkle the top with the minced nuts and a little cinnamon if you like. Instead of rolled oats you can use other cereal flakes such as barley, millet or buckwheat. These are available from wholefood shops. I find I don't usually add honey to my muesli because it is so beautifully sweet already, thanks to the soaked grains and fruit. You can also make muesli with soft fruit such as strawberries or raspberries, loganberries, red and black currants, blackberries or blueberries as well as with apricots, cherries, peaches, plums or greengages. Or you can mix your fruits together. Also you can make the muesli from dried fruit which has been soaked for twelve hours or overnight in spring water. But make sure you get sun-dried not sulfur dried fruits to which no glucose has been added (it is commonly added to figs for instance) or you can end up with a gastrointestinal upset. seasoning and spices Make use of all of the wonderful culinary herbs that are available: And the list of seductive possibilities seems almost endless: caraway, fennel, dill, chervil, parsley, lovage - the Umberiferae; summer savory, marjoram, the mints, rosemary, and thyme-the labiates, which have a strong aroma and are particularly useful for seasoning; the Liliaceae such as garlic, onions, chives and leeks; and three of my favorites, basil and tarragon and horseradish. Herbs have a special role to play in any ageless aging regime. They contain pharmacologically active substances such as volatile oils, tannins, bitter factors, secretins, balsams, resins, mucilages, glycosides and organic vegetable acids each of which can contribute to overall health in a different way. The tannins, for instance, which occur in many common kitchen herbs, are astringent and have an anti-inflammatory action on the digestive system. They help inhibit fermentation and decomposition. The secretins stimulate the secretion of pancreatic enzymes - particularly important for the complete breakdown of proteins in foods to make them available for bodily use. Organic acids have an antibiotic action and are helpful in the digestion of fats and the bitter factors, which are found in good quantity in rosemary, marjoram and fennel. They also act as a tonic to the smooth muscles of the gut and boost secretion of digestive enzymes. Use herbs lavishly in your meals and you will find you can create the most remarkable combinations of subtle flavors and aromas. drink yourself younger Coffee, although not completely forbidden on any serious program of ageless aging, is not something to drink daily. The occasional cup after dinner is not likely to do much harm. More than that and you are really undermining your potential for age-retardation not only because it contains mutagenic and carcinogenic compounds which cause oxy-stress and free radical damage but also because regular coffee tends to make cadmium (one of the heavy metals) build up in your system and can interfere with proper pancreatic functioning. It also leeches calcium from the bones. Tea is OK in moderation - no more than a cup or two a day - but there are other drinks which are not only good for you, they can be highly enjoyable as well. Alcohol is another substance you want to go easy on. Not only is it very high in calories yet practically worthless in terms of the nutrients it supplies, it also causes your liver to produce one of the most potent cross-linkers known - acetaldehyde. A glass or two of wine can be easily accommodated. More than that as a daily intake is likely to seriously undermine your effort. And make sure it is good wine. The run of the mill vin de table is full of toxic substances which your cells can do without. You'll find some delicious mixtures of herbs in ready-made tea bags if you comb through a few delicatessens and healthfood stores. Some of my favorites have names like Cinnamon, Rose, Almond Sunset, Creamy French Vanilla, and Red Zinger. They are great to drink for pleasure and refreshment the way most people drink coffee and ordinary tea. But there are others which are quite wonderful simply because they affect the body in specific ways. Lemon verbena, for instance, is a refreshing sedative, chamomile soothes the digestive tract, and both horsetail and solidago (goldenrod) are excellent natural diuretics. The teas I like best just before bed are orange blossom, which you make by boiling a few blossoms for 2-3 minutes in two cups of water, red bergamot and lemon peel, all of which are natural sedatives. This last tea comes from an Italian tradition. You make it by peeling the outer yellow skin off a lemon (which has been washed well) with a potato peeler. Pour boiling water over this and let steep for 5 minutes. Then strain and drink. a few recipes to play with Avocado Delight Dressing 1 avocado, peeled and stoned Juice of 1 lemon Juice of ½ orange 1 small