In the next few minutes, I want to share with you the real cause of most food addictions. First let me tell you, they are not your fault. I’ve spent 7 years mentoring men and women throughout the world to shed excess fat and keep it off permanently. For decades I’ve warned men and women not to take calcium supplements—whether in pill form or by drinking and eating many cows’ milk products. All sorts of well-formulated scientific studies now confirm that such advice is right. Having long been bombarded with ill begotten misinformation about calcium it is time we learned some simple truths. For instance, supplementing your diet with calcium can not only be toxic to your body: It may even shorten your life. DANGERS OF TOO MUCH CALCIUM Thomas E Levy, M.D. is one of the world’s leading experts in vitamin C and antioxidants used to treat and protect against a myriad of medical conditions and degenerative diseases. A board-certified cardiologist whose work I have long admired, Levy has also written an excellent book, Death by Calcium, which I urge every man and woman who cares about health and truth to read. Here are a few surprising truths you need to know about calcium: All degenerative diseases, from heart disease to cancer and Alzheimer’s, show increased levels of calcium inside the cells where they do not belong. As calcium deposits both inside and outside the cells increase, this raises the chance of malignancies and encourages the development of cancers. A healthy diet based on organic fresh fruits, vegetables and protein foods can supply all the calcium your body will ever need, so long as you are getting plenty of sunlight or taking a good quality vitamin D3 supplement. Women who have the highest calcium consumption have a death rate two and a half times higher than those with a lower consumption of calcium, according to a long term study of 61,433 women followed over a period of 19 years. We have long, wrongly, been urged to supplement our diet with calcium to avoid osteoporosis. Excess calcium circulating in the blood is far more dangerous than high cholesterol when it comes to strokes and heart disease. Excess calcium over time, without adequate magnesium, sets the stage for the formation of atherosclerotic plaque build-up in the arteries. THE BOTTOM LINE The proofs for all this and much more are overwhelming. Get your calcium from fresh, organic vegetables and a healthy diet while shunning packaged convenience foods, sugars, grains and cereals, and you’ll not have to worry about doing it wrong ever again. Each year we hear about some “deadly” new strain of flu. The powers-that-be incessantly spread fearful propaganda about their dangers. So much so that vaccination has now become widespread from cradle to grave. Despite all the media hype, we know little about the long-term consequences of most inoculations being forced upon us today. We do know that some of these vaccines provoke illnesses they are supposed to be preventing. Meanwhile, what few are aware of as yet is this: Microchip implants have become so small now that they can be, and frequently are, injected direct into the human body via a hypodermic needle while a vaccination is being given. This is without consent. Many are injected into the bodies of newborn babies. There the implant remains. Thanks to its presence in the body, with the help of satellites, any implanted person can potentially be tracked anywhere on the planet, since these minute implants respond to low-frequency radio waves. Enough about these questionable high-tech practices. When it comes to prevention and treatment, I’ll opt for nature power every time. Simple herbs work better and are far safer. They keep me from being laid low by illness even when people all around me are dropping like flies. NATURE’S WAY If you are generally healthy, yet lead a stressful lifestyle, the occasional cold is simply your body’s way of getting rest and clearing out toxins. However, if you find yourself spending most of the winter with your nose in a handkerchief, then it is time to take preventative action. Both colds and flu are viruses. There are many plant friends that can help protect from them. Viruses cannot replicate themselves without entering your own cells and altering their function. If you can prevent a virus invading your cells, you will stop cold and flu in their tracks. Giving your immune system a boost for the colds and flu season is the key to doing this. Eat well—plenty of fresh vegetables and some low-glycemic fruit, and cut out all the packaged convenience foods. They are worthless when it comes to protecting or enhancing your health. AT FIRST SNIFFLE The moment you feel you may be coming down with something, it’s time to listen to your body. You might like to stop eating cooked food and go raw. In such circumstances, I often don’t eat anything at all—just take live, fresh organic juices like carrot, spinach, apple, celery, kale—whatever I have in the house or can pick up at the market. Animals stop eating when they feel unwell. So do children. The body needs all its strength to get rid of the invasion. Trust this. Boost your immunity by wrapping yourself in your favorite blanket, watch your favorite film or listen to music you like. Have a glass of juice or, if you prefer something warm, a bowl of tonic soup. Remember, your body is trying to clear itself of stuff that does not belong in it. Make time to let the clearing take place. GOOD OLD VITAMIN C Remember the discoveries of two Nobel Prize winners—back when the Nobel Prize still meant something: Begin by taking at least 4 to 8 grams of vitamin C a day. This may sound excessive, but if you are under-the-weather or your immune system needs a boost, you will soak up vitamin C like blotting paper. It’s worth remembering that we don’t make our own vitamin C like other animals. If we were goats, we would be making 5 grams of vitamin C per day or more for ourselves. The body simply flushes out any vitamin C it doesn’t need. If you find your bowel movements are loose, reduce the amount you are taking a little. You can rest assured that your cells are being adequately flushed in ascorbic