Grow Healthy Crops and Stay Healthy Too!

Early on in the twentieth century, a few scientists—mostly in Germany—experimented with chemicals as a means of fertilizing food crops. They found that a mixture of nitrogen, phosphorus and potassium (NPK) would grow big yield crops of good-looking vegetables, grains, legumes and fruits. But little interest was taken in their discoveries until the end of World War II. At that time most foods were still grown pretty much as they had always been—by farmers who manured, mulched, and rotated their crops to keep soils rich and in good condition. To put it another way, most food was grown organically, although nobody had even coined the word; for this was no more than what traditional farmers throughout the world had done for thousands of years. MASS DESTRUCTION BEGAN HERE When the war ended, big chemical conglomerates who had been involved in the manufacture of phosphates and nitrates as war materiel found themselves stuck with huge stockpiles. They went looking for new markets. Aware of the early research into chemical fertilizing, they turned towards farmers, and began to sell them artificial NPK fertilizers at costs low enough to make it all look very attractive. These purveyors of chemicals also spread the false belief that NPK is all you need to grow healthy crops. There were unfortunately two very important facts that the chemical hawkers left out. Probably they did not even know. After all, it was not good for their profit margins to know. The first is that, although plants grow big on artificial fertilizers, they do not grow resistant to disease. The second is that the health of human beings eating food plants grown this way is, sooner or later, seriously undermined. CHEMICAL VICTIMS Plants grown only on NPK are deprived of essential minerals and other micro-substances they need to synthesize natural complexes in roots and leaves, which ward off attack by insects, weeds and animals. So before long the new artificially fertilized vegetables and fruits began to develop diseases. The chemical hawkers were quick to the rescue. The answer to this problem, they said, would be found in using more chemicals. That is how pesticides, herbicides, nemacides and fungicides came into being. They provided chemical companies with yet another exciting business opportunity—especially since the longer you fertilize chemically, the more depleted in organic matter your soils become, and the less they contain of the minerals and trace elements needed to synthesize natural protective complexes during growth, so the more pesticides you need. So as time went on, more and more pesticides and other chemicals were sold. Before long another important fact began torear its ugly head. It was this: like plants, human beings need a lot more than nitrogen, potassium and phosphorus from the foods they eat too, to maintain their own health. Your body cannot make minerals. It has to take them in, in a good balance, from the foods you eat. In addition to nitrogen, potassium and phosphorus, it requires magnesium, manganese and calcium, selenium, zinc, copper, iodine, boron, molybdenum, vanadium, and probably other elements as yet undiscovered as well, to stay healthy. These elements need to come from the foods you eat. Generally they do, when foods are grown organically in healthy, traditionally fertilized soils. But they are increasingly missing and unbalanced in the foods we buy today, thanks to our legacy of chemical farming. EARTH’S BLESSED CREATORS The organic matter in healthy soil is Nature's factory for biological activity. It is built up as a result of the breakdown of vegetable and animal matter by the soil's natural 'residents'—worms, bacteria and other useful micro-organisms. The presence of these creatures in the right quantity and type gives rise to physical, chemical and biological properties that create fertility in our soils and make plants grown on them highly resistant to disease. When it comes to human health, they do a lot more. The minerals and trace elements we need to look after our metabolic processes, on which health and leanness depend, must be in an organic form—that is, taken from living things like plant or animal foods. You cannot eat nails—inorganic iron—for instance, and expect to protect yourself from anaemia, or chew sand—inorganic silica—and be sure to get enough silica, the trace element that keeps your nails and hair strong and beautiful, and helps protect your bones from osteoporosis. It is the organic matter in soils that enables plants grown on them to transform inorganic iron and silica into the organic form which is taken up by the vegetables and fruits, grains and legumes. Destroy the soil's organic matter through chemical farming, and slowly but inexorably you destroy the health of people and animals living on foods grown on it. Eating food grown organically protects from significant mineral deficiencies, as well as from distortions in mineral balances. What few people realize is that an overload of one or more mineral elements alters your body’s ability to get enough of other minerals, undermining the people's health. No such protection is available when foods are chemically grown. So eat organic even if you have to grow your own foods in the garden or feed on sprouted seeds you grow in your kitchen window. Your body will bless you with energy, protection from early aging, and the sense of wellbeing that many long for but few as yet experience.