onion, chopped finely 1 garlic clove, chopped finely Handful of fresh herbs – mint, parsley or basil Freshly ground black pepper to taste Blend all the ingredients in a food processor or blender and serve. Italian Herb Dressing 100ml extra-virgin oliv oil 3 tbsp fresh lemon juice 1-2oz fresh basil, chopped 1 tsp Marigold Swiss Vegetable Buillon or Rapunzel Organic Vegetable Bouillon Powder Freshly ground black pepper to taste Mix all the ingredients in a food processor until smooth, adjusting the flavour as necessary. Garlic Chicken Soup (serves 1) 150g lean, skinless chicken breast, but into small cubes 1 tsp fresh chopped garlic 1 level teaspoon Marigold Swiss Vegetable Bouillon or Rapunzel Organic Vegetable Bouillon Powder 2 teaspoons chopped parsley and/or ½ teaspoon lemongrass or ½ teaspoon mild curry powder 180 ml water Place all the ingredients in a saucepan and bring to the boil.  Simmer for 3-5 minutes and serve. Fabulous Fish Soup (serves 1) 360ml water 1 teaspoon Marigold Swiss Vegetable Buillon or Rapunzel Organic Vegetable Bouillon Powder ½ tsp fresh chopped garlic ½ tsp chopped onion 1 tablespoon fresh chopped basil or ½ tsp dried basil 1 cup broccoli 150g white fish ¼ tsp paprika Himalayan or Malvern salt to taste Pepper, to taste Put the bouillon powder, water, garlic, onion and basil in a saucepan and bring to a simmer.  Add the broccoli and cook for 5 minutes with the lid on.  Place the rish on top of the broccoli and sprinkel with paprika, salt and pepper.  Put the lid on and cook for another 5 minutes. Raw Humus 2 cups sprouted chick peas Juice of 3 lemons 1 tsp Marigold Swiss Vegetable Buillon or Rapunzel Organic Vegetable Bouillon Powder 1 clove garlic, finely chopped 3 tbsp tahini 3 tbsp chopped spring onions or chives Water to thin if too thick Put the ingredients, except the onions or chives, in a food processor or blender and blend thoroughly.  Top with the chives or onions. Hand-made Sausages 350g lean minced pork, chicken, lamb, beef, venison or wild boar 1 tsp Himalayan or Malvern salt, to taste 2 tbsp gram flour (chickpea flour) 4 cloves garlic (optional) 2 tablespoons chopped fresh parsley, coriander or sage ½ large onion, finely chopped Combine all the ingredients in a big mixing bowl and ix thoroughly with your hands.  Refrigerate until well chilled then separate into patties and cook in an oiled skilled until crunchy on the surface and cooked through. Flax Crackers 240g faxseed meal (or buy whole flaxseeds and grind them) 240ml water 30ml tamari or Bragg’s Liquid Aminos or Soy Sauce Himalayan or Malvern salt, to taste Fresh minced herbs A little chopped garlic Ginger, chilli powder, or cayenne pepper (optional) Combine the flaxseed meal with the water and let it soak for 1 ½ hours.  The water will change to a sort of gelatinous state.  Add a little more water if necessary, you want it to be gooey but not too runny or too thick.  Add the tamari, salt, herbs and garlic (or other flavourings).  Blend together.  Spread the mixture out, about 1/8 inch thick, and cut into squares.  Carefully lift the squares onto a wire mesh and bake in a slow oven until crunchy.  You can also make them in a dehydrator - dehydrate them for 4-6 hours, turn the mixture and dehydrate for a further 3-4 hours. Mulled Stuffed Apples (serves 2) Most of the nutritional value of an apple lies in its skin, or just below it, so wash apples well but don’t peel them. Softish apples are best for this recipe as their insides have to be scooped out. 100ml grape juice or red wine ½ tsp cinnamon 2 cloves ¼  tsp nutmeg 1 crushed white cardamom pod ¼ tsp allspice 75g blanched almonds 2 large apples Squeeze of lemon juice handful dates or raisins ‘Mull’ the grape juice or wine by putting it in a bowl with the spices and leaving for at least an hour.  Discard the cloves and cardamom and blend the remaining mixture with the almonds in a food processor or blender.  Slice the tops off the apples and keep them.  Remove the cores, saving small pieces to plug the bottoms.  Scoop out the apple pulp, leaving a shell about 1cm thick. Lightly blend the pulp with the juice and the almond mixture until smooth, adding a squeeze of lemon juice.  If the mixture is not thick enough, add a few more ground almonds.  Chop the dates or raisins and fill the apple shells with the dried fruit and almond mixture.  Replace the ‘lids’. Or, make stuffed apples with apple sauce and blackberries.  Blend the apple pulp with a little lemon juice, stevia and spices then combine it with the blackberries and spoon into the apple shells. Pineapple Blackberry Frappe This makes a wonderfully refreshing dessert as it stands, or it can be chiled to serve as a cool sorbet on hot summer days. 2 cups fresh pineapple chunks ½ cup blackberries Juice of ½ lime Place all the ingredients in a blender and liquidise.  Serve immediately.

