Some fifty years ago, I learned all about this thanks to a cat named Mistletoe. She was a beautiful little Siamese who gave birth to two litters of perfect kittens. But Mistletoe was not strong. So I took her to the vet, who told me she needed an injection of anabolic steroids. It helped for a while. But two months later, I had to take her to the vet again for a second injection. This made me furious. My anger led me to read everything I could get my hands on in an attempt to discover what natural foods cats—from tigers and lions to tiny kittens—had been eating for millennia. Before long, my searches led me to Dr Francis Pottenger MD’s unparalleled research into animal health. Known for his success healing humans, Pottenger believed that—given half a chance—any living body, be it human or animal, is capable of healing itself naturally. For ten years, he carried out clinical trials on 900 cats that he and his team monitored down 9 generations. He split them into two groups. To group one he fed only raw meat, including organ meats, bones, raw milk, and a little cod liver oil. To group two, instead of raw, he fed the same foods but cooked. They got cooked meats, pasteurized—that is, heat-treated—milk, and cod liver oil. Then he traced the health and behavior of both groups down an amazing nine generations. All of the foods he fed all cats were organic, of course, because back in the 1940s when he carried out his research, virtually all foods were. Group one cats, who got only raw food, became healthier and healthier with each year that passed. They had no birth problems, nor did they develop any health issues during the nine year period of the study. These fortunate cats died late in life from simple old age. Meanwhile, group two cats—who got the same food except that it was cooked—started developing health problems, right from the first generation. These included death of kittens, smaller litter sizes, poor mothering behavior, scruffy coats—you name it. The second generation of group two cats started to show signs of allergies, gingivitis, inflamed joints, dermatitis, poor vision, and skeletal malformation. Their fertility dropped, as did their litter size. Perinatal mortality increased. Their calcium bone density fell from 17% at the beginning of the research to 4% by the fourth generation. Even the behavior of group two cats was affected. They became more aggressive to handlers and to one another. By the ninth generation, many of group two became sterile. And, because, by then, they had stopped reproducing, Pottenger’s trial had to be stopped. Meanwhile, group one cats continued to thrive. Learning about Pottenger’s work was all it took for me to decide that my beautiful little Mistletoe was never again going to be fed any form of “cat food”, be it in a can or dried, again—so she would never have to go to the vet again. She never did. I started feeding her entirely on a little cod liver oil, raw milk or cream, raw organic meats and offal, liver, wild rabbit, as well as a source of minerals which I call cat pâté. This I make in my Vitamix by grinding up organic chicken carcasses in a little water. Little Mistletoe went from strength to strength. She never looked back. She finally died at the age of 22. She was never sick. One day I noticed she was not interested in eating any more, but she still wanted to drink water. In another three or four days, she no longer wanted to drink. She spent more time alone resting, but she still wanted to be held and given love. When she was ready to let go, she died in my arms—calm and peaceful. Mistletoe not only taught me to reject all of the propaganda which tries to convince us that our animals need manufactured foods and pharmaceuticals to stay healthy—far from it. She even taught me about the nature of dying itself. It can be a peaceful blessing surrounded by those who love you, whether an animal or a human being. What I learned from Mistletoe half a century ago has stood me in good stead. Since then, I have raised and nurtured many vibrantly healthy cats and other animals. With each day that passes, I still give thanks for all that my animal friends continue to teach me. This is not only about how to help them stay healthy life-long. They’ve taught me to listen to their own innate wisdom and never to assume that, as a human being, I know better than they do. Remember how your mother or grandmother used to tell you to make sure you got “lots of bulk”—and that meant eating oatmeal, muffins, and lots of wholegrain bread? Well, they were partly right and they were terribly wrong. Fiber is a vital part of your diet when it comes to promoting health and protecting the body from degeneration. But cereals, whole-wheat and bran muffins are not the way to go. TRUTH ABOUT FIBER What is the way to go? The answer may surprise you. The healthiest