This approach is entirely dependent on scientific discoveries which have taken place, mostly within the last fifty years. These discoveries include a growing understanding of the role that the immune system plays in the rate at which we age, a knowledge of how certain natural and artificial chemicals known as the antioxidants can be used to prevent age-related damage on a cellular level and to strengthen immune functions, and how specific nutrients such as the free amino acids can be used to alter the chemistry of the aging brain or firm sagging muscles, as well as an awareness of how specific pathways between mind and body enable your feelings, attitudes and expectations to play a major role in determining the rate at which you age. Remember how your mother or grandmother used to tell you to make sure you got “lots of bulk”—and that meant eating oatmeal, muffins, and lots of wholegrain bread? Well, they were partly right and they were terribly wrong. Fiber is a vital part of your diet when it comes to promoting health and protecting the body from degeneration. But cereals, whole-wheat and bran muffins are not the way to go. TRUTH ABOUT FIBER What is the way to go? The answer may surprise you. The healthiest source of fiber does not come from wholegrains—which disturb blood sugar, create insulin resistance, and cause leptin resistance, making many people fat. (These things, by the way, have become a major driver in most chronic degenerative diseases.) The best fiber comes from fresh fruits and vegetables, which are full of both soluble and insoluble fiber. Insoluble fiber: This kind of fiber is found in dark green leafy vegetables, green beans, celery, kale and carrots. It’s the kind of fiber that does not dissolve at all, but adds bulk to your stools. It helps other foods you are eating move rapidly through your digestive tract so that elimination becomes healthier and more regular. Soluble fiber: This kind of fiber attracts water and turns to gel during digestion. You find soluble fiber in seeds, peas, nuts, blueberries and other berries, fresh beans and psyllium seeds. Soluble fiber helps slow down your digestion. It makes you feel full for longer. This is important for people who have a tendency to gain weight and to suffer from food cravings. One of the magic things about good quality fiber is that it actually ferments inside. This is wonderful because it releases something called acetate, which travels from your gut to the hypothalamus—the control center in your brain—and there it helps you stop eating more than your body needs. WHAT IS FIBER? Dietary fiber is a biological unit, not a chemical entity such as a vitamin or mineral. We get the best fiber from eating plant foods—beans, seeds, some pulses, fresh raw vegetables and fruits. Using simple sugars contained within, these plants produce a number of carbohydrate polymers. Some of these serve as energy stores for the plants, and are almost completely digested and absorbed in the intestine when we eat them. These are the soluble fibers. Others—the fibrous or viscous polysaccharides and lignins—lend the plants their structure and form, but we cannot digest them. Instead, they pass through the colon intact, where they are fermented to some degree before being eliminated from the body as waste. These indigestible polysaccharides, which make up the cell walls of plants, are known collectively as “insoluble dietary fiber”. They have a variety of other names, too. EACH IS UNIQUE Each kind of fiber behaves differently and has different benefits for the body: From cellulose, which binds water and increases fecal bulk, to pectin—very rich in apples—which is water soluble; hemicellulose, which shares some of cellulose’s characteristics and helps relieves constipation, aids weight reduction, and clears out carcinogens from the bowel; lignin—the woody fiber that you find in raspberries, strawberries, Brussels sprouts, cabbage, kale, parsley and tomatoes—which helps eliminate the wrong kind of cholesterol and bile acids from the intestine; and the gums and mucilages, which are sticky fibers that food manufacturers make good use of as thickening agents in convenience foods. MASSES OF HEALTH BENEFITS When it comes to enhancing your health, protecting you from degenerative conditions and weight gain, the gifts of fiber are many. First, the right kind of fiber—such as acacia fiber, a soluble fiber—is great for helping people with irritable bowel syndrome. Using an insoluble fiber, such as beans or peas, can reduce the risk of diverticulitis by about 40%. All forms of soluble fiber help slow down the rate at which your body absorbs carbohydrates and sugars, helping to clear sugar cravings and aiding weight loss. Fiber is also great for your skin, especially psyllium husks and seeds. These help clear any overgrowth of Candida albicans—fungi and yeasts—from your body, helping to eliminate food cravings and protecting your skin