It is this: Grains and grain products are probably not good for you – except only occasionally in very small quantities. However, for more than 75% of the population of the Western world, they appear to be no good at all. Why? They quickly turn to glucose, lower your energy levels, create cravings and addictive eating behavior, and trigger insulin release contributing to metabolic syndrome – otherwise known as syndrome X – as well as fostering all sorts of other health issues including

high cholesterol

high blood pressure

cancer

obesity

celiac disease

Many grains and foods – not just wheat – contain gluten. These include:

wheat

oats

rye

barley

spelt

most of our processed foods

Thanks to a fascinating new medical study reported in the Gastroenterology journal, we now know that the damage grains have been doing to our bodies all along has increased exponentially in the past 50 years.

More important news: It is not just gluten that undermines the health of most of us. 75-80 percent of all people improve dramatically by avoiding all grains. Avoiding grain-based products is one good step in the right direction. However, glucose intolerance is only part of the issue.

If you’re not yet nourishing yourself with green power, it’s time to take the leap. Green helps create vibrant health and dazzling rejuvenation. It costs little and its gifts are easy to access. If you’re looking for a simple but life-changing move you can make: go green.

There are two intense substances which contain virtually everything you need to live at the highest levels of wellbeing. One is blood. The other is chlorophyl. These fluids are nature’s most potent carriers of the ineffable life force. Without them, no living thing would exist.

They have something remarkable in common. It was Nobel prize winner Hans Fisher who first pointed out that the hemoglobin molecule and the chlorophyl molecule are virtually identical, except that at the core of this pigment that gives human blood its color and oxygen-carrying capacity, you find the element iron, while the molecular core of chlorophyl is magnesium. So close is the relationship between blood and chlorophyl that when we feed crude chlorophyl to anaemic animals, it can restore normal red blood cell counts within 15 days. Yet chlorophyl which has been chemically refined to remove its “impurities” shows no corrective effect on anaemia. On the contrary, it can poison the bone marrow – the site of red cell production.

Green supplements such as spirulina and chlorella are fine – if expensive – but they fall way short of what you can get from drinking the life-blood of a green plant itself. Spinach, cabbage and nettle juice – all rich in chlorophyl – are successfully used to treat heart disease, gum disease, cancer, allergies, atherosclerosis and many other conditions – even depression. To make use of green power from plants, you need to go straight to the plant itself.

Here’s the surprising news: even green juices lovingly gleaned from your favorite juice extractor fall short when it comes to turning your body on to green power. To create a good alkaline balance, rejuvenate your body, regenerating your life and make you look and feel great, you need access to the totality of whatever greens you are using – not just make your juice and toss the fiber away. Much like whole foods, superb, life-enhancing green liquids are only made through whole juices. This means you need to harvest their goodness with the help of a powerful blender – something I value so much that I consistently travel the world with mine.

The fiber that is thrown away in ordinary juicing holds some of the most valuable treasures of a green plant. Ordinary juicing creates a fractured food, discarding much of the potent protection the plant has to offer against aging and illness by protecting the body against toxicity. It wastes a lot of the plant’s powerful anti-oxidants too. Get into whole juicing and you can toss out most of the expensive supplements you’ve been relying on to keep going. Whole green juicing does it far better.

Fresh, green, organic salads are great. I love them, but the body assimilates many times more vital nutrients from whole juices. Why? Because, blending green leaves with water in a powerful blender breaks down the cell walls of the plants – these are some of the strongest molecules in nature – setting free their life-giving elements. This is something neither conventional juicing nor chewing salads give us access to.

Green leaves are far and away the most nutritious part of most plants. In addition to vital minerals and vitamins, they carry traces of alkaloids in combinations specific to each plant species. These nitrogenous organic compounds of plant origin have important physiological and psychological actions on human wellbeing. Taking in the minute quantities of alkaloid mixtures from green leaves strengthens the immune system and promotes mental and emotional clarity. It even fosters greater spiritual awareness.

Your supermarket, your greengrocer, and your garden offer a wide variety of green leaves ideal for whole juicing: kale, bok choy, mitsuna, lettuces, radicchio, spinach, turnip greens, grape leaves, chard, silver beet, celery – the list is virtually endless. Many vegetable tops that we throw away like turnip greens and the tops of lettuce are great for this purpose. So are herbs like parsley, mint leaves, lemon balm, basil, young dill and fennel. Best of all, next time you go for a walk in nature, don’t forget the wild edibles like purslane, sorrel, dandelion – both the greens and the flowers, chickweed, and even young stinging nettles. These free foods are wonderful sources of green power to help you transform your life. Just make sure you know the wild plants you pick and are able to differentiate their leaves from non-edible or poisonous species.

What is the secret of making green power drinks taste great? You can add some fruit if you like, or honey or agave for sweetening. Experiment to find out what tastes best to you. Personally, I like my whole juices straight up, with the addition of a little stevia – the only calorie-free, natural sweetener in the world. It comes as a white powder which looks like sugar but is 200 times sweeter and carries none of the negative effects of sugar. It also comes as a liquid and in a green powder form made from the dried leaves of the stevia plant. A South American plant, stevia itself is an excellent source of green power. It grows happily in the garden or a pot sitting in your kitchen window. Just add a few leaves to your blender along with a mixture of edible greens, a few ice cubes and a cup or two of pure water. Blend and enjoy. Drink a couple of glasses of green power each day. It keeps well in the fridge or a thermos, so you need only make it once. You’ll be surprised at how life-changing this simple, inexpensive practice can be for you and your whole family. Kids love green drinks spiked with a banana or pineapple, apple or orange.

A time to be luxuriously lazy and self-indulgent, to enjoy the process of getting rid of all those wastes you really don’t want hanging around in your system making you look and feel low.

A two day apple fast designed to be done over a weekend; it’s not even a fast, for you can eat as much as you like – but only apples. For two days all you have to do is to eat apples, and nothing but apples. Your body will do the rest. The reason the apple fast is done over a weekend is that the process of elimination can use up a lot of energy, so it’s a good idea to do it over two days when you are not working.