source of fiber does not come from wholegrains—which disturb blood sugar, create insulin resistance, and cause leptin resistance, making many people fat. (These things, by the way, have become a major driver in most chronic degenerative diseases.) The best fiber comes from fresh fruits and vegetables, which are full of both soluble and insoluble fiber. Insoluble fiber: This kind of fiber is found in dark green leafy vegetables, green beans, celery, kale and carrots. It’s the kind of fiber that does not dissolve at all, but adds bulk to your stools. It helps other foods you are eating move rapidly through your digestive tract so that elimination becomes healthier and more regular. Soluble fiber: This kind of fiber attracts water and turns to gel during digestion. You find soluble fiber in seeds, peas, nuts, blueberries and other berries, fresh beans and psyllium seeds. Soluble fiber helps slow down your digestion. It makes you feel full for longer. This is important for people who have a tendency to gain weight and to suffer from food cravings. One of the magic things about good quality fiber is that it actually ferments inside. This is wonderful because it releases something called acetate, which travels from your gut to the hypothalamus—the control center in your brain—and there it helps you stop eating more than your body needs. WHAT IS FIBER? Dietary fiber is a biological unit, not a chemical entity such as a vitamin or mineral. We get the best fiber from eating plant foods—beans, seeds, some pulses, fresh raw vegetables and fruits. Using simple sugars contained within, these plants produce a number of carbohydrate polymers. Some of these serve as energy stores for the plants, and are almost completely digested and absorbed in the intestine when we eat them. These are the soluble fibers. Others—the fibrous or viscous polysaccharides and lignins—lend the plants their structure and form, but we cannot digest them. Instead, they pass through the colon intact, where they are fermented to some degree before being eliminated from the body as waste. These indigestible polysaccharides, which make up the cell walls of plants, are known collectively as “insoluble dietary fiber”. They have a variety of other names, too. EACH IS UNIQUE Each kind of fiber behaves differently and has different benefits for the body: From cellulose, which binds water and increases fecal bulk, to pectin—very rich in apples—which is water soluble; hemicellulose, which shares some of cellulose’s characteristics and helps relieves constipation, aids weight reduction, and clears out carcinogens from the bowel; lignin—the woody fiber that you find in raspberries, strawberries, Brussels sprouts, cabbage, kale, parsley and tomatoes—which helps eliminate the wrong kind of cholesterol and bile acids from the intestine; and the gums and mucilages, which are sticky fibers that food manufacturers make good use of as thickening agents in convenience foods. MASSES OF HEALTH BENEFITS When it comes to enhancing your health, protecting you from degenerative conditions and weight gain, the gifts of fiber are many. First, the right kind of fiber—such as acacia fiber, a soluble fiber—is great for helping people with irritable bowel syndrome. Using an insoluble fiber, such as beans or peas, can reduce the risk of diverticulitis by about 40%. All forms of soluble fiber help slow down the rate at which your body absorbs carbohydrates and sugars, helping to clear sugar cravings and aiding weight loss. Fiber is also great for your skin, especially psyllium husks and seeds. These help clear any overgrowth of Candida albicans—fungi and yeasts—from your body, helping to eliminate food cravings and protecting your skin from acne and rashes. A high-fiber diet helps lower your risk of hemorrhoids, which are caused by chronic constipation. A high-fiber diet also reduces the risk of kidney and gallstones, probably because it helps to regulate blood sugar. Research shows that good quality fibers help heart patients live longer. They are also marvelous for curbing the appetite. One of the surprising ways in which they not only do this, but also help protect us from degenerative conditions, is through fermentation. This process in the gut releases acetate, a waste product that has powerful and positive effects on the body. One of the things it does is to transmit information to the hypothalamus in the brain, which regulates your appetite and tells you when you’ve eaten enough. Research indicates that the appetite-suppressing qualities of acetate are excellent. RADIATION PROTECTORS Some of the best protection from radiation—which we’re experiencing more and more in our increasingly polluted environment—comes from fiber. So make use of it to protect yourself from the kind of radiation poisoning that now contributes to degenerative