Aloe heals The cool, slippery gel oozed out of a leaf of the aloe cactus has been used for almost 3000 years to treat burns and cuts and to undo the devastating effects of too much exposure to the sun. Recent studies show that phyto substances from the aloe actually penetrate damaged tissue encouraging healing, increasing blood flow and easing inflammation and pain. Aloe Vera is anti-inflammatory and antiseptic if only extracted from the leaf pulp. It contains carboxypeptidase and bradykininase which relieve pain. Make a friend with Aloe Vera If you have a good, healthy aloe plant that is at least three years old (and you go about it sensibly) you can cut the leaves for use without doing lasting damage to the plant. Relief for burns and cuts lies inside the leaf. Cut a leaf, split it open, and smooth the gel you find inside over the burn, or just lay the leaf, gelside, on the burn and hold it in place with a bandage. The classic definition of a herb is a non-woody plant which dies down to its roots each winter. This definition is far too limiting. It was probably made up by 19th Century European botanists who had never seen the rainforest in which, of course there is no winter to die back in. Neither had they ever heard of woody trees and shrubs such as hawthorn and ginko and elder which are some of the best selling herbs on the market these days. I define a herb as a medicinal plant. It can come from any climate and be a leaf, a bark, a flower or a root. It can be home-grown or wild, a weed, a spice, a plant which is used for its healing or culinary or beautifying properties.Once you discover the power of herbs it is easy to become so enthusiastic about them you go overboard trying to use them for everything. It is not wise to take lots of different plants all at the same time. Or you might start to think that since a small amount of something is good for you, taking twice or three times that amount will be even better. It isn’t. If you want safe and sane herbal help here are a few guidelines to follow: Herbs occasionally interact with conventional drugs. Be sure to tell your doctor that you intend to try a herbal remedy. If you want to use herbs to treat a serious medical condition, find yourself a good medical herbalist to work with. Don’t do it yourself. Take no more than recommended dosages of a herb or combination. If you notice any adverse reaction, stop right away. Use only the very best herbs whether they be fresh, dried, teas, tinctures, extracts, or capsules. Give plants enough time to work. Many herbs, such as St John’s Wort and Wild Yam, are slow to build beneficial effects on the body. Look to six weeks for results.

Coffee: Discover Its Benefits -Shield Yourself from Contamination

Despite the warnings in recent years about how dangerous coffee is to health—and there is truth in many of them—coffee has many benefits to mind and body. It’s been prescribed for generations in the treatment of asthma, vertigo, headache, jaundice, and even snakebite. A poultice of wet coffee grounds speeds up the healing of insect stings and bruises. Coffee enemas have long been used internally as a strong purgative stimulant to both the bowels and the liver in the natural treatment of serious illness, including cancer. Coffee warms us, stimulates us, and has a natural diuretic and purgative effect on the body. From the point of view of our creativity and mental functioning, coffee most definitely has something to offer. The cafés in Paris in the last century were filled with famous writers, artists, politicians, and thinkers who enjoyed the stimulation that coffee can bring, among them Ernest Hemingway, Collette, Jean-Paul Sartre, Picasso, and even W.B. Yeats. The most popular beverage in the world is coffee. More than twelve billion pounds of coffee are traded each year. Once known to Persians and Arabs as the ‘drink of the gods,’ coffee has become so much a part of modern life that many dread to be without it. In the United States more than 60% of people drink coffee daily while 80% drink it occasionally. Most coffee drinkers swallow about two cups a day. If you’re going to drink coffee, there are certain things you need to know about it—for instance, how to choose the best coffee and how to protect yourself from the ever-increasing contamination from pesticides and herbicides. From the point of view of digestion, coffee can have a tendency to eat away at the villi in the small intestine. This can happen if you drink too much of it. And if you are not savvy about making sure that the coffee you drink is only the very best, it can also interfere with the