The apple fast was taught to me thirty years ago by Dr Gordon Latto, a British medical doctor who used nothing but food and breathing techniques and a few herbs to heal even the most complex and chronic conditions. Eating as much as you want – but only apples – in place of your regular meals, and in between too if you like, for two days cleans your body, helps clear away food sensitivities, and banishes the ravages of unnatural appetite. A few days on apples once in a while can eliminate retained water, revive flagging energy, make your skin look wonderful and your eyes shine. No pregnant or breast-feeding woman should do an apple fast: neither should anyone with a kidney, liver or heart complaint, for in such cases any sudden change of diet carries with it potential dangers to health. But if you are generally well, a short apple fast is a great way to clear away the cobwebs. Check with your doctor first if you have any doubts.

making apple history

It was the apple which first led Swiss physician Max Bircher-Benner to develop his system of treatment based on living foods. Bircher-Benner was himself ill with a liver ailment, which made it virtually impossible for him to digest anything. One day, as he lay in his bed unable to rise or eat, his wife slipped a piece of fresh raw apple between his teeth. He tasted it, and to his surprise he found he could tolerate it. Several days – and many raw apples – later he found himself well again. He never forgot the humble apple or what it could do to detoxify the body and to help restore normal functioning to digestion, cells and the circulation. He used apples regularly in his dietary treatments of obesity and other illnesses. In fact, they formed the basis of his Bircher Muesli, which has become world famous.

The apple has long been known as a health tonic, medicine, cosmetic and bowel-regulator all wrapped up in one skin. When eaten, it stimulates the secretion of digestive juices. It contains natural substances that help prevent digestive and liver troubles. Where unsweetened apple juice is the traditional drink among country people, there tends to be no incidence of kidney stones. The simple apple is traditionally used for eliminating obesity, as well as being a folk treatment for skin problems, bladder inflammation, anemia, insomnia, intestinal parasites and bad breath.

an apple a day

The adage ‘an apple a day keeps the doctor away’ is not just an old wives’ tale. The apple is quite rightly known as the queen of fruits. In its natural whole state, it supplies valuable fruit sugar and vitamins in a superb balance to ensure that your body can efficiently digest and use them. The apple is our richest fruit source of vitamin E and also provides a good supply of biotin and folic acid – two B-complex vitamins important in preserving energy, emotional balance and in keeping your digestive system clean and functioning well. It is also a fine source of vitamins A and C, which are both natural antioxidants – powerful anti-agers – not to mention more than a dozen minerals including sulfur, potassium, iodine, silica, magnesium and calcium, and even essential amino acids in small quantities.

Apples are low in acidity to help balance stored bodily wastes which tend to be acidic. They stimulate the flow of saliva in the mouth, and clear away debris from the teeth. Eating a raw fresh apple stimulates circulation in the gums too. Finally, apples are rich in a very special form of soluble fiber called pectin which helps to clear out the dangerous heavy metals such as lead and aluminum that we all pick up from our city air, food and water.

Heavy metals in your body are something you want to get rid of. These elements, the concentration of which has increased dramatically in our air, foods and water since the Industrial Revolution, can seriously interfere with your body’s metabolic functioning. Mercury tends to suppress the levels of white blood cells in the immune system. Cadmium displaces the essential element zinc needed for a great many of your body’s enzyme systems, and renders them inefficient and even inactive. In the West we now have a concentration of lead in our bodies some 500-1000 times that of our pre-industrial ancestors. High levels of this heavy metal age us prematurely, interfere with our mental processes, suppress immunity and contribute to depression. Aluminum, another heavy metal, detrimentally affects the central nervous system. The presence of all these elements in excessive quantities (and their concentrations in the human body appear to be increasing with each passing decade) generally interferes with your body’s metabolic processes. The ability of apples to remove heavy metals from your system is one of the best reasons for doing an apple fast, particularly if you live in a city.

fantastic fiber

The fiber that apples contain really is remarkable. In addition to cellulose (the most common kind of fiber, which binds water and increases fecal bulk), the apple is also rich in pectin – a very special kind of fiber with quite exceptional detoxification properties. So different in texture and character is pectin from other forms of fiber that it is sometimes surprising to think that they are classified in the same group. Unlike cellulose, pectin does not bind water, it is water-soluble. It has no influence on fecal bulking, but it appears to be an excellent substance for lowering cholesterol. It may also help eliminate bile acids from the intestines, thus short-circuiting the development of colon cancer and gallstones. It is also useful as a natural chelating (binding) agent which is why it is so good at mopping up unwanted heavy metals, such as aluminum, from the tissues and eliminating them from the body. This can be very important when it comes to detoxification for weight loss.

prepare to be clean

Getyourself a big bag of the freshest apples you can find – perhaps three or four different kinds for variety. If you don’t like the look of your apples you won’t want to eat them, so be picky. Buy a box of apples if you like, your greengrocer might give you a discount.

On this pre-cleanse day it is a good idea to get your system ready. Avoid tea, coffee, alcohol and soft drinks. Steer clear of bread and cooked carbohydrates such as pasta and cereals, and make your last meal of the day a large raw salad made of fresh fruits and vegetables. Don’t have anything else to eat after your salad, except perhaps a cup of herb tea before bed. This will give your body a good 12 hours head-start on the elimination process and it will thank you for it.

the apple fast

There’s really nothing to it. Over the two days you have chosen, tuck into your apples. Eat as many as you like at any time of the day or night. You must eat the whole apple including the peel, the seeds and the core. Chew well, until the last drop of flavor has been extracted from the fruit. The only part you throw away is the woody stem.

Of course, you need to eat your apples raw. You can munch them whole, or grate them and sprinkle a little cinnamon on top. You can even put them in the blender with spring water to make a drink. Eat nothing else during this two-day period, but eat them whenever you are hungry.