Our body and flesh falls victim to the very molecule which brings us life: oxygen. Of course we could not live without oxygen. In the special energy factories of each muscle cell, called the mitochondria, we use it to burn fuel to give energy. But oxygen in the wrong place, or used in the wrong way, can age you fast. For instance, in the presence of certain chemicals in the body, or ultraviolet light, collagen fibers in the skin can oxidize and become cross-linked, rather than remaining in orderly rows. In this way they lose their pliancy and you form wrinkles. When your skin wrinkles, when rubber windscreen wipers harden and crack, and when the hide of an animal is turned into leather by a chemical process, what has taken place is cross-linking as a result of free radical damage which is a phenomenon that occurs in the presence of oxygen and appears to be central to the aging process in the whole body. In effect cross-linking is simply a process in which undesirable bonds are formed in the presence of oxygen. These chemical bonds can be between proteins (as in the case of cross-linked collagen), lipids or nucleic acids which make up the cells' genetic material - the DNA and RNA. Some cross-linking is necessary in order to give your tissues strength and make them sturdy. But inappropriate cross-links which occur in the aging process only increase the risk of cancer, arteriosclerosis and a number of other degenerative diseases such as arthritis. As Johan Bjorksten, one of the world's most famous age-researchers who formulated the cross-linking theory of aging says, `many of these cross-linked molecules lead to agglomerates which cannot be broken down by any body enzyme, but will increase in the cell and gradually crowd out other constituents, thereby causing continued decline in the cell's activity and the ability to cope with stresses'. From an aesthetic point of view - how your skin looks - such a decline in cellular activity implies a slowing down of the reproductive process in the skin as well as the hardening and bunching together of the skin's supportive collagen which makes it prone to wrinkling and to sagging contours. what causes cross-linking? There are a number of powerful cross-linkers which have been implicated in the aging process in humans - chemicals or energy sources which increase the level of cross-linking and therefore the rate at which your body ages. They include ultraviolet light, acetaldehydes, ozone, ketones (which are found in the blood of diabetics and people on a high-protein carbohydrate-free slimming regime), heavy metal ions such as aluminum, lead and cadmium, X-rays and free radicals (highly reactive atoms or molecules which can form toxic peroxides that damage and destroy cells). Many common environmental influences contain chemicals which belong to this list. Acetaldehyde occurs both in cigarette smoke and as a common urban air pollutant. It is a potent cross-linker. So is the aluminum which may be absorbed through regular use of some antiperspirants, and cadmium, a build up of which can occur in your body when you drink coffee regularly. Drinking alcohol spurs the production of acetaldehyde in your liver which can trigger further cross-linking, as can eating any kind of rancid oil or fat, since these react with radiation or form free radicals as a simple part of their metabolic breakdown in your body. Lying in the sun or on a tanning bed (no matter what kind of ultraviolet rays manufacturers tell you have been filtered out) may well be the single most dangerous practice of all to your skin. It damages the genetic materials of the skin cells, the collagen, and the lipids in the cell walls by causing them to undergo several types of free radical reactions including peroxidation and cross-linking. aging and oxygen question Oxygen plays an important positive part in protecting the body from age-related damage too. `Maximum oxygen consumption' is the way scientists measure your body's ability to transport and make use of oxygen for cell metabolism. As you get older this ability decreases at the rate of about 1 percent a year. The lower your oxygen consumption the less vitality you have and the more susceptible you are to many illnesses. An aerobic exercise program followed regularly over a few weeks can recapture 40 years worth of oxygen capacity which has been lost through a sedentary way of life before. Vitamin E supplements of 600-800 IU a day can increase the utilization of available oxygen by as much as 40 percent. avoiding the cross-linkers Before you even consider what kind of nutritional defense you might make use of to protect your body from the cross-linking process, start by eliminating as many of its known causes as you can from your life - like exposure to the sun when your body is unprotected by a sunscreen, cigarettes, drugs and alcohol. Then you are ready to consider how you can make use of what is known about the `cures for the random damage free radicals and cross-linkers cause'. protection - the second line of defense It is almost impossible to live in a twentieth century urban environment and avoid all these cross-linkers. So the second move in combating cellular aging is to consider incorporating into your diet fairly large quantities of substances which have antioxidant properties - substances which have an ability to protect the body's genetic materials, proteins, from age-related damage. A great deal of research done in the past 30 years indicates that there are some very effective substances for doing this. According to many of the most respected age-researchers such as Bjorksten, Denham Harman, Al Tappel and others, eating properly and adding these substances to your diet can minimize the amount of free radical damage to your body. These `age retarders' are often called antioxidants because they have ways of combating damaging oxidative reactions caused by radiation, chemicals and free radicals. Some are substances which occur naturally in our