“Our bodies are our gardens—our wills are our gardeners” Shakespeare One of the most powerful healing plants in the world originates in the dry, hostile environment of Siberia. For eons it was prized as a source of strength for Viking warriors, Russian cosmonauts having to endure the demands of space travel, and Olympic athletes. A beautiful perennial plant with pink, red or yellow flowers, it is called “Arctic Root” or “Golden Root.” Its proper name is Rhodiola rosea. If you don’t already make use of this incredible gift from nature, you don’t know what you’re missing. QUEEN OF ADAPTOGENS Rhodiola is the most versatile adaptogenic plant in the world. An adaptogen is a plant or herb which acts in non-specific ways to improve health and increase resistance to stress, without upsetting the body’s biological functions. Numerous studies carried out in France, Norway, Germany, Sweden and Russia confirm what has been known for centuries by shamans and wise woman healers: Rhodiola brings endless blessings to anybody using it. I could go on and on. The scientific research into this beautiful plant is voluminous and inspiring. I first learned of Rhodiola many years ago when Professor of Medical Science, Israel Brekhman—the much celebrated Russian research scientist in organic medicine and biologically active substances in Vladivostok—visited Britain. Brekhman’s career focused on the genetics of plants and herbs, and on improving health and wellbeing. It was he who first coined the word adaptogen. NON-TOXIC HEALING One of the wonderful things about Rhodiola is that it has a very low level of toxicity and very few side effects. (Since safety issues are as yet not available for pregnancy and lactation, however, it should be avoided in these circumstances.) There are many ways in which Rhodiola—which now grows in Greenland, Iceland, Canada and Alaska—as well as its native Siberia, can be used. One of the most surprising is this: If you can get hold of the plant itself (unfortunately in some countries, Rhodiola plants are not available because of agricultural import regulations), it will thrive in your garden. You can cook its shoots and leaves which are edible, prepare its roots as you would any starchy vegetable, serve its leaves raw in a mixed salad, and even serve its shoots prepared as you do asparagus. More about Rhodiola in a moment. Meanwhile, there are some important things you need to know about using herbs of any kind. NATURE’S MEDICINES Plants hold powerful medicine for men and women. To state such an obvious truth seems absurd, since every culture in the world from the beginning of human history has turned to herbs, trees, and other plants as medicine. Yet in our post-industrial world, we find ourselves in the absurd position of having to rediscover our medicinal and health-promoting heritage—not only by unearthing long neglected local practices, often passed on verbally from woman to woman, but also by investigating herbal traditions from other parts of the world: Tibet, China, India, Japan and Native America. The benefits of making nature’s medicinal plants a part of your day-to-day life becomes obvious when you realize that the origins of most drugs lie in plants. Using plants and herbs for strength and healing offers many advantages. First, their powers for enhancing wellbeing go far beyond their ability to alleviate symptoms. For centuries, women healers preferred to use the whole of most plants. They had no belief in the practice now propounded by today’s mainstream medicine which chooses to use isolated ingredients and make them into patented drugs. In every medicinal plant, there are two kinds of compounds, each of which has an important part to play in treatment. The first are the active ingredients—these are what capture the imagination of chemists and drug producers to make the biochemically twisted molecules that Big Pharma turns into patented drugs. The second are the compounds and substances which drug manufacturers ignore altogether—even seek to eliminate—but which good herbalists insist play a vital supportive role in the healing a particular herb can bring to the body. These compounds work synergistically with the active ingredients, making them more easily accessible to the body or dampening the effect of what are often very potent plant chemicals—helping to protect the body from side-effects. Some even help protect from overdose by causing nausea if the body's safe level of tolerance is passed. There are many different substances and compounds in plants and herbs which offer health-supporting abilities. The volatile oils for instance, the tannins, phenylpropanoids (like those in Rhodiola), alkaloids, bitters, glycosides, and flavonoids. WAYS AND MEANS You can take herbs in many different ways—as infusions, decoctions, syrups, tinctures, suppositories, capsules, and in baths, ointments or creams. You can grow your own herbs or buy them in bulk dried. Using the dried plant is by far the cheapest way to use herbs, since you can buy a large amount at a time very cheaply and make up your own infusions, decoctions, suppositories and ointments, as well as tinctures. You can even buy empty gelatin capsules and fill them with dried herb yourself. However, it is often easiest if you are a complete beginner to rely on good quality ready-made herbal products from a good supplier—whole herbs, herbs in capsules, herbal extracts and tinctures. Tinctures are made by using water and or alcohol to draw out a plant's chemical constituents and preserve them. They are taken in a little water. These are best either bought ready-made from a reputable supplier, or left until you have mastered the use of herbs in other ways, as each herb demands a specific ratio of water and alcohol to plant material. MEET THE SOUL OF A PLANT It is worth remembering that, just as people have different personalities, so do plants. Once you get to know the actions of various herbs—and the best way of doing this is to use them or to watch them work on other people—you begin to develop a feel for the character or soul of each plant. Eventually you develop a skill that enables you to call on the right plant or plants when you need their help. But it is