Uncover the Unexpected Benefits of Fiber: Soluble vs. Insoluble & More!

Remember how your mother or grandmother used to tell you to make sure you got “lots of bulk”—and that meant eating oatmeal, muffins, and lots of wholegrain bread? Well, they were partly right and they were terribly wrong. Fiber is a vital part of your diet when it comes to promoting health and protecting the body from degeneration. But cereals, whole-wheat and bran muffins are not the way to go. TRUTH ABOUT FIBER What is the way to go? The answer may surprise you. The healthiest source of fiber does not come from wholegrains—which disturb blood sugar, create insulin resistance, and cause leptin resistance, making many people fat. (These things, by the way, have become a major driver in most chronic degenerative diseases.) The best fiber comes from fresh fruits and vegetables, which are full of both soluble and insoluble fiber. Insoluble fiber: This kind of fiber is found in dark green leafy vegetables, green beans, celery, kale and carrots. It’s the kind of fiber that does not dissolve at all, but adds bulk to your stools. It helps other foods you are eating move rapidly through your digestive tract so that elimination becomes healthier and more regular. Soluble fiber: This kind of fiber attracts water and turns to gel during digestion. You find soluble fiber in seeds, peas, nuts, blueberries and other berries, fresh beans and psyllium seeds. Soluble fiber helps slow down your digestion. It makes you feel full for longer. This is important for people who have a tendency to gain weight and to suffer from food cravings. One of the magic things about good quality fiber is that it actually ferments inside. This is wonderful because it releases something called acetate, which travels from your gut to the hypothalamus—the control center in your brain—and there it helps you stop eating more than your body needs. WHAT IS FIBER? Dietary fiber is a biological unit, not a chemical entity such as a vitamin or mineral. We get the best fiber from eating plant foods—beans, seeds, some pulses, fresh raw vegetables and fruits. Using simple sugars contained within, these plants produce a number of carbohydrate polymers. Some of these serve as energy stores for the plants, and are almost completely digested and absorbed in the intestine when we eat them. These are the soluble fibers. Others—the fibrous or viscous polysaccharides and lignins—lend the plants their structure and form, but we cannot digest them. Instead, they pass through the colon intact, where they are fermented to some degree before being eliminated from the body as waste. These indigestible polysaccharides, which make up the cell walls of plants, are known collectively as “insoluble dietary fiber”. They have a variety of other names, too. EACH IS UNIQUE Each kind of fiber behaves differently and has different benefits for the body: From cellulose, which binds water and increases fecal bulk, to pectin—very rich in apples—which is water soluble; hemicellulose, which shares some of cellulose’s characteristics and helps relieves constipation, aids weight reduction, and clears out carcinogens from the bowel; lignin—the woody fiber that you find in raspberries, strawberries, Brussels sprouts, cabbage, kale, parsley and tomatoes—which helps eliminate the wrong kind of cholesterol and bile acids from the intestine; and the gums and mucilages, which are sticky fibers that food manufacturers make good use of as thickening agents in convenience foods. MASSES OF HEALTH BENEFITS When it comes to enhancing your health, protecting you from degenerative conditions and weight gain, the gifts of fiber are many. First, the right kind of fiber—such as acacia fiber, a soluble fiber—is great for helping people with irritable bowel syndrome. Using an insoluble fiber, such as beans or peas, can reduce the risk of diverticulitis by about 40%. All forms of soluble fiber help slow down the rate at which your body absorbs carbohydrates and sugars, helping to clear sugar cravings and aiding weight loss. Fiber is also great for your skin, especially psyllium husks and seeds. These help clear any overgrowth of Candida albicans—fungi and yeasts—from your body, helping to eliminate food cravings and protecting your skin from acne and rashes. A high-fiber diet helps lower your