foods, although you would need to take them in much larger quantities to make use of their anti-aging properties. They include catechols which are found in bananas and potatoes, the phenolics - found in grapes - vitamins such as A, E, C and members of the B Complex - especially B12, pantothenic acid, B6, and the bioflavonoids which occur in the white soft inner skin or pith of the peel of citrus fruits - as well as beta carotene and some amino-acids such as cysteine (available in eggs), tyrosine and L-dopamine, plus the trace minerals zinc and selenium. Many age researchers now recommend taking fairly high quantities of the vitamins, minerals, food substances and amino-acid `age retarders' as protection against free radical damage and cross-linking. stay away from the cross-linkers Don't smoke. Stay away from people who do, particularly if you are in an enclosed area or small room. Not only does the acetaldehyde cross-link with collagen, the benzopropyrene (another chemical in cigarette smoke) depletes your system of vitamin C, making it unavailable for the production of new healthy collagen and encouraging skin to wrinkle faster. Stay out of the sun unless your body is protected by a high potency sunscreen which filters out both UVA and UVB rays. Never allow your face to tan at all. Protect it with a total block when you are in the sun. (There are some excellent after-shave tinted moisturizers for men and gel make ups for women which give you the look of a healthy tan if you like without causing damage to skin - or harmless `instant tan' lotions). Beware of unsaturated fats. Not that your body doesn't need them, it does. But in small quantities only. Because polyunsaturates are so very unstable chemically, they easily become rancid (as do shell-less nuts which contain them incidentally). And rancid or highly processed lipids are dangerous. The best oil to use for cooking is cold pressed virgin olive oil, a monounsaturate which is remarkably stable. You can get other essential fatty acids from eating fish, shellfish, game, whole grains, avocados, nuts and seeds. Go easy on the alcohol. Better yet, give it up altogether. Not only does it trigger acetaldehyde production in your liver, it depletes your body's supplies of some of the most important nutritional 'protectors' against free radical damage and cross-linking vitamins C and B1. A glass of wine a day can aid digestion - but if you find you can't stop after a glass (and many people can't), then temperance is probably the best choice. Check on heavy metals. Consider having the presence of heavy metals in your body investigated. This can be done in a laboratory from a small sample of hair. An increasing number of doctors concerned with preventive care are using hair mineral analysis as a part of their diagnostic equipment. If high levels of heavy metals such as lead, aluminum, chromium, arsenic and so forth are found they can be gradually removed from the system by careful use of specific nutritional substances such as vitamin C, pectin - a form of fiber which occurs in good quantity in apples - and garlic oil. Banish deodorants. Avoid the use of antiperspirants containing aluminum salts which are absorbed through the skin. Give up drinking Coffee. Besides causing a build up of cadmium, the caffeine in coffee can cause other age-related changes.

Our energy is balanced between dynamic, outpouring energy—which is exciting, creative, fun and challenging—and inner, moving energy, which is receptive. It’s a kind of quiet expectance that allows the universe to give you the gifts that it has to give. And of course, we can’t receive those gifts unless we know how to move from the dynamic state into the real receptive one. One of the things that’s important in helping us learn to do this—and almost everybody I know needs to learn to do it in our hectic, overstressed, dynamic world—is using water. Water itself is a powerful energy balancer. For instance, when you apply hot and cold water alternately to the surface of your skin, this stimulates circulation through the cardiovascular system, and it also spurs really good lymphatic drainage. From an electromagnetic point of view, by stimulating these systems you are increasing electricity at the heart of your cells, heightening your body’s ability to produce energy at a cellular level and to produce vitality in your life. Hydrotherapy works in other ways too. Like a really good way of eating, high in fresh green vegetables and low or no processed and convenience foods, water helps detoxify acid wastes which are interfering with normal energetic processes. An excellent technique that works fantastically well is Epsom salts baths. They are magical in the way they can help you to balance your energies, not only on a physical level, but emotionally. Epsom salts are magnesium sulphate. Both magnesium and sulphate molecules have an ability to leach excess sodium, phosphorous and nitrogenous wastes from the body. By reducing toxicity, your body’s energy becomes freed up for more efficient use. Magnesium and sulphur are also some of the most alkalinizing earth minerals. In practical terms, what this means is that they have the ability to create more physical space between the atoms and the molecules of your body. The greater the acidity in the body, and the more compressed the molecular space becomes, the greater the physical and emotional pressure you feel. When you get into an Epsom salts bath, the magnesium sulphate disturbs the pressure in your body, dispersing it and helping to restore balance. Magnesium sulphate dissolved in a body of water creates an electrical unified field. When you put your body into this field, it removes any excess electrical discharge from one area of the body and sends it to areas which are undercharged, creating a magnetic balance. There is nothing quite as good as an Epsom salts bath when you have been on a long flight or if you are suffering from jetlag, emotional tension, great fatigue or upset.