important to remember that plants, such as Rhodiola, are slower acting than drugs, so you need to be patient. It is necessary to use most herbs for a few weeks before you come to experience its full benefits. That being said, I sometimes find a plant can will bring almost immediate relief too. One big advantage of using herbs is that many herbs, when taken steadily over a period of time, will do the job for which they were being taken so well that you no longer need to use them. Another important thing to remember when using herbs is that some work well in combination. Whatever herbs you are using, they need to be fresh, clean and either well-crafted or grown organically. Some herbs on the market today have been grown in countries where pesticides and herbicides are sprayed heavily. Others are not fresh or have been irradiated or are contaminated with chemicals. Often suppliers themselves are not even aware of how the dried plants have been handled. BACK TO RHODIOLA The active constituents of Rhodiola root are many. This is one of the reasons that this plant acts so powerfully in so many ways to benefit your health. The most important ingredients it contains include Rosin, Rosavin, Salidroside, and Tyrosol. Although Rhodiola can be prescribed by an herbalist as a tincture or extract, for many reasons, this plant is usually best taken in capsules. In no small part, this is because its taste in tincture form is far too intense for most people. For those of you who, like me, love to know the minutiae: A typical dose in tablet or capsule form for long-term administration is 360-600mg per day when standardized for 2.6 Rosavin, 180-300mg when standardized for 2% Rosavin, or 100-170 when standardized for 2.6 Rosavin. Some products list the Rosavin in milligrams, such as 6mg of Rosavin per 120 mg of Rhodiola root, or 12 mg of Rosavin per 240mg of Rhodiola root. These formulations are an even more robust 5% Rosavin content. Even so, such products provide a large margin of safety. WHAT YOU NEED TO KNOW Always read labels carefully. Always check out where any herb such as Rhodiola has been sourced. Make sure the raw materials it contains are the most active and desirable ingredients. Reject nutritional supplements of any kind that contain flow agents like magnesium stearate, which is made from stearic acid. It can inhibit the body’s ability to absorb nutrients via the digestive system. In truth, energy potential is still there within you. It just needs to be rediscovered and set free. Begin by listening to the whispers of your soul, and the rest will come naturally. I’d like to share with you my Ten Steps to Energy. They work. For some they have even been life-changing. So let’s get started… STEP ONE—GET INTO BODY Did you know that how you think and feel are inextricably linked to how well your body functions? Mind and body are integrated through our nerve pathways, hormones and chemical messengers. The first step, therefore, requires a real change of perspective. Start to see your body as not external to yourself: but as the physical expression of who you are. Decide you matter. Decide that you have a right to energy. You do. STEP TWO—RECORD IT As when embarking on any new journey, it helps to know where you’re starting from. So as you’re starting the energy journey, take note of where you are now. Start an energy diary. Try writing down a few sentences about how you think and feel, where you want to be, and record anything you think may be holding you back. Form a crystal clear vision of what you are seeking to achieve. The clearer your visualization, the easier it becomes to make high energy a reality. STEP THREE—FIND THE DRAINERS Unfortunately, our world is filled with external energy parasites. Environmental poisons—like pesticides, solvents, estrogens, heavy metals, junk foods. Seek out and spend time with the people whose sense of humor you love. Watch wonderful comedy movies like Dirty Rotten Scoundrels, Bowfinger, Roxanne. They will cheer you up endlessly and help you energize your life. STEP TEN—LOOK AHEAD We’ve now come full circle. Go back to your energy diary and the questions you asked yourself in step two. Have your answers changed? Set some more goals, and be specific. Ask yourself positive questions, and record answers when they come. Make a long-term energy plan featuring aspects of the other steps you found most helpful. Remember, the energy process is an ongoing journey. And it’s an amazing one. Enjoy it!

Everybody knows that if you can’t lose weight and keep it off, you need thyroid meds, right? Wrong! Thyroid drugs are most certainly not the answer. Common thyroid drugs like levothyroxine, but known by many other names too have long been used with little success in the treatment of underactive thyroid, Hashimoto's disease, enlarged thyroid gland, thyroid cancer, and myxedema. They are also prescribed on the false belief that they help weight loss in hypothyroid people who can’t shed excess fat. But it doesn’t work. Only small amounts of fat, if any, can be lost. Once thyroid hormones are stopped, fat is regained. And this is true even when thyroid medication is continued for years. By the way, Synthroid is now the fourth most prescribed drug in the United States. There can also be all sorts of negative consequences in allowing your body to be treated with these synthetic chemicals that can seriously interfere with your quality of life. For one, they compete with natural hormones that your thyroid gland is still producing. You see, it’s not feasible for any human body filled with synthetic chemicals to be tricked into responding to them as though they were bio-equivalent, despite the claims of drug companies and the medical establishment, who tell you that drugs used to treat your body are an identical equivalent. The standard medical model for the treatment of thyroid disorders is badly flawed. There are huge misunderstandings about causes and effective treatments for thyroid deficiencies, which, by the way, may now affect as many as 90% of women in the Western world. A great place to begin getting an understanding of all of this is by reading the work of Dr. David Brownstein, author of Overcoming Thyroid Disorders and