risk of hemorrhoids, which are caused by chronic constipation. A high-fiber diet also reduces the risk of kidney and gallstones, probably because it helps to regulate blood sugar. Research shows that good quality fibers help heart patients live longer. They are also marvelous for curbing the appetite. One of the surprising ways in which they not only do this, but also help protect us from degenerative conditions, is through fermentation. This process in the gut releases acetate, a waste product that has powerful and positive effects on the body. One of the things it does is to transmit information to the hypothalamus in the brain, which regulates your appetite and tells you when you’ve eaten enough. Research indicates that the appetite-suppressing qualities of acetate are excellent. RADIATION PROTECTORS Some of the best protection from radiation—which we’re experiencing more and more in our increasingly polluted environment—comes from fiber. So make use of it to protect yourself from the kind of radiation poisoning that now contributes to degenerative diseases. Seaweed is also one a great source of radiation protection. Studies have shown that alginate in seaweed and kelp products protect an organism from absorbing radioactive elements such as strontium-90 and cesium, both of which are incredibly dangerous to the body. Amongst other things, strontium-90 tends to replace calcium in the bones, leading to bone disease and cancer. Kelp is helpful in protecting against other kinds of environmental pollutants. The fucoidin it contains helps block the absorption of lead and other heavy metals. There is some evidence that, like pectin—the dietary fiber found in good quantities in apples—it can also help remove much heavy metal poisoning from the body from cadmium, aluminum and lead. Putting seaweeds in soups and vegetable dishes, making laverbread, or even taking kelp tablets can all help prevent the buildup of heavy metals in your body. FIBER 101 Governments recommend that we take in somewhere between 10 and 25 grams of fiber a day. Most people only get half of this, or even less. Because I eat 50% to 70% of my foods raw, I take in at least 40 grams a day. What is interesting is this: Research shows that our Paleolithic ancestors as well as tribal cultures, a few of which still exist on the planet, got somewhere between 35 and 60 grams of fiber a day! Aim for 30 to 40 grams of fiber a day and eat lots of vegetable foods. Your body will thrive on it. You will not find any good quality fiber in manufactured and processed foods. I strongly advise you not to eat such foods. Here are some of the vegetable foods and seeds that are excellent sources of fiber. Flax seeds, chia seeds, and psyllium seed husks Vegetables such as broccoli, Brussels sprouts and kale Macadamia nuts and almonds Berries of all kinds Green beans, peas, onions and root vegetables All the fibers listed above have been shown to help the body protect itself from cancer and other forms of degeneration so common in our world—fibroids, endometriosis, Alzheimer’s disease and heart problems. These fibers can also help tremendously to alter the metabolism of excess estrogen in the bowel—so that more of it is excreted and less of it is reabsorbed. I personally eat lots of green vegetables—most of them raw. My favorite source of seed fibers is twofold: Organic chia seeds and organic whole psyllium husks, which deliver both soluble and insoluble dietary fiber. If you have any sort of irritable bowel issues, I recommend acacia fiber. It is a soluble fiber that is very soothing to the gut. GO RAW What is so special about organic raw vegetables? Plenty. They have powerful protective qualities, which is why diets high in fresh green vegetables are recommended as an aid for protecting the body from degenerative diseases: Arteriosclerosis, arthritis and cancer. This is especially true of raw vegetables. Even more important, a diet high in raw vegetables not only provides you with the best quality fiber that you’ll find anywhere. It actually increases the microelectric potentials of your body’s tissues, making your cells function better, improving intra- and extra-cellular exchange, and imparting high levels of mental and physical vitality to your whole being. Tiny Blueberry: Could it Offer Powerful Protection & Healing?