assimilation of nutrients from food—one of the reasons why heavy coffee drinkers tend to be deficient in minerals. The acidity of coffee has also long been another concern. If your body becomes too acidic from the wrong kind of coffee, it will tend to leach calcium—an alkaline element—from your bones to balance the acidity of the blood. The good news is great news. Clean, fresh, organic, fair trade coffee—which is the only kind you should be drinking—can be a major source of helpful antioxidants in your diet. These help neutralize the aggressive action which coffee can have on the body. While it was long believed that drinking coffee would increase your blood pressure, recent studies show that this is not a great problem. In one meta-research project involving 11 studies and some 480, 000 people, researchers concluded that drinking one to four cups of coffee a day can even diminish the risk of developing type II diabetes. A Japanese team discovered that drinking a cup of coffee could also lower the strain on the heart by enhancing blood flow in the capillaries. Other recent studies indicate that coffee consumption may help limit Parkinson’s disease, liver cancer, and liver disease. One of the ingredients in coffee may help protect from alcoholic cirrhosis. And coffee boosts athletic performance. Virtually all of the previous research into the damaging effects of coffee was done using readily-available coffee in the market-place, which is contaminated by an ever-increasing number of herbicides and pesticides that build up and poison your body by interfering with metabolic processes. In developed countries such as Europe and the United States, once a herbicide or pesticide is labeled ‘dangerous to human health’ and made illegal, the chemical companies who sell it then tend to send the banned chemically contaminated beans to third world countries for use there. Coffee itself is grown in third world countries. In most of these countries there are no statutory controls over allowing how much of a specific herbicide or pesticide is to be sprayed on crops. Coffee is the second most contaminated food in the world. Organic coffee is free of the chemical dangers, none of which have been fully investigated but which are certainly considerable in relation to human health. So, when buying coffee, go organic. Here are my own guidelines for safe, delicious coffee drinking. Limit yourself to two cups of the very best organic, fair trade, fresh coffee, which is pesticide free. Buy whole beans and grind them yourself just before making coffee. Make sure the beans you choose smell fresh and delicious. Most brands are too old and these can poison your system. Dark roasts, especially espresso roasts, are the best to buy. Espresso has less caffeine in it than ordinary coffee. It is also more delicious. Always drink your coffee black, without cream or sugar, otherwise you’ll undermine your ability to receive all the newly discovered benefits from coffee drinking. An important warning: Never drink coffee when pregnant. Even one or two cups drunk while pregnant can affect fetal heart development and long-term function. Enjoy.

Stay Healthy This Holiday: Fruits That Reduce Diabetes Risk | A Christmas Carol Guide

In Charles Dickens' A Christmas Carol, Jacob Marley, Scrooge's dead partner, appears to him as a ghost: `You don't believe in me', observed the Ghost. `I don't', said Scrooge. `What evidence would you have of my reality beyond that of your senses?' `I don't know', said Scrooge. `Why do you doubt your senses?' `Because', said Scrooge, `a little thing affects them. A slight disorder of the stomach makes them cheat. You may be an undigested bit of beef, a blot of mustard, a crumb of cheese, a fragment of an underdone potato. There's more of gravy than of grave about you, whatever you are!' Scrooge was right. Biochemical changes brought about by what you eat, how well you eat, and how often you eat, can affect your brain and alter consciousness enough in some people to produce imaginary fears—even hallucinations—not to mention depression and anxiety as well as chronic fatigue and chronic insomnia. The very worst of the body snatchers are the sugars in their myriad of forms. More about this in a moment. Meanwhile, everybody knows that fruit contain a kind of sugar known as fructose. Does this mean we should ban fruit from the table? GOOD FOOD BAD RAP Somehow fruits seen to have have earned themselves a bad name. Why? Because fruits contain fructose—fruit sugar. Nonetheless, it’s fructose that gives glorious organic navel oranges, blueberries, apples, and golden kiwis their