diseases. Seaweed is also one a great source of radiation protection. Studies have shown that alginate in seaweed and kelp products protect an organism from absorbing radioactive elements such as strontium-90 and cesium, both of which are incredibly dangerous to the body. Amongst other things, strontium-90 tends to replace calcium in the bones, leading to bone disease and cancer. Kelp is helpful in protecting against other kinds of environmental pollutants. The fucoidin it contains helps block the absorption of lead and other heavy metals. There is some evidence that, like pectin—the dietary fiber found in good quantities in apples—it can also help remove much heavy metal poisoning from the body from cadmium, aluminum and lead. Putting seaweeds in soups and vegetable dishes, making laverbread, or even taking kelp tablets can all help prevent the buildup of heavy metals in your body. FIBER 101 Governments recommend that we take in somewhere between 10 and 25 grams of fiber a day. Most people only get half of this, or even less. Because I eat 50% to 70% of my foods raw, I take in at least 40 grams a day. What is interesting is this: Research shows that our Paleolithic ancestors as well as tribal cultures, a few of which still exist on the planet, got somewhere between 35 and 60 grams of fiber a day! Aim for 30 to 40 grams of fiber a day and eat lots of vegetable foods. Your body will thrive on it. You will not find any good quality fiber in manufactured and processed foods. I strongly advise you not to eat such foods. Here are some of the vegetable foods and seeds that are excellent sources of fiber. Flax seeds, chia seeds, and psyllium seed husks Vegetables such as broccoli, Brussels sprouts and kale Macadamia nuts and almonds Berries of all kinds Green beans, peas, onions and root vegetables All the fibers listed above have been shown to help the body protect itself from cancer and other forms of degeneration so common in our world—fibroids, endometriosis, Alzheimer’s disease and heart problems. These fibers can also help tremendously to alter the metabolism of excess estrogen in the bowel—so that more of it is excreted and less of it is reabsorbed. I personally eat lots of green vegetables—most of them raw. My favorite source of seed fibers is twofold: Organic chia seeds and organic whole psyllium husks, which deliver both soluble and insoluble dietary fiber. If you have any sort of irritable bowel issues, I recommend acacia fiber. It is a soluble fiber that is very soothing to the gut. GO RAW What is so special about organic raw vegetables? Plenty. They have powerful protective qualities, which is why diets high in fresh green vegetables are recommended as an aid for protecting the body from degenerative diseases: Arteriosclerosis, arthritis and cancer. This is especially true of raw vegetables. Even more important, a diet high in raw vegetables not only provides you with the best quality fiber that you’ll find anywhere. It actually increases the microelectric potentials of your body’s tissues, making your cells function better, improving intra- and extra-cellular exchange, and imparting high levels of mental and physical vitality to your whole being. Fresh organic vegetables are the best source of natural fiber, vitamins and minerals for high-level wellness. I suggest that at least 50% of what you eat each day be made up of raw vegetables with some of the best low-glycemic fruits, such as the berries. Go raw. You won’t regret it. Addictive Fast Foods: Why Our Health Is At Risk From Cheap & Nasty Western Diet of Convenience

Our Western Diet is based on foods of convenience—the fast food items we buy at the local corner shop or supermarket. These products are gross distortions of the REAL foods which human beings have eaten throughout history...foods to which our bodies remain genetically adapted. Our ancestors did not have bread, sugar, junk fats and all the other nutritionally depleted pre-packaged, pre-cooked stuff that we do. They ate fresh wholesome foods. Palaeolithic man’s diet was high in wholesome fats, moderate in proteins, and rich in fiber, thanks to whatever vegetables and simple fruits they could gather. CHEAP AND NASTY The modern convenience foods on which we now feed depleted of natural fiber and filled with chemicals. They are manufactured from grain-based carbs, and altered milk products then riddled sugar and dangerous trans-fatty acids—oils which have been separated out from the foods from which they are taken, then chemically altered by solvents and heat processing. FOODS CAUSE ADDICTION Apart from the destructive power of GMO foods, which are not only destroying human health but the health of the planet, another major change has taken place: Today we also swallow a kaleidoscope of colorants, flavorings, additives and ‘enhancers’, not to mention