Do not drink tea or coffee. You may have herb teas such as peppermint, lemon balm or chamomile with a teaspoon of honey if you wish. Drink lots of spring water, but nothing else.

Be lazy and luxurious. During these days indulge yourself doing whatever is pleasurable for you. Many people find their sexuality is heightened during these days. If so, enjoy it. Apples are great to munch in bed.

In many ways, the most useful thing about the apple fast is the way you can call on it when you most need help to get you back on the rails again. We all slip up sometimes – we over work or over indulge and live to regret it the next day. A two day apple fast, or even just a day spent eating only apples, is an excellent ‘quick corrector’. Spend even just one day munching apples and it will help set all to rights again, so that when you awaken next morning you feel more like your old self and ready to face the day full of energy.

Apple fasting gives you the chance to step back regularly and take a look at your lifestyle, instead of mechanically going on day after day without being aware of where your energy is going. Set aside two days, three or four times a year – a weekend is best – for an apple fast. This will spring clean your body from the inside out.

Even apple fasting for one day a week is a great boost to vitality and good looks, because it helps detoxify your body of wastes accumulated as a result of drinking or eating too much, or consuming the wrong kinds of foods. It can also help calm the ravages of an over-enthusiastic appetite, which many people suffer as a result of food sensitivities or over-stimulation of the digestive system. Furthermore, it is an excellent discipline: such a practice helps you break through ingrained habit patterns, which can make us largely unaware of how we are eating.

The way that you choose to eat after an apple fast is vitally important. If you break your fast the wrong way, all the benefits of eating only apples for two days will be lost. Having got rid of the junk, you don’t want to put any more in.

The first two or three days after your apple fast you should eat only raw food – particularly fruit. Don’t eat too much, chew your food well and eat slowly. This is good advice for anyone at any time. Putting too much of even the very best food into your system will lower your energy, because so much of your energy goes into digesting and assimilating the excess food and eliminating the wastes which are byproducts of metabolizing it. Don’t eat when you are not hungry, and stop as soon as you feel full.

remarkably raw

Raw foods have a remarkable ability to rebalance and restore the entire body. At the same time, a high-raw diet provides a full complement of essential vitamins, minerals and amino acids in an easily assimilable form. This means that, unlike a crash diet, which depletes your body of the nutrients it needs and leaves you tired and irritable, an apple fast followed by a few days on raw fruits and vegetables will give you lots of energy. For the first three days you will do best to eat something like this:

breakfast

Live Muesli or Energy Shake (see Go For It)

midmorning

A glass of fresh vegetable or fruit juice, or a cup of herb tea. Avoid coffee, tea, alcohol and soft drinks.

lunch

For an appetizer have slices of fresh fruit such as apple, mango or a slice of melon. Follow with a large raw salad.

dinner

Begin with a freshly-squeezed raw vegetable juice cocktail, or half a grapefruit. For a main course have another big raw salad with fresh fruit for desert.

On the fourth day you can begin to add a little more cooked food, such as homemade lentil soup with a slice of wholemeal bread with a salad for lunch, or a piece of fresh fish or chicken with a salad for dinner. Each of us is different, so it’s important to listen to your body’s needs. Be sure to eat enough at each meal, but don’t stuff yourself. If you get hungry between meals have a piece of fresh fruit or some sunflower seeds. This is not a starvation diet. There is no need to cheat.

After your detox and a few days on raw foods you will most likely want to keep that wonderful feeling of clean and fresh vitality. To do this you need to cut out the rubbish that you have been taking in such as convenience foods and highly processed foods, including breakfast cereals, bread made from refined flour, white pasta, white sugar and all the ‘goodies’ made from it. Choose organic tea or coffee to avoid taking in any more chemicals and pesticides than absolutely necessary. Drink no more than a cup or two a day. Don’t drink too much alcohol – have only a glass (or occasionally two at the most) of good wine with a meal once a day. And remember to drink plenty of spring water.

Instead, take in foods which support the proper functioning of your body’s natural elimination processes, and remember not to overload your system in the morning when your liver is working hard. Go for eating 50-75 percent of your foods raw. Eat well on natural foods, such as fresh fruits and vegetables, pulses and nuts, with smaller quantities of steamed or wok fried fish, game and poultry. If this sounds boring, think again.

sprout magic

An excellent way to cram your meals with goodness is to sprout your own seeds (sometimes called bean sprouts). Seeds and grains are latent powerhouses of nutritional goodness and life energy. Add water to germinate them, let them grow for a few days in your kitchen and you will harvest delicious, inexpensive fresh foods of quite phenomenal health-enhancing value. The vitamin content of seeds increases dramatically when they germinate. The vitamin C content in soya beans multiplies five times within three days of germination – a mere tablespoon of soybean sprouts contains half the recommended daily adult requirements of this vitamin. The vitamin B2 in an oat grain rises by 1300 percent almost as soon as the seed sprouts, and by the time tiny leaves have formed it has risen by 2000 percent. Some sprouted seeds and grains are believed to have anticancer properties, which is why they form an important part of the natural methods of treating the disease. Another attractive thing about sprouts is their price. The basic seeds and grains are cheap and readily available in supermarkets and health food stores – chickpeas, brown lentils, mung beans, wheat grains and so forth. And since you sprout them yourself with nothing but clean water, they become an easily accessible source of organically grown fresh vegetables, even for city dwellers.

dessert desert? no way

Many people think that eating healthily means giving up all the things they like, such as sweet things and desserts. This is not true; I’ve put a couple of ideas in Go For It to start you off. But before you reach for the biscuits, there are a few things that it’s wise to know about sugar. Most people make the mistake of thinking that sugar gives them energy. True, sugar is high in calories, but these are largely empty. The energy jolt you feel after eating a bar of chocolate comes from the sugar flooding your bloodstream, which triggers the release of insulin. It is the job of insulin to keep things in balance, so it encourages the sugar not to be burned as energy, but rather to be stored as fat, thus reducing the level of your blood sugar. So, quick as a flash, your energy vanishes.