acid. Look for a supplement that has bioflavonoids in it as well. And if you have a delicate tummy, go for a brand that’s “buffered.” Personally, I take 3 grams of Vitamin C 3 or 4 times a day when I feel a cold or flu threatening, until 2 days after all symptoms have disappeared. SWEET PROTECTION Astragalus is the root of the yellow vetch plant. Unlike many herbs, it actually tastes good. Creamy yellow, it’s a favorite among the Chinese for strengthening digestion, overcoming chronic weakness, and enhancing wound-healing. Astragalus brings deep strength to the immune system, increasing the number and quality of white blood cells used to fight infection. It even boosts the production of interferon. This is why it is often used with HIV and cancer patients whose immune systems have been undermined by chemotherapy or radiation. Astragalus is also an adaptogen, a plant which is often called a ‘medicine for well people’ that, taken over time, brings strength and support to the whole body. Three cups of astragalus tea a day helps ward off colds and flu, so long as you take it consistently every day during the cold season. Chinese medicine defines ailments as being either ‘hot’ or ‘cold’ and herbs as being ‘warming’ or ‘cooling’. Astragalus is a warming herb to be used with ‘cold’ illness. Use it for protection as well as an immune boost after any bout of cold or flu. Organic astragalus is increasingly available in herb stores dried and shredded. Bought from Chinese pharmacies and Asian markets, dried astragalus root looks like ice-lolly sticks. It is cheap and simple to prepare, and it makes a mild, sweet tea. Look for sticks which are long and thick, firm yet bendable with a few striations. They should have a sweet taste when you chew on them. DRINK ASTRAGALUS TEA I make enough for three or four cups at a time. This recipe can make a sweet chilled drink, but I prefer to reheat mine and drink it warm. Here’s how: Put 6 sticks of astragalus, 3 pieces of licorice root sticks and a 2 inch piece of fresh ginger, peeled and sliced thinly, into a saucepan (not aluminum or non-stick). Pour 1 ½ liters (just over 2 ½ pints) of cold water over the herbs and bring the mixture to the boil. Reduce the heat and simmer for 20 minutes. Take it off the heat and allow to stand for 10 minutes. Strain and keep in the fridge. (You can also buy astragalus herb tea in a packet, which you can prepare as you would a cup of ordinary tea.) ELDERBERRIES FROM THE GARDEN Elderberries too make an excellent healing tea. It has been shown in trials to help protect from infection. If ever you do succumb to flu or a cold, elderberry tea can shorten the length of time you are ill. If you are one of those people who tend only to be recovering from one illness when another hits, these wonderful berries can help break the chain and give you time to recover completely. The way it works against flu is fascinating: The flu virus breaks into healthy cells by piercing them with spikes on its surface. Elderberry appears to make these spikes useless, so defeating the virus before it has had a chance to do any damage. You can make your own Elderberry tea from the garden. Here’s how: Put 2 tablespoons of crushed fresh or frozen elderberries in a tea pot. Pour three cups of boiling water over them and steep for 5 minutes. Strain and drink. JAPANESE HELPERS Shiitake and Maitake mushrooms not only taste delicious, they contain excellent immune strengthening compounds, among them the compound lentinan. This phytochemical helps lower elevated cholesterol. It also boasts anti-aging and anti-tumor properties. You can take Shiitake and Maitake in capsules or as extracts, but I prefer eating the mushrooms themselves. I soak the dried mushrooms and put them in salads, soups and stir-fries. All of these will help you to ward off colds if you make them a part of your daily life. You won’t get their full benefits, however, unless you support your body with a good supply of all the nutrients it needs for good health. HOW TO LIVE A COLD-FREE LIFE 1. Cut back or eliminate completely cereal-based, grain-based and sugar-based carbs. 2. Eat a large, raw salad once a day. This is the best possible way of enabling your body to rebalance and rebuild itself, restoring metabolism to its peak level. Choose high-quality real foods. Shun all packaged convenience stuff. 3. Eat plenty of ‘high water’ foods. Your body is 70% water. For it to cleanse itself properly, it’s useful to make at least 50-75% of your daily diet high-water foods—fresh, low-glycemic fruit and vegetables—most of them eaten raw. This is one of the easiest stay-healthy guidelines to keep. If you are eating fruits or vegetables for breakfast and at least one big salad a day, it just about takes care of itself. 4. Don’t eat between meals. If you are truly hungry, have a piece of non-sugary fruit such as berries or some crunchy raw vegetables. Your system thrives when you give it time to complete the digestion of a meal before you put anything else into it. Four or five hours should elapse between lunch and dinner, otherwise digestion (never at its best when you are unwell anyway) can be incomplete. 5. Drink plenty of clean water—up to 3 liters a day if you have a cold or feel yourself coming down with one. Avoid coffee, milk, which is mucus forming, and alcohol. Instead, drink plenty of filtered water. Take advantage of the huge number of delicious herb teas now available. 