Syndrome X Phenomenon As an awareness of the Syndrome X phenomenon of insulin resistance spread, researchers and clinicians have begun to understand that many of us who are not diabetic still experience insulin resistance. Responsible scientists began to ask questions about what causes it. The discoveries they are now making are nothing short of revolutionary. They not only offer us the power to slow the rate at which our bodies age. They are experimenting with protocols that can, potentially reverse negative conditions from hypertension, insulin resistance to cholesterol imbalances and depression, simply by changing the way you eat and live. This experience is one I became fascinated with when, several years ago, I made a television documentary in the Southern Hemisphere called To Age or Not To Age. It asked the question, “Can we slow aging by making simple nutritional changes?” We also wanted to know “Might it also be possible to reverse age-related degeneration that has already occurred?” And, finally, “Can these things be verified in medically measurable ways?” We decided to carry out what is known as a base-line study to find out. We sent all participants to have the standard test of medical parameters checked before the project began—from fasting insulin and blood sugar levels through cholesterol, triglycerides and blood pressure. These were carried out at a hospital which also had an excellent physiology laboratory, where exercise physiologists were able to establish each participant’s VO2Max, body fat percentage and lean body mass to fat ratio. To my surprise, every participant—including a 50 year old top athlete—showed abnormalities associated with Syndrome X. We then introduced our group to an Insulin Balance way of eating, which I devised. The experiment lasted only 5 weeks. Then we sent all our participants back to the hospital to have their parameters checked again. The results were mind-blowing. We had no idea that, after only 5 weeks of dietary changes, every abnormal medical parameter had normalized, except for cholesterol measurements in one woman, which took another few weeks to normalize. For me personally, the experiment confirmed yet again that the human body has a phenomenal capacity to heal itself, when given the opportunity to experience transformation at the deepest levels. This is a truth which, for the past four years, I have applied to helping to transform the lives of men and women all over the world, whom I have been mentoring on Cura Romana. The results continue to delight me.

“Insomnia? I know a great cure for it... get plenty of sleep” W.C. Fields Do you dread going to bed for fear for fear you won’t sleep? Do you wake in the night only to find that you can’t go back to sleep again? Well, you’re not alone. Over half of the population of both the UK and the United States—where Big Pharma collected $3.7 billion for selling drugs for sleep in 2012 alone—have problems with some form of “sleep disorder.” Many take hypnotic drugs despite the fact that at least two dozen published studies have examined mortality associated with these medications. Eighteen of these report significant connections between using these drugs and increased mortality. Taking sleep inducing drugs is also associated with a greater than three-fold increased risk of death, even when less than 18 pills a year have been taken. Bottom line: Hypnotics ain’t worth the risk. There are better ways of handling insomnia. DANGER WORRIES There’s no doubt about it, disrupted or poor quality sleep can be dangerous. I learned this myself first hand after taking a flight that crossed twelve time zones. I found— unusually for me—that my body never readjusted to the new time zone, and I was sleeping only an hour or two a night, and at very irregular times. This went on for almost two weeks, at the end of which I was in severe physical pain. I went to see my doctor, also a skilled acupuncturist, concerned that I may have contracted some fairly serious illness. He treated me with acupuncture and sorted out the pain within two treatments, as well as my inability to sleep. He also told me that he had seen this in patients of his who are pilots. Research studies show that when healthy male volunteers were deprived of four hours of sleep for a single night, the activity of the natural killer cells in their immune system fell by as much as 30 percent. That’s the bad news. The good news is that a single good night’s sleep brought normal functioning back to the cells. It has also long been known that shift workers, whose hours of sleep continually change, have increasing difficulty falling asleep and staying asleep. They also have more accidents, suffer more illness and die younger than people with normal sleep schedules. INSOMNIA TRIGGERS Anxiety Fear of insomnia Stimulants such as coffee or alcohol Eating too many high glycemic carbohydrate convenience foods which disturb blood sugar Low levels of melatonin Low levels of serotonin Drug use Depression A lot of so-called insomnia is nothing more than the result of worrying about getting to sleep. Many people who consider themselves insomniacs are really victims of the general propaganda about sleep, rather than true non-sleepers. Many people seek treatment because they can only sleep four or five hours a night, although that may be all they need. There is nothing more likely to cause sleeplessness than the worry that you won’t be able to drop off. Sometimes sleeplessness can be normal. After all, we all experience a sleepless night every now and then, particularly if we are over-tired, worried or excited about coming events. Real chronic insomnia is less frequent. There are many things that can cause it, from taking stimulants such as chocolate, soft drinks, coffee and tea, to not getting enough exercise. Nocturnal hypoglycemia is another major cause of insomnia in many people. BEWARE OF BOOZE Alcohol can severely interfere with sleep for a number of reasons. First, it brings about the release of adrenalin giving you a sense of excitement—a totally inappropriate