Addictive Fast Foods: Why Our Health Is At Risk From Cheap & Nasty Western Diet of Convenience

Our Western Diet is based on foods of convenience—the fast food items we buy at the local corner shop or supermarket. These products are gross distortions of the REAL foods which human beings have eaten throughout history...foods to which our bodies remain genetically adapted. Our ancestors did not have bread, sugar, junk fats and all the other nutritionally depleted pre-packaged, pre-cooked stuff that we do. They ate fresh wholesome foods. Palaeolithic man’s diet was high in wholesome fats, moderate in proteins, and rich in fiber, thanks to whatever vegetables and simple fruits they could gather. CHEAP AND NASTY The modern convenience foods on which we now feed depleted of natural fiber and filled with chemicals. It is not surprising that, after living on a diet of simple whole plant foods rich in natural fiber and a health-giving synergy of nutrients and micro-nutrients throughout evolution, the human body continues to this day find the foods we eat now anathema to health. Our genes have been attuned to naturally grown, unprocessed foods for more than a million years. Our metabolic biochemistry as human beings is designed for it. Sir Robert McCarrison—brilliant British doctor also charted the relationship between food and health. More recently, two more British doctors, Dennis Burkitt and Hugh Trowell, carried out their own extensive studies, taking Price and McCarrison’s work a step further. They carefully documented the exact sequence of events which takes place when a people's diet changes from simple, primitive, real food to packaged fast foodstuffs. Stage One: The primitive, unprocessed diet of hunter-gatherers, complete with plenty of healthy fats, good quality proteins, plus vegetable and fruit-based carbohydrate is eaten. Degenerative diseases do not exist. Stage Two: Western diet is introduced. Obesity and diabetes become common among privileged groups able to afford foods of commerce, and degenerative diseases begin to appear. Stage Three: A culture's diet becomes “moderately Westernized”. Obesity becomes more widespread, as does constipation, haemorrhoids, varicose veins and appendicitis. Stage Four: Westernized diet is now widespread. Overweight and obesity are common in all social groups. So is heart disease, high blood pressure, diverticular disease, hiatus hernia, cancer and other Western diseases. FRAGMENTED “FOODS” Like our soils, the industrially manufactured foods we eat today—from biscuits and pasta to pre-cooked convenience meals—have quite literally been taken to pieces. High-tech food production works something like this: To create a great variety of palatable foods from raw materials, you have to reduce the foodstuffs—grains and seeds, vegetables and legumes—to simple, malleable ‘nuts and bolts’ that lend themselves to whatever manipulations you want to perform on them. Take soya beans for instance. They were once considered an excellent source of complete protein as valuable as meat or eggs—more valuable in many ways, since they are so cheap. Nowadays more than 95% of soybeans grown worldwide are genetically modified. Food manufacturers still take whole soya beans, in which 30% of each bean is protein, and process them physically and chemically to extract this protein and make it ready to accept dyes and flavorings. hen they alter its texture through more processing until eventually it becomes ersatz meat. This end product—from which soy-based foods from tofu to soya milk are made—is a long way from the natural soya bean. In the course of such manipulations the little soya bean, which, pre-GMO devastation and high processing, once offered asynergy of nutrients, complex carbohydrates, essential fatty acids and fiber. By now however it has now been turned into a highly concentrated artificial material. During the operation, vitamins and minerals are destroyed. The soya bean's proteins and natural fatty acids have been denatured and chemically altered into new forms, many of which are not usable by the body. The soya has also lost most of its fiber too—a vital part of any food's health-promoting wholeness, and something absolutely essential for protection from degenerative diseases and obesity. To this artificial “food”, manufacturers then add a lot of phoney colors and flavors. Canadian expert in food science, Ross Hume Hall, puts it rather well when he says: "The product contains the same number of calories as the original soya protein, but it now consists of a set of naked molecules completely divorced from any natural context." The same is true of the way in which cereals and grains are processed. NUTRITIONAL DESTRUCTION From milk to meat to garden peas—whatever food is involved—processing destroys nutrients. According to official government handbooks, 50-70% of vitamin B6 is lost when meats are processed. 