Unfortunately, frequent sugar-eaters’ bodies tend to overreact and lower the blood sugar too much. This is why the familiar (and very short-lived) lift in mood and energy which comes from eating something sugary is soon followed by a depressive slump which can send you reaching for more sugar in a vicious cycle of fatigue and the effort to combat it. To avoid this high-low reaction and up-and-down cycle, steer clear of all refined carbohydrates – from sugar to white flour – and anything made from them. Instead choose complex carbohydrates, such as fruit, vegetables and wholemeal breads and cereals which release just the right kind of energy into your bloodstream slowly, bringing you sustained energy and enormous staying power.

Eating sugar also robs your body of chromium, an important mineral which helps protect against chronic low blood-sugar and fatigue. Studies show that chromium deficiencies are common in Britain and the United States, in part because we eat so much refined sugar, and in part as a result of agricultural practices which have depleted our soils of the mineral. Eat raw fruits and vegetables that have been grown organically and you will be replacing all sorts of minerals lost through a diet of convenience foods.

potassium power

Potassium is another important mineral for keeping your body’s elimination processes working properly day to day. One of its jobs is to look after the activity of your nerves and muscles, and when too little of it is available you can become lethargic, weary and weak. It plays an important part in ensuring that your cells receive the oxygen and nutrients they need, and that their wastes are properly eliminated. Potassium is easily lost from your body. This means you need a fresh supply through your foods every day. Two factors contribute to potassium deficiency. First, potassium and sodium are antagonists which should balance each other in your body. Thanks to all the salt added to convenience foods and used at the table to season foods, many people eat a high-sodium diet. Then sodium gets the upper hand, potassium levels drop and you can end up chronically fatigued. Low potassium levels also result from our Western tendency to eat too few fresh fruits and vegetables, which are high in potassium.

The best way to take in potassium is to take in lots of fresh fruits and vegetables, their juices and homemade vegetable soups. Also, stop seasoning your food with too much salt. There is plenty of natural sodium in wholesome foods without adding more. Three weeks of eating like this can dramatically heighten your energy levels and increase your over-all feeling of health.

Find your way to eating delicious and wholesome foods that will help you avoid putting back into your system all that junk you have just got rid of. It’s easy and delicious – lots of fresh, wholesome fruits and vegetables, prepared simply so you keep all of their wonderful tastes and textures. Go and see what your greengrocer has on offer and let your imagination run riot.

Here are some ideas of how to put together delicious meals that will keep your body working well and your energy levels high. Try them out, then make up your own. There’s a whole world of possibilities out there.

bountiful breakfasts

A traditional cooked breakfast of fried eggs, bacon, toast with butter and jam and tea or coffee is definitely bad news. In the first place, greasy food puts a great strain on your liver, which is working hardest to detoxify your body between midnight and midday, and its high fat content will leave you tired and mentally dull. Far better to choose an energizing breakfast such as Live Muesli, or an Energy Shake, or just fresh fruit.

live muesli

This recipe is similar to the original muesli developed by the famous Swiss physician, Max Bircher-Benner. Unlike packaged muesli, which usually contains too much sugar and is rather heavy and hard to digest, the bulk of this muesli is made up of fresh fruit. It will leave you feeling light and lively.

1-2 heaped tablespoons steel-cut oats, rye or buckwheat

a handful of raisins or sultanas

1 apple or firm pear, grated or diced

1 teaspoon fresh orange or lemon juice

1 small banana, finely chopped

2 tablespoons yogurt (optional)

1 teaspoon honey or a little natural stevia to taste (optional)

1 tablespoon chopped nuts or sunflower seeds

½ teaspoon powdered cinnamon or ginger

Soak the grains overnight in a little water or fruit juice to help break the starch down, along with the raisins or sultanas. In the morning, combine the soaked grains and raisins with the apple or pear and banana, add the orange or lemon juice to prevent the fruit from browning and to aid digestion. Top with the yogurt, then drizzle with honey or a little natural stevia if you like. Sprinkle with chopped nuts or sunflower seeds and spices.

You can prepare countless variations of Live Muesli by using different types of fresh fruit, such as strawberries, peaches, pitted cherries or pineapple, depending on what’s in season. When your choice of fresh fruit is limited, use soaked dried fruit such as apricots, dates, more sultanas, figs or pears.

energy shake

This recipe is delightful and quick – ideal if you have little time to spare in the mornings.

8 fl oz (1 cup) plain yogurt

a handful of strawberries or raspberries

1 teaspoon of honey or a little natural stevia to taste

1 tablespoon coconut (optional)

a squeeze of lemon juice

Combine all the ingredients thoroughly in a blender or food processor and drink. Depending on the type of yogurt used, you may need to thin the shake with a little fruit juice. As with Live Muesli, you can vary the Energy Shake by using different kinds of fruit, such as bananas, mango or fresh pineapple.

sexy salads

Most people think of salads as a rather limp affair involving a few bits of lettuce and some cucumber. What I mean by a salad is a taste sensation of fresh, raw vegetables presented beautifully and dressed to kill. The permutations are endless. Go for the freshest vegetables in season and let your creative (and digestive) juices run. Here’s one of my recipes to get you started:

Line a large dish with lettuce or spinach leaves. Then chop or grate a selection of fresh vegetables and fruit such as: cabbage (red or white), carrots, radish, tomatoes, courgettes, cauliflower, broccoli, green peppers, apples, beetroot, cucumber, oranges, grapes. Add a handful of sprouted seeds or beans such as alfalfa, mung, chickpeas or lentils. Dress with a little extra-virgin olive oil, a squeeze of fresh orange or lemon juice, a little curry powder, ginger or a dash or Worcester Sauce, and a little Swiss Vegetable Bouillon Powder to taste. Top the lot with a handful of sunflower seeds or chopped nuts.