marvelous sweetness. And the right amount of organically grown, whole fruits do as lot to keep us well. Fruit plays an important part in any high-raw way of eating. These colorful gifts of nature cleanse the body of the toxicity we absorb from our environment, the water we drink and the dreadful packaged convenience foods people eat. That’s why fruits are so valuable to any serious detox program. So what’s the problem with fructose? First of all, there is evidence which indicates that people who eat too much fruit can make themselves vulnerable to chronic problems like insulin resistance, diabetes and obesity. And this is important. For most fruits we eat today contain between 30 and 50 times the amount of fructose compared to the fruit our hunter-gatherer forefathers munched on. This has come about because, during the 20th century, enormous hybridization projects continue to make fruits sweeter and sweeter. As a result, not only has the incidence of chronic illnesses—from heart disease and diabetes to cancer and mental disorders—exploded in developed countries: So has our consumption of sugar in its many forms—of which fructose is one. WHERE DO YOU STAND If you are someone with high cholesterol, diabetes, obesity, insulin or leptin resistance or hypertension, then it is best to limit your fruit intake so you only get, say, 15 grams of fructose a day. How do you do this? Choose your fruits carefully so that most of them are low-fructose. If you do not fall into these categories, you should be able to eat a lot more fruit and have it do you nothing but good. That is, of course, provided the fruits you choose are organic and therefore not sprayed with chemicals. Make sure they have not been GMO grown. Under no circumstances do you want to put genetically modified foods of any kind into your body. All GMO crops are dangerous, despite all the corporate hype designed to make us think otherwise. BIG CONTRADICTIONS But findings about the effects of fruit eating are contradictory, to say the least. The British Medical Journal published three observational studies that examined the effects of fruit-eating on human health. These studies analyzed the diets of almost 200,000 people between 1984 and 2008—none of whom had indications of heart disease, diabetes or cancer when the studies began. On completion, the studies indicated that, far from fruits predisposing us to degenerative diseases, some fruits including grapes, blueberries and apples may actually reduce the risk of diabetes. This is great news and somewhat unexpected, since apples and grapes contain a lot of fructose. But beware. Drinking juices made from these fruits that are bought rather than being homemade from fresh produce do contribut to the development of the same diseases that eating whole fruit can help prevent. Steer clear of all packaged and tinned fruit juices and fruit drinks. DEVIL IN DISGUISE One aspect of fructose is as dangerous as hell—high fructose corn syrup (HFCS). The ultimate body snatcher it is. If you value your health and the health of your children you’ll want to avoid it at all costs. But avoiding it is not easy. HFCS is added to just about every packaged food and drink you buy. So read every label on every packaged food or drink you buy and reject every food or drink containing it. HFCS is deadly stuff. A highly processed form of liquid sugar extracted by a nasty chemical solvent called glutaraldehyde, is not only HFCS frequently contaminated with mercury. Putting it into the body is a major cause of obesity, insulin resistance, diabetes, and mood disorders, and hyperactivity in children. High-fructose corn syrup is similar in composition to sucrose, with levels of around 45% glucose to 55% fructose. And, as with sucrose, its harmful effects are concealed from view. It does not raise blood sugar, as it is processed by the liver. There it promptly turns into fat. In 1978, HFCS was brought in as a substitute for sugar in soft drinks. This quickly became a real game-changer, but not in a good way. By the year 2000, sugar consumption in America increased by 25 pounds per person per year, nearly ALL of it in the form of HFCS. These days the average American consumes a massive 35 pounds of HFCS each year, according to the U.S. Department of Agriculture. It’s no coincidence that the obesity rate in the US has reached epidemic proportions worldwide. SNEAKY AND SINISTER You’ll find HFCS in thousands of grocery items, even in places you might never suspect—such as pizza sauce, salad dressings, foods from sodas, drinks and sweets to sauces, breads, and delicatessen foods like smoked