Iodine: Why You Need It, Why You Can’t Live Without It (third edition). Brownstein is a leading expert in natural approaches to health and healing. He talks about something you need to know and probably have never been told: a major cause of thyroid malfunction, as well as many other conditions, is iodine deficiency. There will be more about this in a moment. In his books, his videos, and his DVDs, Brownstein shows how a natural holistic program can not only help transform hypothyroidism but also arthritis, chronic fatigue syndrome, fibromyalgia, Hashimoto’s disease, and many other conditions by using safe, natural therapies. His work can bring you reliable information on such things as: Natural thyroid hormone Bioidentical natural hormones Diet Vitamins and minerals essential for thyroid function Detoxification. Now, back to your thyroid. The thyroid has an enormous need for natural iodine. This was once readily available in our food supply, but it no longer is because of poor agriculture, GMO growing of foods, and common practices, including the spraying of dangerous substances such as mercury and aluminum on soils. An abundance of natural iodine is necessary for your thyroid’s biochemical structures. If you do not get enough of it, your thyroid can malfunction. And of course, one consequence of this malfunction is weight gain—which no amount of pharmaceutical thyroid drugs will ever be able to correct. Note that it is absolutely crucial to work with a knowledgeable healthcare practitioner who knows how to test for and reverse iodine deficiency, not just a doctor who will thoughtlessly prescribe drugs. It’s estimated that more than half of the world’s population is already at risk from iodine deficiency, which relates to many other illnesses, including cancer. With the nuclear fallout that has come from Fukushima and other sources where an iodine deficiency exists, the thyroid gland is most vulnerable to taking up dangerous radioactive iodine. When we eat and drink foods such as baked goods and soft drinks in plastic containers, take drugs, and are subjected to pesticides in the foods we eat, we become exposed to the bromine they contain. This also creates iodine deficiencies as well as increasing our risk of cancer. Meanwhile, with the decline in iodine-rich foods like seaweeds, fish, Himalayan salt, and eggs—not to mention the introduction of fluoridated water—virtually none of us are getting the iodine we need. By far the most effective treatment for low thyroid are the use of natural thyroid hormones and cofactors in desiccated form. Sadly, most doctors still refuse to prescribe them, despite the fact that these natural treatments made from bovine or porcine sources are available by prescription. Good quality nutritional supplements are also important for a healthy thyroid, including vitamin A, vitamin B complex with high levels of B-12, vitamin C, vitamin E, coenzyme Q-10, and the minerals magnesium, manganese, selenium, and zinc as well as natural iodine. Every cell in your body uses iodine. However, the federally defined Daily Value (150 micrograms) is way too low to help your overall health except to barely prevent goiter. If adjusting your diet and exercising more hasn't helped you reach a healthy body fat composition, it may well be that your thyroid is underperforming due to iodine deficiency. However, there is one quite remarkable supplement that is excellent for restoring levels of natural iodine to the body and is especially helpful in restoring thyroid functions. It is known as Iodoral. Dr Brownstein, whose clinical experience with it is extensive, recommends it highly. I can also recommend Iodoral from my own thyroid issues. At the age of 12, I was diagnosed as hypothyroid and prescribed the usual pharmaceutical. I was told that this would deal with this issue. I took the pills for exactly seven days and hated them. So I stopped taking them. Since then, I have never taken anything whatsoever to “treat” my own thyroid gland. Instead, I’ve learned how to eat organic natural foods and avoid cereals, grains, and sugars. This has stood me in good stead. However, I decided to explore the effect of taking Iodoral on my body in increasing my intake of iodine. The results have been extraordinary. I have more energy now than I have ever had. What Price Convenience

Our Western Diet is based on foods of convenience—the fast food items we buy at the local corner shop or supermarket. These products are gross distortions of the REAL foods which human beings have eaten throughout history...foods to which our bodies remain genetically adapted. Our ancestors did not have bread, sugar, junk fats and all the other nutritionally depleted pre-packaged, pre-cooked stuff that we do. They ate fresh wholesome foods. Palaeolithic man’s diet was high in wholesome fats, moderate in proteins, and rich in fiber, thanks to whatever vegetables and simple fruits they could gather. CHEAP AND NASTY The modern convenience foods on which we now feed depleted of natural fiber and filled with chemicals. They are manufactured from grain-based carbs, and altered milk products then riddled sugar and dangerous trans-fatty acids—oils which have been separated out from the foods from which they are taken, then chemically altered by solvents and heat processing. FOODS CAUSE ADDICTION Apart from the destructive power of GMO foods, which are not only destroying human health but the health of the planet, another major change has taken place: Today we also swallow a kaleidoscope of colorants, flavorings, additives and ‘enhancers’, not to mention pesticides, herbicides and fungicides, which our ancestors could never have imagined in their wildest dreams. We slurp down chemical pollutants with each sip of our diet cola, and every bite of our pre-cooked meals. Quite simply, this is the fast food diet that 95% of the Western world now lives on. And, next time you upbraid yourself for what you perceive to be your lack of willpower as you reach for yet another biscuit and feel guilty about it, let the guilt go. It does not belong to you. The denatured, degraded, food we eat bears the lion's share of blame, not only for the plague of obesity worldwide, but for food