To your basic salad you can add a side-dish of grated boiled egg, a little chicken or fish, or some brown rice or a baked potato. Make plenty of salad and you will find you won’t go hungry.

sweet treats

sorbets

You are supposed to make sorbets with a sorbetiere but I have survived for years without one.

Juice 6 oranges, and combine the juice in a food processor with 2 juicy seedless oranges which have been peeled and quartered. Add enough honey or natural stevia to sweeten and add some nutmeg or ginger if desired. I sometimes add a grated peach for texture. Pour the mixture into a plastic lunch-box type container or empty ice-cream tub, and freeze. Remove from the freezer and leave to thaw slightly for ten minutes. Blend the mixture again, spoon into dishes or empty halved orange shells and serve immediately.

raspberry fruit freeze pie

This is a great basic pie base that you can fill with any fruits and berries that are in season. Here is my favorite:

pie base:

1 cup pitted dried dates

½ cup almonds

¼ cup oat flakes

1 teaspoon honey

a little water

Grind the dates and almonds as finely as possible in a food processor. Add the oats, honey and a little water and blend again. You need to add the water slowly to get the right consistency. You want the mixture to bind but not be sticky, so it rolls into a ball in the food processor. Flatten the mixture into a pie dish with your fingers or the back of a wooden spoon. As a variation you can add a tablespoon or two of coconut.

pie filling:

2 bananas

2 cups raspberries

sherry

honey or natural stevia to sweeten

Peel the bananas and chop them into pieces about an inch thick. Freeze in a polythene bag with the raspberries until firm. Remove from the freezer and blend the fruits together with a dash of sherry and a little honey to sweeten if you like. Pour into the pie crust and serve immediately, garnished with a few banana slices or raspberries.

carob and apple cake

1 cup sunflower seeds (or a 2:1 mixture of sunflower and sesame seeds)

1 cup carob powder

½ cup dried coconut

½ cup dried pitted dates

3 apples

½ teaspoon vanilla essence

1 teaspoon allspice

apple slices or strawberries to garnish

Grind the seeds very finely. Add the carob powder, coconut and dates. Quarter and core the apples, then blend them in the food processor with the dry ingredients. Add the vanilla essence and allspice. Spoon the mixture into a flat dish and leave to chill for a couple of hours in the fridge. Decorate with apple and/or strawberry slices before serving.

carob fudge

Once chilled, these wonderful fudge balls have the texture of ordinary fudge, and their carob flavor makes them ideal chocolate substitutes.

1 cup sesame seeds

½ cup dried coconut

½ cup carob powder

1 teaspoon honey

½ teaspoon vanilla essence

Grind the seeds very finely in the food processor. Add the other ingredients and process again. Form the mixture into little balls and chill.

Water is a powerful energy balancer. Water treatments have been used for centuries to help heal illness and to keep healthy people well. They are so good at balancing energy that most people who begin to experiment with hydrotherapy techniques are astounded by what they can do. During a two-day detox, they can help with the elimination process enormously – after all, this is the prefect time for long, relaxing soaks in the bath to soothe your mind and encourage your body to get on with its job.

Dr Douglas Lewis, whilst head of physical medicine at John Bastyr College Natural Health Clinic in the United States explained: ‘Hot water produces a response that stimulates the immune system and causes white cells to migrate out of the blood vessels and into the tissue where they can clean up toxins and assist the blood in eliminating waste’.

Hot and cold water applied alternately to the surface of your skin stimulates circulation and spurs good lymphatic drainage, also helping your body to eliminate wastes quickly. Hydrotherapy is also fun.

epsom salts bath

Epsom salts baths are an old and potent practice for eliminating toxins through the surface of the skin. Epsom salts are magnesium sulfate. Both magnesium and sulfate molecules have an ability to extract excess sodium, phosphorus and nitrogenous toxins from the body. This is why athletes use them to relieve muscular pain. Magnesium sulfate dissolved in water creates a static, unified, electrical field, and immersing your body in it helps to create a magnetic balance. During your apple fast, taking an Epsom salts bath helps speed up the detoxification process and minimizes any aches, pains or fatigue which sometimes come with rapidly eliminating stored toxins from the body. Epsom salts are also wonderful during periods of prolonged stress and when you are feeling overtired.

Take two cups of household-grade Epsom salts (available from the chemist), pour them into the bath and fill with blood-temperature water. Immerse yourself for 20 to 30 minutes, topping up with warm water when necessary to maintain a comfortable temperature. Get out of the bath and lie down for 15 minutes – better still, take an Epsom salts bath just before you go to bed.

the heat bath

Saunas can be a great help during a detoxification regime, as artificially induced perspiration is one of the best means of deep-cleansing the body. However, most of us don’t have a sauna at home. You can get a similar effect – in terms of the elimination of waste through the skin and deep relaxation – by taking a carefully regulated hot bath, provided your tub is large enough for you to immerse all of your body except your head in it. Make sure your bathroom is warm and comfortable – have candles for soft lighting, play some relaxing music, and put your towel somewhere so that it will be ready-warmed for you when you get out.

The temperature of the bath is crucial. It needs to be kept at about 105-110 degrees F (40-43 degrees C) – just a few degrees above normal body temperature. Hotter than this can be over-stimulating to the body. You can use a simple thermometer to check the temperature every five minutes and keep topping up with hot water to bring it back when it starts to fall. Lie in the bath for 15 to 20 minutes with just your head sticking out. Then get out, quickly wrap yourself in a big towel (or a cotton sheet if you prefer) and lie down and relax, covering yourself with a blanket, for another 20 minutes.

blitzguss

A real blitzguss needs to be done by a professional, but you can get many of the same effects in the shower yourself at home – especially if you have a handheld shower which you can direct on different parts of your body.