pesticides, herbicides and fungicides, which our ancestors could never have imagined in their wildest dreams. We slurp down chemical pollutants with each sip of our diet cola, and every bite of our pre-cooked meals. Quite simply, this is the fast food diet that 95% of the Western world now lives on. And, next time you upbraid yourself for what you perceive to be your lack of willpower as you reach for yet another biscuit and feel guilty about it, let the guilt go. It does not belong to you. The denatured, degraded, food we eat bears the lion's share of blame, not only for the plague of obesity worldwide, but for food addictions and cravings that lead to illness and weight gain, the development of potentially fatal degenerative diseases, from heart disease and cancer to metabolic syndrome; Alzheimer’s disease; diabetes, and dozens more. DEGENERATION BEGINS It was Weston Price, early on in the century, who first brought the scientific community's attention to the devastating effects the rise of processed foods and the destructive ways in which they damage human health. Price, a dentist, traveled the world recording the changes in the shape of the jaw and teeth which take place slowly but inevitably as each culture discards its traditional dietary practices, based on real food, in favor of our more ‘civilized’ Western fare. Price's many studies—each of which lasted between 20 and 40 years—carefully plotted the onset of degenerative diseases. It is not surprising that, after living on a diet of simple whole plant foods rich in natural fiber and a health-giving synergy of nutrients and micro-nutrients throughout evolution, the human body continues to this day find the foods we eat now anathema to health. Our genes have been attuned to naturally grown, unprocessed foods for more than a million years. Our metabolic biochemistry as human beings is designed for it. Sir Robert McCarrison—brilliant British doctor also charted the relationship between food and health. More recently, two more British doctors, Dennis Burkitt and Hugh Trowell, carried out their own extensive studies, taking Price and McCarrison’s work a step further. They carefully documented the exact sequence of events which takes place when a people's diet changes from simple, primitive, real food to packaged fast foodstuffs. Stage One: The primitive, unprocessed diet of hunter-gatherers, complete with plenty of healthy fats, good quality proteins, plus vegetable and fruit-based carbohydrate is eaten. Degenerative diseases do not exist. Stage Two: Western diet is introduced. Obesity and diabetes become common among privileged groups able to afford foods of commerce, and degenerative diseases begin to appear. Stage Three: A culture's diet becomes “moderately Westernized”. Obesity becomes more widespread, as does constipation, haemorrhoids, varicose veins and appendicitis. Stage Four: Westernized diet is now widespread. Overweight and obesity are common in all social groups. So is heart disease, high blood pressure, diverticular disease, hiatus hernia, cancer and other Western diseases. FRAGMENTED “FOODS” Like our soils, the industrially manufactured foods we eat today—from biscuits and pasta to pre-cooked convenience meals—have quite literally been taken to pieces. High-tech food production works something like this: To create a great variety of palatable foods from raw materials, you have to reduce the foodstuffs—grains and seeds, vegetables and legumes—to simple, malleable ‘nuts and bolts’ that lend themselves to whatever manipulations you want to perform on them. Take soya beans for instance. They were once considered an excellent source of complete protein as valuable as meat or eggs—more valuable in many ways, since they are so cheap. Nowadays more than 95% of soybeans grown worldwide are genetically modified. Food manufacturers still take whole soya beans, in which 30% of each bean is protein, and process them physically and chemically to extract this protein and make it ready to accept dyes and flavorings. hen they alter its texture through more processing until eventually it becomes ersatz meat. This end product—from which soy-based foods from tofu to soya milk are made—is a long way from the natural soya bean. In the course of such manipulations the little soya bean, which, pre-GMO devastation and high processing, once offered asynergy of nutrients, complex carbohydrates, essential fatty acids and fiber. By now however it has now been turned into a highly concentrated artificial material. During the operation, vitamins and minerals are destroyed. The soya bean's proteins and natural fatty acids have been denatured and chemically altered into new forms, many of which are not usable by the body. The soya has also lost most of its fiber too—a vital part of any food's health-promoting wholeness, and something absolutely essential for protection from degenerative diseases and obesity. To this artificial “food”, manufacturers then add a lot of phoney colors and flavors. Canadian expert in food science, Ross Hume Hall, puts it rather well when he says: "The product contains the same number of calories as the original soya protein, but it now consists of a set of naked molecules completely divorced from any natural context." The same is true of the way in which cereals and grains are processed. NUTRITIONAL DESTRUCTION From milk to meat to garden peas—whatever food is involved—processing destroys nutrients. According to official government handbooks, 50-70% of vitamin B6 is lost when meats are processed. 