addictions and cravings that lead to illness and weight gain, the development of potentially fatal degenerative diseases, from heart disease and cancer to metabolic syndrome; Alzheimer’s disease; diabetes, and dozens more. DEGENERATION BEGINS It was Weston Price, early on in the century, who first brought the scientific community's attention to the devastating effects the rise of processed foods and the destructive ways in which they damage human health. Price, a dentist, traveled the world recording the changes in the shape of the jaw and teeth which take place slowly but inevitably as each culture discards its traditional dietary practices, based on real food, in favor of our more ‘civilized’ Western fare. Price's many studies—each of which lasted between 20 and 40 years—carefully plotted the onset of degenerative diseases. It is not surprising that, after living on a diet of simple whole plant foods rich in natural fiber and a health-giving synergy of nutrients and micro-nutrients throughout evolution, the human body continues to this day find the foods we eat now anathema to health. Our genes have been attuned to naturally grown, unprocessed foods for more than a million years. Our metabolic biochemistry as human beings is designed for it. They carefully documented the exact sequence of events which takes place when a people's diet changes from simple, primitive, real food to packaged fast foodstuffs. Stage One: The primitive, unprocessed diet of hunter-gatherers, complete with plenty of healthy fats, good quality proteins, plus vegetable and fruit-based carbohydrate is eaten. Degenerative diseases do not exist. Stage Two: Western diet is introduced. Obesity and diabetes become common among privileged groups able to afford foods of commerce, and degenerative diseases begin to appear. Stage Three: A culture's diet becomes “moderately Westernized”. Obesity becomes more widespread, as does constipation, haemorrhoids, varicose veins and appendicitis. Stage Four: Westernized diet is now widespread. Overweight and obesity are common in all social groups. So is heart disease, high blood pressure, diverticular disease, hiatus hernia, cancer and other Western diseases. FRAGMENTED “FOODS” Like our soils, the industrially manufactured foods we eat today—from biscuits and pasta to pre-cooked convenience meals—have quite literally been taken to pieces. High-tech food production works something like this: To create a great variety of palatable foods from raw materials, you have to reduce the foodstuffs—grains and seeds, vegetables and legumes—to simple, malleable ‘nuts and bolts’ that lend themselves to whatever manipulations you want to perform on them. Take soya beans for instance. They were once considered an excellent source of complete protein as valuable as meat or eggs—more valuable in many ways, since they are so cheap. Nowadays more than 95% of soybeans grown worldwide are genetically modified. Food manufacturers still take whole soya beans, in which 30% of each bean is protein, and process them physically and chemically to extract this protein and make it ready to accept dyes and flavorings. hen they alter its texture through more processing until eventually it becomes ersatz meat. This end product—from which soy-based foods from tofu to soya milk are made—is a long way from the natural soya bean. In the course of such manipulations the little soya bean, which, pre-GMO devastation and high processing, once offered asynergy of nutrients, complex carbohydrates, essential fatty acids and fiber. By now however it has now been turned into a highly concentrated artificial material. During the operation, vitamins and minerals are destroyed. The soya bean's proteins and natural fatty acids have been denatured and chemically altered into new forms, many of which are not usable by the body. The soya has also lost most of its fiber too—a vital part of any food's health-promoting wholeness, and something absolutely essential for protection from degenerative diseases and obesity. To this artificial “food”, manufacturers then add a lot of phoney colors and flavors. Canadian expert in food science, Ross Hume Hall, puts it rather well when he says: "The product contains the same number of calories as the original soya protein, but it now consists of a set of naked molecules completely divorced from any natural context." The same is true of the way in which cereals and grains are processed. NUTRITIONAL DESTRUCTION From milk to meat to garden peas—whatever food is involved—processing destroys nutrients. According to official government handbooks, 50-70% of vitamin B6 is lost when meats are processed. 50-90% of folic acid—a vitamin of particular importance to the functioning of nerves and the actions of hormones, especially in the female body—is shed when grains are milled, while more than 80% of the mineral magnesium disappears in the same process. The multi-national food industry covers the packaging of its products with endless ‘nutritional’ information, which would have you believe that any goodness lost in processing can be made up for by ‘enriching’. Enriching is just another chemical whereby a few cheap vitamins and minerals in synthetic form are pumped back into the now fragmented food. It is categorically impossible to restore the health-giving power of wholeness to any food which has been fragmented in this way. BIG COVER-UP Similar nutrient losses happen during other phases of food handling—artificial ripening, transport and storage. Store asparagus for a week and it loses 90% of its vitamin C. Keep grapes for the same time, and they shed 30% of their B vitamins. Freeze meats and you can lose as much as 50% of two important B vitamins— riboflavin and thiamine. These are just a few examples of nutrient losses which occur every day. They are only the tip of the iceberg when it comes to the ways in which modern food handling and manufacturing processes have created highly concentrated, calorie-dense foods filled with masses of sugar (more about this in future entries) which are dangerously destructive of health, and promote both weight gain and rapid degeneration of body and mind. REAL FOOD CREATES REAL HEALTH OK, so where do you go from here? It