Take a warm shower until your skin is really glowing with warmth. Then turn off the hot water and using only cold, direct it over your face and then down your arms and legs, over your trunk and abdomen and down your back. The process should take no more than 30 seconds. Then get out of the shower, pat off the excess water and dress warmly. This is particularly good done just after skin brushing. Your skin is so fresh and clean after being brushed that it fairly zings in contact with warm water. The quick burst of cold water will make it zing again and get the circulation going a treat.

If at any time you feel uncomfortable using any hydrotherapy technique, stop immediately and try again another time. Never force yourself to ‘suffer’ if any of them cause any tension either in your body or your mind.

dew bath

One of the oldest, and for me one of the most decadent, natural treatments is walking barefoot on dewy grass. The treatment was traditionally used to strengthen immunity, stimulate intestinal functions, act as a counterirritant for the chest and throat and relieve headaches. It is good to use during a two-day detox not only because it is stimulating to the whole system, but also because of the sense of clean freedom it gives you. If you are not in the habit of going barefoot, begin gradually. Start by simply rubbing the feet with a wet cloth for a minute or two then put on socks and shoes and walk about. After a few times try walking on dry grass and then on wet grass – first thing in the morning in the summer is just wonderful. Take the treatment whenever you get a chance – in the garden, in the park or in the country. Bare your feet to the elements and you’ll reap the benefits.

By the way, bathing your feet can help with a headache, too. Half fill a bath with cold water. Then, making sure you are well covered so your body doesn’t get cold, walk about in it with bare feet for three minutes. Immediately afterwards, put on warm socks and lie down for ten minutes. You might feel silly doing it, but it really can help, and it gives you the same lift as paddling in the sea.

air bath

Water is not the only thing you can bathe in. Of all the nature cure treatments, the air bath is the simplest. It involves removing all your clothing and allowing fresh air to circulate around your body for a few minutes. It is believed that exposing the body in this way even for only ten minutes can increase metabolism temporarily by as much as 50 percent, no bad thing when you are trying to eliminate wastes. Certainly it makes sense to regularly give your entire skin surface a chance to breathe unrestricted by clothing. The easiest way to take a regular air bath is to strip down while you do your morning or evening toilet. Make sure you open a window in the bathroom so that there is fresh air. If you need to turn on a heater in the room do, although cool air on your body for a few minutes can have a positive, stimulating and strengthening effect. This is yet another technique you can use after your two-day apple fast to tone your skin and help keep that feeling of being fresh and alive that comes after a detox.

If you want a clear mind and uplifted spirit – and who doesn’t – not to mention energy, drinking raw juice each day is a great step in the right direction. It is an excellent way to clear a cold, banish a hangover and even clear the pain of arthritis (provided of course you’ve not been on long-term drug therapy which can sometimes interfere with the body’s ability to detoxify and heal itself).

Juice is a perfect fuel for your body. Its high water content means that it is easily assimilated and tends to cleanse and nurture the body, and it is the richest available source of vitamins, minerals, plant factors such as the carotenoids, and other antioxidants powerful in their anti-aging and immune enhancing factors. Not only is raw juice the best possible tonic for promoting all-round health and general well-being, each juice has specific therapeutic properties. You can use it as a quick fix to treat a range of common complaints.

Try some of the following and see what powerhouses for healing they really are. Aim to drink at least three glasses of juice each day, but try to make them freshly each time. If you really have to keep them then put them in the fridge with as much ice in them as you can. Fresh juices oxidize and lose their potency very, very quickly.

When juicing, always buy fruits and vegetables that have been organically grown, not only because you don’t want to be taking in pesticides and herbicides with your juice, but because organic fruits and vegetables have not had their nutritional integrity compromised and you will get the best vitamin, mineral and trace element content.

Both osteoarthritis and rheumatoid arthritis have been successfully treated with juice therapy, which is particularly beneficial if the patient has not been on long-term drug treatment. In both osteo- and rheumatoid arthritis, cut out foods from the nightshade family such as potatoes, aubergine, tomatoes and peppers. For osteoarthritis, also cut out citrus fruits.

Vegetables to incorporate into your juices include carrot, beetroot tops, broccoli, turnip, grapes, kale, cabbage, all dark green vegetables, apple and ginger. Pineapple is particularly good for rheumatoid arthritis since it contains the enzyme bromelin which has anti-inflammatory properties.

ginger berry

1 (or more) 1cm cube of fresh ginger

1 medium bunch of grapes

2 cups blackberries or raspberries

You can also add some sparkling mineral water, or some ice.

green goddess

green wow

2 green apples

1 tsp – 1 tbsp of powdered wheat grass, green barley, spirulina or chlorella.

popeye punch

1 whole apple – including seeds

4 or 5 carrots

A small handful of spinach

1 cucumber

red genius

4 carrots

1 large raw beetroot

top of the beet

1 apple

5 carrots

3 leaves of beetroot top

A handful of parsley

Colds

Juicing for colds has two goals. The first is to strengthen the immune system, and for this you need lots of greens. The second is elimination, and for this you need those fruits and vegetables which help to get rid of waste from your system – lemons, apricots, garlic, ginger etc.

atomic liftoff

4-6 ripe tomatoes

1 lime

A pinch of cayenne pepper or dash of tabasco

Juice the tomatoes and lime then sprinkle with cayenne or Tabasco

beetroot, carrot & orange

1 smallish beet

4 carrots

1 orange

pineapple grapefruit drink

1 small pineapple (peeled)

1 grapefruit (peeled)

salad juice

4-5 carrots

4 sticks celery

3-4 radishes

sweet & spicy

2 whole apples

2x1cm cube fresh ginger

½ small pineapple cut into convenient sized spears.

liver and digestion

Cabbage juice tends to benefit most digestive upsets. It’s not exactly delicious and it can be helpful to mix it with pineapple juice to soften the flavor. Ginger is also good for digestion, and bananas have been shown to help protect the stomach from excess hydrochloric acid.