salmon, luncheon meats and salami. Farcically, HFCS is often labeled "all natural" because fructose is found in fruit—even though it is mass-factory-produced, using a process which dramatically increases the fructose content of corn syrup. Fructose in these protucts bears little resemblance to fructose found in fresh fruit. It also lacks the fiber, antioxidants and nutrients found in fresh fruit. As pediatric specialist and childhood obesity expert Robert Lustig puts it, high-fructose corn syrup is “a poison all by itself”. Lustig doesn’t distinguish between plain sugar and HFCS when it comes to health perils—they are “equally dangerous”, he insists, like two sides of the same coin. And what’s so insidious about HFCS is that it is sold to the public as a “healthy alternative” to regular sugar. You should avoid it at all costs. MY OWN FRUIT EXPERIMENT Most of you know that I am a passionate fan of organic raw food and have been for almost half a century. A high-raw way of eating in my mid-twenties healed me from so many illnesses contracted as a result of being raised on junk food throughout most of my unpredictable childhood. A few weeks ago, Aaron and I decided to experiment by returning to being on an all-raw fruits and vegetables diet for a period of six weeks. We wanted to check out what, if any, ill effects eating an all raw diet containing lots of fresh, organic fruits would have on us. The results of our little experiment have turned out to be excellent. We ate a lot of fruit. We put it in our salads, we made juice from a mixture of fruits and included in it much of the pulp produced from the juicing. We loved the way this made us look and feel. I’m happy to report that the results of ouro little experiment has been nothing but good. Like vegetables and herbs, fruits are not only a storehouse for vitamins and minerals; they boast high levels of phytochemicals. These powerhouses for health and vitality are not nutrients like vitamins and minerals. Yet they carry colored plant factors which play an important role in our health. A good supply of these phyto-nutrients helps minimize the incidence of cancer and heart disease and protect from degenerative conditions associated with aging, such as inflammation of the joints, loss of memory and concentration. They even help slow the aging process itself. Large quantities of these plant factors with many different names are found in common fruits, from berries, oranges, lemons and grapes to cantaloupe, kiwis, cranberries and cherries. However, in any diet based on manufactured convenience foods, they are scarce as hen’s teeth. MEET THE GOOD GUYS Berries, grapes and cherries as well as citrus fruits are excellent sources of water-soluble phyto-chemicals known as flavonoids. Flavonoids guard the integrity of collagen within the body. They work together with vitamin C and—as do many of the other phyto-nutrients—enhance the positive effects of antioxidant vitamins, improving the function and the integrity of tiny blood vessels known as capillaries, which deliver nutrients and oxygen to our cells. This helps raise overall energy. It also helps keep skin smooth and elastic, protects against bruising while improving memory and eyesight. Phyto-nutrients often carry weird names like catechin, quercetin and hesperidin. Among the more than 20,000 known, hesperidin, rutin, quercetin, catechin and pycnogenol are especially important. Catechin reduces allergic reactions by calming histamine release in the body. Rutin helps guard the integrity and health of capillaries, veins and arteries, as well as the skin itself. Many phytochemicals protect our health by interfering with or blocking specific disease processes. They do this either by acting as antioxidants and preventing free radical damage, or by inhibiting enzymes which promote the development of diseases like cancer. Some plant factors found in fruits and vegetables clear our cells of toxins and other damaging substances such as herbicides and pesticides we take in from our environment. HEALTHY SUPPORT HERE At Tufts University in the United States, scientists developed a method of quantifying the anti-oxidant power of specific fruits and vegetables by measuring their ability to quench free radicals in a laboratory test tube. To test a food’s oxygen radical absorbance capacity, called the ORAC test, scientists have been able to categorize a fruit or vegetable according to its overall anti-oxidant power. Fruits like blueberries, blackberries, strawberries and raspberries are at the top of the list. They can be highly protective of our health. While we’re talking