is easy to change your food-buying habits once you clear your cupboards of the manufactured rubbish we all collect. You’ll find the healthiest, freshest, and most natural foods for lasting health at the outside edges of your local supermarket. These include crunchy fresh vegetables and fruit, fresh game and meats, seafoods and eggs. Skirt the edges, steer clear of the middle, and you’ve got the secret to becoming a successful modern-day hunter-gatherer. Remember this: Natural wholesome foods are perishable. They have to be replaced often, unlike the ready-in-a-minute, pre-made stuff that you find in the inner aisles. You will be shopping “at the edge” in another way too: You’ll be looking for foods as close as possible to those that our ancestors ate—with a wide variety of crunchy, living vegetables, especially bright-colored ones. Foods with a long shelf life don’t belong in your body. Processed high-carb foods often have a very long shelf life. This makes them great sales material for food manufacturers and retailers, since they can sit on the shelves for a long time, and are cheap to produce with high profit margins. Virtually all convenience foods and fast foods have been whipped up out of processed grains and cereals, masses of sugar in all forms, junk fats, chemical additives. Avoid them for your sake, as well as the sake of your family. You’ll be able to turn your lives around in short order. Find our for yourself. Try it.

The word protein literally means “primary substance.” It’s an appropriate name. For every tissue in the body, from brain to little fingernail, is built of and repaired by protein. Amino acids, the building blocks of protein, are central factors in most body processes too. They make antibodies against infection, create hormones and ensure you have enough haemoglobin in your red blood cells. Every enzyme has protein as its basic component. This is why we need good quality, clean protein from eggs, nuts, and organic, fermented, soy products if you are vegetarian. If you are not vegetarian, then fresh fish gleaned from clean waters, organic poultry, wild game, and organic meat from animals free to graze is ideal. THE ANIMAL QUESTION Whether we like it or not, the highest quality protein is animal-based. And the most important nutritional feature of both meat and fish is their cellular structure. For it is very similar to our own. Nutrients we absorb from animal proteins are easily transformed into our own tissue and blood. Even small amounts of top quality animal protein can be enormously strengthening to anyone deficient in strength and energy. In addition to being the best power foods available, all good quality animal protein boasts an abundance of minerals and trace minerals. SHUN FACTORY FARMING Not only is caged and physically restricted animal farming an abomination in relation to the horrific suffering it imposes. Such domestic meat and much farmed fish is laden with hormones, poisons and antibiotics. If you routinely eat large quantities of meat, you can end up not only with a high level of uric acid in your body, but with a tendency to form a lot of mucus and to build up toxicity in your own body. This is why when I eat meat—and I prefer fish or game—I eat only certified organic meat from free range animals. The difference in flavor is undeniable. Also, I know that the animals I’m eating have been carefully raised and are free of both excess fat and toxicity. When selecting meat or fish, there are two major considerations: Make sure it’s fresh, and as unprocessed as possible. Buy fresh fish and seafood instead of the processed forms, such as crab cakes or smoked and breaded fish. There’s no harm in having the odd slice of smoked salmon, provided it is naturally smoked— however, the more a fish is processed the fewer benefits it will bring for high level health. (And most smoked salmon has sugar added to it these days, so read labels carefully.) BLESSED OMEGA 3s If possible, add fish to your diet once or twice a week. For fish is rich in “pre-formed” omega-3 fatty acids—DHA and EPA. Omega-3 fatty acids are known to reduce the levels of triglycerides—blood fats characteristic of insulin resistance syndrome which can put you at risk of heart disease. Omega-3 fatty acids also spur fat burning, as well as lowering blood pressure and improving overall heart function. Often, flaxseed oil is promoted as a rich source of omega-3 fatty acids. And it is—at least in the sense that flax contains a great deal of linolenic acid, precursor to DHA and EPA. The problem is that, when you are relying on flaxseed for your omega-3 requirements, your body has to convert linolenic acid to DHA and EPA for this to be beneficial. Most people can’t make this conversion—especially if they have eaten a lot of trans-fatty acids, or an abundance of omega-6 fats, in the past. Also: Omega-3 from flax oil is a shorter chain fatty acid, which in some people is changed into arachidonic acid. When in excess, this causes inflammation. By contrast, EPA and DHA in fish oils are great anti-inflammatories. If you are overweight or insulin resistant, it is likely that your body cannot make this conversion, possibly because you, like most of us these days, have taken in an overabundance of omega-6 fatty acids in comparison to the omega-3s. That’s why taking a good fish oil is wise (see below for my favorite). MAKE IT FRESH The key to good fish is buying it fresh. Ask the person serving you which fish is the freshest, and what days of the week different kinds of fish arrive in the shop. You can tell a lot about the freshness of fish by its smell and look. Fresh fish does not smell fishy. It smells more like the salty bite of a sea breeze. If it’s a whole fish you are looking at, pull back its gills. They should be bright red. The moment they go pale pink or grey, you know the fish has been sitting in the shop too long. Try poking the flesh of the fish with your finger as well. If it springs back instead of forming an indentation, then you’re lucky enough to have a piece of fresh fish on your hands. Check out the eye of the fish, too. It should be dome-shaped and clear, not sunken or murky. GO WILD The meats we get today are a far cry from