gingeroo

1 (or more) 1cm cube of fresh ginger

1 whole apple

4 carrots

pineappage

¼ large pineapple cut into spears

1/3 green cabbage

red genius

(see above)

fatigue

Fatigue is the thing I am asked about more than any other. One of the underlying causes can be iron depletion, or a lack of magnesium. There is a lot that juice can do to help.

atomic lift off

(See above)

citrusucculent

1 ripe grapefruit

½ ripe lemon

2 ripe oranges

dandelion plus

4-5 carrots

A handful of dandelion leaves

2 whole pears

ginger berry

(See above)

gingeroo

(See above)

glorious grapefruit

2 pink grapefruits (peeled)

green zinger

2 kale leaves or beetroot tops or a handful of spinach

4-5 carrots

A small handful of parsley

hi mag

4-5 carrots

2 florets of broccoli

2 dandelion leaves, beetroot tops, spinach or kale leaves

secret of the sea

4 carrots

2 whole apples

2 sheets nori seaweed

Juice the apple and the carrot then pour into a blender with the seaweed. Blend thoroughly.

hangover

There is an art to hangover management, the key being to understand what has happened! Dehydrated and nauseous, you need to replenish your body fluids. Fruit juice is a good idea but might be a little harsh. On top of this, the body’s acidic reaction to the alcohol has produced a chemical imbalance which needs to be put right. Go for the following juices.

apples & pears

2 pears

2 whole apples

Drink straight away as this oxidizes very quickly.

carrot & apple

4 carrots

1 apple

This is a wonderful juice to experiment with – change the proportions to suit yourself.

merry belon

1 slice of watermelon. 3cm wide and cut into chunks to fit your juicer

6 strawberries, washed and with stalks removed

In hot weather, a good tip is to freeze the berries before juicing them – delicious!

virgin mary

This is a Bloody Mary without the vodka; add a clove of garlic and it becomes a Vampire Mary; a fresh hot green chili pepper turns it into a Scary Mary.

2 ripe tomatoes

2 carrots

½ beetroot

1 stalk celery

1 cucumber

insomnia

There are many causes for insomnia, but there are some things that will help with most causes. Magnesium, vitamin B6 and niacin have to be present in order for the amino acid tryptophan to be able to turn itself into the sleep-inducing serotonin. Calcium induces muscle relaxation, and some people need an extra boost of fruit sugar before going to bed to trigger sleep. Try out which of the following helps you.

green goddess

(See above)

hi mag

(See above)

lazy lettuce

2 whole apples

5 lettuce leaves

pineamint

(See above)

smooth as silk

2 cups blackberries, fresh or frozen

1 ripe apple

1 whole banana

spicy carrot

4 carrots

2 spears of pineapple

1 Braeburn or Cox’s apple

A pinch of ground cinnamon

A pinch of ground nutmeg

pms

Although PMS comes in many forms there are certain things that will help. Increasing your intake of magnesium, B6 and the B complex as well as beta-carotene in the week before your period will help, easily done by making the most of the green juices. Water retention can be helped with watermelon, grape, cucumber and dandelion. All of these juices will also help to counteract some of the uncomfortable symptoms associated with menopause.

cool as a cuke

1 cucumber

1 clove garlic

1 tomato

dash of dill

ginger berry

(See above)

green zinger

(See above)

hi mag

(See above)

pineapple green

(See above)

secret of the sea

(See above)

spring salad

3 florets of broccoli

4 carrots

2 stalks of celery

1 clove or garlic

1 tomato

sprout special

4 carrots

1 whole apple

1 cup sprouted seeds

waterfall

5cm section of cucumber

1 whole apple

3 carrots

½ smallish beetroot

a note about juicers

Centrifugal juice extractors contain a basket, usually made from stainless steel, with sharp shredding blades at the bottom and a fine mesh screen at the sides. When you push fruit and vegetables through the rotating blades, the pulp is spun off into a receptacle at the back of the machine and the juice strained out through a spout, or into an integral jug. A juicer with a spout is better than one with a jug because then you can juice directly into a glass and there’s less to wash up.

As with any domestic appliance, look for the most robust model you can get for your money. This means the one with the strongest motor and the strongest locking mechanism. Beware of two-speed juicers and those models with a hopper that simply clicks into place without your having to clamp it down – there’s just more to go wrong.

One other thing to check before buying your juicer is the size of the hole you are supposed to put the produce through. Some are really too small, and it’s a drag to have to slice even the skinniest carrot lengthwise. Don’t be afraid to demand a demonstration of the model you intend to buy, listen to the whine the motor makes and ask yourself if it sounds as if it can stand up to the job.

As soon as you begin to incorporate freshly-extracted raw vegetable and fruit juices into your lifestyle you will find something amazing starts to happen. First you will notice the terrific lift that just one glass of fresh juice can give you, particularly when taken first thing on an empty stomach. Imagine what life might be like if, instead of trying to kick-start yourself with strong coffee in the mornings, you could drink a glass of raw juice and almost immediately feel refreshed, alert and eager to see what another day has in store. And that’s just what raw juice will do for you. Go for it!

Very occasionally when someone goes on an active program of detoxification such as an apple fast for a few days, they have the experience of a severe headache at some time within a day or two, or of feeling moody, or having an upset stomach, a film on their tongue or teeth, even loose bowels. This is a sign that your body is throwing off wastes at such a pace that you are experiencing what is known in natural medicine as a cleansing crisis.