50-90% of folic acid—a vitamin of particular importance to the functioning of nerves and the actions of hormones, especially in the female body—is shed when grains are milled, while more than 80% of the mineral magnesium disappears in the same process. The multi-national food industry covers the packaging of its products with endless ‘nutritional’ information, which would have you believe that any goodness lost in processing can be made up for by ‘enriching’. Enriching is just another chemical whereby a few cheap vitamins and minerals in synthetic form are pumped back into the now fragmented food. It is categorically impossible to restore the health-giving power of wholeness to any food which has been fragmented in this way. BIG COVER-UP Similar nutrient losses happen during other phases of food handling—artificial ripening, transport and storage. Store asparagus for a week and it loses 90% of its vitamin C. Keep grapes for the same time, and they shed 30% of their B vitamins. Freeze meats and you can lose as much as 50% of two important B vitamins— riboflavin and thiamine. These are just a few examples of nutrient losses which occur every day. They are only the tip of the iceberg when it comes to the ways in which modern food handling and manufacturing processes have created highly concentrated, calorie-dense foods filled with masses of sugar (more about this in future entries) which are dangerously destructive of health, and promote both weight gain and rapid degeneration of body and mind. REAL FOOD CREATES REAL HEALTH OK, so where do you go from here? It is easy to change your food-buying habits once you clear your cupboards of the manufactured rubbish we all collect. You’ll find the healthiest, freshest, and most natural foods for lasting health at the outside edges of your local supermarket. These include crunchy fresh vegetables and fruit, fresh game and meats, seafoods and eggs. Skirt the edges, steer clear of the middle, and you’ve got the secret to becoming a successful modern-day hunter-gatherer. Remember this: Natural wholesome foods are perishable. They have to be replaced often, unlike the ready-in-a-minute, pre-made stuff that you find in the inner aisles. You will be shopping “at the edge” in another way too: You’ll be looking for foods as close as possible to those that our ancestors ate—with a wide variety of crunchy, living vegetables, especially bright-colored ones. Foods with a long shelf life don’t belong in your body. Processed high-carb foods often have a very long shelf life. This makes them great sales material for food manufacturers and retailers, since they can sit on the shelves for a long time, and are cheap to produce with high profit margins. Virtually all convenience foods and fast foods have been whipped up out of processed grains and cereals, masses of sugar in all forms, junk fats, chemical additives. Avoid them for your sake, as well as the sake of your family. You’ll be able to turn your lives around in short order. Find our for yourself. Try it.

The way that you choose to eat after an apple fast is vitally important. If you break your fast the wrong way, all the benefits of eating only apples for two days will be lost. Having got rid of the junk, you don’t want to put any more in. The first two or three days after your apple fast you should eat only raw food – particularly fruit. Don’t eat too much, chew your food well and eat slowly. This is good advice for anyone at any time. Putting too much of even the very best food into your system will lower your energy, because so much of your energy goes into digesting and assimilating the excess food and eliminating the wastes which are byproducts of metabolizing it. Don’t eat when you are not hungry, and stop as soon as you feel full. remarkably raw Raw foods have a remarkable ability to rebalance and restore the entire body. At the same time, a high-raw diet provides a full complement of essential vitamins, minerals and amino acids in an easily assimilable form. This means that, unlike a crash diet, which depletes your body of the nutrients it needs and leaves you tired and irritable, an apple fast followed by a few days on raw fruits and vegetables will give you lots of energy. For the first three days you will do best to eat something like this: breakfast Live Muesli or Energy Shake (see Go For It) midmorning A glass of fresh vegetable or fruit juice, or a cup of herb tea. Avoid coffee, tea, alcohol and soft drinks. lunch For an appetizer have slices of fresh fruit such as apple, mango or a slice of melon. Follow with a large raw salad. dinner Begin with a freshly-squeezed raw vegetable