those our Paleolithic ancestors hunted. The closest you can come these days is wild boar, rabbit, buffalo, venison and kangaroo. These meats are higher in protein and lower in fat than the meat from domestically farmed animals. Where a piece of meat from wild game boasts about 22 grams of protein in each 100 gram portion, domestic meat can sometimes contain as little as 15 or 16 grams. Wild meat is also much lower in fat. The ordinary meat that you buy in the supermarket is six times as fatty and only about three quarters as rich in protein as that of game meat. That being said, all organic red meats like beef and lamb from grazed animals are excellent sources of zinc, a mineral that’s enormously important—not only for insulin balance but for the skin and the reproductive system. Free-range and organic meat is far better than factory farmed in every way. LISTEN TO YOUR BODY I was a vegetarian for twenty years of my life, and I believe that a vegetarian diet is ideal for some. In my mid thirties, however, I discovered that vegetarianism was not ideal for me. This may well have been because my ancestors, being Nordic, spent most of their lives living on fish, salted meat and whatever cabbage they could dig up from frozen ground. Our genetic makeup determines to a great extent what works for us and what doesn’t. When I added fish and game to my meals, my energy levels soared. I looked and felt better. Each of us is unique. This not only determines what kind of foods we thrive on; it also determines what kinds of foods are best for us at any particular time of our life. For instance, many women at menopause find they do much better by cutting meat out of their diet. Others discover just the opposite—that they need to add more animal protein. It’s a question of “suck it and see”. Following the principles of a good diet, explore what works for you. Don’t hesitate to shift from eating more fruit at one time of your life to more vegetables at another, more fish at another. The human body is always changing, as are our needs for various foods. I’d like to share with you a couple of my favorite recipes. Try them out and let me know what you think. If you have favorite protein recipes of your own, do send them to me. I will share them with others and of course credit you for them. CRUNCHY GREEN PRAWNS serves 4 When it comes to prawns, green means raw. These are the best. You can buy them fresh or frozen in every form—shelled, unshelled, whole, or heads removed. If you’re lucky enough to find fresh ones, make sure they really are fresh since, like other shellfish, prawns go off fast. Eat them the day you buy them. I like to eat them whole, partly because they are so beautiful and partly because I like the crunchy texture of the shells. I always eat the shells since the shells are filled with chitin—a protein substance which cosmetic manufacturers now use to strengthen skin from both within and without. Like most shellfish, prawns are rich in iodine and in the antioxidants zinc and selenium. Prawns are great for people who eat very little, because they are an easily-digested form of top quality protein. They are also a good source of calcium, iodine and the important omega-3 fatty acids, which not only protect the heart but offer good support to hormonal health, skin health and beauty. Crunchy Green Prawns can be cooked under a grill or on a barbecue. You can even flash fry them on a teppen yaki grill or in a heavy frying pan if you like. They are delicious hot. But you can also make them for a picnic and serve them cold. What You Need 750g of King prawns, uncooked. You may peel and de-vein them if you wish. 2 limes, cut in wedges 2 tablespoons of fresh coriander, chopped For the Marinade: 3–4 tablespoons of olive oil 1 tablespoon of spring onions, finely chopped 5 cloves of garlic, finely chopped 50g of fresh ginger, finely shredded A small handful of fresh coriander, chopped The juice and finely shredded zest of 2 small limes (if you can’t get limes then use 1 lemon) 2 tablespoons of sake, tamari or dry sherry 1/2 teaspoon of mustard seeds broken up with a mortar and pestle Coarse-ground black pepper to taste Snow pea sprout heads to use as a garnish (optional) Here’s How Wash the prawns carefully in cold water and then dry with a tea towel. Place all of the ingredients for the marinade, except the lime zest, chopped garlic and 1/4 of the chopped coriander into a food processor or blender. Purée to a paste. Pour into a bowl, add the garlic, the lime or lemon zest and the remaining chopped coriander and mustard seeds, then mix into the paste by hand. Place the prawns in the bowl and, using your hands, turn them over and over until they are covered with the paste. Put on to a flat glass dish and cover. Set it in a cool place—the fridge itself if it happens to be the middle of summer—for at least three hours. Cook on a teppen yaki grill, a barbecue or under a grill in the oven until they are crunchy. Serve with lime wedges. Don’t throw away any of the marinade—cooked or uncooked—that still remains. It is delicious to spread over the crunchy prawns. It takes only a couple of minutes a side to fry these and very little more under a hot grill or on a barbecue—all you want is for them to turn opaque. However you cook them, eat them with your fingers—shell and all. All sensuous food tastes better this way, but prawns especially. I serve them with a combination of basmati rice and wild rice—about half and half—and a bright green salad of wild rocket with whatever fresh herbs, from basil to lovage, that I can harvest from the garden or find at the market. AND FOR MY VEGETARIAN FRIENDS: CORIANDER ORGANIC TOFU Thanks to the intense flavor of coriander, this herb works well to enhance the bland flavor of tofu. This recipe goes well with steamed vegetables—especially broccoli—and kasha (steamed buckwheat). Make a tofu sandwich of it, or add this tofu to a salad to make it a one-bowl meal rich in protein and in plant factors for health. What You Need 400g of firm organic tofu (non-GMO) 2 tablespoons of olive oil or coconut oil 2” finger of fresh ginger, shredded fine 1/2 cup of fresh coriander, chopped fine 1 tablespoon of tamari 1 teaspoon of wild