50-90% of folic acid—a vitamin of particular importance to the functioning of nerves and the actions of hormones, especially in the female body—is shed when grains are milled, while more than 80% of the mineral magnesium disappears in the same process. The multi-national food industry covers the packaging of its products with endless ‘nutritional’ information, which would have you believe that any goodness lost in processing can be made up for by ‘enriching’. Enriching is just another chemical whereby a few cheap vitamins and minerals in synthetic form are pumped back into the now fragmented food. It is categorically impossible to restore the health-giving power of wholeness to any food which has been fragmented in this way. BIG COVER-UP Similar nutrient losses happen during other phases of food handling—artificial ripening, transport and storage. Store asparagus for a week and it loses 90% of its vitamin C. Keep grapes for the same time, and they shed 30% of their B vitamins. Freeze meats and you can lose as much as 50% of two important B vitamins— riboflavin and thiamine. These are just a few examples of nutrient losses which occur every day. They are only the tip of the iceberg when it comes to the ways in which modern food handling and manufacturing processes have created highly concentrated, calorie-dense foods filled with masses of sugar (more about this in future entries) which are dangerously destructive of health, and promote both weight gain and rapid degeneration of body and mind. REAL FOOD CREATES REAL HEALTH OK, so where do you go from here? It is easy to change your food-buying habits once you clear your cupboards of the manufactured rubbish we all collect. You’ll find the healthiest, freshest, and most natural foods for lasting health at the outside edges of your local supermarket. Passion Flower: Passiflora incarnata, also known as Maypops, is a climbing plant that boasts magnificent white flowers with a purple center. It has a wonderful sedative and mildly narcotic effect on the body. Passion Flower is most useful for women who wrestle frequently with nervous tension and particularly helpful when nerves seem to be edgy before and around the time of menopause, when hormones can fluctuate wildly. It is also useful for relieving pain, thanks to its mild analgesic and antispasmodic qualities - all of which has been well demonstrated in laboratory and clinical tests. Passion Flower can also be useful for a woman troubled with premenstrual tension. It is not as strong as Valerian in its actions, is more calming than sedating, and as such is a great alternative to tranquilizer drugs. Use 10 to 20 drops of the tincture or the same amount of the liquid extract in water. Alternatively take two capsules of the dried extract up to four times a day as needed. Where a woman might take Valerian at night just before bed, the best results from Passion Flower often come from taking it 2 to 4 times a day to calm nerves and make everything easier and less stressful. Chamomile Tea: Matricaria chamomilla. One of the nine herbs sacred to the Anglo Saxon god Wotan, chamomile was also much loved by the Romans. Its name Matricaria is derived either from the Latin word 'mater', meaning mother, or from 'matrix', meaning womb. It has for thousands of years been used as a woman's herb against painful menstruation, to calm anxiety and aid sleep - even to help build strong bones, since it contains a form of readily absorbed calcium. Chamomile is also a uterine tonic - something else that has been scientifically evaluated. It boasts many other therapeutic properties as well such as being antibacterial in its actions and good for skin. The easiest way to take chamomile is in the form of a tisane or tea by infusing 5 to 10 grams of the dried flowers in hot water before bed or whenever you need relaxation. Chamomile works particularly well when taken together with Passion Flower. Hops: Humulus lupulus. The flowers from this British herb are often used together with other remedies to treat everything from indigestion to calm nerves. Like Valerian, hops has a pronounced sedative effect, but is milder. Unlike