from acne and rashes. A high-fiber diet helps lower your risk of hemorrhoids, which are caused by chronic constipation. A high-fiber diet also reduces the risk of kidney and gallstones, probably because it helps to regulate blood sugar. Research shows that good quality fibers help heart patients live longer. They are also marvelous for curbing the appetite. One of the surprising ways in which they not only do this, but also help protect us from degenerative conditions, is through fermentation. This process in the gut releases acetate, a waste product that has powerful and positive effects on the body. One of the things it does is to transmit information to the hypothalamus in the brain, which regulates your appetite and tells you when you’ve eaten enough. Research indicates that the appetite-suppressing qualities of acetate are excellent. RADIATION PROTECTORS Some of the best protection from radiation—which we’re experiencing more and more in our increasingly polluted environment—comes from fiber. So make use of it to protect yourself from the kind of radiation poisoning that now contributes to degenerative diseases. Seaweed is also one a great source of radiation protection. Studies have shown that alginate in seaweed and kelp products protect an organism from absorbing radioactive elements such as strontium-90 and cesium, both of which are incredibly dangerous to the body. Amongst other things, strontium-90 tends to replace calcium in the bones, leading to bone disease and cancer. Kelp is helpful in protecting against other kinds of environmental pollutants. The fucoidin it contains helps block the absorption of lead and other heavy metals. There is some evidence that, like pectin—the dietary fiber found in good quantities in apples—it can also help remove much heavy metal poisoning from the body from cadmium, aluminum and lead. Putting seaweeds in soups and vegetable dishes, making laverbread, or even taking kelp tablets can all help prevent the buildup of heavy metals in your body. FIBER 101 Governments recommend that we take in somewhere between 10 and 25 grams of fiber a day. Most people only get half of this, or even less. Because I eat 50% to 70% of my foods raw, I take in at least 40 grams a day. What is interesting is this: Research shows that our Paleolithic ancestors as well as tribal cultures, a few of which still exist on the planet, got somewhere between 35 and 60 grams of fiber a day! Aim for 30 to 40 grams of fiber a day and eat lots of vegetable foods. Your body will thrive on it. You will not find any good quality fiber in manufactured and processed foods. I strongly advise you not to eat such foods. Here are some of the vegetable foods and seeds that are excellent sources of fiber. Flax seeds, chia seeds, and psyllium seed husks Vegetables such as broccoli, Brussels sprouts and kale Macadamia nuts and almonds Berries of all kinds Green beans, peas, onions and root vegetables All the fibers listed above have been shown to help the body protect itself from cancer and other forms of degeneration so common in our world—fibroids, endometriosis, Alzheimer’s disease and heart problems. These fibers can also help tremendously to alter the metabolism of excess estrogen in the bowel—so that more of it is excreted and less of it is reabsorbed. I personally eat lots of green vegetables—most of them raw. My favorite source of seed fibers is twofold: Organic chia seeds and organic whole psyllium husks, which deliver both soluble and insoluble dietary fiber. If you have any sort of irritable bowel issues, I recommend acacia fiber. It is a soluble fiber that is very soothing to the gut. GO RAW What is so special about organic raw vegetables? Plenty. They have powerful protective qualities, which is why diets high in fresh green vegetables are recommended as an aid for protecting the body from degenerative diseases: Arteriosclerosis, arthritis and cancer. This is especially true of raw vegetables. Even more important, a diet high in raw vegetables not only provides you with the best quality fiber that you’ll find anywhere. It actually increases the microelectric potentials of your body’s tissues, making your cells function better, improving intra- and extra-cellular exchange, and imparting high levels of mental and physical vitality to your whole being. Fresh organic vegetables are the best source of natural fiber, vitamins and minerals for high-level wellness. Herbert Benson, who wrote The Relaxation Response and Maximum Mind, discovered that measurable physical benefits accrue from practicing any form of meditation which depends on the silent repetition of a mantra - a word-sound. This can be done by repeating any word over and over while the eyes are closed and the body is in a quiet state. Meditation using a mantra has a long tradition. Some mantras are said to be sacred words that have particular sound vibrations which transmit particular powers. Each