juice cocktail, or half a grapefruit. For a main course have another big raw salad with fresh fruit for desert. On the fourth day you can begin to add a little more cooked food, such as homemade lentil soup with a slice of wholemeal bread with a salad for lunch, or a piece of fresh fish or chicken with a salad for dinner. Each of us is different, so it’s important to listen to your body’s needs. Be sure to eat enough at each meal, but don’t stuff yourself. If you get hungry between meals have a piece of fresh fruit or some sunflower seeds. This is not a starvation diet. There is no need to cheat. After your detox and a few days on raw foods you will most likely want to keep that wonderful feeling of clean and fresh vitality. To do this you need to cut out the rubbish that you have been taking in such as convenience foods and highly processed foods, including breakfast cereals, bread made from refined flour, white pasta, white sugar and all the ‘goodies’ made from it. Choose organic tea or coffee to avoid taking in any more chemicals and pesticides than absolutely necessary. Drink no more than a cup or two a day. Don’t drink too much alcohol - have only a glass (or occasionally two at the most) of good wine with a meal once a day. And remember to drink plenty of spring water. Instead, take in foods which support the proper functioning of your body’s natural elimination processes, and remember not to overload your system in the morning when your liver is working hard. Go for eating 50-75 percent of your foods raw. Eat well on natural foods, such as fresh fruits and vegetables, pulses and nuts, with smaller quantities of steamed or wok fried fish, game and poultry. If this sounds boring, think again. sprout magic An excellent way to cram your meals with goodness is to sprout your own seeds (sometimes called bean sprouts). Seeds and grains are latent powerhouses of nutritional goodness and life energy. Add water to germinate them, let them grow for a few days in your kitchen and you will harvest delicious, inexpensive fresh foods of quite phenomenal health-enhancing value. The vitamin content of seeds increases dramatically when they germinate. The vitamin C content in soya beans multiplies five times within three days of germination - a mere tablespoon of soybean sprouts contains half the recommended daily adult requirements of this vitamin. The vitamin B2 in an oat grain rises by 1300 percent almost as soon as the seed sprouts, and by the time tiny leaves have formed it has risen by 2000 percent. It just ain’t true. The work of some brilliant biochemists and psychiatrists such as Dr. Abram Hoffer in Canada, and allergists Dr Ted Randolph and Albert Rowe, as well as British psychiatrist the late Dr. Richard Mackarness, has shown quite clearly that factors in our physical environment—such as chemicals in our foods and water, as well as certain foods themselves—cause mental and emotional symptoms, as well as weight gain and the development of degenerative conditions and rapid aging. They do this by inducing sensitivity or allergic reactions that involve the central nervous system. The study of this phenomenon is called clinical ecology. Reactions vary from person to person. They can be something as simple as a feeling of mental confusion, grief, or fatigue, to as dramatic as a psychopathic outburst in which someone tries to slash his wrists or attack those testing him. Once the offending foods are known—they could be milk, grain, cheese, vodka, sugar, or almost anything—the patient is told to eliminate them from his diet. Provided he does so, his aberrant emotional or mental state does not reoccur. If the allergies are mild, they can sometimes be controlled by a “rotation diet”, in which food intake is carefully planned so that you only eat a particular food once in any four-day period. Food sensitivities and food allergies are far more common than people realize. Some of the worst offenders are grains, cereals, wheat, milk products, and all convenience and packaged foods. People find that when they exclude these foods completely from their diet, their energy levels increase and their disposition transforms. What is also interesting is the sense that people have of themselves. Whether they trust themselves, and whether they feel good about being who they are, depends tremendously on the foods that they are eating. HEAVY METALS Heavy metals such as lead, mercury and cadmium, or too high a concentration of copper—one of the trace minerals necessary for good health—can create interference with the brain and nervous system, as well as the endocrine system, resulting in aberrant emotions. An excess of copper, for instance, can produce hyper-emotionalism, hallucinations, and even psychic experiences for