Valerian, hops smells sweet, and can be used without concern for side-effects. You can use hops in the form of a tincture but by far the best way for sleep - particularly good for women who are awakened in the middle of the night and have trouble going back to sleep - is to drink hop tea, which you make before going to bed by steeping the flowers for ten minutes in hot water then straining and allowing to cool. Sit the tea - sweetened with honey if you like - by the side of your bed, so you can drink it when you awaken in the night. Also wonderful is a little pillow stuffed with dried hops blossoms, which you put under your neck when you go to bed, or if you awaken. Oatstraw: Avena sativa. The straw from oats has an ability to restore energy when nerves have been frayed, and for counteracting insomnia. It can help ease night sweats, calm anxiety, and even relieve headache. Again, stuff a little pillow with oat hulls or infuse them in hot water as with hops, and keep beside your bed through the night in case you need it.

Discover How Animal Protein Makes Your Tissues Stronger & Improves Health

The word protein literally means “primary substance.” It’s an appropriate name. For every tissue in the body, from brain to little fingernail, is built of and repaired by protein. Amino acids, the building blocks of protein, are central factors in most body processes too. They make antibodies against infection, create hormones and ensure you have enough haemoglobin in your red blood cells. Every enzyme has protein as its basic component. This is why we need good quality, clean protein from eggs, nuts, and organic, fermented, soy products if you are vegetarian. If you are not vegetarian, then fresh fish gleaned from clean waters, organic poultry, wild game, and organic meat from animals free to graze is ideal. THE ANIMAL QUESTION Whether we like it or not, the highest quality protein is animal-based. And the most important nutritional feature of both meat and fish is their cellular structure. For it is very similar to our own. Nutrients we absorb from animal proteins are easily transformed into our own tissue and blood. Even small amounts of top quality animal protein can be enormously strengthening to anyone deficient in strength and energy. In addition to being the best power foods available, all good quality animal protein boasts an abundance of minerals and trace minerals. SHUN FACTORY FARMING Not only is caged and physically restricted animal farming an abomination in relation to the horrific suffering it imposes. Such domestic meat and much farmed fish is laden with hormones, poisons and antibiotics. If you routinely eat large quantities of meat, you can end up not only with a high level of uric acid in your body, but with a tendency to form a lot of mucus and to build up toxicity in your own body. This is why when I eat meat—and I prefer fish or game—I eat only certified organic meat from free range animals. The difference in flavor is undeniable. Also, I know that the animals I’m eating have been carefully raised and are free of both excess fat and toxicity. When selecting meat or fish, there are two major considerations: Make sure it’s fresh, and as unprocessed as possible. Buy fresh fish and seafood instead of the processed forms, such as crab cakes or smoked and breaded fish. There’s no harm in having the odd slice of smoked salmon, provided it is naturally smoked— however, the more a fish is processed the fewer benefits it will bring for high level health. (And most smoked salmon has sugar added to it these days, so read labels carefully.) BLESSED OMEGA 3s If possible, add fish to your diet once or twice a week. For fish is rich in “pre-formed” omega-3 fatty acids—DHA and EPA. Omega-3 fatty acids are known to reduce the levels of triglycerides—blood fats characteristic of insulin resistance syndrome which can put you at risk of heart disease. Omega-3 fatty acids also spur fat burning, as well as lowering blood pressure and improving overall heart function. Often, flaxseed oil is promoted as a rich source of omega-3 fatty acids. And it is—at least in the sense that flax contains a great deal of linolenic acid, precursor to DHA and EPA. The problem is that, when you are relying on flaxseed for your omega-3 requirements, your body has to convert linolenic acid to DHA and EPA for this to be beneficial. Most people can’t make this conversion—especially if they have eaten a lot of trans-fatty acids, or an abundance of omega-6 fats, in the past. Also: Omega-3 from flax oil is a shorter chain fatty acid, which in some people is changed into arachidonic acid. When in excess, this causes inflammation. By contrast, EPA and DHA in fish oils are great anti-inflammatories. If you are overweight or insulin resistant, it is likely that your body cannot make this conversion, possibly because