6. Try sprinkling a handful of sage or eucalyptus (or a few drops of the essential oil) onto a bowl of hot water and inhale the steam to ease any respiratory difficulties—cover your head and the bowl with a towel to keep the steam in. We have inherited an albatross. It hangs about our necks in the form of a widely accepted, negative, highly destructive view of aging. It’s ugly and simply untrue. Now is the time to explode any false beliefs you may carry about aging—time to reveal amazing truths which lie buried beneath them. NATURE’S RULES Like a beautifully designed engine, your body has been created to live a long and healthy life fueled by nature’s own molecules, not by “drug therapy.” Driven by powerful corporate entities, for more than a century, mainstream medicine has been doling out artificial chemical drugs to suppress symptoms while making little progress towards improving health or slowing age degeneration. Prescribing potentially dangerous drugs in the belief that they can improve the long-term wellbeing of your body year-by year has turned out to be a fruitless task. Back in 377 BC, Hippocrates, the father of medicine, wrote “Natural forces are the healers of disease.” Nothing has changed since then. It’s time to take a whole new view of the aging process, to discard false beliefs and learn the art of ageless aging. It’s also time to celebrate the process together. QUESTION EVERYTHING In the 1970s and 80s, when interest in gerontology—the study of aging—began to be supported by government funding, age researchers fell into a mire of confusion, primarily because they lacked any conceptual foundation for understanding the nature of aging in its many facets—biological, psychological, and spiritual. They became obsessed with disability, disease, and chronological age instead of seeing the experience of aging as a whole, in all of its positive as well as its negative aspects. Since then, the media has come to focus on the weakness and pathos of the elderly. Scientific literature on gerontology is still obsessed with the issues of nursing home admissions, frailty, and the economic costs of looking after our impaired elders. It is all part of the negative obsession that we as a society seem to have developed with aging. As a result, very little accurate information has become available to bring us a positive understanding of how human beings can function effectively in later life. IGNORE THE LIES How long you live rests largely in your own hands. So does how well you live, how much vitality you have and how good you will look in 20 years’ time. Ageless aging is not an accident of fate. Neither is it heavily dependent on the kind of medical care you get, nor on your genetic inheritance, although certainly both have a part to play. It depends upon how you choose, right here, right now, to live your life from here on out. And this is regardless of how much self-neglect you have poured on yourself in the past. Almost everybody has heard of death curses. Psychological literature is laced with accounts of how Aboriginal witch doctors have brought about the death of the young and healthy by cursing them. No sooner do these people learn of the fate which has been cast for them than they begin inexplicably to sicken and eventually to die. It appears that through complex biological processes, their simple belief in the curse brings about destruction of their organism. LAY THE GHOST In so-called civilized society, we look upon such phenomena as anthropological curiosities—products of primitive superstition which simply don't touch us in our more enlightened age. What we are not aware of, however, is that most of us in the civilized world live under our own brand of “death curses”. They may be subtler than those issued by witch doctors, but they can be every bit as potent in bringing about the physical and mental decline which we have come to associate with aging. Common, unconscious notions such as “retirement”, “middle-age”, “It's all downhill after 40” and “At your age you must start taking things more easily”, are widely held. They can exert a powerful effect on the process of aging by creating destructive self-fulfilling expectations about age decline. Instead of facing the future full of confidence and excitement about what lies ahead, optimism is replaced by anxiety as we are warned to “Be careful”, or “Don't take chances on a new career at your age.” Most of us hold a lot of false notions about aging and life expectancy. These ghosts need to be laid before we can make ageless aging a workable part of our lives, for they are truly legends of the fall, and like many false legends, they carry the warning that if you believe in them, the belief itself goes a long way to making them true. So deeply entrenched are these negative legends in the worldview of our culture that each one needs to be examined quite carefully before we can begin to transform them. TO HELL WITH LIES To most people in the West, old age brings ghastly images of decrepitude—not pictures of vigorous and sexually active old men and women intensively involved in work and looking forward to what comes next. The potential for creativity and enjoyment which is wasted in age-degeneration in the developed countries of the world is shocking. So is the cost to the state in providing medical treatment, hospitalization, food and care for people for whom aging has become a nightmare of physical pain and emotional isolation. Few of us even come close to fulfilling our psychobiological potentials. Instead we look forward to a steady and inexorable increase in morbidity and mortality from one disease to another. Applying the principles of ageless aging, however, will give you a very different view. For the same principles which help keep your skin smooth, your muscles firm and your vitality and creativity high can also reduce the incidence of chronic disease and postpone degenerative illnesses so that if they occur at all, they come only very late in life. BASIC PRINCIPLES So much for the myths of aging. The next time you find yourself grunting when you get out of a chair, or refusing to play run-around after a young niece or nephew on the grounds that you are too old, think again. Forget the myths and remember three important facts: FACT ONE: It is biological—not chronological—age that matters. FACT TWO: by improving your ability to adapt to stressors and maintain physiological balance and function, you can effectively prevent accelerated aging and the degenerative diseases associated with it. FACT THREE: There is even better news. Even when negative changes in your body have already taken place, by making alterations to the way you live and eat, many —in most people even all—of these changes can be reversed. This means that in medically measurable terms—the hard-core parameters doctors use to register health and degeneration