condition for putting your head down on the pillow. It also interferes with the transport of tryptophan into the brain. And since the brain depends on a good supply of tryptophan in order to produce serotonin—the neurotransmitter that brings about sleep—drinking alcohol late in the evening severely disrupts serotonin levels. Alcohol, of course, also has a relaxing effect, which for many people will put them to sleep immediately, provided they have drunk enough of it. Then they find that, two or three hours later, they awake dehydrated and unable to sleep for the rest of the night. LOOK TO NATURE For my money, botanical sleep support wins the battle against insomnia better than almost anything else. There are several botanicals I turn to and recommend to others. Some of the most powerful helpers for insomnia have botanical origins. Many plants, from skullcap (Scutellaria laterifolia) to hops (Humulus lupulus), can be used to help promote sleep. I use them often. Here are some of the most effective. CALIFORNIA POPPY Eschscholzia californica This gentle but effective sedative is also an antidepressant and a mood stabilizer, and the seeds of the plant offer excellent natural relief for someone living with chronic pain. It appears to work by telling the brain to increase your opiate receptors, which automatically decreases pain and brings relaxation. California Poppy is also non-addictive. But it should not be taken during pregnancy as it might stimulate uterine contractions. VALERIAN Valeriana officinalis A natural sedative and anti-hypertensive, valerian has been used on both sides of the Atlantic for generations, not only to induce sleep but to help protect people from the negative effects of stress. A double blind study involving 128 people showed quite clearly that a water extract of valerian root significantly increased the quality of sleep. The study, which was quite thorough, measured night awakening, people’s own perceptions of the quality of their sleep, sleeplessness in the morning and sleep latency—that is, how quickly a person got to sleep. In another double blind insomnia study, 20 people were given either a combination of 160mg of valerian root extract and 80mg of Melissa officinalis extract, or menzodiazapine (Triazolam 0.125mg), or a placebo. (Melissa, by the way, belongs to the mint family and also has a powerful anti-viral activity.) Researchers discovered that the valerian-melissa preparation was comparable to the benzodiazepine drug in its ability to increase deep sleep. However, unlike the drug, it did not cause side-effects—diminished concentration, impairment of physical performance or daytime sleepiness. My only problem with valerian is that to me it smells like dirty socks. KAVA KAVA Piper methysticum From the pepper family, this plant is consumed in liquid by the cultures of Polynesia. It is both an effective sedative and hypnotic. It also acts as a muscle relaxant, anticonvulsant, and anti-depressant. When you take it, it first stimulates then begins to sedate the central nervous system. Small doses can produce a euphoric sense of wellbeing. Larger doses or small doses repeated frequently produce deep relaxation, lethargy and induce sleep. Human studies where kava is given in therapeutic doses have failed to show any toxic effects. Nonetheless, kava should not be used by people who have or have had liver problems, who drink alcohol, or take drugs. Children, pregnant and breastfeeding women are not to take kava either. PASSIONFLOWER Passiflora incarnata This magnificent climbing plant, with its white flowers and extraordinary purple centers, is mildly narcotic and a wonderful sedative for the body. It’s an anti-spasmodic, sedative, hypnotic, hypotensive anti-depressant and nerve relaxant. It is particularly useful if you are someone who tends to suffer from nervous tension as well as insomnia. Not as strong as valerian in its action, it is more calming than sedating, and is therefore a superb alternative to tranquilizer drugs. Passionflower works particularly well for sleep when taken together with 5-HTP as an herb, a tincture, or fluid extract or in dried powered form in capsules. Passionflower was used by the Aztecs as an analgesic and sedative. One of its plant chemicals is called harmine, which has an interesting ability to bring about a contemplative state and a feeling of mild euphoria. It was even used during World War II as a “truth serum”. Harmine and other plant chemicals in passionflower, which work synergistically with it, prevent serotonin levels from falling and therefore works extremely well with 5-HTP against insomnia. HOPS Humulus lupulus The flowers from this common herb are often used together with other remedies to treat everything from indigestion to edgy nerves. Like valerian, hops have a pronounced sedative effect but it is much milder. You can use hops in the form of a tincture, but it can be particularly useful as a tea for people who awaken in the middle of the night. Prepare it before going to bed by steeping the flowers for 10 minutes in hot water and then straining and allowing to cool. Put the tea, sweetened with a little honey or preferably stevia (if you can get it), by the side of your bed so you can drink it if you awaken during the night. Some people also swear by small pillows stuffed with dried hops blossoms which you put under your neck when you go to bed or if you awaken. LET GO OF FEAR Experiment with these wonderful plants. Get to know them. Each has its own personality and its own soul. I have used them all over the years and come to love each one of them for their beauty and their effectiveness. Just as when you meet a new friend, it takes time to experience all their gifts. But you will, and it will be wonderful. Meanwhile, forget worry about sleep. Do what you need to do and then just let it happen. If it doesn’t happen tonight, so what? It will tomorrow night, or the next. Lack of sleep is not likely to kill you, but worrying about it for long enough just might. It’s time to leave self-neglect behind, charge