honey, or a pinch of granular stevia Sea salt and freshly-ground red pepper to taste Here’s How Cut the tofu crosswise into slices that are approximately 3/8 inch thick. Mix together all the other ingredients in a bowl, then dip each tofu slice into the mixture you have created. Heat a heavy frying pan grill or teppen yaki grill. Use enough olive oil or coconut oil on top of the grill so the tofu will not stick. Place the tofu on the grill, sprinkle with sea salt and freshly-ground red peppercorns, and cook at a high temperature until browned. Turn and brown again. Serve immediately as a tofu sandwich or in a tofu salad or simply as is, with loads of beautifully colored fresh vegetables. The whole cooking process takes no more than 3–5 minutes. We are poised at the beginning of a profound revolution in health. It encompasses long-lasting weight control, drug-free ageless aging and protection from degenerative diseases. Until recently, the genuine research findings which are fueling this revolution have been hidden from us by a dark cloud consisting of outright lies, false medical and government directives and corporate greed. For the past 60 years, we have been fed dangerous, inaccurate information in regard to the causes of heart disease, obesity, mental disorders, and other widespread degenerative conditions—from diabetes to cancer and Alzheimer’s, as well as emotional and mental problems. As a consequence, we have experienced an exponential rise in long-term degenerative conditions, a massive dependence on pharmaceutical drugs, and dangerously inaccurate information about what constitutes good nutrition. I’ve just posted on the lesliekenton.com site two videos of programs aired over ABC News in Australia. Do watch them. They could be life-changing for you and your family. I’ll give you a link to them at the bottom. THE TRUTH WILL OUT Here’s what’s important for you to know: The guidelines about health we have been given in the decades following World War II have been wrong. For example, there is NO correlation between high cholesterol plaque formation and heart disease. Second, saturated fats are good for us. Third, statin drugs which are commonly prescribed to lower cholesterol are dangerous. For generations, we’ve been told that “saturated fat is a prime cause of heart disease.” This theory, known as the ‘lipid hypothesis’, was concocted 60 years ago by a number of mainstream scientists, including a physiologist named Ancel Keys, whom I knew personally. Keys’ totally inaccurate “revelations” about the dangers of eating saturated fats were based on bogus research. Yet they earned him a cover on Time Magazine. Other erroneous research, which in truth amounted to little more than “best guesses”, were also accepted as truths by government, the medical establishment and the media, even though several well researched studies showed clearly that they were also wrong. This is how the false notion that “eating fat causes heart disease” became accepted worldwide and it has endured for more than half a century. BIG FAT LIES As award-winning journalist Gary Taubes has pointed out, “In the 1970s and 1980s the US government spent half a billion dollars trying to prove that dietary fat causes heart disease and they couldn’t do it.” Taubes is a courageous science writer. He first wrote about the public fat deceptions in a New York Times magazine article in June of 2002, called “What if It’s All Been a Big Fat Lie?” Since then, he has written two superbly researched books, in relation to this issue as well as other massively inaccurate beliefs that have also been foisted upon us including the notion that eating a low-fat, high-carb diet is the best way to stay healthy. For five decades, governments and health agencies in the United States and elsewhere have pontificated about what we should eat to prevent degenerative diseases. Most of us have done our best to follow their advice. In doing so, we have become sicker and fatter with each decade that passes. Of course, the powers-that-be still insist that this is all our fault. They tell us that this is because we have not been following their advice carefully enough. So their “best guess” advice, concocted in error all those years ago, still goes on harming millions of people. THE DECEPTIVE 70S The tale continues: After high-level government discussions and consultations about what diet the majority of Americans should eat for health, the McGovern Committee in the United States published nutritional guidelines which, they told us, would “combat cancers, heart disease, high-blood pressure, obesity and diabetes.” Hearings for Senator McGovern’s Senate Select Committee took place between 1976 and 1980. And it was clear right from the start that the outcome would be a bogus recommendation to reduce fat and cholesterol and eat plenty of carbohydrates for energy—despite the fact that valid scientific research had shown quite clearly that both of these recommendations were just plain wrong. Before long, the US government issued their skewed ‘Dietary Guidelines for Americans.’ Their advice boiled down to was this: Replace natural dietary fats (which we humans have been eating for millions of years and which the body handles with ease) with high doses of carb-laden grains, sugars and cereals and use lots of polyunsaturated fats. Then the now infamous U.S. “Dietary Recommendations Pyramid” came along. It urges us to eat as many as 11 portions of bread, cereal, rice and pasta a day. Like obedient citizens, we ate porridge, toast and cereal for breakfast, munched our way through a bagel at 11 o’clock, and downed a sandwich, pizza or pasta for lunch. At dinner, along with our meat and potatoes, or rice and beans, we indulges in a roll or two to make sure we got the 10 carb servings they recommended to us believing that we were living on a healthy diet. Just in case you think these absurd directives only affected the lives of Americans, think again. The rest of the world—with a few exceptions such as France and China—still follow US government directives with amazing slavishness. HOW TO AGE FAST A diet high in cereals, grains and sugars (which 90% of the Western World still consumes) is not only a prescription