such as cholesterol levels, fasting blood sugar, insulin levels, triglycerides, blood pressure and all the rest—aging can now be reversed, rejuvenating your body and de-aging your life. What was once a pipe-dream, followed by rich eccentrics who had themselves injected with monkey glands or drank snake blood in an effort to grow younger, has become a real possibility. It can be done right here, right now. For me, these three facts add up to the most exciting information to come out of 20th century science related to establishing and maintaining high level health. For the first time in history, ageless aging is possible for each of us—a journey into wholeness, authenticity and fulfilment. What could be better than that? SACRED TRUTHS Your body is a multi-dimensional organism, not a machine: We are body, mind and spirit—so interrelated that they cannot be separated. Each of us is an utterly unique being. Health at its most profound level is a full expression of that uniqueness in everything we are and do. By improving our ability to adapt to stressors and maintain physiological balance and function, we can effectively prevent accelerated aging as well as most degenerative diseases associated with it. Where negative changes in the body have already taken place, most can be reversed. This is measured by hard-core parameters doctors use such as cholesterol levels, fasting blood sugar, insulin levels, triglycerides, blood pressure and all the rest. Natural methods work best for regeneration and rejuvenation. It’s time to learn to live and think in ways that encourage the best possible expression of our genes. Regeneration is a process by which the body and psyche rid themselves of whatever does not support the highest levels of gene expression, strengthen physical vitality, and empower greater expression of your authentic nature. There are five main channels for detoxifying your body: the skin, the lungs, the kidneys, the bowels and the lymphatic system. None is less less recognized, nor more important in spring-cleaning the body, than your lymphatic system. Yet the state of its health and functioning is still almost completely ignored. Your lymphatics are not only a major route for absorbing vital nutrients from the digestive system into the tissues to keep skin healthy, youthful and glowing—they are important carriers of immune cells. These protect your body from damage and illness and help prevent degenerative aging. Lymphatics are also your body's metabolic-waste-disposal system. They take away unwanted proteins and large particles of toxic debris which cannot be removed by any other means. This includes toxins—the by-products of fatigue and of stress—dead cells, fatty globules, pathogenic bacteria, heavy metals, infectious viruses and other assorted rubbish cast off by your cells. WASTE DISPOSAL So essential are the waste-eliminating functions of the lymphatic system that without them you would die within 24 hours. Doctors working with natural methods of healing insist that a primary cause of fatigue, disease and cell degeneration, with its accompanying premature aging, is poor circulation of lymph to and from the cells and tissues of the body. The same tradition of natural medicine uses a number of effective techniques designed to stimulate lymphatic functions as a means of healing even quite serious illnesses— ranging from rheumatism or cardiovascular disease to chronic fatigue. These techniques include exercise (done for the joy of it, not as a chore), skin-brushing, special breathing techniques, and infra red saunas. All of these things improve the purity and quality of the lymph—the clear fluid which flows through the lymphatics (lymph vessels). They are little short of revolutionary in what they can do for your good looks and your good health. They have even been known to clear long-standing skin troubles such as acne, improve the look of puffy or aging skin, heighten vitality, banish muscle and joint pain, and aid in the regeneration of the body as a whole. Making use of these techniques is simple. But first you need to know a little about how the lymphatic system functions, and just how important a role its mysterious mechanisms play in promoting health and beauty. WHITE BLOOD MAGIC Your body is more than 75 per cent water. So important is water to the processes of life itself that, according to Nobel Laureate Albert Szent-Gyorgyi, “Life is water dancing to the tune of solids”. A French biologist rather poetically emphasized Szent-Gyorgyi's observation by saying: 'Man is an amphibian. Even the most beautiful woman's body is no more than an aquarium with 50 liters of lukewarm seawater in which trillions of cells live and fight for survival.' Five liters of this 'seawater' are to be found in your blood, five in digestive and other secretions, and almost all the rest is in your lymphatic fluid or lymph—sometimes called 'white blood'. Thanks to the lymph, a ceaseless interchange goes on between your body's trillions of cells and their surrounding interstitial fluids, so that food and oxygen are exchanged and waste products are eliminated from the cells—all through the medium of water. For cells and tissues to be nourished, for them to remain vital, and for your skin and muscles to remain smooth and healthy and firm, this interchange needs to occur without impedance, and the water itself needs to be relatively uncontaminated. BEAUTIFUL FLUID In your body, nutrients and oxygen are transported to the tissues and cells via the bloodstream. Arterial pressure forces the blood through tiny capillaries and out into the cells' interstitial spaces to enable the nutrients and oxygen to be exchanged for the wastes which the cells have produced. Here the water or interstitial fluid, now filled with toxic waste, is gathered by tiny lymphatic tubules and then sent back through the lymph vessels to be detoxified. These lymphatics are a highly organized and elaborate system of ducts and channels which flow all over your body. In fact, almost all the tissues of the body are equipped with lymph channels which drain excess fluid, and the wastes which it contains, from the interstitial