In reality, it happens to very few people. If you are one of them, be glad, even though it may be a bit of a nuisance for a few hours; it is actually a good sign. Your body is taking the opportunity you have afforded it through what you are eating (and what you are not eating) of throwing off a lot of debris which you need to get rid of if you are to live at a higher level of health and vitality. If a cleansing crisis does happen, take the time to relax, lie down in a darkened room if possible, and be kind to yourself. Have a cup of peppermint tea – it is very soothing when you have a headache. If you can’t sleep, try a cup of chamomile tea, or eat a banana which is rich in the amino acid tryptophan, a superb natural sedative. Congratulations – it can be quite a feat to be ridding your body of so much old debris all at once. It will pass quickly, leaving you better than ever.

caffeine trouble

The people most likely to get a headache as part of a cleansing crisis are those who have been drinking several cups of coffee or tea a day. This kind of reaction is triggered by your tissues dumping a lot of stored caffeine into your bloodstream all at once in order to eliminate it from your body. The first time this happened to me I had been in Vienna for six days, where everyone drinks coffee – and very strong coffee too – all day long. Though not much of a coffee-drinker myself, I decided while there to go along with the custom. The day I left the city I got on to an airplane to return to London and my usual way of eating, and was struck down by the most appalling headache which lasted about four or five hours. It was no fun, believe me. But when it passed I was left with the most wonderful feeling of freshness and lightness – the way you feel on a beautiful summer’s morning when there is a light breeze blowing. This sense of lightness is a common one for people who for the first time begin to clear their system of stored wastes. It more than makes up for the headache or upset stomach which can herald its coming.

clever compress

Something I learnt many years ago from another doctor who uses natural methods for healing, is that if you are experiencing any kind of cleansing crisis, you can help your body enormously by putting a simple cool compress around your middle and leaving it there as you lie down for half an hour. This can also be done when you go to bed in the evening if you prefer. A cool compress stimulates the flow of blood to the area of the liver – another prime mover when it comes to detoxification – so speeding up the release of wastes from the body, and easing any unpleasant symptoms that come with them. Using a compress is also enormously relaxing.

Tear a piece of cotton fabric (an old sheet is ideal) into a rectangular piece which is about fifteen inches wide and long enough to go comfortably around the middle of your body (between your armpits and hips). Wet this compress in cold water and wring out completely so it is only damp. Now, using a dry towel (or a piece of wool or thick natural fabric) which is also big enough to go around your middle and to overlap so you can pin it comfortably with a few safety-pins, spread the compress out on the outstretched towel. Now lay your naked midriff on this strip and wrap first the compress around you and then the towel on top, pinning it securely. Pull your clothes or nightclothes down over the lot, and pop into a warm bed for at least half an hour. Such a compress can be helpful not only for sailing through a cleansing crisis, but also if ever you find it difficult to sleep because of worry or stress.

kidney power

If you find yourself experiencing some uncomfortable symptoms during your apple fast, increase the quantity of spring water you are drinking. When the body’s water level gets too low, your kidneys don’t work efficiently and the liver has to take on too much of the cleansing work on its own. If you tend to retain water, this is often because you don’t drink enough, so your body tries its best to hold on to the water there is in order to dilute any toxicity in your tissues.

Believe it or not, you breathe out about 2 big glasses worth of water a day. The kidneys and intestines eliminate roughly another 6 glasses, and 2 are released through the skin. So keep drinking – during a detox and after. We all tend to need more water than we drink for optimum health. It’s a good idea to keep a bottle or two of mineral water on your desk, or somewhere where you will see it often, to remind you to take in enough water each day.

Here is a simple formula for working out the ideal quantity of water to drink each day for maximum energy and good looks. Divide your current weight in kilos by 8. (e.g. 58 kilos divided by 8 = 7.25). Round the figure up (to eight) and that is the number of glasses of water you need a day.

This is just a base calculation of course. Drinking enough water is one of the most important things you can do day-in-day-out to keep your body eliminating wastes efficiently. Remember that you will probably need to take in more water than your base calculation when you are exercising or if it is a hot day.

psychic detox

Some people can get a temporary feeling of letdown on a detox. This is usually because the heart, having been stimulated by caffeine and other irritants, begins to beat more slowly, and the false exhilaration you used to get from stimulants temporarily turns into a feeling of being down. It doesn’t last long, and in most people it doesn’t happen at all.

Sometimes, however, during a detox it can seem that all sorts of psychic junk suddenly gets released along with the physical toxins you have been carrying around. Feelings of anxiety, worry or guilt may surface with seemingly no reason. They will most likely just be flushed away with all the other junk your body is getting rid of. In the meantime, try putting a few drops of lavender or vanilla essential oil in an oil burner and enjoy their relaxing and soothing properties. Or put one or two drops of either essential oil in your bath and breathe in the fragrance.

One of the nice things about this sort of detox is that you often find you think much more clearly after it. Stress does many unpleasant things to the body, one of which is that it can make your whole system acidic. An apple fast alkalizes your system, so bringing it back into balance, and throwing off the byproducts of stress in the process. When you are mentally stressed, your body becomes physically stressed through having to deal with all this toxic waste. Removing these toxic wastes can often mean that your ability to deal with more stress is greatly improved. You begin to see things in a much more positive light and can put what once seemed difficult problems into their proper perspective.

relax and revive

During a detox it is important to make sure you get enough rest. Think how good you feel after a holiday. It’s usually the one time when we actually allow ourselves to rest – something we don’t do enough of during the rest of the year. Rest is so essential because it is while you are resting that your tissues restore themselves. Without it, your body cannot properly restore damaged tissues. During a detox, your body is working pretty hard in eliminating all the rubbish you have allowed to be released into your system. Give it a break and make time for yourself to relax – and don’t feel guilty about it. Watch your favorite videos, read that book you’ve been promising yourself you’ll find time for, listen to all your old records, or just do nothing. This is a precious time; a time to devote to yourself and your body’s needs. Don’t waste it.

During the day, whenever you can, lie down even for ten minutes and just let go. Or practice a simple relaxation/mediation exercise like this one:

Close your eyes and watch your breath coming in and out of your body. With each out breath count silently. So it goes like this: ‘In breath… out breath… one… in breath… out breath… two…’ and so on up to ten. If you lose track or find that your mind is distracted, it doesn’t matter at all. Just go back to ‘one’ and start again.

Carry this out for ten to fifteen minutes whenever you can find a few spare minutes to yourself. It helps to rebalance your body’s nervous system and can be useful if you have to deal with any negative emotions that surface during your detox.