tradition has its own mantras such as Guru Om, Om mani padme hum, La ilaha illa 'lla or, in the Catholic religion, Hail Mary, full of grace, the Lord is with thee. Whether their magic aspects are true or not, the technique works beautifully to replace the habitual chatter that runs through one's mind, worries about things past and things yet to come. Benson suggests you find a word that is pleasing to you. It could be anything, say, `flower', `peace', or `love'. He likes the word `one' as it is simple and has the connotation of unity about it. Here's how. Find a quiet place where you won't be disturbed for fifteen to twenty minutes and a comfortable chair that supports your back. Sit down and close your eyes. Give yourself a moment to settle in and you are ready to begin. Simply sit there, feet on the floor and eyes closed, quietly repeating your word over and over to yourself: `one...one...one...' Whenever your mind wanders or you are disturbed by a sound or thought, simply turn your mind gently back to repeating the word again. That is all there is to it. After fifteen to twenty minutes, stop repeating the mantra and get ready to open your eyes. Open your eyes, stretch, and go about your everyday activities. This is a particularly useful technique once you have practiced it a few times because you can do it in so many different places, such as in a waiting room or on a commuter train or bus.

Let me share with you some exciting stuff—all about energy. This is where life breaks all the rules. LIGHT IN OUR CELLS More than seventy years ago, the eminent scientist Albert Szent-Györgyi, who won the Nobel Prize in Medicine for his work on oxidation and for isolating Vitamin C, asked himself a question. He then spent almost every working moment of his life in an attempt to answer it. He is often quoted as having posed the question at a dinner party: “What is the difference between a living rat and a dead one?” According to the laws of classical chemistry and physics, there should be no fundamental difference. Szent-Györgyi’s own reply was simple yet revolutionary—“Some kind of electricity.” Early in the twentieth century, quantum physics established that wave particles in living systems behave as biophotons. A biophoton is a proton in the visible and ultraviolet spectrum that biological systems, like the human body, emit as bioluminescence—electromagnetic waves in the form of light. This bioluminescence regulates and controls enzyme activities, cell reproduction and the creation of vitality. Experiments, such as those reported in the March 1995 issue of Scientific American by Brumer and Shapiro, helped to establish the importance of these energetic particle/wave behaviors in organisms. QUANTUM MAGIC Like light bulbs, all atoms and molecules give out radiant bioenergies, both harmonious—which produce health and healing in the body—and destructive. When they become scrambled, disordered and chaotic they produce illness. Sadly conventional science still tends to ignore or dismiss the way interference wave forms from negative sources—generated by cell phones, smart meters, and other electronic emissions as well as negative thoughts and feelings, internally manufactured toxins or external exposure to environmental pollutants—disrupt the body’s harmonious biophoton energies. They undermine homeostasis on which our health and protection from degenerative illnesses depend. The behavior of these light emissions reveals the functional state of the body— how healthy or unhealthy a body is. For instance, cancer cells and healthy cells of the same type show huge differences in biophotons emitted by them. There is currently a lot of investigation taking place to determine how we can use various kinds of bioenergies constructively to support health and slow degeneration. Some of this is considered “hard science”, from electromagnetic techniques now used to rejuvenate bone and tissues, to electronic devices for diagnosing disease. But a lot of it is shunned by conventional medicine, with its commitment to prescribing drugs. The use of visualization, for instance; focused intention, prayer and other forms of spiritual healing, as well as energy-based martial arts like Aikido, Tai Chi and Thought Field Therapy. Within the next few decades we are going to hear more and more about biophoton therapies. For now, we can still make practical use of the knowledge that has already emerged about how to change our emotional and mental states, and how to heal the body by altering our energy fields through consciousness alone. POWER OF CONSCIOUSNESS Like all biological organisms, we human beings are not only immersed in energy fields. Our bodies, our minds, our cells, our genes—every part of us, in a very real way, is made of pure energy. Our fields are constantly contracting and expanding as our thoughts, diets and lifestyles change. The aim of any form of natural treatment, from dietary change or