spaces. This opalescent liquid carries the wastes and toxic products from these minute channels into larger lymphatic vessels, and on through the lymph nodes, which are located in the groin and under the arm and the neck. The lymph nodes filter the fluid to remove impurities and dead cells; they are also a place where antibodies, which fight infection or toxins, are made. After purification at the nodes, the fluid is returned to the blood. In this way, the lymphatic system works ceaselessly to clear toxicity and to reduce excess mucus and waste. GRAVITY IS YOUR FRIEND The microscopic network of these lymph channels resembles the blood capillaries, except that it is finer. And the lymph system in many ways is rather like the blood system except that, while the blood system is powered by the action of the heart muscles, the lymphatic system has no such prime mover. Instead, its nourishing, water-balancing and eliminative functions are almost entirely dependent upon gravity and the natural pressure of muscles which occurs when you move your body. These muscle contractions and body movements—together with biochemical factors, such as whether or not excessive quantities of protein are present in the fluid—keep the lymph flowing and make it possible for the lymphatics to carry out their important task of bodily cleansing. For good lymphatic functioning—to keep your body free of the buildup of wastes and toxicity—you need to move your muscles vigorously and often. That is why regular brisk exercise, such as taking long walks in comfortable shoes, is so important not only to firm your muscles and strengthen your heart and lungs, but also to encourage the steady and effective elimination of wastes from your cells and tissues.

How much do you know about your second brain? Never heard of it? Most people haven’t. But so important is it to your health, ability to deal with stress, emotional balance and spiritual life, that it is essential you learn about it as quickly as possible. PERILS OF THE GUT Your digestive system is, in truth, a second brain. It boasts more nerve endings than the brain itself. Most people find this astounding. When we eat foods that antagonize these nerve endings, we experience all sorts of physical and emotional states that compromise our lives. If you have any tendency to gain weight, disturbances in the second brain will cause you to do so, and make it very difficult for you to lose weight. Even more surprising—disturbances in the second brain can create extreme symptoms in both adults and children, from disorientation and poor judgement, to deep fatigue, depression, anxiety, slurred speech and more. THE INTESTINE The intestine is porous by nature. A healthy digestive system depends on good-guy bacteria to plug any holes in the gut, neutralize toxins, and metabolize vitamins and nourishment from the food you eat. We are completely dependent upon a symbiotic relationship with these good bacteria to plug any holes in the gut wall, through which proteins—such as gluten and casein—are able to pass and enter the bloodstream. The proper balance of good-guy vs bad-guy bacteria in the gut creates a barrier against toxicity entering the blood to cause problems. When we have enough good-guy bacteria—flora—they enable us to metabolize and break down our food. When, however, we get an overgrowth of bad-guy, opportunistic flora, such as candida albicans, vast quantities of toxins get through the porous gut, creating allergies and other health conditions: inflammation on the skin, food cravings. emotional issues, which are not in fact emotional at all, but biochemical in origin and lots of other problems. What happens is that undigested particles penetrate a “leaky gut”, making the body react to these “foreign” materials—wreaking havoc on our lives. BEWARE ANTIBIOTICS How do we get bad-guy bacteria into our system? By eating lots of grains, cereals, sugar, and using unnecessary antibiotics. Antibiotics, which are far too often used, let the bad-guys establish colonies. Why? Because they also wipe out good-guys. When a course of antibiotics has finished, your body cannot re-establish balanced flora in the body. By the way, babies get their first dose of good bacteria while passing through the birth canal. If a mother has a history of taking antibiotics and an overgrowth of bad gut flora, then the baby’s body becomes colonized with them as well. ALLERGIC TOXEMIA Second brain issues were first identified as far back as the 1920s by the famous allergist, Dr. Albert Rowe. Clinical ecologists know very well that second brain issues are the most common cause of chronic fatigue, weight gain, anxiety, allergies and depression. It was Rowe himself who dubbed these conditions “allergic toxemia”. Later on, when he realized just how widespread negative food reactions had become (and they are much worse today, with all the convenience foods and grains, cereals and sugars we consume) he came to refer to second brain disorders as “allergic tension-fatigue syndrome”. Theron Randolph MD, another pioneer in the field of environmental medicine, charted a myriad of emotional and physical symptoms caused by eating foods with which the body can’t cope, and overgrowths of bad gut flora, resulting in leaky gut syndrome. Randolph worked with over 20,000 patients in a career that spanned 60 years, and published almost 400 scientific articles on his discoveries. CHECKLIST Here are a few questions you can ask if you suspect you are among the many who are unsuccessfully wrestling with the manifestations of second brain issues: Are you chronically tired? Do you struggle with your weight and suffer from food cravings? Do you suffer from chronic anxiety or depression? Do you have allergies, asthma, or eczema? Do you have a child with autism? DIET HOLDS THE KEY Hippocrates (460-370 BC) believed that “All diseases begin in the gut”. In the last 10 or 15 years, Dr. Natasha Campbell-McBride MD, has made an in-depth study into the nutritional aspects of how the gut works, and how poor gut function seriously impacts not only physical health but brain functions for all children with learning and behavioral difficulties, as well as for adults who are themselves experiencing second brain issues. She has written a book called Gut and Psychology Syndrome, which is an in-depth examination of how to counter second brain problems through diet alone. The book is very detailed and includes a number of recipes. I highly recommend it to anyone who suffers from depression or whose children experience dyslexia, ADHD, ADD, dyspraxia or autism.