your batteries, get savvy about what to eat and drink, what supplements to take for radiant wellbeing and energy, and what to use both internally and externally for great hair, skin and nails. In Charles Dickens' A Christmas Carol, Jacob Marley, Scrooge's dead partner, appears to him as a ghost: `You don't believe in me', observed the Ghost. `I don't', said Scrooge. `What evidence would you have of my reality beyond that of your senses?' `I don't know', said Scrooge. `Why do you doubt your senses?' `Because', said Scrooge, `a little thing affects them. A slight disorder of the stomach makes them cheat. You may be an undigested bit of beef, a blot of mustard, a crumb of cheese, a fragment of an underdone potato. There's more of gravy than of grave about you, whatever you are!' Scrooge was right. Biochemical changes brought about by what you eat, how well you eat, and how often you eat, can affect your brain and alter consciousness enough in some people to produce imaginary fears—even hallucinations—not to mention depression and anxiety as well as chronic fatigue and chronic insomnia. The very worst of the body snatchers are the sugars in their myriad of forms. More about this in a moment. Meanwhile, everybody knows that fruit contain a kind of sugar known as fructose. Does this mean we should ban fruit from the table? GOOD FOOD BAD RAP Somehow fruits seen to have have earned themselves a bad name. Why? Because fruits contain fructose—fruit sugar. Nonetheless, it’s fructose that gives glorious organic navel oranges, blueberries, apples, and golden kiwis their marvelous sweetness. And the right amount of organically grown, whole fruits do as lot to keep us well. Fruit plays an important part in any high-raw way of eating. These colorful gifts of nature cleanse the body of the toxicity we absorb from our environment, the water we drink and the dreadful packaged convenience foods people eat. That’s why fruits are so valuable to any serious detox program. So what’s the problem with fructose? First of all, there is evidence which indicates that people who eat too much fruit can make themselves vulnerable to chronic problems like insulin resistance, diabetes and obesity. And this is important. For most fruits we eat today contain between 30 and 50 times the amount of fructose compared to the fruit our hunter-gatherer forefathers munched on. This has come about because, during the 20th century, enormous hybridization projects continue to make fruits sweeter and sweeter. As a result, not only has the incidence of chronic illnesses—from heart disease and diabetes to cancer and mental disorders—exploded in developed countries: So has our consumption of sugar in its many forms—of which fructose is one. WHERE DO YOU STAND If you are someone with high cholesterol, diabetes, obesity, insulin or leptin resistance or hypertension, then it is best to limit your fruit intake so you only get, say, 15 grams of fructose a day. How do you do this? Choose your fruits carefully so that most of them are low-fructose. If you do not fall into these categories, you should be able to eat a lot more fruit and have it do you nothing but good. That is, of course, provided the fruits you choose are organic and therefore not sprayed with chemicals. Make sure they have not been GMO grown. Under no circumstances do you want to put genetically modified foods of any kind into your body. All GMO crops are dangerous, despite all the corporate hype designed to make us think otherwise. BIG CONTRADICTIONS But findings about the effects of fruit eating are contradictory, to say the least. The British Medical Journal published three observational studies that examined the effects of fruit-eating on human health. These studies analyzed the diets of almost 200,000 people between 1984 and 2008—none of whom had indications of heart disease, diabetes or cancer when the studies began. On completion, the studies indicated that, far from fruits predisposing us to degenerative diseases, some fruits including grapes, blueberries and apples may actually reduce the risk of diabetes. This is great news and somewhat unexpected, since apples and grapes contain a lot of fructose. But beware. Drinking juices made from these fruits that are bought rather than being homemade from fresh produce do contribut to the development of the same diseases that eating whole fruit can help prevent. Steer clear of all packaged and tinned fruit juices and fruit drinks. DEVIL IN DISGUISE One aspect of fructose is as dangerous as hell—high fructose corn syrup (HFCS). The ultimate body snatcher it is. If you value your health and the health of your children you’ll want to avoid it at all costs. But avoiding it is not easy. HFCS is added to just about every packaged food and drink you buy. So read every label on every packaged food or drink you buy and reject every food or drink containing it. HFCS is deadly stuff. A highly processed form of liquid sugar extracted by a nasty chemical solvent called glutaraldehyde, is not only HFCS frequently contaminated with mercury. Putting it into the body is a major cause of obesity, insulin resistance, diabetes, and mood disorders, and hyperactivity in children. High-fructose corn syrup is similar in composition to sucrose, with levels of around 45% glucose to 55% fructose. And, as with sucrose, its harmful effects are concealed from view. It does not raise blood sugar, as it is processed by the liver. There it promptly turns into fat. In 1978, HFCS was brought in as a substitute for sugar in soft drinks. This quickly became a real game-changer, but not in a good way. By the year 2000, sugar consumption in America increased by 25 pounds per person per year, nearly ALL of it in the form of HFCS. These days the average American consumes a massive 35 pounds of HFCS each year, according to the U.S. Department of Agriculture. It’s no coincidence that the obesity rate in the US has reached epidemic proportions worldwide. SNEAKY AND SINISTER You’ll find HFCS in thousands of grocery items, even in places you might never suspect—such