some people. A high level of lead in the body is linked to mental retardation in children and is often a significant factor in over-aggressive behavior. It’s also indicated as a cause of hyperactivity and learning problems in kids. Excess cadmium, from a lifestyle that includes taking several cups of coffee a day, often leads to a low blood-sugar problem, so you feel you need more coffee or something sweet just to keep going. So does eating too many carbohydrates, which themselves turn into sugar. Low blood sugar is common amongst people living on a typical British or American diet. There are some simple tests to determine mineral balance and the levels of heavy metals in the body. These tests are not foolproof by any means, but they are still valuable. They are often done by burning a small sample of hair cut from the head, and then analyzing its mineral content. If any imbalances are found, they can be corrected by giving chelated minerals and/or by drying out excessive heavy metals from the tissues using natural substances such as pectin, high doses of vitamin C, garlic and kelp. HOW TO TEST YOUR FOODS Learn to test your own foods—it’s not hard to do. It’s all about becoming conscious of what your body thrives on and loves, and what it dislikes. In fact, it’s all about honoring yourself and your life. Say, for instance, the first food that you decide to test is cow’s yoghurt. You eat a nice big helping of yoghurt at one meal, then you don’t eat any more yoghurt for 48 hours, and you don’t introduce any other new foods. If, during this period, you find your energy levels have dropped for no apparent reason; you’re ravenously hungry or craving something; your bowels are upset; you feel emotionally unsettled or low; or you develop aches or pains in your body, then you can be pretty sure that your body has reacted badly to the food you have been testing. If, on the other hand, after 48 hours you experience none of these reactions, you can safely assume that the food you have tested can be incorporated into your meals as a food that your body is happy with. If you do have a negative reaction to the food, it’s important to realize that you haven’t done anything wrong. This is the way you learn about the foods that your body can handle and which you need to stay away from. Of course, it’s important to learn by your body’s unique rules, and test each food one by one. Give thanks to your body if it says “no” to a food. Meanwhile, get plenty of top quality proteins and fresh, green, non-starchy vegetables, no matter what else you’re eating. It’s important to remember that your digestive system is, in truth, your second brain. (See “Secrets of the Second Brain” ) It boasts as many nerve endings as the brain itself. When you eat foods that antagonize these nerve endings, you experience all sorts of physical and emotional states that hold you back. Discovering the foods that work for you is sheer joy. These are foods that you can eat with impunity, without gaining weight or worrying about undermining your health—provided you avoid the foods that you discover your body does not work well with.

Xylitol—Good Or Bad?

I have had recently had a lot of questions about Xylitol, So I have decided to post some information that has come largely from one of my favorite sources which is the Western Price Foundation. Hope you find it helpful. Xylitol is a sugar alcohol, a low-calorie carbohydrate made from birch bark, fibrous vegetables and fruit. Xylitol has no known toxic levels and was approved by the FDA in 1963. Some diarrhea or slight cramping may occur at first if a large amount is consumed all at once. It is recommended that one start small and let the body's enzymes adjust, which they will do. Xylitol is deadly to dogs even in small amounts. Gums, candies, baked goods, and table scraps containing xylitol must be kept far away from, and inaccessible to dogs, including ladies' and children's purses, and the garbage for dogs who are foragers. Xylitol had been known to the world of organic chemistry since it was first manufactured in 1891 by a German chemist. A natural, intermediate product, xylitol regularly occurs in the glucose metabolism of animals as well as in the metabolism of several plants and micro-organisms. Xylitol is even produced naturally in OUR bodies, up to 15 grams daily during normal metabolism. Because it metabolizes without using insulin, there is no blood sugar spike. Xylitol's Dubious Health Claims Since xylitol is an industrial product, it pays to be dubious about the industry’s health claims for it. First among these is the claim that xylitol prevents cavities. Indeed, many studies can be cited to support such a claim. But not all. The results of a recent two-year trial found no difference in cavities between those who chewed xylitol-containing gum and those who did not. 2. In an earlier study, researchers concluded that “Overall, consumption of xylitol-containing snacks and candy did not reduce S. mutans levels.” 