detoxification to hydrotherapy, exercise and meditation, is to enhance positive bio-energies in an organism and to create greater order in your body, biochemically, psychologically, and spiritually. However, the biochemical view of health and sickness continues to be materialistic. It is based on the assumption that life can be entirely explained by an understanding of the laws of chemistry and physiology. It concerns itself about the way inorganic chemicals, like pharmaceutical drugs, act on a biological system to treat symptoms. Indeed, this is the whole point and purpose of biochemistry and molecular biology—the now-outdated scientific models that are still worshipped by conventional allopathic medicine. The only problem is that the living human body breaks all the rules. To get full benefit from what is now known about life processes, health and healing, we must go beyond the biochemical model. How? First, by asking a few provocative questions, like “What is the nature of this life force energy?” And, “How can we enhance and preserve it?” Second, we need to learn more about energetic models at the leading edge. These include models built on cutting-edge physics, biophoton data and information theory as applied to biology. These advanced paradigms encompass whole new realities. They also offer powerful tools and techniques for expanding consciousness and directing our intentions to bring effective healing and personal transformation. I love this quote by Richard Tarnas. It expresses so beautifully the conundrum that mainstream science has found itself in for scores of years, yet which it works hard to deny. “By the end of the third decade of the twentieth century, virtually every major postulate of the earlier scientific conception had been controverted: the atom as solid, indestructible, and separate building block of nature, space and time as independent absolutes, the strict mechanistic causality of all phenomena, the possibility of the objective observation of nature. Such fundamental transformation in the scientific world picture was staggering, and for no one was this more true than the physicists themselves.” ORDER FROM CHAOS In physics, the first and second laws of thermodynamics continue to rule supreme. Both laws focus on the nature of energy in the universe. They attempt to understand events in the universe by studying the kind of energy changes that accompany them. The second law of thermodynamics is particularly important in relation to health and healing. It is called the law of entropy. It states that, left to their own devices, all things in the universe become disordered: Iron rusts, buildings crumble, dead flowers decay, humans lose homeostasis, degenerate and die. In the language of physics, this is described by saying that everything tends toward maximum entropy. Entropy describes a state of maximum disorder—chaos if you prefer—in which all useful energy has been decreased. What is so remarkable about us human beings—and what has been a great puzzle to many of the world's finest minds—is this: Despite the second law of thermodynamics, we, like other living organisms, are able to remain highly ordered. In fact, so long as we are alive, our bodies are maintained in a condition of fantastic “improbability,” despite the endless destructive processes continually going on in and around us. More than that, there is every indication that a healthy body—a healthy mind as well—is continually involved in creating yet more order. This we do both individually—thanks to the repair functions of our cells and enzymic systems—and also viewed as a species, since from an evolutionary point of view, over time, all living species differentiate into ever more complex and highly structured organisms. NEGENTROPIC WONDERS Unlike the rocks and nails in the inorganic world, living organisms are both capable of becoming and of remaining superbly ordered thanks to their capacity for continuously recreating homeostasis and wholeness through energy. This is how we maintain our bodies at a high degree of health. Of course, our “ordering ability” makes no sense to dyed-in-the-wool scientists and doctors, who still worship paradigms of Newtonian physics with the passion of a religious dogma. According to mainstream science there should be little difference in the chemical and physical processes taking place in a living body and those in a corpse—since both, according to the second law of thermodynamics, follow the same scientific law which produces chaos, loss of lifeforce, degeneration and death. Yet there is every difference in the world. A living organism is able to maintain the system in quite exceptional harmony, despite the fact that events leading to maximum entropy in the universe as a whole should be destroying it. In the words of Nobel laureate Albert Szent-Györgyi: “Life is a paradox... the most basic rule of inanimate nature is that it tends toward equilibrium