of lists, here is a list of some of the most common fruits indicating how much fructose is in each. Become familiar with it and, given the state of your own body, you can easily make your own decision about what kind and how much of each fruit suits you best, as well as how much you want to eat of it. FRUIT SERVING GRAMS OF FRUCTOSE Lemon 1 medium 0.6 Passionfruit 1 medium 0.9 Apricot 1 medium 1.3 Raspberries 1 cup 3.0 Kiwi 1 medium 3.4 Cherries 1 cup 3.8 Strawberries 1 cup 3.8 Pink grapefruit ½ medium 4.3 Nectarine 1 medium 5.4 Peach 1 medium 5.9 Orange 1 medium 6.1 Banana 1 medium 7.1 Apple 1 medium 9.5 Persimmon 1 medium 10.6 Pear 1 medium 11.8 Grapes 1 cup 12.4 Mango 1 medium 16.2 Here are my suggestions on how to get the very best from fruits, now and always: If you know you have insulin or leptin resistance, suffer from food cravings and are overweight, it’s pick your fruits from those with the lowest levels of fructose and limit your fruit intake to around 15 grams of fructose a day. If you are not troubled by any of these conditions, you can experiment by eating fruits which give you from 20 to 40 grams of fructose a day and work out by trial and error what the levels of fructose best work for you. Always eat your fruits whole if possible. If you choose to juice them yourself, make sure you keep the valuable pulp from the juicing process and add a good quantity of it back to the juice. Go for organic fruits. You might even try growing a lot of your fruit in your garden if you have the space. Never eat GMO fruits...something difficult to ascertain in most countries these days since corporate interests have lobbied hard to prevent GMO labeling. This is another reason to choose organic. Never eat or drink anything with high fructose corn syrup in it. It’s deadly stuff—so read labels carefully. Fruits are one of nature’s most glorious gifts to us. Know the ones that work for you and shun those that don’t. Above all steer clear of high-fructose corn syrup and read labels carefully to make sure you do.

Uncover the Truth: What Low-Fat High-Carb Eating Does to You

There is too much nonsense talked about obesity, not only in the media, but even in published findings of scientists and doctors who, by rights, should know better. If you decide to take time out to plough through the voluminous research and declarations about degenerative diseases and obesity, their causes and their cure—as I have done ad nauseam in the course of my developing Leslie Kenton’s Cura Romana—you discover that several important conclusions demand to be drawn. Let’s look at the obesity problem first. Then we’ll go on to examine what few people yet know: the same factors that make some of us fat can foster the development of degenerative diseases in all of us. WHAT YOU NEED TO KNOW Cereals, grains, and sugar-based carbohydrates are the culprits that make you gain weight, if you have inherited a genetic tendency to do so. These foods distort hormonal regulation and interfere with your body’s ability to maintain its functions within a normal range. This is a consequence of the way grain and sugar-based carbs screw up blood sugar and destroy insulin sensitivity. What most people—even those who believe they are eating a ‘healthy diet’—are amazed to learn is that sugars and starches don’t just cause weight problems. They are major factors in the development of diabetes, coronary heart disease and a myriad of other degenerative conditions, even in those who never seem to gain weight, no matter what they eat. Nonetheless all of us, fat or thin, become prone to rapid aging when we consume carbs and sugars in quantity. HERE’S WHY The most signification change to human diets in two million years began with the Agricultural Revolution, where man went from a carbohydrate-poor to a carbohydrate-rich diet as cereals and starchy vegetables began to enter our food chain. The more that these carbohydrates have been refined and processed, the more problems they have caused us. Meanwhile, during the 20th century, an overwhelming increase in cereals, grains, sugars and high-fructose corn syrup used in convenience foods has become a major trigger of burgeoning obesity and chronic illness. In the nineteenth century, we ate between 10 and 20 pounds of sugar per person per year. Today per capita we consume between 150 pounds and 200 pounds a year. So this is little wonder. Health Care - IGNORANCE IS PROFITABLE In the so-called civilized world, people are getting fatter and sicker by the year. Yet food manufacturers, government bodies and well-meaning but ignorant doctors are still telling us that we