3.As for the claim that xylitol is good for diabetics, the fact that this sweetener is not completely absorbed comes at a cost: bloating, diarrhea and flatulence. In a study performed on 18 diabetic children who consumed a dose of 30 grams of xylitol per day, researchers found a significant elevation of the uric acid concentration.4 And since 80 percent of xylitol is metabolized through the liver, a danger to liver function similar to that of fructose is a distinct possibility. The Public Relations Story The official website for xylitol, xylitol.org, states, “In the amounts needed to prevent tooth decay (less than 15 grams per day), xylitol is safe for everyone.” Fifteen grams of xylitol is about 0.5 ounces. What about doses over 15 grams? In a long term toxicology study on rats researchers found that xylitol caused a significant increase in the incidence of adrenal medullary hyperplasia in male and female rats in all dose levels tested (5%, 10% and 20%).5 That means it caused abnormal cell growth in the adrenal glands. In one higher-dose study in which mice consumed 20 percent of their diet as xylitol, there was a significant increase in the mortality of the males as compared to those consuming sucrose.6 A major study in dogs found an increase in liver weight associated with xylitol use.7 Conclusions About Xylitol Xylitol’s own promotional material says it is not safe for everyone to use. Since children are smaller and less developed than adults, they will obviously be much more sensitive to xylitol’s effects. There are no safety data or tests to indicate a safe dosage for children. And foods containing xylitol may also contain additional sweeteners that are undeniably harmful, such as aspartame. As for claims that xylitol can prevent tooth decay, I can only say, “Buyer beware!” Such claims are based on the faulty theory that bacteria cause tooth decay. We know from the work of Weston Price that tooth decay is a problem of nutrient deficiencies—the bacteria are just there cleaning up dead tissue. Finally, and most importantly, this industrial product is just not necessary. Nature has provided us with many wholesome sweeteners that can be used in moderation without adverse effects in the context of a diet of nutrient-dense traditional foods. Government bodies, the media, even most of the medical profession have been harping on about how coconut oil elevates cholesterol, makes you fat and fosters all sorts of illnesses like Alzheimer’s and heart disease. Well don’t you believe it! The humble coconut is a godsend. Its oil blesses health, reduces the appearance of wrinkles, destroys harmful bacteria, fungi, viruses and protozoa, counters food cravings, and is one of nature’s great antioxidants. It also supplies the body with top quality fat, essential for high-level wellbeing. If you’re not yet one of this oil’s greatest fans, it’s time to become one… COCONUT’S MIRACLES Half of the fat that makes up coconut oil consists of a marvelous and rare gift from nature called lauric acid. When lauric acid enters the body, either when you eat coconut oil or rub it on your skin, it gets converted into monolaurin—a monoglyceride capable of wiping out the viruses that carry a lipid coating—herpes, flu and HIV, as well as dangerous protozoa like giardia lamblia. The next important fat components of coconut oil are its medium chain fatty acids (MCFAs). These fatty acids get converted by the liver into energy instead of being laid down as fat deposits. When it comes to banishing your food cravings, especially for sugars and starches, MCFAs are the best things around. They bring us the energy the we long for so we don’t feel compelled to munch on sweets and snacks. Medium chain fats are also highly nutritious. They are regularly used in hospitals to feed critically ill patients who are unable to digest their foods. They also offer excellent support for pregnant and nursing women. Athletes, disillusioned with much-hyped sports drinks that lift you up temporarily only to let you down an hour or two later, are at last waking up to the amazing way MCFAs provide them with energy that lasts and lasts. EAT IT REGULARLY Use organic coconut oil in cooking as often as you can. It’s great for frying and for baking. It can be heated to very high temperatures without being damaged the way other oils are when they are heated. Coconut oil does not go rancid like other oils. This is a question still being debated. Why? Because—since the mid 1950s—most of what we have been taught about what is a healthy diet has