which is at the maximum of entropy and the minimum of free energy. The main characteristic of life is that it tends to decrease its entropy. It also tends to increase its free energy. Maximum entropy means complete randomness, disorder. Life is made possible by order, structure, a pattern which is the opposite of entropy. This pattern is our chief possession, it was developed over billions of years. The main aim of our existence is its conservation and transmission. Life is a revolt against the statistical rules of physics.” SUCK ORDER Physicist and Nobel laureate Erwin Schrodinger also took a close look at the scientific contradictions implicit in the living state. He concluded that, so long as the human body is alive, it avoids decaying into an inert state of equilibrium—death—through the processes of metabolism. In other words by eating, drinking and assimilating “information”—in effect by sucking order from the environment. As far back as 1944 Schrodinger wrote: “Every process, event, happening—call it what you will; in a word, everything that is going on in Nature means an increase of the entropy of the part of the world where it is going on. Thus a living organism continually increases its entropy—or as you may say, produces positive entropy—and thus tends to approach the dangerous state of maximum entropy, which is death. It can only keep aloof from it, i.e. alive, by continually drawing from its environment negative entropy... What an organism feeds upon is negative entropy... which is in itself a measure of order. Thus the device by which an organism maintains itself stationary at a fairly high level of orderliness really consists in continually sucking orderliness from its environment.” Energetically, a human being is an open system. This means we continually exchange energetic information with our environment—through the foods we eat, digest, assimilate and excrete, as well as the company we keep, the radiation and electromagnetic fields we are exposed to, the way we exercise—even the thoughts we think. As such, we are constantly processing the energetic data—information which comes into us and continues to flow in and out of our own biophoton energy fields. We need a constant supply of the right kind of information from the outside world to keep our bodies functioning optimally, and we need to be able to dissipate any disorder and chaos—entropy—that has built up within our bodies and our lives. Denham Harmon is an extraordinary researcher. Like most of the great scientists what he writes is easy to understand, even to a non-technical person. He writes about free radicals very much as a philosopher might explore life and death - yet at a molecular level. Harmon's work makes clear that free radical reactions are indeed essential to life. So much is this the case that it is likely to be redox reactions that produced life on earth and which largely engineered evolution through their effect on DNA. Harmon is also quite clear that for high level health and the prevention of premature aging most of us need to use antioxidants in some form from the age of 27 onwards. And does he take antioxidants himself? You bet he does. Yet not in excess as some anti-aging enthusiasts urge us to do. He takes them in moderate doses - 400 iu vitamin E and 2 grams vitamin C, 30mg coenzyme Q-10, plus 25,000 iu beta carotene every other day. He would take more, he says, but he can't afford to be fatigued. forget magic bullets What does this mean when just about every book and article on aging these days urges us to take more and more? It means that in all our enthusiasm to get on the free radical band wagon many of us have fallen into the same trap of mechanistic thinking that limits much of orthodox medicine. In an attempt to slow aging we tend to treat antioxidants as "magic bullets" losing all awareness of the importance of interrelationships between them and synergy in the body. More and more antioxidants does not necessarily mean better and better. Taking too many antioxidant supplements can eventually leave you chronically tired with weak muscles. Harmon and his colleagues have discovered through animal experiments that very large quantities of antioxidants such as BHT - a synthetic commonly used as a food preservative - will actually suppresses the proper functioning of the mitochondria (the little energy factories in the cells), as well as the production of ATP (the body's own energy currency). There is no question that we need antioxidants, yet there is no simple answer as to exactly how much of vitamin E, selenium, vitamin C, and the carotenoids, we optimally take. go for balance 20 years ago I became aware of the importance of taking antioxidants to protect the body as a result of my having interviewed some of the top anti-aging experts in the world. Later, when I was writing Ageless Aging, I put into practice what they taught me. To put it simply: that the more antioxidants