for obesity—it’s a fast track to rapid aging and degenerative diseases. Grains and sugars in excess lower energy levels, create cravings and addictive eating while encouraging a myriad of long-term health issues. TRUTH ABOUT STATINS Then there is the issue of statins. I was stunned when I learned about the new guidelines just issued by the American Heart Association and American College of Cardiology. These bodies are now encouraging doctors to prescribe statin drugs to well people. The so-called medical experts who issued these directives insist that all healthy people be given statin drugs as a “preventative against possible future illness.” In effect they are keen to see one third of all adults taking statins. One in four Americans over 45 are already on statins, despite more than 900 studies reporting dangerous side effects from these drugs. Side effects range from heightened risks of cancer and diabetes to sexual problems, neuropathy and liver dysfunction to immune system suppression—even a higher risk of cataracts. In Britain, between 6 and 8 million people take statin drugs. If the new directives are accepted by the US and UK medical establishment—as they are likely to be—the numbers of men and women being prescribed statins will become legion. WHY ARE THEY USED Statins are a group of drugs that commonly prescribed to lower cholesterol levels by inhibiting the enzyme HMG-CoA reductase, which plays a central role in the production of cholesterol in the liver. They have many different names: Lipitor, Lescol, Mevacor, Altocor, Zocor and so on. Statins are given to patients on the assumption that they will lower the risks of heart attacks and strokes. Meanwhile, a recent study in the Journal of Cancer Epidemiology, “Biomarkers & Prevention” by Jean A McDougall and her team, showed that long-term use of statins increases the risk of both lobular and ductal breast cancer in women between 55 and 74. In the next few minutes, I want to share with you the real cause of most food addictions. First let me tell you, they are not your fault. I’ve spent 7 years mentoring men and women throughout the world to shed excess fat and keep it off permanently. During this period, I made an astounding discovery about the common reason for almost all uncontrollable food cravings, as well as what you can do to end the suffering they can bring. First, a word of warning: What you will learn in the next few minutes may well blow your mind. Addictive eating makes you feel powerless. You’ve been taught to hate yourself for being “weak willed”. You feel at the mercy of some force that seems impossible to resist. So you go on and off slimming regimes, take diet pills, lose weight temporarily only to gain it back soon afterwards. OK. It’s time to lay aside all your guilt, shame and self-criticism, as well as the fear that you have some kind of “emotional eating disorder.” To my amazement, what I have found out is this: an inability to control appetite no matter how hard you try is triggered by monstrous visitors from the underworld who have invaded your body. Food addictions, cravings, hopelessness and self-recrimination are the result of an overgrowth of Candida albicans. These are parasitic yeasts and fungi. These strange and powerful organisms feed on sugar as well as anything you eat that turns into sugar. This includes grains, cereals, fast foods, and convenience foods—all of which they thrive on. The goal of Candida is to control your body so they get their sugar fix. Next time you find yourself craving that piece of cake or reaching for a sugary drink, stop and remember this. It is not YOU who is craving that piece of cake or chocolate. It’s the yeasty beasties who are after sugar in any form for their continued survival in your body. Amazing? It certainly amazed me to learn this fact. Then, I spent two years learning about the behavior of these darkly hidden organisms, whose numbers are legion, and discovering how to help you clear them from your body. More about this in a moment. When Candida invades your body en masse, it distorts brain functions and can produce endless miseries. It screws up your emotions. It can even undermine your sense of personal power, so that you don’t feel you’re in control of your life. The chemical products that Candida pours into your body through the fermentation process by which it lives and spreads contain high levels of ethanol—plain old alcohol. This is why there are many cases on record of people who do not drink alcohol, yet live in a state of drunkenness which alters thought patterns, disturbs consciousness and creates many emotional and physical disorders. When the alcohol produced by Candida begins to break down in your body, this produces acetaldehyde—a chemical six times more toxic to the brain than ethanol itself. Acetaldehyde insidiously interferes with brain functions, causing damage to neurological structures. Let me share with you just a few of the symptoms experts have connected with an overgrowth of Candida albicans: Weight gain Chronic fatigue from impaired metabolism Brain and nervous system dysfunction Self-blame, shame, guilt and fear Headaches Poor memory, fuzzy thinking, inebriation Heart problems—rapid pulse rate, palpitations Vaginitis and lack of bladder control—which can lead to frequent urination, itchy rashes and vaginal thrush Stomach troubles: diarrhea, bloating and gas, gastritis, gastric ulcers, constipation Allergic reactions of many kinds Until the past decade, few doctors believed that Candida could invade the body’s tissues. Now we know it can do this with ease. Like every primitive microorganism, Candida has a powerful will to survive. It can breach normal defence systems to enter through skin and digestive tract, decrease the level of protective white blood cells, and invade the deep tissues of the body including the bloodstream. Medical tests for Candida are notoriously unreliable, and medical diagnosis of chronic Candidiasis is virtually impossible to make. Few physicians as yet even understand it. It is the body’s biological terrain that has to be restored to health for you to eliminate Candida from your system. This is what an effective anti-Candida program must do for you.