Fasting Part 4 - Cracking The Code

By now you will have grasped the principles of meal spacing. It’s time to get specific about putting it all in into practice. TWO MEALS A DAY Put behind you that old adage that you must eat a good breakfast to keep you going through the day. This is untrue. It never has been true, despite all we’ve been taught. The word breakfast literally means the meal at which you “break-a-fast.” That is just what you will be doing on meal spacing—breaking a fast of 12 or more hours after eating dinner the night before. The timings of your two meals each day will need to take into account what your days are like. Is it an easy thing for you to prepare your first meal at home—say between 11am and 1pm? Or do you work away from home all day? If so, does your job require you to eat in restaurants frequently? On days when you don’t, can you make your first meal before leaving for work—say, a salad complete with good quality protein which you can take to work with you, or maybe a delicious smoothie you can carry in a thermos? The rule of thumb for success with meal spacing is to allow 5 to 6 hours or more between your first and second meal of the day. Longer food-free periods are fine too. If you can schedule your second meal in the early evening—say 6 or 7pm, this is ideal. If, on the other hand, you don’t get home until later in the evening or you have been invited out for the evening, then the period between meal one and meal two is likely to be longer than 6 hours. That is fine too. EAT STOP FAST It is essential that, as soon as you finish a meal, you stop eating. And, just in case you have a habit of munching through a couple of biscuits or a bowl of chocolate ice cream between dinner and bedtime, now is the time to break this habit. It’s important to have ended your eating for the day at least 3 hours before you climb into bed. You need an absolute minimum of food-free 12 hours during the night before eating the first meal of the next day. How you plan your eating and fasting periods depends on you. Your timings may change a bit from day to day depending on what is happening in your life. That’s OK. Just don’t forget that, to become lean and healthy and stay that way, and to protect yourself from early aging and degenerative conditions, your body needs extended food-free periods day after day. And the longest and most important is at night, while you sleep. START GENTLY Many people are afraid they will not be able to make it from one meal to the next when they are just beginning to explore what condensed eating can do for them. I recommend when you are just learning the practice of meal spacing that you feel free to eat a snack or two between meal one and meal two if you feel you need to. That being said, the sooner you come to adopt fully this food style and make it your very own, the better. I predict that it won’t take long before you will have no trouble remaining food-free between meals. SNACK SUGGESTIONS Half an avocado with 2 oz (50 g) of Cheddar cheese A no-sugar smoothie made with Vital Whey, sweetened with English Toffee Stevia if you like 1 cup of sliced cucumbers with vinaigrette dressing made with extra virgin olive oil 1/2 cup of cottage cheese with 1/4 cup raspberries 4oz (100g) plain cow’s, goat’s or sheep’s yogurt with half a grated apple sweetened with stevia and sprinkled with cinnamon. TAKE YOUR TIME Your body will need some time to adapt itself to this kind of eating—sometimes only a few days and other times two or three weeks. Just be patient and stick with it. Have your healthy snacks between meal one and meal two until you sense that you no longer need them. But right from the beginning, make a commitment to yourself to end completely the convenience carb foods that undermine health, provoke weight gain and predispose all of us to sluggishness and depression. Eat as many of the good fats as you like while eliminating sugars and the carbs that turn into sugar when people eat them. What are good fats? Coconut oil, extra virgin olive oil and butter from grass-fed cows. These can strengthen your body, bring you energy you can rely on, and will never make you fat so long as you avoid the life-force draining carbohydrates which still make up the bulk of most people’s meals. These include breads, pastas, potatoes, bagels, cookies, chips, cakes and the rest. Meanwhile, eat lots of good fats If truth be told, we humans have little need for carbs. When our bodies are fed quality proteins, the good fats, green vegetables and low-sugar fruits, their bodies will quite naturally derive any glucose that they need from these foods. By the way, if while your body is adapting to your condensed eating program, you experience light headedness, muscle cramp, fatigue, or grumpiness along the way, make sure you increase the amount of sea salt or Himalayan salt (not ordinary table salt please) that you are using on your foods. LESLIE’S RECIPES Let me now share with you some of my own favorite recipes that are good for any meal spacing program. I hope you enjoy them. When it comes to radiant wellbeing, nothing carries the power of fresh raw foods. Not only are they higher in essential nutrients than their cooked counterparts, the quality of the phytochemicals they contain is the best in the world. Contrary to what a lot of people think, raw fruits and vegetables are easy to digest. Each fruit or vegetable carries within it the exact enzymes necessary for us to digest it fully and efficiently. Bircher Muesli serves 1 This recipe, which is great for either of your meals, calls for an apple. But you can use almost any fruit. Berries work very well. The recipe serves one, but can just as easily be made for twelve. This particular