need to eat more low-fat-high-carb foods, as you can see from the three images of the Food Pyramid and Choose Your Plate. This includes masses of bread and cereals, rice and pasta. And the majority of the population still buys into the notion that fats, not carbs, are the villains of the piece. Much of the public’s inability to recognize what low-fat-high-carb eating is doing to ruin our health comes from the fact that the more ignorant we remain, the more profitable it becomes for some. In the past sixty years, multinational food manufacturers have been quick to take up the notion that carbs are good for us and fats are bad. Commercial interests waste no time in translating unsubstantiated scientific research promoting a fat-free, low-fat, and reduced-fat way of eating into huge profits. Consequently our supermarkets remain overloaded with convenience foods which health elitists, in the know, refuse even to touch. As for those who remain unaware that it is possible to transform health and weight naturally, the majority of the world continues to suffer. As the Irish humorist P.J. O’Rourke pointed out, the world is full of “masses waddling into airports, business offices and churches dressed in drooping sweats or fuchsia warm-up suits or mainsail-size Bermuda shorts, each with a mobile phone in one ear…sucking Diet Pepsi through a straw”. A True Healthy Eating Plan - Things to know As a result of the negative influence they exert on insulin and blood sugar, refined carbohydrates, sugars and starches foster the development of diabetes, coronary heart disease and obesity. These foods are also significant contributors to the Diseases of Western Civilization. These include cancer, arthritis, depression and rapid aging. Cereals, grains, and sugar-based carbohydrates distort hormonal regulation of homeostasis. They raise blood sugar, which encourages excessive insulin secretion leading to insulin resistance, Syndrome X and metabolic syndrome. Eating carb foods increases hunger, causes food cravings and addictions, also creating an on-going experience of fatigue. This forces people to rely heavily on coffee and other stimulants to get through each day. Weight gain is a disorder of excess fat accumulation as a result of disequilibrium in the body’s hormonal regulation of fat metabolism. Obesity is not caused by gluttony, too little exercise or a lack of will power. Taking in excess calories is not the cause of weight gain, nor can expending a lot of energy on exercise prevent it. Good quality fats and oils such as olive oil, coconut oil and butter neither cause obesity nor the development of degenerative conditions. Stale quinoa is dusty and can taste “dead” since it has lost so much of its goodness through food processing or just sitting on shelves for too long. Rinse it well Do not be tempted to skip this direction. You must wash away the thin coating on these tiny seeds, otherwise they will taste bitter. You will need a very fine-meshed strainer so that the little seeds don’t slip through it in the process. Hold it under streaming water for two minutes while swirling around its contents. Time to Cook To 1 cup of your rinsed seeds add two cups of water, a pinch or two of sea salt or Himalayan salt, then bring to a boil. Reduce the heat as much as possible and let it simmer until it becomes tender. This usually takes about 15 minutes. You’ll be able to tell when it is cooked because the tiny grains will have become translucent and the germ of each seed will show up as a little spiral on its surface. You do not want to overcook it as this will make it mushy. Drain it Remove from heat and drain it using the same fine-mesh strainer. Then put the drained quinoa back in the pot, cover it and let it sit without any heat for another 15 minutes. This helps dry it a bit so it does not become clumpy. Time to serve Aerate it with a fork. It should look light and feel fluffy, and you should begin to see the way the germ is separating from the seed itself. Its texture is very much like that of rice or couscous. Serve immediately You can eat it as a porridge with a handsome glob of butter on top, add it to a casserole, a curry, or the way you might serve rice on a plate with other vegetables. WHEN YOU NEED HELP What fascinates me is the way specific combinations of fruits and vegetable juices have specific therapeutic properties to offer help with common issues that we struggle with—from hair loss and insomnia to depression and prostrate trouble. Let me share with you a few juice recipes designed to help some common challenges. CLEAR FATIGUE One of the underlying causes of