you take the healthier and the better protected from premature aging you would be. Yet as the years passed, certain things began to bother me. I wanted to know, for instance, how much of the various antioxidants are enough? And can you take too many? I couldn't understand how free radicals could be so bad since they were also necessary for life. Doing all this, I figured, should have had me feeling full of energy. Yet as the years passed I found myself more and more fatigued despite being perfectly well. None of it made sense. I figured if you want the straight story you had better get it from the horse's mouth. So I went back to the work done by Denham Harmon, MD, PhD, the man who conceived the free radical theory of aging in the first place, way back in 1954 and one of the most celebrated experts on aging in the world. I had been taking too many antioxidant supplements. Don't get me wrong. These free radical scavengers did work. I looked around me to find that my skin was not falling apart as was that of many friends of the same age, yet I still had this problem with energy. After learning what I should have known all along I cut down my intake of antioxidant nutrients only to find that within a couple of weeks my energy increased dramatically. Recently The Alliance for Aging Research, a nonprofit organization based in Washington DC recommended that people who are generally healthy need somewhere between 100-400 iu of vitamin E, 17,500-50,000 iu beta-carotene, and 200-1000 mg of vitamin C a day. Exactly how much is right for you depends on a lot of things: Do you smoke? Do you live at high altitudes? Do you drink more than a glass of alcohol a day? Do you eat convenience foods rich in junk fats? Do you eat sugar? Doing any of these things increases your need for antioxidants. Eating a high raw diet of fresh unprocessed foods dramatically decreases it.

Unlike cellulose, pectin does not bind water, it is water-soluble. It has no influence on fecal bulking, but it appears to be an excellent substance for lowering cholesterol. It may also help eliminate bile acids from the intestines, thus short-circuiting the development of colon cancer and gallstones. It is also useful as a natural chelating (binding) agent which is why it is so good at mopping up unwanted heavy metals, such as aluminum, from the tissues and eliminating them from the body. READY SET GO Get yourself a big bag of the freshest apples you can find – perhaps three or four different kinds for variety. If you don’t like the look of your apples you won’t want to eat them, so be picky. Buy a box of apples if you like, your greengrocer might give you a discount. On this pre-cleanse day it is a good idea to get your system ready. Avoid tea, coffee, alcohol and soft drinks. Steer clear of bread and cooked carbohydrates such as pasta and cereals, and make your last meal of the day a large raw salad made of fresh fruits and vegetables. Don’t have anything else to eat after your salad, except perhaps a cup of herb tea before bed. This will give your body a good 12 hours head-start on the elimination process and it will thank you for it. THE APPLE FAST There’s really nothing to it. Over the two days you have chosen, tuck into your apples. Eat as many as you like at any time of the day or night. You must eat the whole apple including the peel, the seeds and the core. Don’t worry about the belief that apple seeds are poisonous. Any expert in natural medicine detox will tell you they are not only perfectly safe but an important part of the cleansing process. Chew well, until the last drop of flavor has been extracted from the fruit. The only part you throw away is the woody stem. You must eat your apples raw. You can munch them whole, or grate them and sprinkle a little cinnamon on top. You can even put them in the blender with spring water to make a drink. Eat nothing else during this two-day period, but eat them whenever you are hungry. Do not drink tea or coffee. We all slip up sometimes – we over work or over indulge and live to regret it the next day. A two day apple fast, or even just a day spent eating only apples, is an excellent ‘quick corrector’. Spend even just one day munching apples and it will help set all to rights again, so that when you awaken next morning you feel more like your old self and ready to face the day full of energy. RENEWED VITALITY Apple fasting gives you the chance to step back regularly and take a look at your lifestyle, instead of mechanically going on day after day without being aware of where your energy is going. Set aside two days, three or four times a year – a weekend is best – for an apple fast. This will spring clean your body from the inside out. Even apple fasting for one day a week is a great boost to vitality and good looks, because it helps detoxify your body of wastes accumulated as a result of drinking or eating too much, or consuming the wrong kinds of foods.