been nothing more than conjecture. Not grounded in solid research, current widespread beliefs about nutrition are still not based on hard science, but on endless unproven hypotheses. We’ve been indoctrinated by multinational food corporations, government bodies and the majority of medical doctors to believe that all saturated fats cause heart disease. Even Dr Mehmet Oz, well known for his TV appearances, and his co-author Mike Rosen published a blistering attack called “Don’t Monkey With Coconut Oil”, claiming that coconut oil is “loaded with artery-clogging saturated fat and oozing with calories.” It’s hard to believe that similar blatantly inaccurate warnings of the dangers of eating saturated fats—especially coconut oil—still goes on in spite of the extensive research demonstrating that such beliefs are completely untrue. Coconut oil’s ability to support high-level health is now well proven. When I wrote and presented my documentary in the Southern Hemisphere called “To Age or Not to Age” , the nutritional program I designed for participants was rich in organic coconut oil. We worked with healthy men and women between the ages of 30 and 60 who wanted to become even healthier. My documentary asked the question, “Is it possible to slow aging by making simple nutritional changes?” We also wanted to know, “Might it also be possible to reverse age-related degeneration that has already occurred?” And, most important, “Can these things be verified in medically measurable ways?” GREAT BLESSINGS We carried out what is known as a baseline study to find out. We sent our participants to undergo standard tests of medical parameters before the project began. They were each one checked for fasting insulin and blood sugar levels, cholesterol, triglycerides and blood pressure. These medical tests were carried out in a well-known hospital which also happened to have an excellent physiology laboratory, so we were able also to work with exercise physiologists who measured each participant’s VO2Max, body fat percentage and lean body mass to fat ratio. To our surprise, every participant—including a 50 year old triathlete—showed several abnormalities associated with insulin resistant syndrome and other biomarkers. Most were also overweight. I introduced the group to my low-carb, high-fat way of eating, full of coconut oil. The experiment lasted only 5 weeks. When we sent participants back to the hospital at the end of this time to have their medical parameters checked again, the results were mind-blowing. We were amazed to discover that, after only 5 weeks of dietary changes, every abnormal biomarker had normalized for each participant, except for cholesterol measurements in one woman, which took another few weeks to normalize. Participants reported that they felt better than they had for years in every way. The irony of all of this was amusing. A well known self-promoting “professor of nutrition” went so far as to upbraid the television broadcasting authorities for having aired such a documentary. Paying no attention to the remarkable improvements in health recorded for all participants and validated by medically measurable procedures, this gentleman raised hell. And the single most aggressive attack he tried to make against the program was directed at... you guessed it... coconut oil. The documentary confirmed yet again that the human body has a phenomenal capacity to heal itself through the right changes to what we eat. Most coconut oil that you find in a supermarket has been refined. The refined oil tends to be tasteless and without fragrance. Some people like this. However, refined oils don’t offer the same benefits that unrefined, raw, virgin organic oil does. Most refined oils are processed using a chemical distillation procedure. They have been bleached and deodorized in an attempt to produce the bland consumer product that lines our supermarket shelves. Some are even hydrogenated—something you want to avoid at all costs. There are a number of methods for extracting coconut oil too: expeller-pressed is one during which the oil can often be heated as high as 90 degrees Centigrade. The higher the temperature, the stronger the smell and taste becomes. This is how some coconut oil ends up smelling as though it has been toasted. Cold-pressed is another extraction method—this does not necessarily mean “raw”, since it too can sometimes be heated. Then there is the Centrifuge method: This is often the best extraction method, since coconut oil treated this way is less likely to have been exposed to a lot of heat in the process. This makes it taste milder and more delicate. I have tried many brands and rejected many in the process. I guess I could go so far as to describe myself as a connoisseur of this wonderful stuff!