form of muesli is dairy-free. If you prefer to use dairy products, try plain unsweetened cow’s yoghurt, or sheep or goat’s yoghurt if you have a problem with cow’s milk. What You Need 2 tablespoons grated fresh coconut (if you are buying coconut commercially, make sure it contains no sugar) handful of raisins, soaked overnight 1 apple, grated or chopped juice of ½ lemon 3 tablespoons coconut milk or sheep or goat’s yoghurt ¼ teaspoon powdered cinnamon or grated fresh ginger Here’s How Mix together the coconut and raisins and combine this mixture with berries or a grated or chopped apple, lemon juice and the coconut milk or yoghurt. Sprinkle with cinnamon or ginger. Serve immediately. Vanilla Nutmeg Smoothie Serves 1 This meal-in-an-instant is surprisingly filling and the vanilla makes it a warming drink, despite being made with ice! You can make the smoothie with or without the egg. If you do use the egg, make sure it is free-range and organic. Use only the best whey (see recommendations below). Most of what you find out there is junk. Don’t touch it. What You Need 6 ice cubes 200ml clean water 1-2 scoops natural or vanilla-flavored micro-filtered whey protein (see resources) 1 free range, organic egg 1 teaspoon vanilla essence (the real thing, no sugar, preferably organic) a pinch of grated nutmeg stevia to taste Here’s How Put all the ingredients into a blender, but blend for no more than 20 seconds as this can change the nature of the whey protein. Sprinkle a little extra grated nutmeg on top and serve immediately. If you like, you can add 1 tablespoon of flaxseeds to this smoothie for a fiber boost. Warm Bacon and Spinach Salad serves 2 I used to live in Wales. This recipe is based on the great Welsh stalwart—spinach. It’s so often cold in Pembrokeshire, so I made this salad a warm one. What You Need 2 tablespoons extra-virgin olive oil 4 oz (100g) naturally cured bacon, cubed 2 tablespoons raw walnuts, broken into small pieces 2 cloves garlic, crushed 1lb/450g spinach leaves 1 tablespoon rice vinegar 2 tablespoons parmesan cheese, finely grated Maldon sea salt or Himalayan salt and freshly ground pepper to taste Here’s How Heat half of the oil in a heavy pan and add the bacon until golden brown and cooked through. Add the garlic and cook for a minute, then add the walnuts, vinegar and the rest of the oil. Throw in the spinach at the last minute, and toss with the other ingredients in the pan until the spinach has begun to wilt. Serve immediately with the grated parmesan on top. Salmon Delight serves 2 This recipe came from a friend—Belinda Hodson. Salmon is such a delightful fish with a unique and delicate flavor. I love this dish because it is easy to prepare and very tasty. The marinade enhances the natural flavors of the fish and the spring onion really gives it its own special zest. What You Need 2 fillets of salmon juice of 4 medium-sized lemons 2 large spring onions pepper and salt 1 dessertspoon of coconut oil zest of 1 lemon plus 2 lemon wedges parsley (for garnish) Maldon sea salt or Himalayan salt and freshly ground pepper to taste Here’s How Finely chop the spring onions and place in a mixing bowl. Add the lemon juice, pepper and salt and blend. Place the salmon fillets into the marinade (flesh-side down) and leave for 45 minutes. Turn the fillets onto the other side and leave for a further 15 minutes. Heat the coconut oil in a frying pan. Drain the fillets and place in the pan, cooking until tender. Serve with parsley garnish. Crudités It may sound completely mad, but when dipping crudités, it matters what shape you cut your vegetables into. Some vegetables want to be sticks, some want to be sliced diagonally into rounds. They simply taste better. Keep your crudités in the fridge in a bowl of cold water with a squeeze of lemon. Here’s a selection of some fruits and vegetables that make good dippers Sticks carrots turnips courgettes/zucchini green and red peppers Slices cucumber white radish beetroot Jerusalem artichoke kohlrabi apples Whole button mushrooms—stalks left on baby carrots young green beans, topped and tailed cauliflower florets spring onions Wedges tomato chicory small lettuce endive Serve them with a good dip. Here are a couple of my favorites: Curried Avocado Dip This dip is great for crudités. I serve it together with a platter of fresh phyto-nutrient filled vegetables such as endive, bulb fennel, crunchy lettuce, celery, slices of red, green, and yellow capsicum and anything else I happen to have around. What You Need 2 large ripe avocados, peeled and cubed 3 cloves of garlic, chopped 3 tbsp of lemon juice 1 tsp of vegetarian broth powder 1/8 tsp of Cajun seasoning Celtic or Maldon sea salt to taste freshly ground black pepper to taste 1 tsp of mild to medium curry powder 1 tbsp of lemon zest Here’s How Add chunks of avocado plus garlic, lemon juice, broth powder and other seasoning to the food processor— everything except the lemon zest. Blend until creamy and add lemon zest and serve. This recipe makes about 1 cup, which will keep up to 3 days in the fridge. Sesame Miso Dipping Sauce What You Need 125 ml of rice wine vinegar Granulated stevia to taste 1 tbsp miso 2 tbsp of sesame seeds, ground in a coffee grinder or food processor 1 garlic clove, crushed Here’s How Combine all the ingredients. Can be served immediately. Cool Cucumber Dip What You Need 1 small cucumber ¾ cup of yoghurt (cow’s, sheep’s or goat’s) squeeze of lemon or dash of vinegar 1 tbsp minced onion Spoonable stevia to taste 1 clove garlic (optional) fresh mint Celtic or Maldon sea salt to taste freshly ground black pepper Here’s How Peel and grate the cucumber, then drain off any excess extra juice (you can use it as a drink). Mix with the yoghurt, lemon juice or vinegar, onion, stevia and garlic. Finely chop a few mint leaves and add. Season and serve in a dish with sprigs of fresh mint. FOLLOWING YOUR NATURE It may surprise you to learn that the eating pattern which you are aiming to create for yourself is what the human body has been genetically programmed to thrive on for hundreds of thousands of years. It can enable you to eat well and plenty of food without