as pizza sauce, salad dressings, foods from sodas, drinks and sweets to sauces, breads, and delicatessen foods like smoked salmon, luncheon meats and salami. Farcically, HFCS is often labeled "all natural" because fructose is found in fruit—even though it is mass-factory-produced, using a process which dramatically increases the fructose content of corn syrup. Fructose in these protucts bears little resemblance to fructose found in fresh fruit. It also lacks the fiber, antioxidants and nutrients found in fresh fruit. As pediatric specialist and childhood obesity expert Robert Lustig puts it, high-fructose corn syrup is “a poison all by itself”. Lustig doesn’t distinguish between plain sugar and HFCS when it comes to health perils—they are “equally dangerous”, he insists, like two sides of the same coin. And what’s so insidious about HFCS is that it is sold to the public as a “healthy alternative” to regular sugar. You should avoid it at all costs. MY OWN FRUIT EXPERIMENT Most of you know that I am a passionate fan of organic raw food and have been for almost half a century. A high-raw way of eating in my mid-twenties healed me from so many illnesses contracted as a result of being raised on junk food throughout most of my unpredictable childhood. A few weeks ago, Aaron and I decided to experiment by returning to being on an all-raw fruits and vegetables diet for a period of six weeks. We wanted to check out what, if any, ill effects eating an all raw diet containing lots of fresh, organic fruits would have on us. The results of our little experiment have turned out to be excellent. We ate a lot of fruit. We put it in our salads, we made juice from a mixture of fruits and included in it much of the pulp produced from the juicing. We loved the way this made us look and feel. I’m happy to report that the results of ouro little experiment has been nothing but good. Like vegetables and herbs, fruits are not only a storehouse for vitamins and minerals; they boast high levels of phytochemicals. These powerhouses for health and vitality are not nutrients like vitamins and minerals. Yet they carry colored plant factors which play an important role in our health. A good supply of these phyto-nutrients helps minimize the incidence of cancer and heart disease and protect from degenerative conditions associated with aging, such as inflammation of the joints, loss of memory and concentration. They even help slow the aging process itself. Large quantities of these plant factors with many different names are found in common fruits, from berries, oranges, lemons and grapes to cantaloupe, kiwis, cranberries and cherries. However, in any diet based on manufactured convenience foods, they are scarce as hen’s teeth. MEET THE GOOD GUYS Berries, grapes and cherries as well as citrus fruits are excellent sources of water-soluble phyto-chemicals known as flavonoids. Flavonoids guard the integrity of collagen within the body. They work together with vitamin C and—as do many of the other phyto-nutrients—enhance the positive effects of antioxidant vitamins, improving the function and the integrity of tiny blood vessels known as capillaries, which deliver nutrients and oxygen to our cells. This helps raise overall energy. It also helps keep skin smooth and elastic, protects against bruising while improving memory and eyesight. Phyto-nutrients often carry weird names like catechin, quercetin and hesperidin. Among the more than 20,000 known, hesperidin, rutin, quercetin, catechin and pycnogenol are especially important. Catechin reduces allergic reactions by calming histamine release in the body. Rutin helps guard the integrity and health of capillaries, veins and arteries, as well as the skin itself. Many phytochemicals protect our health by interfering with or blocking specific disease processes. They do this either by acting as antioxidants and preventing free radical damage, or by inhibiting enzymes which promote the development of diseases like cancer. Some plant factors found in fruits and vegetables clear our cells of toxins and other damaging substances such as herbicides and pesticides we take in from our environment. HEALTHY SUPPORT HERE At Tufts University in the United States, scientists developed a method of quantifying the anti-oxidant power of specific fruits and vegetables by measuring their ability to quench free radicals in a laboratory test tube. To test a food’s oxygen radical absorbance capacity, called the ORAC test, scientists have been able to categorize a fruit or vegetable according to its overall anti-oxidant power. Fruits like blueberries, blackberries, strawberries and raspberries are at the top of the list. They can be highly protective of our health. While we’re talking of lists, here is a list of some of the most common fruits indicating how much fructose is in each. Become familiar with it and, given the state of your own body, you can easily make your own decision about what kind and how much of each fruit suits you best, as well as how much you want to eat of it. If you are not troubled by any of these conditions, you can experiment by eating fruits which give you from 20 to 40 grams of fructose a day and work out by trial and error what the levels of fructose best work for you. Always eat your fruits whole if possible. If you choose to juice them yourself, make sure you keep the valuable pulp from the juicing process and add a good quantity of it back to the juice. Go for organic fruits. You might even try growing a lot of your fruit in your garden if you have the space. Never eat GMO fruits...something difficult to ascertain in most countries these days since corporate interests have lobbied hard to prevent GMO labeling. This is another reason to choose organic. Never eat or drink anything with high fructose corn syrup in it. It’s deadly stuff—so read labels carefully. Fruits are one of nature’s most glorious gifts to us. Know the ones that work for you and shun those that don’t. Above all steer clear of high-fructose corn syrup and read labels carefully to make sure you do.