you, like most of us these days, have taken in an overabundance of omega-6 fatty acids in comparison to the omega-3s. That’s why taking a good fish oil is wise (see below for my favorite). MAKE IT FRESH The key to good fish is buying it fresh. Ask the person serving you which fish is the freshest, and what days of the week different kinds of fish arrive in the shop. You can tell a lot about the freshness of fish by its smell and look. Fresh fish does not smell fishy. It smells more like the salty bite of a sea breeze. If it’s a whole fish you are looking at, pull back its gills. They should be bright red. The moment they go pale pink or grey, you know the fish has been sitting in the shop too long. Try poking the flesh of the fish with your finger as well. If it springs back instead of forming an indentation, then you’re lucky enough to have a piece of fresh fish on your hands. Check out the eye of the fish, too. It should be dome-shaped and clear, not sunken or murky. GO WILD The meats we get today are a far cry from those our Paleolithic ancestors hunted. The closest you can come these days is wild boar, rabbit, buffalo, venison and kangaroo. These meats are higher in protein and lower in fat than the meat from domestically farmed animals. Where a piece of meat from wild game boasts about 22 grams of protein in each 100 gram portion, domestic meat can sometimes contain as little as 15 or 16 grams. Wild meat is also much lower in fat. The ordinary meat that you buy in the supermarket is six times as fatty and only about three quarters as rich in protein as that of game meat. That being said, all organic red meats like beef and lamb from grazed animals are excellent sources of zinc, a mineral that’s enormously important—not only for insulin balance but for the skin and the reproductive system. Free-range and organic meat is far better than factory farmed in every way. LISTEN TO YOUR BODY I was a vegetarian for twenty years of my life, and I believe that a vegetarian diet is ideal for some. In my mid thirties, however, I discovered that vegetarianism was not ideal for me. This may well have been because my ancestors, being Nordic, spent most of their lives living on fish, salted meat and whatever cabbage they could dig up from frozen ground. Our genetic makeup determines to a great extent what works for us and what doesn’t. When I added fish and game to my meals, my energy levels soared. I looked and felt better. Each of us is unique. This not only determines what kind of foods we thrive on; it also determines what kinds of foods are best for us at any particular time of our life. For instance, many women at menopause find they do much better by cutting meat out of their diet. Others discover just the opposite—that they need to add more animal protein. It’s a question of “suck it and see”. Following the principles of a good diet, explore what works for you. Don’t hesitate to shift from eating more fruit at one time of your life to more vegetables at another, more fish at another. The human body is always changing, as are our needs for various foods. I’d like to share with you a couple of my favorite recipes. Try them out and let me know what you think. If you have favorite protein recipes of your own, do send them to me. I will share them with others and of course credit you for them. CRUNCHY GREEN PRAWNS serves 4 When it comes to prawns, green means raw. These are the best. You can buy them fresh or frozen in every form—shelled, unshelled, whole, or heads removed. If you’re lucky enough to find fresh ones, make sure they really are fresh since, like other shellfish, prawns go off fast. Eat them the day you buy them. I like to eat them whole, partly because they are so beautiful and partly because I like the crunchy texture of the shells. I always eat the shells since the shells are filled with chitin—a protein substance which cosmetic manufacturers now use to strengthen skin from both within and without. Like most shellfish, prawns are rich in iodine and in the antioxidants zinc and selenium. Prawns are great for people who eat very little, because they are an easily-digested form of top quality protein. They are also a good source of calcium, iodine and the important omega-3 fatty acids, which not only protect the heart but offer good support to hormonal health, skin health and beauty. Crunchy Green Prawns can be cooked under a grill or on a barbecue. You can even flash fry them on a teppen yaki grill or in a heavy frying pan if you like. They are delicious hot. But you can also make them for a picnic and serve them cold. What You Need 750g of King prawns, uncooked. You may peel and de-vein them if you wish. 2 limes, cut in wedges 2 tablespoons of fresh coriander, chopped For the Marinade: 3–4 tablespoons of olive oil 1 tablespoon of spring onions, finely chopped 5 