suffering any sense of deprivation or hunger once you get accustomed to it. This is the way our hunter gathering ancestors, whose genes we have inherited, lived. They ate and then fasted, depending on when food was available and when it was not. In my mid-twenties, while searching for my own healing, I was blessed with friendship from some of the world’s finest physicians. These were men and women who had turned away from what they had been taught in medical school: Namely, that people need to be treated with drugs. They worked differently. WHEN YOU NEED HELP What fascinates me is the way specific combinations of fruits and vegetable juices have specific therapeutic properties to offer help with common issues that we struggle with—from hair loss and insomnia to depression and prostrate trouble. Let me share with you a few juice recipes designed to help some common challenges. CLEAR FATIGUE One of the underlying causes of fatigue, particularly in women, can be iron depletion. Spinach juice is a far better way of boosting iron levels than taking tablets, which tend to be constipating and are poorly absorbed. The iron in natural foods and juices, including all our green leafy vegetables as well as in poultry, liver and molasses, is highly bio-available. This means your body has no trouble making use of it. Remember that replenishing the body’s essential nutrients takes time, so be prepared to work with organic foods and juices for several weeks before you start to see lasting results. Magnesium is another important mineral when it comes to fatigue. Low intracellular magnesium makes the body very prone to infection, food allergies and chronic illness. Good sources of magnesium are dark green vegetables, seaweeds, molasses, fish and organic raw nuts. DANDELION PLUS 4 or 5 carrots A handful of dandelion leaves 1 bulb fennel Juice as usual, then squeeze a tablespoon of lemon juice to the mixture. GREEN ZINGER 2 leaves kale or beetroot tops or a handful of spinach 4 or 5 carrots A small handful of parsley HI MAG 4-5 carrots 2 florets of broccoli 2 leaves dandelion, beetroot tops, spinach or kale Juice and season with a twist of lemon and a pinch of salt. HANGOVERS There is an art to hangover management. The key to it is looking at detoxification as the other side of the intoxication coin. All drugs provoke a strongly acidic reaction in the body, which causes the symptoms of a hangover, and the first step to recovery is to correct the body's chemical imbalance. Plain old carrot and apple juice is effective for re-balancing, and it's easy to take when you're feeling weak. By incorporating beetroot juice, you will greatly assist the repair of any possible damage done to your liver and kidneys. The inevitable consequence of over-indulgence is waking up dehydrated and nauseous, with a brain that feels like it’s banging against the side of your head each time you move. You need to replenish bodily fluids, nourish exhausted muscles and get your head together. Fruit juice is strongly indicated. Citrus juices, being full of natural sugar vitamin C, are an immediately effective remedy, but they may be a bit harsh if your stomach is delicate. Watermelon, being exceptionally mild, is an ideal substitute if you happen to have some. APPLES & PEARS Apples and pears are closely related. They make a sublime combination when juiced together. 2 pears 2 whole apples Juice as usual and drink straight away as this juice oxidizes very quickly. VIRGIN MARY A Bloody Mary without the vodka, the flavor of this refreshing tomato-based cocktail benefits from a few drops of Tabasco. (Add a clove of garlic and it becomes a Vampire Mary; a fresh jalapeno or other hot green chili pepper turns it into a Scary Mary.) 2 ripe tomatoes 2 carrots 1/2 a beetroot 1 stalk celery 1 cucumber BERRY MELON Berries combine well with melons. The array of flavors gives lots of scope for experimentation. Try Cantelope & Raspberry, Honeydew & Blackberry or the classic Watermelon & Strawberry: 1 slice of watermelon, 3cm wide and cut into chunks to fit your juicer 6 strawberries, washed and with their green stalks removed (In hot weather, a good tip is to freeze your berries before juicing them.) HAIR LOSS You may have been genetically programmed to lose hair, but that doesn't mean it has to happen. There’s a great deal you can do to prevent hair loss, to slow it down dramatically, and in many cases to stop it altogether. Eat foods that are rich in the sulfur amino acids, L-methionine and L-cysteine. Eggs are a wonderful source so devour them with enthusiasm. When it comes to protection from hair loss, cabbage is a real help too. You must also cut out the foods that work against you stopping and eliminating hair loss. Sugar in any form is a killer. Stop eating it altogether. Use a good tasting real stevia in its place. So are the grains and cereals—breads, biscuits and pasta. Eat foods rich in PABA, inositol and choline, such as organic liver, spinach, grapefruit, and raw nuts. Consider adding vacuum-packed flax seeds to your diet. You can grind them in a coffee grinder and sprinkle them on salads or soups. You can also add them to your juices. Finally, the alfalfa has long been believed to stimulate hair growth, particularly in its sprouted form. ALFALFA—FATHER OF ALL JUICES The word alfalfa means ‘father of all grains’ and when it comes to hair health you can't do better than alfalfa sprouts and carrot juice. 4-5 carrots 1 cup alfalfa sprouts Optional: chopped parsley Juice as usual, top with some chopped parsley and drink. GINGER’S BEST cantaloupe melon ¼ inch slice root ginger 1 lime (peel, leaving pith) PARSNIP PERFECT Parsnips, also known as anemic carrots, are well known for their ability to strengthen hair, skin and nails and can protect against hair loss. 2 parsnips 3 carrots 1 beetroot Ease yourself gently into raw juicing. If the juices you make don’t taste sweet enough to you at the beginning, add a good quality stevia to taste. There are a lot of so-called “natural” stevia products which are gross distortions of the natural stevia. I have found that they give a lot of trouble to many people. Avoid them like the plague.