fatigue, particularly in women, can be iron depletion. Spinach juice is a far better way of boosting iron levels than taking tablets, which tend to be constipating and are poorly absorbed. The iron in natural foods and juices, including all our green leafy vegetables as well as in poultry, liver and molasses, is highly bio-available. This means your body has no trouble making use of it. Remember that replenishing the body’s essential nutrients takes time, so be prepared to work with organic foods and juices for several weeks before you start to see lasting results. Magnesium is another important mineral when it comes to fatigue. Low intracellular magnesium makes the body very prone to infection, food allergies and chronic illness. Good sources of magnesium are dark green vegetables, seaweeds, molasses, fish and organic raw nuts. DANDELION PLUS 4 or 5 carrots A handful of dandelion leaves 1 bulb fennel Juice as usual, then squeeze a tablespoon of lemon juice to the mixture. GREEN ZINGER 2 leaves kale or beetroot tops or a handful of spinach 4 or 5 carrots A small handful of parsley HI MAG 4-5 carrots 2 florets of broccoli 2 leaves dandelion, beetroot tops, spinach or kale Juice and season with a twist of lemon and a pinch of salt. HANGOVERS There is an art to hangover management. The key to it is looking at detoxification as the other side of the intoxication coin. All drugs provoke a strongly acidic reaction in the body, which causes the symptoms of a hangover, and the first step to recovery is to correct the body's chemical imbalance. Plain old carrot and apple juice is effective for re-balancing, and it's easy to take when you're feeling weak. By incorporating beetroot juice, you will greatly assist the repair of any possible damage done to your liver and kidneys. The inevitable consequence of over-indulgence is waking up dehydrated and nauseous, with a brain that feels like it’s banging against the side of your head each time you move. You need to replenish bodily fluids, nourish exhausted muscles and get your head together. Fruit juice is strongly indicated. Citrus juices, being full of natural sugar vitamin C, are an immediately effective remedy, but they may be a bit harsh if your stomach is delicate. Watermelon, being exceptionally mild, is an ideal substitute if you happen to have some. APPLES & PEARS Apples and pears are closely related. They make a sublime combination when juiced together. 2 pears 2 whole apples Juice as usual and drink straight away as this juice oxidizes very quickly. VIRGIN MARY A Bloody Mary without the vodka, the flavor of this refreshing tomato-based cocktail benefits from a few drops of Tabasco. (Add a clove of garlic and it becomes a Vampire Mary; a fresh jalapeno or other hot green chili pepper turns it into a Scary Mary.) 2 ripe tomatoes 2 carrots 1/2 a beetroot 1 stalk celery 1 cucumber BERRY MELON Berries combine well with melons. The array of flavors gives lots of scope for experimentation. Try Cantelope & Raspberry, Honeydew & Blackberry or the classic Watermelon & Strawberry: 1 slice of watermelon, 3cm wide and cut into chunks to fit your juicer 6 strawberries, washed and with their green stalks removed (In hot weather, a good tip is to freeze your berries before juicing them.) HAIR LOSS You may have been genetically programmed to lose hair, but that doesn't mean it has to happen. There’s a great deal you can do to prevent hair loss, to slow it down dramatically, and in many cases to stop it altogether. Eat foods that are rich in the sulfur amino acids, L-methionine and L-cysteine. Eggs are a wonderful source so devour them with enthusiasm. When it comes to protection from hair loss, cabbage is a real help too. You must also cut out the foods that work against you stopping and eliminating hair loss. Sugar in any form is a killer. Stop eating it altogether. Use a good tasting real stevia in its place. So are the grains and cereals—breads, biscuits and pasta. Eat foods rich in PABA, inositol and choline, such as organic liver, spinach, grapefruit, and raw nuts. Consider adding vacuum-packed flax seeds to your diet. You can grind them in a coffee grinder and sprinkle them on salads or soups. You can also add them to your juices. Finally, the alfalfa has long been believed to stimulate hair growth, particularly in its sprouted form. ALFALFA—FATHER OF ALL JUICES The word alfalfa means ‘father of all grains’ and when it comes to hair health you can't do better than alfalfa sprouts and carrot juice. 4-5 carrots 1 cup alfalfa sprouts Optional: chopped parsley Juice as usual, top with some chopped parsley and drink.