cloves of garlic, finely chopped 50g of fresh ginger, finely shredded A small handful of fresh coriander, chopped The juice and finely shredded zest of 2 small limes (if you can’t get limes then use 1 lemon) 2 tablespoons of sake, tamari or dry sherry 1/2 teaspoon of mustard seeds broken up with a mortar and pestle Coarse-ground black pepper to taste Snow pea sprout heads to use as a garnish (optional) Here’s How Wash the prawns carefully in cold water and then dry with a tea towel. Place all of the ingredients for the marinade, except the lime zest, chopped garlic and 1/4 of the chopped coriander into a food processor or blender. Purée to a paste. Pour into a bowl, add the garlic, the lime or lemon zest and the remaining chopped coriander and mustard seeds, then mix into the paste by hand. Place the prawns in the bowl and, using your hands, turn them over and over until they are covered with the paste. Put on to a flat glass dish and cover. Set it in a cool place—the fridge itself if it happens to be the middle of summer—for at least three hours. Cook on a teppen yaki grill, a barbecue or under a grill in the oven until they are crunchy. Serve with lime wedges. Don’t throw away any of the marinade—cooked or uncooked—that still remains. It is delicious to spread over the crunchy prawns. It takes only a couple of minutes a side to fry these and very little more under a hot grill or on a barbecue—all you want is for them to turn opaque. However you cook them, eat them with your fingers—shell and all. All sensuous food tastes better this way, but prawns especially. I serve them with a combination of basmati rice and wild rice—about half and half—and a bright green salad of wild rocket with whatever fresh herbs, from basil to lovage, that I can harvest from the garden or find at the market. AND FOR MY VEGETARIAN FRIENDS: CORIANDER ORGANIC TOFU Thanks to the intense flavor of coriander, this herb works well to enhance the bland flavor of tofu. This recipe goes well with steamed vegetables—especially broccoli—and kasha (steamed buckwheat). Make a tofu sandwich of it, or add this tofu to a salad to make it a one-bowl meal rich in protein and in plant factors for health. What You Need 400g of firm organic tofu (non-GMO) 2 tablespoons of olive oil or coconut oil 2” finger of fresh ginger, shredded fine 1/2 cup of fresh coriander, chopped fine 1 tablespoon of tamari 1 teaspoon of wild honey, or a pinch of granular stevia Sea salt and freshly-ground red pepper to taste Here’s How Cut the tofu crosswise into slices that are approximately 3/8 inch thick. Mix together all the other ingredients in a bowl, then dip each tofu slice into the mixture you have created. Heat a heavy frying pan grill or teppen yaki grill. Use enough olive oil or coconut oil on top of the grill so the tofu will not stick. Place the tofu on the grill, sprinkle with sea salt and freshly-ground red peppercorns, and cook at a high temperature until browned. Turn and brown again. Serve immediately as a tofu sandwich or in a tofu salad or simply as is, with loads of beautifully colored fresh vegetables. The whole cooking process takes no more than 3–5 minutes. The incidence of neural tube defects in babies born to the women who took the supplements was less than a quarter of what it was amongst those women who took no supplements. So remarkable were these results that they shook to the core FDA officials, who had insisted for generations that taking nutritional supplements is not only unnecessary but, can cause damage our health. Nevertheless, the FDA and CODEX continue to propagandize the ridiculous idea that “nutrition has no significance for health”. The notion that if vitamins and minerals are allowed on the market, they should only be permitted in ultra-low doses. As a result, month-by-month, clinically effective nutrients are being treated as “toxins”. The levels of nutrients they contain are being reduced. Many are being removed from public access in one country after another. There’s a wonderful way around all this which I strongly urge you to explore. Shun chemically made vitamins—which over 90% on the market are—and take food-state nutrients instead. Most vitamins you buy in shops or online are made from synthetic chemicals. They’ve been manufactured in a laboratory in a futile effort to match the molecular structure of naturally occurring vitamins and minerals found in our foods. As a result, they are chock full of chemically-made nutrients. Your body has been designed to absorb vitamins and minerals from the foods you eat. Manmade synthetics can never match natural molecular structures. In no way are they the same. Our bodies do not handle synthetics well. You can be taking a high-potency, man-made synthetic that somebody’s recommended, yet not effectively absorbing the vitamins and minerals it contains.
